COCKTAIL EVERGREEN SOUR
Fresh pine adds a layer of crisp winter flavour to this sour, lifting the woodsy juniper notes. Lime juice brings some body and complexity to the sourness.
INGREDIENTS
- 35ml Hermetica Gin
- 20ml fresh lemon juice 20ml fresh lime juice
- 35ml pine syrup*
- 1 egg white
- GARNISH Pine needles
METHOD
Put all ingredients into a cocktail shaker, without ice. Dry shake, then add a good handful of ice and shake again to emulsify. Double strain into a rocks glass filled with more ice or a chilled coupe glass, and garnish with the pine needles. Cheers!!

2023 has been quite the year. We’ve seen the start and finish of many projects, collaborated with some amazing suppliers, contractors, and builders. Met some lovely clients and worked alongside some of the best in the business at the Sydney and Melbourne Home Shows, plus our in-person Masterclasses.
As the year draws to a close, it’s usually a time of reflection, relaxation and reset for many. And whilst we will be doing a lot of this over the festive period we are also planning, creating and getting ready to jump into 2024. We have some exciting things in the pipeline with upcoming projects but also will have even more amazing guests on Two Gins In: A Designer’s Perspective so make sure you are subscribed to ensure you don’t miss out on an episode.
