Shane MacGowan’s widow joins Kevin Dundon and Caoimhe Young in the kitchen to chat about the homecooked meals she loved growing up, her angel art and, of course, the love of her life. Victoria tells Under the Grill: “Shane is very much with me. It’s weird, sometimes I feel Shane experiencing things through me. It’s almost like he’s going, ‘go to that movie, I want to see it’. Or ‘talk to that person’, or ‘say that joke, I want to say that joke’. The Dubliner is a guest in the Under the Grill kitchen, coming up to the second anniversary of the death of The Pogues frontman. Victoria says she finds solace in her belief in angels and is set to display her angel paintings for the first time ever in an exhibition in Dublin. She says: “Shane would be delighted; he was always nagging me to display my art.” Kevin cooks Victoria Clarke’s Chickpea Burgers, with curry and cashew nuts, topped with tomatoes and a peanut chilli dressing, similar to a recipe Victoria’s mum used to make over an open fire, when her family lived in Wicklow.

The Dubliner chose bread & butter pudding for childhood dish on the already popular podcast series. Cooking alongside her mum since she was 11, the flamed-hair star says: “Making dinner for 10 or 30 people, it doesn't faze me. “I love when people come in and chat to me when I'm cooking. I love all of that, so it all works well.” Speaking about her delicious choice, Niamh says: “Bread and butter pudding is a big part of my life. “It started because my mother made it as a dessert when I was young. “We only ever had dessert on Sundays or if people were coming, which is basically the same thing, because it was nearly always more people at our table.”
