#105 - Nita Part 2
29 Apr 2019
00:26:24
We went to the Nita brewery to sit with Andy and chat about the new Ottawa Beer Collective Spring Box.
After our chat about the Spring Box we got to talking about Nita itself and their upcoming plans. This is part 2 of the interview with Andy.
The Sping Box is a 12 pack of beers from breweries in the Ottawa area collected in one box and available for delivery from Operation Come Home or Canada Post. As well as in local Beer Stores in Ottawa and Toronto.
If you’re a brewery and want to be included reach out to Andy at Nita.

613BeerCast #39 - Sam Corbeil and Dimitri Van Kampen

00:38:52
Sam Corbeil is the co-founder and brewmaster of Sawdust City Brewing Company in Gravenhurst, Ontario. Dimitri Van Kampen, Founder of Spearhead Brewing Company, and currently branching out with new projects (one that he talks about in this podcast). Beau's All Natural Brewing Company started International Gruit Day (celebrated on February 1) in 2013 and has become one of the leading breweries brewing the style and championing its resurgence. In this episode, Katy and Chuck sample 4 of Beau's gruit offerings.
613BeerCast #37 - Marc-André Chainey from Waller St. Brewing
23 Jan 2017
01:22:20
Marc-André Chainey is the mad scientist behind Waller St. Brewing. He is known for speaking passionately about the brewing process, giving extremely detailed (and interesting) tours of his heritage building brewery and wearing suspenders. Waller St.'s flagships are: Speakeasy Red, Moonlight Porter, Bootleg Blonde and Blind Pig IPA.
613BeerCast #36 - Andy Nita from Nita Beer Company
13 Jan 2017
01:14:47
Andy Nita is Chief Beer Officer of the Nita Beer Company, a brewery that opened in January of 2015 in the Colonnade Business Park of Ottawa. Their flagship beers include 5 Fingers and Ten12.
613BeerCast #34 - Dan Beaudoin from Brasserie Étienne Brûlé
05 Dec 2016
00:53:03
Katy (@klwatts) is joined by Chuck Thibert (@varxint) and Dan Beaudoin to chat about Brasserie Étienne Brûlé (@brasserieeb) and what made him make the big move from Toronto to Embrun to brew beer! Show Notes:
Just in case you need more information about who Étienne Brûlé is (isn't it nice that you get a history lesson with your beer?).
I will admit I have a domain registering addiction and it took all of my will power not to stop the podcast and register those domains.
Ecocert is a Canadian organization that certifies organic producers, processors and distributors. It's pretty rigorous; to be certified you have to be audited yearly and there are surprise audits.
Dan is putting me through my paces this episode. Biofine Clear is a fining agent that helps clarify beer. Unlike gelatin or isinglass (made of fish bladders), Biofine Clear is vegan friendly. If you are into reading about fining agents and whether its vegan-ness has any affect on taste (spoiler: it doesn't) you can read this interesting exbeeriment.
The Windsor is a local tavern in Vankleek Hill. Well known to be a hangout for the Beau's crowd and host to great bands and even better after parties.
There website now (kind of) works, although it's mostly a showcase of instagram photos.
613BeerCast #33 - Shane Clark and Rob McIsaac from Beyond the Pale Brewing Company
28 Nov 2016
00:46:59
You have no idea..
Katy (@klwatts) invited Shane and Rob from Beyond the Pale Brewing Company (@btpbrewing) to her apartment to record a podcast. Little did she know what she was getting into.. Show Notes:
I sometimes wonder how I get all of these people to come into my apartment. Oh right, beer.
A beer a day for 41 years - that's job security.
It's true, the hotel I stayed at in Mexico did blow up.
Gainsbourg is a brewpub in Gatineau that JB used to brew at. It was known to serve some fantastic beers. I've heard mixed reviews recently.
But anyway, murals at breweries are a thing I guess (although these are from breweries who are actually open).
Sour beers are trending, along with Beyond the Pale's Hamilton location going a bit funky Ottawa has a new brewer that's exclusively brewing sour (Small Pony Barrel Works).
Katy, why didn't you take an Uber or a taxi to Orleans? Well, this is not a high budget podcast. And, how else was I suppose to get that sweet, sweet bus background noise recorded?
I believe this is the brewery that Marc is referring to in Navan: Draft Horse Brewery.
There were a lot of politicians drinking beer (it was a good beer to drink).
"This One", a California Common is only available for a short few months - I'd grab it while you can!
This may be the first time French has appeared on the podcast.
Yes, Marc's beer is called Kelly BIPA (oh, homebrewer's and their beer names). This beer appeared on the Beer Judge Certification Program (BJCP) test that Matt Petitpas took.
Little do you know, listener, I have edited out a whole chunk of the podcast where Ian and April were making fun of a dishwasher smell that was coming off my tasting glasses. Those beer drinkers! So persnickety!
Just like wine, brewshops can offer a "ferment on premise" option for beer (although it seems less popular).
Perth Brewery is known as a brewery (who offers gluten free beer options), but was originally a homebrew shop that offered (offers?) package your own/ferment on site beer.
Brewers love to peel things don't they (Whiprsnapr with ginger, Dominion City with oranges, Beyond the Pale with grapefruits)?
Something I glazed over, but deserves more thought. Large breweries see the LCBO/Beer Store as a large source of revenue. Small breweries seem to see it as almost a loss leader or marketing expense to get people into the brewery to buy direct from them.
We're talking about their Maple Cream Ale that got infected and was put on tap at Local Lansdowne and advertised as a sour beer although it isn't.
We went to the Nita brewery to sit with Andy and chat about the new Ottawa Beer Collective Spring Box. A 12 pack of beers from breweries in the Ottawa area collected in one box and available for delivery from Operation Come Home or Canada Post. As well as in local Beer Stores in Ottawa and Toronto.
If you’re a brewery and want to be included reach out to Andy at Nita.

Episode 29 - Free My Booze!
27 Oct 2016
01:01:04
Yeah!
Katy (@klwatts) is joined by Chuck Thibert (@varxint) and Grant Dingwall of FreeMyBooze.ca (@FreeMyBooze) to chat about the privatization of the LCBO. Show Notes:
Support the podcast by becoming a 613BeerCast Patreon - even a donation of $1 a month helps keep the podcast going.
Katy (@klwatts) is joined by April (@AThibert) and Chuck Thibert (@varxint) to talk about the Beau's All Natural Brewing Company Octoberfest Mix Pack and their annual Octoberfest-themed festival in Vankleek Hill. Show Notes:
A little bit early for us, a little bit late for you.
The Farm Table series has taken over some of our favourite Beau's seasonals including Night Marzen and Beaver River IPEh. The series is inspired by tradition and brewed to style.
I'll admit I felt a bit weird not doing the bike ride this year. I think I'll return to it next year (even though I'll probably ride alone so I can look at the tractors and cows).
How much bigger can Oktoberfest get?
April likes licking root cellars.
Can we agree - hurray for the introduction of hops in beer?
Episode 27 - John and Kathy vanDyk from Covered Bridge Brewing Company
23 Sep 2016
00:50:12
It's like the Lumbersexual is following me with his beard.
Katy (@klwatts) is joined by John and Kathy vanDyk from Covered Bridge Brewing Company (@CBBeer) to talk about how John started brewing, how his hobby turned into a business, winning awards and of course, the beer they brew.
Show Notes:
Is Kathy going to a new brewery? The drama!
John isn't the only brewer to get started with the Mr. Beer kit.
Katy (@klwatts) is joined by new friends (who she met through the podcast!) Emily (@ercbrown) and Jamie (@jamiemasse) to drink some mostly old beers.
Show Notes:
Does anyone even care about episodes numbers?
Yeah, the dry hopping was a fail.
Halo Brewery is a Toronto-area brewery that opened in May by three homebrewers.
I can't identify with the 0-80 mentality at all (/sarcasm).
I have a real hard time associating beer flavours with other descriptors. I'm getting better over time, but it's a real skill to be able to describe a flavour your tasting.
What is this mystery bottle of beer? Become a Patreon of 613BeerCast and listen in to find out!
How do I get 613BeerCast done? Well... I carve out time whenever I have it (cough).
Business for Punks - can't say I recommend all of their business advice, but it's an interesting insight into how BrewDog runs their business.
Katy (@klwatts) is joined by Amanda Barriage and Sasha Dunfield (@OttBeerEvents) to taste different non-alcoholic beers, talk about how they are made and if it's a growing market segment.
Amanda is right, NA beer can be used as a sports drink!
Really, the trend here is that we miss hops.
AB-InBev believes there's a trend towards people drinking NA beer, what do you think?
It's funny. I normally drink NA beer out of the can/bottle, but drinking them out of the 613BeerCast tasting glasses gave me completely different flavours.
NA beer sampling doesn't take a long time because there isn't a lot of complexity or flavour.
If I'm going to be a thumb model, I'm going to need to get manicures!
Katy (@klwatts) is joined by Chuck (@varxint) and April (@AThibert) to chat about social media and how breweries are using it (or not using it) to promote their brewery and build a community.
Show Notes:
We're not social media experts, but we play them on podcasts.
How does beer get canned (weird, the beer they're canning in that video is Farmer Daughter from a brewery that isn't Whitewater)? Bonus video - from the can's perspective.
If I wanted to smell like beer I would buy the perfume!
What is your definition of social media? Tweet it to me - @613Beer!
I tried going on the Flying Monkey's website to get more information on Mythology for the show notes and couldn't deal with the music. I will let you research this beer yourself.
Beer Menus is a great tool to tell brewery and restaurant/bar customers what beers are available in what format/price. Best part? Beer fans can follow specific breweries/bars for updates (example: Beyond the Pale).
ROI on social media can be calculated with aggressive use of goals, analytical tools and a smart community manager. That said, it would still be hard to put a rate of return on a social media investment.
The Story of Three Fired Guys (3FG): How Steam Whistle Was Founded (super fun video with photos and videos of the founders/brewery before they became Steam Whistle).
The Ontario Craft Brewers is a trade association representing brewers in Ontario (those who have memberships).
In our continuing small bite episodes, April comes up with some questions to ask Chuck and get quick opinions on recent happenings in beer. This week, unions in brewing.
Did you know what a Streif is? Apparently: "The Streif is the most spectacular downhill ski race track in the world. It brings the best skiers from every corner of the world together in an almost gladiator style fight for the honour of victory on the Streif."
Beer List:
Hefeweizen - Kichesippi Beer Company
Sweet Rhubarb of Mine Saison! - Whiprsnapr Brewing Company
Showboat Paddle SMaSH - Covered Bridge Brewing Company
Drink one of these and then you'll want MORE! More passion, more flavour, more personality in your beer.
Katy (@klwatts) is joined by Brian (@bryehndotnet) and Chuck (@varxint) to talk about the beers that got them into craft beer - the craft beer gateway beers.
I'm still drinking the Molson Export Ale - it's growing on me!
Matt Petitpas (@mvp1331) and Brian Papineau (@bryehndotnet) join Katy to talk about their favourite macro beer and if being macro really matters.
“I realized both of you were grimacing through that glass, but there’s an empty dump bucket over there.” — Matt Petitpas “Without macro beer we wouldn’t have micro beer.” — Brian Papineau
Episode 13 - Paul Meek from Kichesippi Beer Company
14 May 2016
00:51:42
This is a very old photo of Kichesippi Beer Company.
Kichesippi Beer Company just celebrated their 6th Anniversary! Katy (@klwatts) and April (@AThibert) sat down with Paul Meek (@paulmeek613), Co-Owner of Kichesippi Beer Company and chatted about his experiences in beer.
Show Notes:
One of Paul's first craft beer experiences was Granite Brewery in Halifax (yes, there is a Granite Brewery in Toronto that was opened by a sibling of the original Halifax brewery).
The Alexander Keith's 'tourism' brewery is the original brewery where actors take you through a tour in period costumes and do a historical reenactment - it's actually pretty fun.
Katy is joined by April Thibert (@AThibert) and Chuck Thibert (@varxint) to talk about her recent trip to Southeast Asia and enjoy some drinkable souvenirs.

#101 - Milkshake Stouts
21 Jan 2019
00:39:01
We’ve prepped a couple 6-packs that were released in 2018. Due to time pressures we are only getting to them now. This week we try out the Rochester Mills Milkshake Stout 6-Pack. Apparently this was part of a larger 12 pack offering. We’re not sure if the full 12 got to the LCBO.
