Scott Fulton is a longevity educator and positive-aging innovator whose work sits at the intersection of health and housing. He teaches adult learners about healthspan and aging (Northwestern, UVA, University of Delaware), created the MEDAC system (Mind, Environment, Diet, Activity, Community), is a member of the American College of Lifestyle Medicine and the True Health Initiative Council, and served as President of the National Aging in Place Council. He and his wife live in Charlottesville, VA, in a demonstration home designed for optimal aging.

Dr. Joe Jacko is a physician specializing in internal medicine, sports and regenerative medicine, preventive medicine, and longevity science. He earned his BA in Biology from Wittenberg University and his MD from The Ohio State University College of Medicine, followed by an Internal Medicine Residency at Mount Carmel Medical Center and a Sports Medicine Fellowship at the Hughston Orthopaedic Clinic.

04: Sally K. Norton: Beware of the Toxins in Your "Superfoods"

In today's conversation, I speak with Sally Norton, a nutritionist with a unique specialty— warning us that "healthy" eating, and so-called superfoods, can make us sick. Like most of us, I grew up with, and have an ingrained belief, that fruits and vegetables are good and essential to a healthy diet. Although I knew that plant toxins like phytates and oxalates in excess could cause mineral deficiencies, kidney stones and gout, I had not considered the health burden that may be imposed on individuals and society consuming a plant only diet. Popular foods such as spinach, sweet potatoes, chocolate, and almonds contain large amounts of naturally occurring toxins called oxalate. Health research and educator, Sally K. Norton, MPH, studies the science of oxalates, and how our healthy diets may ironically be undermining our health.
Sally K. Norton, MPH, earned her nutrition degree from Cornell University. By sharing her own experience and knowledge of oxalates, she has helped many people improve their health and recover from serious illnesses, chronic pain, kidney problems, osteopenia, and chronic infections by making simple changes to their diet.
