Jason Gonzalez is the owner and head personal trainer of The Lab Training Studio, located in my neck of the woods in the Salt Lake Valley! Scott McDermott built the 15,000 square foot Best Body Fitness in 2002 after getting fit and finding his passion in life following a 13-year career in architecture that had him overweight, sick and stressed. Since getting back in shape, Scott has enjoyed an amazing journey! He went on to write a book called If Your Body Were a Car, You Wouldn’t Treat It This Way. Scott entered his first Triathlon in 2005 and fell in love with the sport! After deciding to try out the Sylvan Lake Half Ironman Triathlon, he qualified for Ironman Canada and within a few years, was representing Canada at the World Championships in Holland and Australia as well as racing all over Canada and the USA. After a horrific wreck on his bicycle that nearly cost him his life, he went on to participate in the award-winning documentary “Living the Warrior’s Code”. When the Covid-19 pandemic hit in March of 2020, Scott decided to shut down his gym forever. Scott is now focused on being a motivational speaker and working to get his documentary out on streaming to the world, as well as writing a book about the experience!

Dr. Joan Ifland is a food addiction professional who is active in both online recovery and research. Dr. Ifland has been an innovator in the field of recovery from food addiction since 1999. She is the author of several popular books, including her most recent book- The Food Addict’s Meal Prep Manual: Save Yourself From Food Addiction In Only 2 Hours A Week, which is a breakthrough system for easily managing meals for recovery from food addiction. She is the lead author of the first scholarly description of processed food addiction according to classic addiction diagnostic criteria and the first scholarly definition of addictive versus non-addictive foods. Dr. Ifland also built the website, www.foodaddictionresources.com, which provides free information on recovery from food addiction. In 2016, she founded the first online training in food addiction to make recovery easier in small, online groups, www.foodaddictionreset.com. Dr. Ifland earned her PhD in 2010 at Union Institute in addictive nutrition. Her MBA was awarded by Stanford Business School in 1978 and her BA in Economics and Political Science by Oberlin College in 1974.

Zach Bitter is an American ultramarathon runner, and performance coach for endurance athletes. He held world records for the 100-mile run and the 12-hour run. Bitter claimed both records with his performance in Milwaukee, Wisconsin, on August 24, 2019. After claiming the 100-mile record, Bitter continued running for another 40 minutes and upped his own 12-hour distance world record to 104.8 miles, an improvement of more than three miles over the previous mark. Over the last several years, Zach has been following a largely ketogenic approach and using nutrient-dense carbohydrates strategically to support periods of heavy training and racing. Connor Meakin is an ultramarathon runner and founder of Bluebird Provisions. Connor’s 2014 ultramarathon season was meant to be a banner year of running. After enjoying early success, winning races and feeling amazing in the process, Connor was motivated to want more and push even harder. Dr. Tro’s therapeutic focus includes diabetes, obesity, hypertension, hyperlipidemia, metabolic syndrome and PCOS, and his approach is informed not only by the medical literature, and his own experience losing 150 pounds (68 kg) on a ketogenic diet. His intensive lifestyle changes for patients include diet, exercise, improved sleep hygiene, as well as stress management and mental health. He has been a huge influence in the low-carbohydrate movement, advocating for the proper human diet. He is the co-host of the Low Carb MD Podcast, along with his friend Dr. Brian Lenzkes.  And today we have the absolute honor of interviewing Dr. better half, his wife Rosette, who is the founder and CEO of a low-carb baking mix company called Rosette's!

Dr. Evelyne Bourdua-Roy is a family medicine doctor, who is also board-certified in Obesity Medicine by the American Board of Obesity Medicine (ABOM). Additionally, she has trained with Dr. Jason Fung and Megan Ramos in Toronto at their Intensive Dietary Management clinic. She has trained with Dr. Georgia Ede on the ketogenic diet and has authored several best-selling books in Quebec in French, with the first volume being translated into English, under the title Eat Fat to Lose Weight with the Keto and Low-Carb Diet. In January of 2017, Dr. Bourdua-Roy founded Clinique Reversa, which is a not-for-profit metabolic program that aims to help patients reverse their lifestyle-related chronic diseases. This program is led by a multidisciplinary team made up of several medical professionals, under Dr. Bourdua-Roy’s supervision. Dr. Kevin Stock is a dentist who has been on a lifelong mission to discover how to bring about the highest levels of health and fitness to himself, and to his patients. He was a national-level physique competitor, and created the Meat Health platform. What a crazy honor to host these two warriors in the low-carbohydrate space! Dr. Gary Fettke is a retired Orthopedic Surgeon practicing in Tasmania. Although he has retired from his Orthopedic practice, he remains very vocal in public health advocacy and is currently working with a group to have therapeutic carbohydrate restriction included as a safe option in the management (and prevention) of Type 2 diabetes in Australia.  He has a major interest in the preventative medicine and encourages his patients to lose weight before undergoing surgery. He is an advocate of a low carbohydrate, healthy fat (LCHF) lifestyle for the various health benefits, including the reversal of type 2 diabetes. Along with his wife Belinda, Gary has opened and ended up selling the Nutrition for Life – Diabetes and Health Research Centre, which provides nutritional care around Tasmania and Australia. His wife Belinda took the initiative researching the bio-history of religion and influences of nutrition and dietary guidelines in order to better understand why her husband was targeted for using a high fat low carbohydrate diet by the Australian Health Practitioners Regulation Agency (AHPRA) and the Tasmanian Health Service. Her research revealed a massive influence of Seventh-day Adventism and cereal companies impact on creating dietary guidelines.

AROO! Ken Sykes was born in the state of Alaska. He lived there through high school and was raised to have an appreciation of the outdoors and natural environments. He moved to Salt Lake City, Utah, to attend the University of Utah (GO UTES!) and study Mechanical Engineering. While attending the University of Utah, he met his wife, Ginger, who is amazingly still putting up with him 25 years later. He currently has two sons who are 8 and 10 years old. In 2015, an injury forced Ken to reevaluate his lifestyle and started him on a journey to fitness and self-discovery. Along the way he found Spartan Races and used them as a lens to help focus his mental and physical development. To date Ken has completed 45 Spartan races which include two top ten finishes in his age group and two Spartan Ultra races, where each measured more than thirty miles with over sixty obstacles.

Ryan Talbot is an All-American Decathlete for the Michigan State University Spartans. After several injuries and health issues, Ryan decided to try a carnivore diet when he was several months into his NCAA Div. 1 season as a decathlete. He describes his experience as “becoming a new athlete” on a plant-free diet. On a carnivore diet, Ryan won the Big Ten Championship! His body recovered in time win the Big Ten, break the Michigan State University record in the decathlon, and earn All-American honors, and compete in the NCAA National Championship. He was also a first-place finisher in the decathlon at the Jim Click Shootout in Tempe, Arizona, on April 8, 2022. He looks forward to many years of success as a young athlete eating a plant-free diet. James Connolly is an artist, chef, non-profit founder and documentary film producer with Archer Gray Productions. He co-founded The Bubble Foundation, a non-profit focused on issues of wellness and food insecurity in inner-city public schools. The documentary film production team at Archer Gray Productions has produced a variety of films, from Transmilitary, a film that explores equal opportunity and discrimination for the over fifteen thousand active duty transgender soldiers serving in the military, to Michael Moore’s latest documentary, Where to Invade Next, where Moore explores issues like mass incarceration, school food, criminal justice and student debt. James Connolly is also the producer of the documentaries Sacred Cow and Death in the Garden, and the co-producer of The Sustainable Dish Podcast. These concepts are where we are focusing on today, as we all grapple with our daily decisions of what to eat to sustain ourselves and our planet, and how we all must come to terms with the simple fact that to maintain and create life, we must accept death.

Dr. Greg Potter is a British researcher who specializes in circadian biology, sleep, diet, and metabolism. Greg gained attention in the U.S. and Europe for his research into the importance of biological rhythms and sleep and how they affect people’s lives. His work has been featured in the BBC World Service, the Washington Post, Reuters and other scientific journals and news outlets. In addition to being a science writer and sleep consultant, Dr. Potter also is an entrepreneur who co-founded Resilient Nutrition in 2020, a company that leverages science to produce foods and supplements geared toward helping people feel and perform better. Greg earned undergraduate and master’s degrees in exercise science from Loughborough University in England, where he coached a sprinter to four gold medals at the European Championships, before heading off to the University of Leeds for his Ph.D. Greg has also worked with groups such as The United States Naval Special Warfare Command on health and performance optimization.
