In this episode I talk to Chris from Pastore Brewing & Blending of Waterbeach, just north of Cambridge, in the East of England. They produce wonderful core beers based on a classic European style, alongside more complicated beers, aged in barrels that might have fruit or even grape skins added. We discuss where it all started, and about some of the processes they use to produce their mixed ferm beers, the breweries influence and knowledge of historical European beer styles, and how they balance production of their different beers. For this episode we speak to James & Helen of Wilderness Brewing, out of Welshpool, mid Wales. Like many of the best stories of people who start breweries or are producers of mixed ferm beers, itâs one of quite simple necessity and a love for the physical job at hand. This is how James came to start Wilderness Brewing, and as it grew he needed help along the way. In comes Helen to help guide the passion and vision.
