Almighty God, you have generously made known to man the mysteries of your life through Jesus Christ your Son in the Holy Spirit. Enlighten my mind to know these mysteries which your Church treasures and teaches.

Move my heart to love them and my will to live in accord with them. Give me the ability to teach this Faith to others without pride, without ostentation, and without personal gain.

Saint Charles Borromeo Marian Prayer for Holy Priests

O Holy Mother of God, pray for the priests
Your Son has chosen to serve the Church.
Help them by your intercession,
to be holy, zealous, and chaste.

Make them models of virtue
in the service of God’s people.
Help them to be prayerful in meditations,
effective in preaching, and enthusiastic
in the daily offering of the Holy Sacrifice of the Mass.
Help them to administer the sacraments with joy.

RECIPES FROM RITA: PERPETUAL COLANDER SALAD GARDEN

Find inexpensive colanders at thrift or dollar stores.

As far as what to grow, choices are endless. You can plant a single variety of greens or a mix. Let the little ones help you choose. Depending on the depth, you can also plant radishes and carrots. Or how about strawberries?

  1. Line a colander with coffee filters to keep soil in and allow good drainage. Or use a plastic baggy and poke holes in it for drainage
  2. Tape coffee filters/baggies if necessary to adhere to colander..
  3. Pour soil in 3/4 of the way up. Tamp down to smooth.
  4. Water gently but thoroughly.
  5. Sprinkle seeds evenly over surface. You can sprinkle on a good amount of seeds if using lettuces. If using carrots or radishes, do less since they need room to grow under the top soil.
  6. Pour a tiny bit of soil on top of seeds, just enough to cover.
  7. Tamp down gently.
  8. Add label and date. You can simply tape the seed packet on a popsicle stick.
  9. Place in sunny spot. Outside or in – depending upon weather. If outside and it’s raining a lot bring it in.
  10. Water as needed. The first few days you won’t have to water. Keep evenly moist but not soggy.
  11. Watch closely — in a week or so you’ll see all those tiny seeds sprouting.
  12. Some varieties of lettuces and radishes are ready to eat in 3 weeks
  13. For the lettuce garden, as the greens grow, cut at soil level. New growth appears in a few days.

Waste not want not!

Even if you don’t grow a colander garden, you can grow lettuce from cores! Best kinds to use are romaine and leaf lettuces.

Place a 1-2 inch lettuce stem in a shallow bowl with half an inch of water, ensuring the leaves remain above water. Set it on a sunny windowsill, changing the water every 2 days to prevent rot. Leaves will emerge in days.

This works for celery, too!

Lord my God, you gave me life and restored it when I lost it. Tell my soul that so longs for you what else you are besides what it has already understood, so that it may see you clearly. A Prayer for Faithful Citizenship

Gracious and loving God, let your Spirit be with us today. Hear our prayers and increase in us the will to follow your Son Jesus. RECIPES FROM RITA: CHICKEN SPAGHETTI

Ingredients

2 cups cooked chicken – either cook your own or use deli roasted
3 cups spaghetti, uncooked and broken into two-in. pieces
2 cans cream of mushroom soup
3-4 cups grated sharp cheddar cheese
1/4 cup finely diced red or other colored bell pepper
1/4 cup finely diced onion
1 (4-oz.) jar diced pimentos, drained – optional
2 cups chicken broth (can use broth you cooked chicken in or canned broth)
1 teaspoon or so Seasoned Salt
1/8 tsp. to 1/4 tsp. cayenne pepper
Salt and pepper, to taste

Instructions

Cook spaghetti in chicken broth until al dente. Do not overcook. (If you didn’t cook the chicken from scratch, use canned chicken broth to cook the spaghetti.

When spaghetti is cooked, combine with remaining ingredients except additional

1 cup extra sharp cheddar.

Place mixture in casserole pan and top with remaining 1 cup sharp cheddar.

Cover and freeze up to six months, cover and refrigerate up to two days, or bake immediately: 350 for 45 minutes until bubbly. (If the cheese on top starts to get too cooked, cover with foil).

Prayer to St. Joseph the Worker

Joseph, by the work of your hands and the sweat of your brow, you supported Jesus and Mary, and had the Son of God as your fellow worker.

Teach me to work as you did, with patience and perseverance, for God and for those whom God has given me to support. Teach me to see in my fellow workers the Christ who desires to be in them, that I may always be charitable and forbearing towards all.

Grant me to look upon work with the eyes of faith, so that I shall recognize in it my share in God’s own creative activity and in Christ’s work of our redemption, and so take pride in it.

When it is pleasant and productive, remind me to give thanks to God for it. And when it is burdensome, teach me to offer it to God, in reparation for my sins and the sins of the world. Amen.

Temper the affections of my soul so that I may neither love nor hate anything in a way that exceeds due proportions. Let me neither rejoice nor be saddened beyond the measure that is fitting and rational. Amen

RECIPES FROM RITA: MAPLE GRANOLA

Ingredients

3 cups old fashioned rolled oats – don’t use quick or instant since they will bake up too powdery

1-1/2 cups nuts of your choice – I used pecan, walnut and almond pieces

1/2 cup sesame seeds

1/2 cup sunflower seeds

1/4 cup salted butter – if using unsalted, add 1/2 teaspoon salt

1/2 cup pure maple syrup

1-2 teaspoons vanilla extract

1/3 cup firmly packed brown sugar – I used light brown

1 cup or so dried fruit 

Instructions

Preheat oven to 325.

Combine oats, nuts, seeds and, if using, salt.

In a saucepan, stir together butter, maple syrup, vanilla and sugar.

Bring to a gentle boil over medium heat, then lower to a simmer and cook about 5 minutes. That’s enough time for sugar to dissolve.

Pour maple syrup mixture over oats mixture and stir until well coated.

Spray a cookie sheet with cooking spray and spread mixture out in even layer.

Bake, stirring occasionally, about 20 minutes or so, until golden.

Remove and let cool. It will get crispier as it cools.
Stir in fruit.

Store in covered container at room temperature up to 2 weeks.

Makes about 6 cups.

RECIPES FROM RITA: HOT CROSS BUNS

Legend has it that if you make yeasted hot cross buns for Good Friday and hang one up in the kitchen, you’ll have success with anything you make with yeast all year ‘round.  

Let the kids help – they love making the cross while you explain the significance of Jesus dying on the cross for our sins.

Buns

1 package (1/4 ounce) active dry yeast, either regular or rapid rise

1 tablespoon plus 1/2 cup sugar, divided

1 cup warm milk (110° to 115°)

1/4 cup salted butter, softened (or use unsalted and add 1/4 teaspoon salt to recipe)

1 cup raisins – I sometimes use golden raisins

1 large egg

3-1/2 to 3-3/4 cups all-purpose flour (I wound up using 3-1/2 cups)

In mixer bowl, dissolve yeast and 1 tablespoon sugar in warm milk. Let stand for 5 minutes. It will foam up.  Add the butter, raisins, egg, salt  if you are using it, and remaining sugar; beat until smooth on medium.

Stir in enough flour to form a soft dough on low speed. Turn onto a very lightly floured surface (not too much flour or your buns will be tough); knead until smooth and elastic, about 5 minutes. I used the dough hook so avoided the hand kneading and extra flour needed.

 Place in a sprayed or buttered bowl, turning once to coat the top. Cover and let rise in a warm place until doubled, about 1 hour. Stick a finger in the dough gently, if the indentation remains, you’re good to go; if it springs back, let it raise a bit more.

Punch dough down. Turn again onto a lightly floured surface; divide into 12 portions. Shape each into a ball.

 Place in a sprayed or buttered 13-in. x 9-in. baking pan. Cover and let rise until doubled, about 45 minutes.

Bake at 375° for 25-30 minutes or until golden. Mine were done at 25 minutes. Makes 12 buns.

Frosting – after buns have cooled!

Whisk together:

2 cups confectioner’s sugar

1  tablespoon vanilla

4 tablespoons water or more if needed.

Make a cross shape on each bun.

St. Carlo Acutis, You knew the power of technology and used it to proclaim the truth of Jesus Christ. 

You also knew the dangers of technology and were intentional in your efforts to guard your heart against them. 

You used the gifts you had in this world to bless others through radical charity, through seeing Christ in the face of those ignored by society, through the witness of friendship, and through your natural aptitudes with technology. 

In our world so broken by abuses of technology and which so often ignores or attacks human dignity, please intercede for us to God the Father so we may see the human dignity of everyone we encounter and ask for guidance from the Lord whenever we may be tempted to violate that dignity in our online interactions.

RECIPES FROM RITA: CHEESE PIZZA IDEAS

SUNFLOWER PIZZA

Ingredients
1 can flaky biscuits, 10 oz.
Pizza sauce
Shake of garlic powder
Favorite pizza cheese – Italian blend is our favorite
Optional toppings: Chopped bell peppers, Mushrooms, Onions, Pepperoni, etc.

Instructions
Preheat oven to 400.
Separate dough into 10 biscuits.
Place 1 biscuit in center of cookie sheet lined with foil and sprayed. Arrange remaining biscuits in circle, edges slightly overlapping, around center biscuit. Gently press with your had into a 10” circle. This makes your sunflower.
Spread a thin layer of sauce on top. Sprinkle with your choice of toppings.
End with topping of more cheese. Bake 12-15 minutes. To serve, pull apart.

NO COOK CHICAGO STYLE PIZZA SAUCE

This is from a listener from a while ago. Really good!
Ingredients
6 oz tomato paste
14.5 oz can tomato sauce
Dried oregano – start with 1 tablespoon and go from there
2 tablespoons Italian seasoning
1/2 teaspoon each: garlic powder and onion powder
1-1/2 teaspoons garlic salt
Black pepper to taste
1 teaspoon sugar (may not need – you decide if sauce tastes too “acidic”
Instructions
Whisk tomato paste and sauce together.
Add rest of the ingredients and whisk to combine. Let sit 10 minutes, then taste and adjust seasonings.

UPSIDE DOWN PIZZAS

Trying to sneak more vegetables into the little ones’ diets? Or how about those picky eaters in your family? When you put good vegetables into a pizza, somehow they become more appealing. Here’s a favorite family recipe. A good Lenten dish if you leave out the meat.

Ingredients
For each pizza you’ll need:
1 small nonstick skillet
1 pita bread, 8”
1 tablespoon each or to taste:
Pepperoni slices, quartered if desired (opt)
Diced bell pepper, onion or green onion, tomatoes or whatever!
Sliced mushrooms (opt)
Shake of Italian seasoning and garlic powder
1/4 cup or so favorite melting cheese
1 tablespoon Parmesan

Instructions
Put pepperoni slices in a 9” nonstick skillet. If not using meat, drizzle a little olive oil in the bottom of the pan.
Add everything except cheeses. Cook for a minute or two and then add cheese. Let cheese start to melt – this is the “glue” that holds the pizza together. Place a pita on top and press. Rotate back and forth and in a circular motion to combine ingredients. Careful here – keep hands on top of pita.

Invert a flat plate over pan. Holding pan and plate firmly together, flip pizza onto plate. Top with Parmesan.

RECIPES FROM RITA: FASTING BREADS

Ingredients:

3 1/2 cups Whole Wheat Flour
2 1/2 cups All Purpose Flour
1 1/2 tsp. Salt
1 Tbs. Sugar
4 1/2 tsp Active Dry Yeast
2 cups Luke Warm Water
1/2 cup 100% Pure Maple Syrup or honey
1/2 cup Virgin Olive Oil
1 tsp. Holy Water
1 cup Oats – soaked in 1/2 cup hot water for 2 minutes
1 cup Pecan or Walnut pieces – broken and skillet toasted 2 min
1 cup Dried Cherries or Raisins – soaked 5 min in 1/4 cup hot water

Directions:

1. Combine the first three dry ingredients in a large mixing bowl. Mix well with a whisk.

2. Clear a small area in the center of the dry blend.

3. Add sugar, dry yeast, and the 2 cups of warm water. Let stand for 3 minutes until yeast proofs and forms bubbles. Combine with flour mixture and liquid. This will be thick but more liquid comes later.

4. Add maple syrup, olive oil and holy water. Stir mixture until well blended.

5. Add walnuts and/or pecans and raisins and/or cherries with their liquid.

6. Add soaked oats to the flour mixture.

7. Blend everything together in one bowl.

8. Turn out onto a floured board and knead by hand for 10-12 minutes adding more flour as needed to make a moderately stiff dough that is smooth and elastic. Knead the dough by flattening somewhat and fold-in from the outside towards the center. Press down hard on the center. Rotate the bowl and repeat the process until smooth and elastic and forma “ball”

9. Return the “ball” to the mixing bowl, drizzle with olive oil, cover and let rise 1 hour.

10. Remove to a floured board and kneed several more times as above. Cut into three equal pieces.

11. Place each piece into a loaf pan coated on all sides with olive oil. Drizzle loaf again with olive oil, cover and let rise for another hour. Olive oil produces a tasty crust.

12. Slash loaf tops and bake in the middle of a preheated 375 degree oven for 40 minutes or until brown on top and bottom. Loaf should sound hollow when tapped.

13. Remove bread from pans and cool on a rack.

RECIPES FROM RITA: VEGETARIAN STUFFED SHELLS

Ingredients

20 jumbo pasta shells, cooked until 75% done
Filling:
3-4 cups marinara sauce – I used 4
15 oz ricotta cheese – I used full fat
1/2 cup Parmesan cheese
3-4 cups shredded mozzarella cheese – 2 cups in mixture and 1 or 2 for top
1 teaspoon garlic powder or 1 nice clove garlic, minced real fine
1/4 cup parsley, plus more to garnish or chopped frozen, thawed spinach, a cup, microwaved, then drained real well (remove all moisture) – both are optional, but. nice
Salt and pepper to taste
1 large egg, lightly beaten

Instructions

Preheat oven to 375.
After shells are cooked, drain and then pour cold water over them in the pot. This keeps them from sticking.
Spray a 9×13 pan. Pour sauce in bottom.
Mix together ricotta, Parmesan, 2 cups mozzarella, garlic, parsley or spinach.
Add salt and pepper to taste, then mix in the egg.
Remove shells from cold water, drain and then fill each shell with cheese mixture. I use an ice cream scoop.
Sprinkle with rest of mozzarella.
Cover with foil (spray underside to keep cheese from sticking).
Bake 25-30 minutes until done. Remove foil and bake a bit more if cheese needs to melt more.

RECIPES FROM RITA: LENTEN STEW

INGREDIENTS:

1/3 cup olive oil plus more for drizzling
1 large yellow or white onion, diced fine
4 nice cloves garlic, minced
1 piece ginger, 2”, unpeeled, finely chopped – a very generous tablespoon minced fresh ginger or to taste
1 to 1-1/2 teaspoons turmeric
1/4 to 1/2 teaspoon red pepper flakes or to taste
2 cans, 14.5 oz, chickpeas, drained and rinsed if you like (I don’t rinse them)
2 cans full fat coconut milk, not sweetened coconut cream
1 can vegetable broth plus enough water to make 2 cups (or chicken broth for non-vegetarian) or more to taste
Salt and pepper to taste
Several handfuls fresh, uncooked greens, or frozen greens, microwaved a bit before adding

OPTIONAL TOPPINGS/ADD-INS:

Basmati, Jasmine or your favorite rice
Yogurt
Tomatoes
Mint for garnish or cilantro or parsley
Pita, lavash or favorite flat bread (brush with olive oil, sprinkle with a little zaatar and pop under the broiler or warm up in the oven)

INSTRUCTIONS:

Add olive oil to large skillet over medium heat, and add onion, then garlic and ginger. Adding the onion first cushions the garlic and ginger and helps prevent them from burning. Cook until onion softens a bit.
Stir in turmeric, red pepper and chickpeas and cook until chickpeas get a little crisp. They’ll just start to break down a bit. Season with salt.
Smoosh the chickpeas down a bit to release some starch. If you like, remove 1/2 cup or so for garnish.
Stir in coconut milk and broth, and season to taste.
Bring to a simmer and scrape up brown bits. Cook until stew thickens to your liking. Mine took about 25 minutes.
Stir in greens. Adjust seasonings.
Serve alongside rice. Drizzle with olive oil, add a dollop of yogurt and tomato wedges if you like, and reserved chickpeas if you saved some.

RECIPES FROM RITA: FRIED FISH AND COLE SLAW

FISH FRY FRIED FISH (Like they serve at Lenten fish fries)

Ingredients

1 cup all-purpose flour

1/2 cup milk – the proteins in milk help batter adhere and helps browning

1/2 cup very cold water – helps with crispiness

2 tablespoons baking powder

1 teaspoon salt OR 1/2 teaspoon salt and 1/2 teaspoon or so of your favorite fish seasoning 

Instructions
Whisk flour, milk, water, baking powder, and salt/seasonings together until smooth.
Heat oil in a deep fryer or deep heavy pan to 365 degrees.
Pat fish fillets dry with paper towels to help ensure batter sticks – I do this on crumpled paper towels. 

Dip fish fillets into batter to coat and let excess drip off.
Lower fillets, one at a time, into hot oil. Don’t crowd pan. Turn once, until cooked through and golden brown, about 2 minutes per side.
Drain fried fish fillets on a wire rack over a paper-towel lined pan. (Don’t dry on paper towel alone – that creates steam).

OLD FASHIONED COLE SLAW

Ingredients

1 small cabbage shredded and chopped (about 6 cups) – can use red & green or equivalent bagged slaw mix

1 large carrot shredded 

1 cup real mayonnaise

1/3 cup sugar

2 tablespoon apple cider vinegar

Lemon juice to taste – not too much, a teaspoon or so

Salt and pepper to taste

Instructions

Combine mayonnaise, sugar, vinegar, lemon juice, salt, and pepper. 

Pour over cabbage and carrots. Mix well.

Refrigerate until ready to serve.
