National Park Activities
So, what can you do in a national park? What do you want to do? Find out about local geologic features? How about the history of how our country's government formed? Or maybe you want to learn about the ecosystem of the Everglades? Sound overwhelming? Why not start at the National Park website where you can search by activity, find out about ranger-guided hikes, tours, and presentations and also see if the park you are visiting has the Junior Ranger Program for kids.

find out what activities each individual park has to offer

Eating Gluten Free in National Parks
Unfortunately, this has proven almost hopeless as the parks only provide mostly fast food. Every once in a while, you can find an upscale lodge with a dining room that can accommodate Celiac disease, but overall, plan on bringing your own food with you to be safe.

Today, my guest is a gluten-intolerant world traveler who is a US resident living in Mongolia. She moved there almost three years ago when her husband’s job took them to live in this unpopulated country on the other side of the globe.”We didn’t even know where Mongolia was except that it was somewhere in Asia!” Not knowing anything about Mongolia, Patricia and her husband found this an opportunity for a new cultural experience.
The 411 on Mongolia
The capital city of U is massive, with massive skyscrapers and tall buildings. "It is a contrasting city as it has very old Soviet buildings. It also has in yurts, which are the traditional housing for nomadic people, in the outskirts of the town," Patricia says you can stand in the modern skyscrapers and look down upon the valley dotted with yurts. "You can see the very rural with the ultra-modern, with the Soviet mixed."
If you want to travel to Mongolia, you will need to bring your own food. There aren't many places that are gluten-free friendly or knowledgeable about gluten-free. Soups, bread, and several staples of Mongolian food culture contain gluten. Many servers do not understand what foods contain gluten unless it's a western restaurant in Mongolia.
What to Do When You’re in Mongolia
"Mongolia is a vast place, and there's so much to see," Patricia recommends top destinations such as the Gobi Desert, to the west of Mongolia, you can see and visit lakes. There are other lakes to visit in the north and see the Khovsgol Festival of Ice while in the northern region for a frozen lake festival.

Processed Food Vs. Unprocessed Foods
When we can eat foods that are closer to nature, then our body recognizes these foods and knows what to do with them,” says Debra. When you buy pre-packaged foods, even though you are purchasing gluten-free, it may not be enough to “achieve vibrant health.” Just because your food is gluten-free doesn’t make you healthy.
She explains that our bodies get confused when we eat processed foods and can send out an auto-immune response. Having sensitivities, allergies, or auto-immune issues is your body’s way of saying that it doesn’t agree with the food choices that it’s been given.
Using Plant-Based Whole Foods
“Say you’re making lasagna, you can use your vegetable peeler to make zucchini noodles to layer your lasagna, so you don’t have to resort to using processed gluten-free pasta.” She says to embrace the large varieties of whole foods available and use them in creative ways to make different dishes.

You can use OpenTable's online website or their mobile app to book a table. Your account setup is free. Find restaurants and make reservations through OpenTable and receive points when you dine at that restaurant using an OpenTable reservation. When you reach a certain level of points, you will receive rewards through OpenTable.

Stop at Moab Information Center and pick up a self-guided tour brochure. It’s a small tri-fold black and white brochure that’s packed full of all the tours the tour companies take you on, except that it’s free because you get to do it yourself and stop as long as you want at the different sites! Pick up a Moab Guest Guide for information and local maps on what to do. You can find these for free at any of the magazines stands in town. I picked up my copy at Denny’s.
In 1957, a group of civic leaders began to plan for a city museum, and in February 1958, the museum was incorporated as the Southeastern Utah Society of Arts and Science. Housed in a County building on Center Street, the private archeological collections from Dr. J.W. “Doc” Williams and Ross Musselman provided objects for initial exhibits, with more citizens' donations. During its first 14 months, the museum hosted more than 6000 visitors. Find out about the past rich in geological change, paleontological remnants, and human history that stretched from prehistoric cultures to Mormon pioneer families to out-of-town investors and miners with families. Spend an hour finding out how Moab came to be the town it is today in its 150-year history.

Gluten Free Holiday Baking at High Altitudes
When you're cooking or baking gluten-free for the first time, you may not know what recipes are good and where to find recipes that won't let you down. I understand how challenging this can be as I went through my first holiday season with only a couple months of being Celiac under my belt!
Why Is Baking Different at High Altitude?
Air pressure is lower at higher altitudes. The higher you are from sea level, the lower the air pressure becomes.
If you live more than 1,000 feet above sea level, your best bet is to follow high altitude baking recipes.
Because air pressure is lower at high altitudes, any liquids will evaporate quicker. The speed of liquid evaporation makes air bubbles rise to the top and burst. Because the air bubbles leave the baked goods faster, the ingredients in your creation can become densely packed together because the air has left, creating the ingredients to collapse on themselves, giving you a brick.
Be mindful that you cannot substitute baking soda for baking powder or vice-versa, as it won't work. You see, baking powder and baking soda don't actually work the same way. Baking soda needs an acidic ingredient like lemon juice to activate it. And baking powder is, basically, just baking soda with the acid component already built-in. You can't use the two interchangeably. In fact, substituting one for the other can be disastrous.

Being gluten-free, it’s easy for us to focus on and be sad about what we can’t eat, especially when watching others freely eat whatever foods they want without hesitation. Instead of focusing on what we can’t eat, focus on what you can eat! “When you focus on what IS available to you as opposed to highlighting what’s not available to you, it’s the flip side. This mindset helps you embrace all that’s there. When you focus on what’s not available, it puts you in a mindset that’s less healthy.”

Carrie from For Gluten Sake has celiac disease and has created an app that features dedicated gluten-free restaurants. All restaurants on her app do not have gluten on the premises. This list is smaller than the Find Me Gluten Free app. However, these restaurants are safer since they don’t have gluten on site. She has the largest list of 100% gluten-free spots around the world on her app.

Find great eats in Philadelphia and the surrounding area with Michael’s Gluten-Free Philly app. In addition to his app, you can search online for the latest and greatest gluten-free restaurants in Philadelphia.
Trip Advisor
Another way you can 'Find' restaurants is at Tripadvisor. Setup a free account and use this resource to find restaurants in your neighborhood or when you are traveling. Usually, we think of Tripadvisor only when we're traveling. I also like to find fun things to do when I'm going on vacation or at home. Look up restaurants in the town you are eating
Bangkok House for lunch and dinner, and dump gluten-free soy sauce on all your food! Good Asian food choices on their menu.
Moab Coffee Roasters for their coffee and tea - but don't eat the food! They have amazing flavors such as English Toffee, which I absolutely can't get enough of when I go to Moab.
Moab Garage Company is actually inside a remodeled old garage and has a cool atmosphere. MGC also carries a great selection of teas and coffees to start your day outright.
Sunset Grill is an upscale restaurant with gorgeous views of Moab and gluten-free menu choices.
Desert Bistro is a fusion restaurant whose staff is incredibly knowledgeable about the ingredients in their food, and they specialize in allergy protocol. The perfect date-night restaurant, Desert Bistro, has the most amazing gluten-free desserts that you can share with that special someone!
Moab Food Truck Park has a variety of ethnic and American foods. Each food truck has its own protocol so check with the server or owner of the food truck to verify which options are safe.
98 Center Moab is an Asian-Vietnamese-American fusion restaurant that understands what it means to have Celiac disease! I was way impressed with their staff knowledge and their mostly gluten-free menu, and the remainder of their menu can be made gluten-free—lots of vegetarian and meat choices, a great place to go for lunch or dinner.

Purple Sage Flats and Moab Flats are two boutique hotels in Moab that have been completely redesigned in the past five...
Visit Hole N” the Rock, a most unique home carved out of a huge rock in Utah’s Canyonlands Country. This historic 5,000 square foot home and unusual gift shop and trading post are open all year. Take a guided tour of the home, and appreciate the rich history within its walls.
Outdoor and Adventure Activities in Moab
Take a wild ride jumping out of an airplane at Skydive Moab, Go 4x4, or rent a dirt bike at Canyonlands Jeep and Car Rentals. Grab a mountain bike rental and ride some of the best mountain biking terrains in the world! Hook up with an outfitter or rent your own climbing gear for spectacular rock climbing and canyoneering. Go for some water fun and try boating, SUP Paddleboard, and river tours are available from several outfitters. You can rent snowshoes and cross-country skis in the winter, although they really don't get much snow!
From Dead Horse Point's prominence, 2,000 feet above a gooseneck in the Colorado River, an ever-changing landscape unfurls. Immense vertical cliffs meet with canyons carved by ice, water, and wind creating a visual masterpiece. Plants and animals surviving on the edge of existence face many challenges of extreme conditions within this high desert environment. Stories of ancient hunters, resting along the cliff tops while knapping chert in preparation for the next hunt, and cowboys of the late 1800s, chasing wild mustangs onto Dead Horse Point, using the narrow neck to block off the natural corral.
