S16 Ep9: Superstar chef Nuno Mendes on the dishes that have shaped his life, his greatest success and the best dish he'd ever eaten

Season 16 · Episode 9

jeudi 12 décembre 2024Duration 47:36

We have a bonus episode for you today in the form of Nuno Mendes. Described as the chefs chef, Nuno has had an incredible career. He thought of becoming a marine biologist but quickly changed direction and after enrolling at culinary school, he's never looked back. He has worked with some of the world’s leading chefs, such as Wolfgang Puck before moving to London and opening the cult ground breaking Loft Project and world famous Chiltern Firehouse. His latest restaurant Lisboeta is an ode to his home country and has already made waves since it’s opening.

Thank you so much to Comté Cheese for sponsoring this episode of Desert Island Dishes. Comté Cheese is genuinely one of my favourite cheeses in the world.

It’s a delicious cheese to eat on its own, worthy of any cheese board but it’s also so brilliant to cook with. I love it with baked pasta, or gratins or the most amazing toasted cheese sandwiches. The taste and texture changes as it ages - so you get some young Comté that tastes buttery and almost with caramel notes and then more matured Comté is a bit more nutty and slightly fruity. So incredibly good. And the best news is they are now available at all major supermarkets.

Season 1

jeudi 7 janvier 2021Duration 54:28

My guest today is Rukmini Iyer Rukmini is a former lawyer turned bestselling author of the Roasting Tin series which have now sold over half a million copies. Amongst her army of followers – who call themselves the TinLads. She counts Nigella Lawson as a fan as well as other famous names from Jay Rayner to Judy Murray. The concept of the Roasting Tin books is deceptively simple, Mini’s recipes lure people in with the idea of the one-pot supper. But people return time and time again because the recipes taste even better than the lack of washing up feels. A pioneer of the _and I quote: ‘put everything in a roasting tin and shove it in the oven’ school of cookery, Mini’s fourth cookbook features tasty, no-fuss dishes from across the globe. As well as writing cookbooks, Rukmini styles and writes recipes for numerous brands and publications, including Waitrose, The Guardian and Fortnum and Mason. Of her success and the reaction to her books, Mini says – ‘It’s one thing having fans who are like, "this is great for dinner", but to have fans who are saying that you’ve changed the way they eat is very humbling,’ ‘You never think that something like a cookbook could have that much effect on someone’.

His friends and supporters include the biggest names from the world of food from Nigella Lawson to Hugh Fearnley-Whittingstall and Jamie Oliver, all of whom are champions and fierce supporters of Life Kitchen.  Ryan has written a book of the same name in which he shares innovative recipes which bring the pleasure of eating back to people living with cancer.
