Today’s episode is a little different. There's no guest, instead, I will be presenting the third of a new series of episodes to come in which I bring the life story of a chef or person that has influenced our lives through a mutual love of French cuisine. This story is about a woman who went from the farm to the kitchen and would be known as the mother of French cuisine. Eugénie Brazier is one of the famous mere lyonanise and as such was nicknamed mere brazier. Eugénie was the first woman to get three michelin stars for a restaurant. In fact she got six at the same time with three stars for both her restaurants. Some of Eugenies students were Paul Bocuse and Bernard Pacaud, her legacy though to women in the kitchen is something that still continues today. This is her story.

This story is about a man from humble beginnings who became the founder of haute cuisine Antoine Carême. Marie-Antoine Carême is a French pastry chefs who was often known like Auguste Escoffier as the king of chefs and the chef of kings. He’s possibly the first person to gain the title of chef not cook and was one of the founders of haute cuisine. His grandiose style was sought after by both the royal courts and the nouveau riche of Paris. Antonin Carême is said to be the first celebrity chef. This is his story.

This first story is about a man that could be described as the father of French food. George Auguste Escoffier. Auguste Escoffier has been described as The King of chefs and the Chef of Kings. His legacy to French cuisine is still enduring today and his cookbooks are indispensable to modern French chefs and cooks. He’s credited amongst other things as raising working in the kitchen from a so-called laborer's job to that of an artist and is the man behind the five French mother sauces. Or are versions of one. Ruby Boukabou is an Australian tap dancer, author of guidebooks on Paris’ architecture and art as well as the proud daughter of French restaurant owner parents. In this episode of "Fabulously Delicious, the French Food Podcast," we celebrate the life and legacy of Gaston Lenôtre, the legendary French pastry chef. Born on May 28, 1920, in the picturesque region of Normandy, Lenôtre's early years were steeped in the rich culinary traditions of France. Influenced by his mother's work as a pastry chef for French nobility and his father's role as a chef saucier at Paris's Grand Hotel, Lenôtre developed a passion for pastry that would define his illustrious career. After an apprenticeship in Bernay, where he mastered the art of millefeuilles and éclairs, Lenôtre's journey to culinary stardom began in earnest, eventually leading him to Paris where his exquisite creations won the hearts of high society.
Gaston Lenôtre's innovative spirit and commitment to excellence transformed the world of pastry. His insistence on using the finest ingredients, particularly butter from Normandy's lush pastures, became his signature. Lenôtre's creations, such as the famous "Succès" and the elegant Opera cake, showcased his ability to elevate traditional recipes to new heights. His meticulous approach to pastry-making, likened to architecture in its precision, set new standards in the culinary arts. Lenôtre's influence extended beyond his delectable desserts; he opened a cooking school in Plaisir, Yvelines, in 1971, where renowned chefs like Pierre Hermé and Alain Ducasse honed their skills, perpetuating his legacy of culinary excellence.
Lenôtre's impact on French cuisine was profound, with ventures that expanded his reach globally. From opening Maison Lenôtre shops in Berlin, Japan, and the Middle East, to co-founding Les Chefs de France at Walt Disney World's Epcot Center, Lenôtre brought French haute cuisine to an international audience. His innovation in catering, leveraging advancements in freezing technology, allowed him to serve gourmet creations at grand events worldwide. Despite setbacks, such as the closure of his New York venture, Lenôtre's resilience and creativity ensured his continued success. Named Pastry Chef of the Century and Le Gentleman Pâtissier, Gaston Lenôtre's legacy endures through his timeless recipes, his family's continued involvement in his business, and the countless chefs he mentored, forever shaping the world of pastry.

Today, we delve into the world of Mariage Frères, one of France's most prestigious tea brands. The company's history dates back to the 17th century when King Louis XIV encouraged exploration for exotic goods. Nicolas and Pierre Mariage's voyages for the royal court laid the groundwork for their family's involvement in the tea trade. In 1854, Henri and Edouard Mariage officially founded Mariage Frères, and for 130 years, the family maintained a wholesale tea business, introducing innovations like the tea-flavored Chocolat des Mandarins.
In 1976, the company was sold to Kitti Cha Sangmanee, who opened the first retail tea house in 1983 on Rue du Bourg-Tibourg, Paris. Today, Mariage Frères operates ten tearooms in Paris and additional locations in the UK, Germany, and Japan. They offer over 650 blends of tea, some exclusive to their Parisian stores, and their original tea house includes a museum dedicated to the history of tea.
