Tilly Bagel's Perfect Bite

Episode 4

jeudi 27 mars 2025Duration 51:25

Welcome back to The Perfect Bite podcast, your fusion of food and entrepreneurship.  Have you ever heard of a Chicago style bagel? Well, thanks to Tilly Bagel, now you can try them, and I'm telling you, they're coming for New York's crown. From pastry chef  Hannah Tillet-Banaszak and architect  Mike Banaszak, Tilly Bagel is continuing to grow its empire, kind of like the yeast in their beautiful bagels.

Prior to starting Tilly Bagel during the pandemic, Hannah was a sous pastry chef at Top Chef Stephanie Izard’s Girl & The Goat and Duck Duck Goat, along with Michelin-starred BOKA, while Mike was an acclaimed senior project architect at Solomon Cordwell Buenz. Hannah and Mike’s perfect Chicago pairing (hello, food and architecture!) led to a story of love, business, and delicious sourdough bagels. There always is a line at their South Loop storefront, and we can guarantee the same will be the case for their Fulton Market location, opening in Spring 2025.

Learn more about why Tilly Bagel became such a viral hit after their early days at the farmer’s market and how to sustainably grow a business in this space!

You can visit Tilly Bagel in Chicago, Illinois. Beat the rush by ordering ahead online!

Farmer Lee Jones's Perfect Bite

Episode 3

jeudi 20 mars 2025Duration 53:20

Welcome back to The Perfect Bite podcast, your fusion of food and entrepreneurship. This episode, I'm speaking with one of the hardest working entrepreneurs you'll ever meet. And no, he's not building the next tech unicorn. He's nourishing people around the world with his nutrient rich bites from The Chef's Garden and his infectious personality—it’s Farmer Lee Jones!

Farmer Lee heads up The Chef’s Garden, the Jones family-owned farm in Huron, Ohio, known for the last 40 years as the top source of the most flavorful and nutritious produce for renowned chefs around the world. Lee and his brother Bob Jr. took over the farm from dad Bob Sr., with regenerative farming practices resulting in produce with up to 300% the recommended nutrient levels by the USDA—they even have a lab onsite to test the biochemistry of the soil! Chefs from all over visit The Chef’s Garden’s Culinary Vegetable Institute to test new dishes and work with the most delicious produce you’ll be hard-pressed to find anywhere else.

Farmer Lee has been recognized by the James Beard Foundation, written The Chef’s Garden cookbook with his team, and now stars in The Chef’s Garden show on HOME.MADE.NATION—produced by the one and only Rachael Ray!

I had the best time speaking with Lee about the importance of taking care of our Earth, eating freshly, and how we can take care of each other and our planet for the future—as he says,  healthy soil, healthy vegetables, healthy people, healthy environment!

You can visit The Chef’s Garden, the Culinary Vegetable Institute, and the Farm Market in Huron, Ohio. You also can order your own produce boxes from The Chef’s Garden, shipping nationwide, along with your own copy of “The Chef’s Garden” cookbook

You can watch The Chef’s Garden on HOME.MADE.NATION or Hulu.

Chef Ed Porter's Perfect Bite

Episode 2

jeudi 13 mars 2025Duration 53:43

Welcome back to The Perfect Bite podcast, your fusion of food and entrepreneurship. Our guest this episode is a renaissance person of all kinds, from the plate, to the studio, to your screens. Chef Ed Porter is a fine-dining-trained chef who also is an accomplished hip hop artist, and now, a documentary film director with his newest film, “The Food That Fuels”. You might recognize Chef Ed from his stint on Netflix’s “Pressure Cooker” or Food Network’s “Guy’s Grocery Games”!

A born-and-bred New Yorker, Chef Ed infuses culture and intention into everything he does. We talk about his days at the famed, Michelin-starred Aquavit, and how he found his way to something that was completely his own, coining the term “bicoastal cuisine” when he moved out to the Bay Area. From there, Chef Ed’s passion for storytelling and finding the “why” at the heart of everything grew, and his two sides—chef and creative—finally combined into the work he does today.

Follow Chef Ed on social media @officialedporter. You can visit his website, officialedporter.com, to learn more about his many projects. Be sure to view the trailer for his documentary, “The Food That Fuels,” here

Franco Fubini's Perfect Bite

Episode 15

jeudi 12 juin 2025Duration 55:03

It's no secret our modern society demands convenience. And in the case of food that means what we want, when we want it—but at what cost? Today's guest is leading the flavor revolution, a call for us to go back to basics, to source the most delicious and nutritious produce.

Franco Fubini has been working on this mission for over 20 years with his company Natoora, which focuses on global capillary food supply chains to fix our food system so we can source the best produce for ourselves and for our planet. He’s even recently written a book on it all called “In Search of the Perfect Peach.”

I loved learning from Franco and I know you will too!

To learn more about Natoora and sign up for its services, visit www.natoora.com/en-US.

You can follow Natoora on Instagram @natoora and Franco Fubini @franconatoora

You can buy “In Search of The Perfect Peach” online and at major bookstores.

Lauren Culley's Perfect Bite

Episode 14

jeudi 5 juin 2025Duration 59:06

Here's a not-so-secret secret for you: I have a huge sweet tooth. Anytime and place that I can find a pastry that's made with love and care and safety for my food allergies is such a huge win.

I am so lucky that when we moved to Columbus last year, I not only found a mecca of pastries, but a modern and cozy spot of community that we visit on a weekly basis: Fox in the Snow. I sat down with owner of Fox in the Snow, Lauren Culley, to chat through her journey from publishing world to pastries, meeting and falling in love with her husband during the early days of Blue Bottle (who became her co-owner!), and how they’ve built third spaces throughout Columbus that are the perfect example of great food, great people, and great vibes. Lauren and Jeff bring a strong growth and founder mentality to Fox in the Snow, and I won’t be surprised when they start expanding outside the Columbus metro area.

You can visit Fox in the Snow at its locations throughout Columbus, including: Dublin, German Village, Italian Village, and New Albany. Visit www.foxinthesnow.com to learn more and pre-order a large order.

You can follow Fox in the Snow on Instagram at @foxinthesnowcafe

Science On Call's Perfect Bite

Episode 5

jeudi 3 avril 2025Duration 52:48

Welcome back to The Perfect Bite podcast, your fusion of food and entrepreneurship.Today’s guests are behind the tech that helps your favorite restaurants run smoothly. Software is at the base of any job these days, and that includes the food and bev industry. Science on Call is just a message away to make sure you can focus on food and customers, not in-the-moment tech failures—and they go way beyond sticking your device in rice!

I’m so happy I got to chat with my Science On Call friends, co-founders Luisa Castellanos and Andy Freivogel. They really are a dream team, 10 years of work together in the making. Both bring backgrounds not only in technology, but also the hospitality industry, making sure to infuse their software with the same empathy you get with someone face-to-face at your favorite restaurants. Each of them has their strengths, and they recognize this in their team of now over 30 employees. It may sound counterintuitive, but the Science On Call team is happiest when you can’t recognize their technology hard at work—only the smooth interactions between restaurants and guests.

Learn more about Science On Call at www.scienceoncall.com.

You can follow Science On Call on Instagram @scienceoncall or on LinkedIn

Christine Cikowski's Perfect Bite

Episode 13

jeudi 29 mai 2025Duration 52:51

Welcome back to The Perfect Bite podcast, your fusion of food and entrepreneurship. When I moved to Chicago post-graduation in the fall of 2013, I fell in love with what would become a Chicago institution before I ever tasted it: Honey Butter Fried Chicken. The name says everything you need! And then I finally ate it and really, really fell in love. HBFC is the perfect community spot, picnic basket filler, or eat on the couch staple. It's quality, comfort food made by equally quality folks.

I had the best time chatting with co-owner Christine Cikowski about her journey of falling in love with nature’s flavors at a young age, meeting her co-owner Josh Kulp at Kendall College, and their flourishing businesses of serving the best seasonal, smile-inducing bites, from the now 20-year-old Sunday Dinner Club, to the fated Honey Butter Fried Chicken, and now supporting a former sous chef through TriBecca’s Sandwich Shop. We didn’t know it at the time, but this lovely and hilarious conversation was 12 years in the making.

Make sure to visit Honey Butter Fried Chicken and TriBecca’s Sandwich Shop in the Avondale neighborhood of Chicago. You can sign up for the Sunday Dinner Club tasting series at www.sundaydinnerclub.com

You can follow Honey Butter Fried chicken on Instagram at @honeybutterchi; Sunday Dinner Club @sundaydinnerchi; TriBecca’s Sandwich Shop @tribeccassandwichshop; and Christine @christinecikowski.

Brett Brohl's Perfect Bite

Episode 12

jeudi 22 mai 2025Duration 46:20

Welcome back to The Perfect Bite podcast, your fusion of food and entrepreneurship. Over these first few episodes of The Perfect Bite, we've chatted with founders in the food space and how they've built their brands, but today we're looking at things from a new point of view: what it's like to be an investor to build their own fund in the food, restaurant and ag tech industry. I'm so excited for us to learn from today's guest Brett Brohl, managing partner of Bread and Butter Ventures. Brett went from being a multi-time startup founder to the founder of his own investment firm!

I really appreciate Brett and the B&B team’s perspective on how they’re investing in the food space. An undeniable fact is we all have to eat, and Brett and team are looking for founders who want to change the way we all eat for the better. It’s amazing how a combination of technology and working with Mother Earth could be our future!

Learn more about Brett’s entrepreneurial journey to becoming an investor, what he and the B&B team look for to help advance the future of food, and some tips on how to connect with investors if you are building something yourself.

To learn more about Bread & Butter Ventures, an early stage investment firm in the food and ag tech space, visit www.breadandbutterventures.com. You can even sign up for office hours with Brett and his team on the site!

You can connect with Brett and learn more about Bread & Butter Ventures on LinkedIn.

I also promised in the episode I’d include these really soothing videos of pizzas getting topped by a robot by XRobotics here. Enjoy!
