Scott Fulton is a longevity educator and positive-aging innovator whose work sits at the intersection of health and housing. He teaches adult learners about healthspan and aging (Northwestern, UVA, University of Delaware), created the MEDAC system (Mind, Environment, Diet, Activity, Community), is a member of the American College of Lifestyle Medicine and the True Health Initiative Council, and served as President of the National Aging in Place Council. He and his wife live in Charlottesville, VA, in a demonstration home designed for optimal aging.

04: Sally K. Norton: Beware of the Toxins in Your "Superfoods"09 Oct 202500:39:55

In today's conversation, I speak with Sally Norton,  a nutritionist with a unique specialty— warning us that "healthy" eating, and so-called superfoods, can make us sick.  Like most of us, I grew up with, and have an ingrained belief, that fruits and vegetables are good and essential to a healthy diet. Although I knew that plant toxins like phytates and oxalates in excess could cause mineral deficiencies, kidney stones and gout, I had not considered the health burden that may be imposed on individuals and society consuming a plant only diet. Popular foods such as spinach, sweet potatoes, chocolate, and almonds contain large amounts of naturally occurring toxins called oxalate.  Health research and educator, Sally K. Norton, MPH, studies the science of oxalates, and how our healthy diets may ironically be undermining our health. 
Sally K. Norton, MPH, earned her nutrition degree from Cornell University. By sharing her own experience and knowledge of oxalates, she has helped many people improve their health and recover from serious illnesses, chronic pain, kidney problems, osteopenia, and chronic infections by making simple changes to their diet.

Speaker Bio:
A Harvard grad in engineering, Steven worked in Japan for 8 years - as the only American in a Hitachi R&D campus among 6,500 Japanese.  He was mentored for 13 years by KAATSU inventor Dr. Yoshiaki Sato and a team of cardiologists at The University of Tokyo Hospital, as part of the 22nd Century Medical Project. Today, Steven has taught KAATSU applications and benefits to thousands including Navy SEALs and Olympic and Paralympic gold medalists as well as people in their 80's and 90's, quadriplegics, amputees, and individuals from all walks of life. Steven  introduced KAATSU to the Department of Defense, NASA, dozens of NFL, NBA, MLB, NHL, and MLS teams, and over 80 universities.

 Prior to his time in Japan, Steven was an NCAA Division I water polo player and swimmer, a Guinness World Record holder, an inductee in the International Marathon Swimming Hall of Fame and the Ice Swimming Hall of Fame, and he received the Poseidon Award from the International Swimming Hall of Fame. He coached the USA Swimming national team at nine international competitions, including four world championships, served as an NBC commentator at the 2008 Beijing Olympics, and founded WOWSA, the World Open Water Swimming Association.

Now it appears that it might play a major role in protecting key antioxidants in the body.

Today's Featured Expert is scientist and entrepreneur, Chris Burres. Chris has an extensive background in a diverse range of areas including Mechanical Engineering,  Oil and Gas Explosives, Comedy Improv Artist, and Competitive Soccer. In 1991 he founded the first company to deliver carbon nano materials and two years later, he earned his B.S. in Mechanical Engineering from the University of Houston.

Anne has been a health communications consultant to a wide variety of clients, and won more than a dozen national awards for her book. After reversing her own pre-diabetes through therapeutic carbohydrate restriction, she has written extensively on the role of personalized therapeutic nutrition to address chronic conditions. She has received her professional certification in low carb nutrition. Larry has served on a number of boards, including the National Advertising Review Board, the Huntsman program in international studies at the University of Pennsylvania, the Eye Research Institute of Canada, and has chaired the Canadian Glaucoma Research Society. Coach Allan is a National Academy of Sports Medicine (NASM) Certified Personal Trainer, a Precision Nutrition Level 1 Coach, and a Functional Aging Institute (FAI) Certified Functional Aging Specialist. He went on to earn specialties in Fitness Nutrition, Corrective Exercise and Behavior Change.

Dr. Gillian Lockitch is an author, researcher, teacher, journalist and international speaker. She is a dual certified Specialist physician and medical professor emerita at the University of British Columbia. During her 25 year academic medical practice, her research focused on medical biochemistry, nutrition and genetics. She authored 57 peer reviewed publications, 14 book chapters, and spoke at international conferences throughout Asia, Europe and North America. She received the 1998 YWCA Woman of Distinction award for Science and Technology. On retirement she switched her focus from science to the arts, and established a second career writing online about theater, food, wine and the arts. She writes travel blogs on her ballroom dance cruising around the world. A chance encounter on an assignment to review a health and wellness trade show sent her career on a third trajectory when she encountered a company with an innovative genetic science-based focus on health and beauty, promoting healthy aging through applied epigenetics. After extensive research into the scientific, financial and philanthropic practices of the company, she launched her third career as a network entrepreneur, helping people to age youthfully from both inside out and outside in.
