Molly Wilkinson is a pastry chef trained at Le Cordon Bleu who left roles working in pastry shops in the USA to teach us pastry in her fabulous Versailles kitchen. That’s why I like to call Molly the princess of pastry. Today’s topic on Fabulously Delicious is one that Molly is pretty much an expert on. Molly told me when she was working in Patisseries she would be making thousands of macarons a day. Amazing! So we learn from Molly what is a macaron and what the difference between a macaron and a macaroon is. Albert Roux, born on October 8, 1935, in the picturesque village of Semur-en-Brionnais, France, was destined to become one of the most influential figures in modern gastronomy. Raised in a family of charcutiers, his passion for food developed early despite the challenges his family faced, including the loss of their business. After moving to Paris, Albert's godfather, a chef for the Duchess of Windsor, introduced him to haute cuisine, setting the stage for his legendary career. His culinary journey took him from Paris to the elite households of England, where he honed his craft and gained the skills that would later revolutionize British dining. In 1967, Albert Roux, alongside his brother Michel, opened Le Gavroche in London, a restaurant that would forever change the UK's culinary landscape. Le Gavroche became the first restaurant in the UK to earn a Michelin star in 1974, and by 1982, it had achieved three Michelin stars, a remarkable accomplishment. Throughout his career, Albert mentored some of the world’s most renowned chefs, including Gordon Ramsay and Marco Pierre White, earning a reputation as a visionary who could spot and nurture talent. His influence extended beyond fine dining as he ventured into charcuterie, catering, and even hotel management, solidifying his place as a culinary innovator. Albert’s legacy goes beyond his restaurants. In 1984, he co-founded the prestigious Roux Scholarship, a competition that continues to shape the careers of young chefs in the UK. Additionally, his work with the Clink association, which provides culinary training to prisoners, highlighted his commitment to using food as a force for good. Albert Roux’s contributions to the culinary world have left an indelible mark, making him a true pioneer in both French and British cuisine. I’ve released my first-ever book. Paris A Fabulous Food Guide to the World's Most delicious city is my food guide to Paris. This is a book years in the making and comes from my experiences in Paris from living there and eating through the city for you.  So what’s in the book, well it’s a food guide so of course there are recommendations for places to eat. In each place in the book I’ve eaten at, none have given a free meal or money to be in the book. They are all my recommendations based on the food I ate their, service, atmosphere, and above all their fabulousness because we all know that my motto is whatever you do, do it fabulously and they all certainly do.  There are 379 recommendations, 17 boulangeries, 28 cafes, 11 chocolate shops, 13 Fromageries, 15 markets or marches as they’re called in French, 17 patisseries, 172 restaurants, and 27 wine bars. But there are also food streets, gourmet and kitchen supply stores and so much more. Going to Paris can be daunting for some and they don't know where to stay. In the guide, I’ve devoted a whole section to this with information about certain areas and arrondissements to help you choose the right place to stay.  Throughout the guide there are also tips for you and one of those tips is about how to find good food in Paris. This is a city that gets tens of millions of visitors every year so feeding them is a mammoth feat and one that doesn’t always cater to foodies like us. Looking for good food is often best done by locals and so that’s where some of my core tips here are from. In fact, many recommendations in this book were given to me by local French and expats like myself but probably more from the French.  For three years after being on MasterChef Australia and before moving to France, I ran a walking tours business in Melbourne called Queenies Food Tours. We had five different walking tours and in those three years, I showed personally over 4,000 people some great food in Melbourne. So in this guide, I’ve got three walking tours for you, one food-focused tour and two area-focused, 7th Arrondissement and Montmartre area tours. I hope you enjoy doing them when in Paris. My Top Ten Restaurants in Paris are included in the guide and it was really hard to narrow these down to just ten restaurants. But I did it. One of them isn’t in Paris though, well sort of, one is in Versailles and is a place I found before they had a Michelin star and used to be in a smaller location. One of those places you just walk past and think I will try that for lunch, why not, walk in, ask for a table thinking they will say they are fully booked, sit down and think I'm not dressed right for this restaurant, and then having the most amazing meal, fantastic service and an experience I’ve been fortunate to bring many people back to over the last nearly ten years now. I hope you can go there and experience it as well.  At the end of the book is a listing of each recommendation in the book by arrondissement. Influenced by his mother's work as a pastry chef for French nobility and his father's role as a chef saucier at Paris's Grand Hotel, Lenôtre developed a passion for pastry that would define his illustrious career. After an apprenticeship in Bernay, where he mastered the art of millefeuilles and éclairs, Lenôtre's journey to culinary stardom began in earnest, eventually leading him to Paris where his exquisite creations won the hearts of high society. Gaston Lenôtre's innovative spirit and commitment to excellence transformed the world of pastry. His insistence on using the finest ingredients, particularly butter from Normandy's lush pastures, became his signature. Lenôtre's creations, such as the famous "Succès" and the elegant Opera cake, showcased his ability to elevate traditional recipes to new heights. His meticulous approach to pastry-making, likened to architecture in its precision, set new standards in the culinary arts. Lenôtre's influence extended beyond his delectable desserts; he opened a cooking school in Plaisir, Yvelines, in 1971, where renowned chefs like Pierre Hermé and Alain Ducasse honed their skills, perpetuating his legacy of culinary excellence. It's international women's day today and I'm celebrating this wonderful day by talking with Lucy Vanel about a subject that I love in a city that I love, the Mères lyonnaises. These women are throughout history and even today are a really important part of France, French culture, and most importantly French cuisine. Lucy is someone I meet in Lyon in 2014. Bonjour. This is Fabulously Delicious the podcast that brings you the wonderful and fabulous people involved in French food, here in France or around the world. They cook it, produce it, talk, write and photograph it, but above all they love it.  I wanted to change it up a little bit on Fabulously Delicious. Each week I’ve been bringing you delicious episodes revolving around a specific topic. We’ve had Cantal cheese, Confit de canard, and Burgundy wines to name a few, and then we’ve gotten to know the guests who are experts on the topic. But in season one I had the pleasure of chatting with renowned chefs like Phillip Tesser and Gabriel Gate. So I wanted to dive a bit into chef life and bring you a different Fabulously Delicious episode. Going forward every now and then I will have episodes devoted to a French chef who’s either here in France or around the world. We will discover their love of French food, their career journey, their life before becoming a chef, and what lead them to French cuisine.  So today is the first of a two-part chat with a French chef that has made his home in Canada. He was born in France and trained to be a chef here, moved to the US, and then settled in Canada where is now the judge on the very popular Great Canadian Bakeoff.
