Fast Five: Coco, co-host of Rockin' Vino

Healthy Oatmeal Chocolate Chip Cookies (Vegan optional!)
Ingredients:
-Bananas
-Applesauce
-Oats
-Milk (almond or otherwise is fine too!)
-Vanilla
-Chocolate Chips
-Cinnamon

Set oven to 325
Mash up the bananas, then you put in the applesauce, some oats, a little bit of milk and vanilla, and just mix it all together and then add in, like if you wanted to add cinnamon, which I always do, and then add in your chocolate chips once everything is mixed in. And then you put it on a pan, smash it down a little bit, and bake it for about 15 minutes or so, and they come out delicious.

Olive Oil
Parmesan Cheese
1 Garlic clove 
Lemon (Meyer or Eureka)
Spaghetti

Use a microplane zester for the following: Zest lemon, Zest garlic clove, zest a fluffy pile of parmesan cheese into a bowl. Add olive oil, squeeze the juice of the lemon juice in and stir. Once pasta is to al-dente readiness, scoop it out and throw it into the bowl with the dressing. Add a little bit of pasta water if it needs to loosen up. And THAT’S IT. :)

Fast Five: Carol's "Asparagus Tart" - Or Fancy Pizza :)

Instructions from Carol herself:

Here are the FIVE (sort of, I cheated a bit):
1 roll of crescent roll dough (or puff pastry if you have to be fancy)
2 T. Dijon mustard
2 c. freshly grated gruyère cheese (or fontina or asiago)
1 # very skinny asparagus, tough ends snapped or cut off, then cut into 1” lengths
½ c. freshly grated parmesan cheese
A squeeze of fresh lemon juice and its zest (optional)
A sprinkling of Herbes de Provence (optional)
 
Preheat oven to 400°F.
Flatten out crescent roll dough into a rectangle (approx. 12”x9”) on parchment paper on a sheet pan.
Prick it all over with a fork (called “docking it”).  Spread the mustard evenly over the docked dough. 
Sprinkle grated gruyère over crust, avoiding edges so it won’t bubble over when hot.
Lay asparagus over the bed of cheese and sprinkle herbs, parmesan and lemon juice/zest on top. 
You can make a nice pattern of the asparagus if you want to get fancy!
Bake at 400°F for 15-20 min or until pastry edges are brown and crispy and cheese is melted.
Cut into squares and serve—top with a squeeze of balsamic glaze if desired.

Jar of Curry (Red/yellow/green- whichever you prefer) 
Coconut Milk- 1 can
Fish Sauce- to taste
Veggies and/or protein of your choosing (whatever you have around)
Rice

Sauté the curry for 3-5 minutes, just to get it going
Empty can of coconut milk and put a little fish sauce in (to taste) 
Put whatever veggies in at this point and cook until the veggies are soft, then put protein in afterward if desired (it cooks much faster than the veggies) 
Serve on top of rice

Fast Five: Craig Colagrossi's Pasta Carbonara

Ingredients: 
Pasta (of course!) he prefers fettuccini or tagliatelle, but you can always use spaghetti
A couple of Egg yolks 
Finely Grated Parmagiano and Pecornio cheeses 
Guanciale- cut into small strips or cubed

Instructions: 
Boil water for Pasta, put a little salt and olive oil in there. 
Get a skillet going, high heat, get the guanciale in there and let it brown
In a bowl, put the egg yolks and the finely grated parmagiano and pecorino - mix together until creamy
When the noodles are done, strain and put back in the pot. Slowly add the yolks and cheese - Add Salt and Pepper to taste

Pairs excellently with Colagrossi Sangiovese :)

Fast Five - Larry Willis from The Gables Wine Country Inn

Cloud Souffle 

2 eggs

2 tbsp cheddar

1 tbsp tomato

1 tbsp shallot

Cream/butter (just a splash)

Let eggs come to room temp, separate whites/yolks 

Sautee tomato and shallot in a little olive oil 

Put whites in a mixer (beater attachment preferred) with some salt

Grab an oven-safe ramekin and coat the inside with some cooking spray and a small sprinkle of flour

Spoon about half the egg white into ramekin and make indentation that is big enough to hold egg yolk and tomato/shallot - scoop the tomato/shallot mixture into the indentation, then put egg yolks over the mixture, then the cheddar, then splash of cream/butter, then top with the remaining egg whites 

Put in 400 degree oven for 12 minutes - serve with toast - you can make this on your own or get it at the Gables!

Fast Five! - Jennifer Costa

Almond Milk Panna Cotta - goes with any fruit

Almond Milk Heavy Cream
1 Vanilla Bean (scraped)
Gelatin
Sugar
Fruit of your choice

Heat the heavy cream with the scraped vanilla bean for 1 hour 
Take some almond milk, bloom an envelope of gelatin
Put all elements back in the pan with some sugar, melt it down, and then pour the mix into small dishes (ramekins should work well)

You may serve this with any fruit you like! 

Fruit Suggestions: 
Heat up some pears and apples with cinnamon and sugar, serve hot alongside panna cotta - yum!

Great with white wine or sparkling!

Erin’s Argentinian Empenadas

24 masa dough rounds (they come frozen, and they’re easy to thaw!)
1lb lamb 
1-2lbs onions chopped
1 red pepper  - chopped
4 green onions - finely chopped
(Spices - Paprika, salt and pepper)

Brown meat with paprika, salt and pepper - remove from pan
Sauté onions and red pepper with paprika, salt and pepper 
Mix all cooked ingredients in a bowl and add green onions. Let it cool about 15 mins in fridge

Fill empanadas with cooled filling  
Heat Oven to 475 - Bake for 12 mins

Let it cool!!

Liana’s Mom’s Peanut Butter Nuggets

1. 2 cups peanut butter
2. 1/4 cup honey
3. 1 cup quick oats or steel cut oats
4. Shredded coconut
5. * Love * 

Mix the peanut butter, honey and oats together in a bowl, separate into small, 1-inch sized balls, roll in shredded coconut - these are better if they’re eaten after being refrigerated for a few hours! :)

We’re going to build a dish together! 

Ingredients: 
1) Fava Tip Pea Stew
2) Fava beans
3) Cheese - if you’re local, check out Bohemian Creamery
4) Fresh pasta
5) Soppressata - check out Journeyman Meats in Healdsburg
 
- To make the Fava Tip Pea Stew: take the tops of the fava shoots, puree in blender, add toasted walnut & parmesan/ pecorino, garlic, olive oil - set aside
- fava beans: shuck, blanch, set aside
- boil fresh pasta, 1:45 - 2 minutes, Dustin loves Lumaconi - toss with butter and parmesan

Plating: Put Fava Tip Pea Stew down in a bowl, toss in fava beans, then put pasta on top, slice soppressata thinly, cut into half crescents, dice Bohemian Creamery cheese and place on top.

Greens Cookbook — (Greens Restaurant) 

Leek and Mustard Pie Tart

1. 4 cups of leeks
2. 2 eggs
3. 1 cup cream 
4. ~3oz cheese (your choice- cheddar, gruyere, goat)
5. 2-3 tbsp dijon mustard
(6) Pie crust :) 

Slice the leeks real thin, then saute (maybe in white wine) 
while they cool, beat two eggs with the cup of cream, then add about 3oz grated cheese, then add mustard. Beat and then add to a pie crust and bake at 375 for about 50 mins :) 

Excellent to be paired with bubbly, Chardonnay or Pinot Noir

Portofino Pasta - The 5 Ps!
1. Pasta
2. Pomodoro (tomato)
3. Pesto
4. Parmaggianno 
5. Panna (heavy cream)

Heat a thick marinara, heavy cream and parmesan in a sauce pan, the marinara and heavy cream are 2:1, or 1:1 if you want it creamier. Stir for 4-5 minutes.

Toss in cooked pasta noodles for 1-2 minutes, place in bowl, and top with spoonfuls of basil pesto

Fast Five - Tiann Lordan from Hartford Family Winery - Braaibroodjie

Ingredients:

1. Bread (sourdough is yummy)
2. Chutney - peach is best :)
3. Tomato 
4. Cheese 
5. Onions 
Instructions: Slather bread with chutney, slice tomatoes, onion and cheese, put on bread.
Have a fire, let it burn out, put it on a griddle on the coals, place the sandwich directly on the griddle. Before flipping, press the sandwich to make sure it doesn't fall apart!

He would pair this with a Pinot Noir maybe one from the Sonoma Coast with some spice and earthiness.

Slice & Spice (BBQ Eggplant Roll-Ups)

1 Eggplant - Sliced thin, (with a mandolin, preferably) and then dried off, and salted to your preference
Add a dash of olive oil and balsamic, grill eggplant on BBQ
Shave a bunch of parmesan cheese
Fennel seeds ground in a mortar 
Orange zest (lots!) 
Mix the cheese, fennel and zest together, put on the eggplant and roll them up - enjoy!

Ingredients: Triangle of Brie, fig or fruit preserves, chopped walnuts, pie dough

Directions: Smother Brie with fig spread and top with walnuts then encase in pie dough. Bake in oven at 325 for 10-15 minutes till golden on the outside. Pair with Malvazia Nera from Sunce Winery of course!

Ingredients: Apple cider, Bosch Pear, Spice Medley, Mascarpone, Fleur de sel Carmel

Directions: Place the apple cider and spices in a small saucepan over medium heat to simmer. Peel the pear leave the stem on. Once the cider is simmering put the pear in for 20-30 minutes. Remove the pear with a spoon and let cool. Place a smear of mascarpone on a plate and set aside. Crank up the heat on the liquid and allow to thicken, then pour liquid over pear and place the caramel on top. Pair with a late harvest Riesling.

Ingredients: 
Lamb chops
Spices- Sage, lavender, parsley (whatever spices you like)
Salt & Pepper
Garlic
Cottage Cheese

Pat the spices, salt & pepper on the lamb chops, cover in cling wrap and let it rest in the fridge.

Put garlic cloves in a pan with some of the herbs, and cottage cheese - this becomes the cream sauce.

BBQ Lamb chops to desired doneness level, then put a dollop of the cream sauce on each lamb chop.

Pairs well with a Cabernet Sauvignon from West Wines.

Ingredients: Pizza Dough, Maitake Mushrooms, Laurel Chenel Goat Cheese, Olive oil, Lemon juice and zest.  

Directions: Roll out pizza dough and rub olive oil and salt and pepper into dough. Pre-cook the mushrooms ¾ of the way. Add the mushrooms to the pizza and sprinkle with goat cheese. Place in hot oven for 12 minutes. Remove pizza and sprinkle with lemon juice and zest and a touch of olive oil. Pair with Pinot Noir of course!

Ingredients: Rack of Lamb, Butter, and Blue Cheese.

Directions: Separate the chops from the rack of lamb and trim off fat. Put olive oil on the chops and sear on a hot grill about 2 minutes. In advance create the Blue cheese compound butter. Crumble the blue cheese into softened butter. Mix well and roll into a tube in wax paper. Put in refrigerator to chill. Cut a medallion of the lamb chop and slater with the butter. Serve with a roasted root vegetable medley. Pair with Ektimo Pinot Noir

Ingredients: Barbecue Ribs, cayenne pepper, black pepper, honey, and sriracha sauce for the glaze.
Directions: Cook on outdoor grill slow at 250-300 degrees for 4-6 hours if indoors in oven 2.5 to 5 hours at 275. Slow and low is the way to go. Slather with the sauce. Pair with Pedroncelli Mother Clone Zinfandel.

18:35 Fast Five Recipe –Baked Ricotta with Honey Appetizer From Liz Pembroke of Pembroke Design Studios

Ingredients: Fresh Ricotta, olive oil, Meyer lemon peel, honey and sea salt.

Directions: Grease a muffin tin with olive oil and fill it with the ricotta. Bake at 375 for 15-17 minutes. Let it cool slightly, then slip on to a parchment line baking sheet and drizzle with olive oil and top with the lemon peel. Put back in oven for another 10 minutes and then drizzle it with honey. Pair with Lambert Bridge Blanc de Blanc Sparkling.
