Today, my guest is a gluten-intolerant world traveler who is a US resident living in Mongolia. She moved there almost three years ago when her husband’s job took them to live in this unpopulated country on the other side of the globe.”We didn’t even know where Mongolia was except that it was somewhere in Asia!” Not knowing anything about Mongolia, Patricia and her husband found this an opportunity for a new cultural experience.
The 411 on Mongolia
The capital city of U is massive, with massive skyscrapers and tall buildings. "It is a contrasting city as it has very old Soviet buildings. It also has in yurts, which are the traditional housing for nomadic people, in the outskirts of the town," Patricia says you can stand in the modern skyscrapers and look down upon the valley dotted with yurts. "You can see the very rural with the ultra-modern, with the Soviet mixed."
If you want to travel to Mongolia, you will need to bring your own food. There aren't many places that are gluten-free friendly or knowledgeable about gluten-free. Soups, bread, and several staples of Mongolian food culture contain gluten. Many servers do not understand what foods contain gluten unless it's a western restaurant in Mongolia.
What to Do When You’re in Mongolia
"Mongolia is a vast place, and there's so much to see," Patricia recommends top destinations such as the Gobi Desert, to the west of Mongolia, you can see and visit lakes. There are other lakes to visit in the north and see the Khovsgol Festival of Ice while in the northern region for a frozen lake festival.
The Altai Mountains in the northwest have a different ethnic group: the Kazakhs, located in Kazakhstan, just west of Mongolia. Here, they celebrate the Golden Eagle Festival. It is a festival to demonstrate the Kazakhs' culture to the world and promote their heritage to their next generations.

Living in Mongolia has its positive aspects, such as being geographically close to many eastern European and Asian countries. She has visited over a half dozen countries in the past three years including Japan, Nepal and Spain.

Processed Food Vs. Unprocessed Foods
When we can eat foods that are closer to nature, then our body recognizes these foods and knows what to do with them,” says Debra. When you buy pre-packaged foods, even though you are purchasing gluten-free, it may not be enough to “achieve vibrant health.” Just because your food is gluten-free doesn’t make you healthy.
She explains that our bodies get confused when we eat processed foods and can send out an auto-immune response. Having sensitivities, allergies, or auto-immune issues is your body’s way of saying that it doesn’t agree with the food choices that it’s been given.
Using Plant-Based Whole Foods
“Say you’re making lasagna, you can use your vegetable peeler to make zucchini noodles to layer your lasagna, so you don’t have to resort to using processed gluten-free pasta.” She says to embrace the large varieties of whole foods available and use them in creative ways to make different dishes.
Eating Gluten-Free Doesn’t Have to Be Costly
Instead of eating packaged and processed gluten-free foods, Debra suggests eating whole foods for better nutrition and significant food savings for your wallet. “Whether you’re eating vegan, vegetarian, or gluten-free, it’s the packaged and processed food that is the pricier option.”
Focus on Foods You Can Eat
Being gluten-free, it’s easy for us to focus on and be sad about what we can’t eat, especially when watching others freely eat whatever foods they want without hesitation. Instead of focusing on what we can’t eat, focus on what you can eat! “When you focus on what IS available to you as opposed to highlighting what’s not available to you, it’s the flip side. This mindset helps you embrace all that’s there. When you focus on what’s not available, it puts you in a mindset that’s less healthy.”

In this episode, we will dive into tools you can use to find amazing gluten-free friendly, and dedicated gluten-free restaurants to eat on New Year's Eve. If you're new to the gluten-free scene or you've been gluten-free for a while, you can still have a hard time finding a great restaurant. Whether you are a foodie or not, looking for a restaurant at home or on vacation, getting a good gluten-free meal at a nice restaurant can be daunting.
You can use several tools when you want to find a great restaurant for you and your family and friends! Filter for a price, type of food, and ambiance. Learn how to cross-check your restaurant choice and find out the difference between a gluten-free friendly restaurant and a dedicated gluten-free restaurant. Additionally, listen in to find out which three questions to ask when calling a restaurant to determine if they are safe for celiacs.
Opentable One of the resources I love to use is OpenTable. OpenTable is a reservation site, and I use this resource because it’s easy to instantly filter and find restaurants and reserve online. You can use OpenTable's online website or their mobile app to book a table. Your account setup is free. Find restaurants and make reservations through OpenTable and receive points when you dine at that restaurant using an OpenTable reservation. When you reach a certain level of points, you will receive rewards through OpenTable.
Find Me Gluten Free App Find Me Gluten Free is available online and as a mobile app. Look for gluten-free friendly, dedicated gluten-free restaurants, places to eat with dedicated fryers. Find different gluten-free features and offerings such as gluten-free bread, gluten-free desserts, late-night, a local chain, vegan-friendly, vegetarian friendly.
100% Gluten Free App Carrie from For Gluten Sake has celiac disease and has created an app that features dedicated gluten-free restaurants. All restaurants on her app do not have gluten on the premises. This list is smaller than the Find Me Gluten Free app. However, these restaurants are safer since they don’t have gluten on site. She has the largest list of 100% gluten-free spots around the world on her app.
Gluten-Free Philly Find great eats in Philadelphia and the surrounding area with Michael’s Gluten-Free Philly app. In addition to his app, you can search online for the latest and greatest gluten-free restaurants in Philadelphia.
Trip Advisor Another way you can 'Find' restaurants is at Tripadvisor. Setup a free account and use this resource to find restaurants in your neighborhood or when you are traveling. Moab Garage Company is actually inside a remodeled old garage and has a cool atmosphere. MGC also carries a great selection of teas and coffees to start your day outright.
Sunset Grill is an upscale restaurant with gorgeous views of Moab and gluten-free menu choices.
Desert Bistro is a fusion restaurant whose staff is incredibly knowledgeable about the ingredients in their food, and they specialize in allergy protocol. The perfect date-night restaurant, Desert Bistro, has the most amazing gluten-free desserts that you can share with that special someone!
Moab Food Truck Park has a variety of ethnic and American foods. Each food truck has its own protocol so check with the server or owner of the food truck to verify which options are safe.
98 Center Moab is an Asian-Vietnamese-American fusion restaurant that understands what it means to have Celiac disease! I was way impressed with their staff knowledge and their mostly gluten-free menu, and the remainder of their menu can be made gluten-free—lots of vegetarian and meat choices, a great place to go for lunch or dinner.

Stop at Moab Information Center and pick up a self-guided tour brochure. It’s a small tri-fold black and white brochure that’s packed full of all the tours the tour companies take you on, except that it’s free because you get to do it yourself and stop as long as you want at the different sites! Pick up a Moab Guest Guide for information and local maps on what to do. You can find these for free at any of the magazines stands in town. I picked up my copy at Denny’s.
Museums in Moab
In 1957, a group of civic leaders began to plan for a city museum, and in February 1958, the museum was incorporated as the Southeastern Utah Society of Arts and Science. Housed in a County building on Center Street, the private archeological collections from Dr. J.W. “Doc” Williams and Ross Musselman provided objects for initial exhibits, with more citizens' donations. During its first 14 months, the museum hosted more than 6000 visitors. Find out about the past rich in geological change, paleontological remnants, and human history that stretched from prehistoric cultures to Mormon pioneer families to out-of-town investors and miners with families. Spend an hour finding out how Moab came to be the town it is today in its 150-year history.

Outdoor and Adventure Activities in Moab
Take a wild ride jumping out of an airplane at Skydive Moab, Go 4x4, or rent a dirt bike at Canyonlands Jeep and Car Rentals. Grab a mountain bike rental and ride some of the best mountain biking terrains in the world! Hook up with an outfitter or rent your own climbing gear for spectacular rock climbing and canyoneering. Go for some water fun and try boating, SUP Paddleboard, and river tours are available from several outfitters. You can rent snowshoes and cross-country skis in the winter, although they really don't get much snow!
Moab Parks
From Dead Horse Point's prominence, 2,000 feet above a gooseneck in the Colorado River, an ever-changing landscape unfurls. Immense vertical cliffs meet with canyons carved by ice, water, and wind creating a visual masterpiece. Plants and animals surviving on the edge of existence face many challenges of extreme conditions within this high desert environment. Stories of ancient hunters, resting along the cliff tops while knapping chert in preparation for the next hunt, and cowboys of the late 1800s, chasing wild mustangs onto Dead Horse Point, using the narrow neck to block off the natural corral. When you're cooking or baking gluten-free for the first time, you may not know what recipes are good and where to find recipes that won't let you down. I understand how challenging this can be as I went through my first holiday season with only a couple months of being Celiac under my belt!
Why Is Baking Different at High Altitude?
Air pressure is lower at higher altitudes. The higher you are from sea level, the lower the air pressure becomes.
If you live more than 1,000 feet above sea level, your best bet is to follow high altitude baking recipes.
Because air pressure is lower at high altitudes, any liquids will evaporate quicker. The speed of liquid evaporation makes air bubbles rise to the top and burst. Because the air bubbles leave the baked goods faster, the ingredients in your creation can become densely packed together because the air has left, creating the ingredients to collapse on themselves, giving you a brick.
Be mindful that you cannot substitute baking soda for baking powder or vice-versa, as it won't work. You see, baking powder and baking soda don't actually work the same way. Baking soda needs an acidic ingredient like lemon juice to activate it. And baking powder is, basically, just baking soda with the acid component already built-in. You can't use the two interchangeably. In fact, substituting one for the other can be disastrous.

When you're cooking or baking gluten-free for the first time, you may not know what recipes are good and where to find recipes that won't' let you down. I understand how challenging this can be as I went through my first holiday season with only a couple months of being Celiac under my belt!
Although I haven't made all these recipes, they are from trusted gluten-free sites that I have used in the past and have created amazing gluten-free dishes that my entire family enjoys (even the ones that aren't gluten-free!). Of course, my favorite part of any food creation is making and eating dessert! You'll find plenty of dessert ideas on my blog. Although Tarryn is Celiac, her husband Jake can eat a “regular” diet. Their home kitchen isn’t completely gluten-free, but Jake is very conscious about how he prepares food with gluten in their kitchen so as not to cross-contaminate Tarryn. “We don’t have bread and food that would make a lot of crumbs, to make a mess that would make it difficult to track gluten. I have my own little cupboard on the side where I can have some of my favorite snacks, which may have gluten, but I’m careful with them. I’m not necessarily eating them on the counter or without being extra careful.”
Tarryn says Jake is very understanding of her Celiac disease. He has separate peanut butter, and they only have gluten-free bread in the house to be on the ultra-safe side. Since Jake is cereal obsessed, he has his own cereal bowl for his breakfast or anytime he eats gluten. “As far as utensils, I’d say our home is Celiac safe.”

Rylie of Rylie Cakes first discovered she was Celiac during her college years. Her first memories of baking gluten-free were at Thanksgiving. She remembers throwing out many of the first editions of her converted holiday recipes and learning step-by-step by baking in her college dorm to create delicious gluten-free baked goods that her gluten-eating friends absolutely loved! She got the nickname “Rylie Cakes” from bringing her delicious baked cookies and cupcakes to college gatherings.
“I started to reach a point where I would hear from other people that aren’t gluten-free ‘Wow, this is really good!’. That’s when I knew I was getting somewhere!”
In college, Rylie decided to take up training in the culinary arts. She worked during the day and went to school starting in the afternoon and late into the night. Rylie enjoyed every minute of her culinary training. After she graduated, she decided to start her own bakery, Rylie Cakes.
Rylie Cakes Bakery started out offering five different desserts and quickly grew into a small cafe. During the time spent at her bakery, Rylie created several different baking mixes, including biscuit mix, bread mix, pie crust, and shortbread mix. After several years running her bakery, she decided to take her mixes and sell them to consumers to eat and enjoy!

“The reason why I became an artist is to have an outlet in my life. In 2006 my life got out of control” She had undergone a grueling six-hour back operation that left her physically and emotionally drained. Before her surgery, she was walking under my own power. Post-surgery she experienced the hardest recovery of her life, as her surgery changed her life forever.
While in PT for her surgery, her physical therapist said, "Win, you're getting angry and depressed from all this. You need to see a counselor to help". On the way home, she thought that seeing a counselor was nuts. “That same day I looked online for a painting program and found one that I fell in love with and still use today. It took a lot of time for me to achieve where I am today as an artist.”

Travel Gluten Free Podcast S05 Episode 5 How to Be Gluten Free with Gluten Free Bebe
Melinda Arcara, AKA Gluten Free Bebe, is the youngest of ten children. Her father nicknamed her Bebe since she was the littlest of the bunch. The first forty years of her life were filled with unexplained symptoms, including migraines, stomach pains, anemia, infertility, anxiety, weight fluctuations, joint pain, sinus pain, bladder infections. In 2009 she was finally diagnosed with gluten intolerance, and over the last 10 years, she was told she shouldn't be tested for Celiac disease because she wasn't eating gluten.
When she was diagnosed with gluten-intolerance, she was told to "Google" the topic and figure it out. Ten years ago, there wasn't much out there as far as gluten-free information or products, and not many restaurants prepared food safely. Last year, after six months of nutritional deficiency symptoms, she was tested for Celiac with a positive result. Having a Celiac diagnosis is a blessing, as she finally has an answer to years of unexpected illnesses and pain.
"I like to think that I am the practical side of being gluten-free. My husband is Celiac, but our two children are not. We say we are a "Gluten-Free, Gluten-Full" home."
Melinda is a Certified Health Coach that focuses on keeping balance with pre-packaged gluten-free products. Bebe encourages creating healthy food choices. She wrote her book, 3 Steps to Gluten-Free Living, to help others adhere to a medically required gluten-free diet. Her book is meant to save people time and money and help newly diagnosed Celiac patients learn what gluten is, where it's found, and how to read labels.

Travel Gluten Free Podcast Season 09 Episode 15 Gluten Free Indian Cuisine Indian food is one of my favorite ethnic dishes, so I’m so glad that East Indian cuisine is mostly naturally gluten free! Besides naan bread, and some samosas - which are the East Indian version of a burrito - most other dishes do not have gluten. Today, I’ll give you information on popular Indian dishes that typically do not contain gluten that I’ve eaten in the past. As always, check with the chef or cook at the restaurant you’re eating at to make sure your food is safe! Be Aware of Gluten in Lentils Because the FDA allows up to 10% of another grain in lentils, I try to avoid lentils as much as possible. However, there are several dishes, including the crisp wafer Papadam, that are made from lentils. The one time I was sick from Indian food was cross-contamination of the lentils in the dish. Four Types of Indian Cuisine based on Region North Indian cuisine is known for its robust flavors and extensive use of dairy products, such as ghee (clarified butter), yogurt, and paneer (cottage cheese). Popular dishes include biryani, butter chicken, tandoori chicken, naan bread, and various lentil-based dishes like dal makhani. South Indian cuisine is primarily vegetarian and is characterized by its generous use of rice, lentils, coconut, and spices like mustard seeds, curry leaves, and red chilies. Popular dishes include dosa (fermented rice and lentil crepes), idli (steamed rice and lentil cakes), sambhar (spicy lentil soup), and rasam (tangy soup). East Indian cuisine is known for its seafood, sweets, and subtle flavors. Rice and fish are staple ingredients in this cuisine. Popular dishes include macher jhol (fish curry), sandesh (a sweet made from cottage cheese and sugar), and rasgulla (a syrupy dessert made from cheese curds). West Indian cuisine is known for its spicy and vibrant flavors. It heavily relies on ingredients like garlic, ginger, and chilies. Popular dishes include pav bhaji (a spicy mashed vegetable curry served with bread), vada pav (a spicy potato fritter sandwich), dhokla (steamed fermented chickpea flour snack), and various Gujarati thalis (platters) featuring a wide variety of vegetarian dishes. Things to do in Oahu
With the largest density population of all the islands, Oahu has all the amenities of modern life, including traffic jams in the capital city of Honolulu. If you grew up watching TV in the 1970’s, Oahu was the subject of opening title screens for such popular shows as Hawaii Five-O and Magnum P.I. Oahu is also home of Waikiki Beach, which is known as a popular area for tourism.
Tony says, “You can escape the hustle and bustle on the north shore.” Make sure to stop by and visit Pearl Harbor, Diamond Head, and exquisite high-end shopping are highlights of the big city of Honolulu. Shop at Neiman-Marcus, Chanel or Prada. Or shop local at a boutique store in Honolulu.
Stay at the Disney Resort outside of Honolulu for your Hawaii Disney experience or plan your stay at one of the major resorts along the shores of Oahu.

Things to do in Molokai
“Molokai is usually not the first Hawaiian island people visit,” says Tony. Off the beaten path, rustic and rugged environment so much so that there are no stop signs or stoplights on the entire island! A much simpler lifestyle on this island, “When you get there, you just slow down.”
Even though Hawaii is known for its championship golf, there are no golf courses on Molokai. Unlike its other island counterparts, Molokai does not feature luxury resorts. Tony suggests going to this unique island to experience more Hawaiian cultural foods, such as Poi, the fresh fish such as Ahi, and other local dishes.
Visiting Kauai
The geologically oldest island, Kauai, has lush rainforests, with the North Shore receiving the most rainfall of this island. On the top of the list for places to visit is Waimea Canyon, dubbed the “Grand Canyon of Hawaii,” take a helicopter ride to the Nepali Coast, and, of course, hiking through the forest.
Take to the water for river or sea kayaking, SUP, and snorkeling. Find some of the most fantastic ziplining through the Kauai rainforest, or take an UnCruise aboard a ship with only 34 other passengers to experience the ultimate in luxury cruise travel!

Things to do in Maui
From its famous beaches to the peak of Haleakala, Maui offers a wealth of unforgettable sites and activities. The name Maui translates into "the best" in Hawaiian, and for travel, Maui has the most adventures to offer, including hiking, beaches, mountains, and nightlife. Before you go, note that this island definitely has a touristy feel.
Lahaina and Ka'anapali are the two most western towns in Maui and offer spectacular beaches. Lahaina is a historic whaling town where you can find fantastic dining and shopping. Check out Front Street for a thrilling night in one of their many nightclubs. In western Maui, you can find a wide variety of hotels and many beaches to enjoy.
Tony's advice for those traveling to Maui is to divide your trip into a more activity-based trip and spend some time on the quieter side of Maui to enjoy some rest and relaxation. He also recommends Joe's Bar and Grill and Roy's to experience food from a Pacific Rim chef. Additionally, you should visit the Haliimaile General Store to get away from the hustle and bustle of the beach.
For the gluten-free, I'd highly recommend Maui Brick Oven, the only dedicated gluten-free restaurant. You can eat amazing foods such as mozzarella sticks, fried onion rings, and the best Italian food I've had in many years! Tony recommends the celiac-friendly Mama's Fish House Restaurant for the best fish dishes on the island.

DisneyWorld - Perhaps the Safest Place in Florida during the COVID Pandemic
In this episode, I chat about Disney Star Wars experience, the new COVID restrictions at Disney theme parks, Disney apps you can use to enhance your Disney experience, and the level of service Disney offers to those of us who are gluten-free or have specialty diets.
Amidst the most significant COVID numbers yet seen, with over 15,000 cases in one day last week, the state of Florida alone has recorded more COVID cases than other countries! Even though it's tempting to go and actually get a seat on Rise of the Resistance, those epidemic numbers are way too high for me to be comfortable to fly to Florida. I will say that with all the sanitization, social distancing, and touchless services Disney has in place, a Disney theme park is most likely the place you'd be least likely to catch COVID in Florida.
I'm a Disney fan by default, as when they purchased Star Wars, I became a Disney fan only because I love Star Wars. When I lived in Florida, I was a short 45-minute drive away from DisneyWorld. Our family would often go to DisneyWorld on the resident pass, which, 15 years ago, was only $99. Of course, there were blackout dates, but honestly, I wouldn't want to go during the holidays that were blacked out anyway as it would be super packed with people, and that's just not enjoyable for me.
Creating a Disney Account Online
If you're planning on going to Disney, you'll first want to open a Disney account for yourself online https://disneyworld.disney.go.com Next, create an account for each person in your party, then link people who are traveling with you. If someone in your travel group already has an account, do not create another account for them. Simply email them an invitation to join your group!
Create all your plans on your Disney account and make plans for the people in your party! Reserve Fastpass up to 30 days ahead of time. Now, you can create dinner reservations, reserve FastPasses, buy merchandise, and book your Disney stay all from one place! Get FastPasses for your entire group, or make dinner reservations for each individual person. If you want to divide your group into two - no problem! You can put only individuals that want to go on a ride or to a restaurant on that reservation. Additionally, you can change your reservation online 24 hours ahead of time on the app or on your desktop. Of course, Disney makes it super easy to separate you from your money, it's what they are good at. Using the Disney App to Enhance Your Vacation Experience
Next, download the My Disney Experience app to view all your park plans including hotel, dinner reservations, order meals ahead of time, access PhotoPass service, view park maps, see wait lines at different rides, find character greetings, view showtimes, access FastPass reservations created with your Disney account.
When waiting in line, I recommend downloading the Disney Play app to your phone. Log in to your account and play a game that is based on your location in the park! Most games are two players, so you’ll need a person in your group to play with on the app.
FastPass and FastPass Plus at Disney
Fastpass can be reserved up to 30 days in advance and gives you a shorter line to wait in when at any of the parks. Fastpass + charges a fee and puts you at the front of the line. With COVID modifications, Fastpass + isn’t available right now as they are using social distancing with wait lines, and they are using the FastPass+ space for their regular line queue. Note: You can get three FP for one park per day.

The Peaceful Thrillseekers Advice on Attending Theme Parks
When you are planning to go to a theme park, and you are bringing the family, make sure to have your reservations ahead of time as soon as possible. If you’re going to Disney, create a Disney account for all members of your family, and connect them under your name. You can reserve FastPasses for all your guests at the same time, right online!
Are you an Amazon Prime member? If so, you can order supplies ahead of time and have them shipped right to your Disney hotel room! He definitely recommends doing this in advance of your trip to avoid any “hiccups.”
If you are going with a group of friends, Oscar recommends starting at the back of the theme park, working your way forward to avoid the crowds. Many people start at the front of the park and move to the back end. Doing this in reverse helps to cut down on groups and wait times. He also advises avoiding crowded holiday times, as this will increase your wait times on rides and reduce the chances of riding on all the spins at the park you are visiting.
Definitely bring sunscreen, sun hat, poncho and sunglasses that you are not afraid to lose! These are essentials, especially in Florida theme parks. Wear comfortable walking sneakers - definitely don’t wear flats or heels to any of the theme parks. If you’re wearing sandals, make sure to wear the type that has the strap across the front and back of your foot to keep them secure, especially when you are riding coasters!
And, if you go to a theme park more than once a year, definitely invest in an annual pass for that park. This will save you hundreds of dollars and give you the flexibility to go to your favorite park for fun, once a year, special events.

“The thing that makes it so spectacular is the cast members. I think the cast members have done an amazing job with Galaxy’s Edge. I think that if it weren’t for them, the experience wouldn’t be as special as it is.” Checkout The Peaceful Thrillseekers episode on Star Wars experience here.
Theme Parks for Kids and Parks for Adults
For kids, Oscar recommends Disney, Legoland, Sea World, Fun Spot.
Adult-centered theme parks include: Busch Gardens, and Universal. Although Universal does have more adult rides, they do also have rides for children. Oscar mentions that Cedar Point in Ohio is his dream coaster park and that he will make a mecca there one day.

The Celiac Project Documentary
The inspiration for this film came after director Michael Frolichstein struggled with a series of "mystery ailments" before finally being diagnosed with Celiac Disease at age 40. Michael was shocked to learn that this auto-immune disease, which affects 1% of the US population, is 83% undiagnosed or misdiagnosed.
His journey to meet others who had suffered, as well as to get answers from experts, led him to uncover more mysteries within his own family. The documentary ultimately explores what we can do individually and as a society to advance the conversation and raise awareness about the disease.
Guest Bio
Following a lifetime of dismissive doctors, unexplained symptoms, and emotional stress, filmmaker Michael Frolichstein received a life-changing diagnosis at the age of 40—celiac disease. Camera in hand, Frolichstein set out unaware of the odyssey before him. The result is “The Celiac Project,” a powerful, first-of-its-kind documentary; its goal is to raise awareness about celiac disease.
The documentary is currently rolling out on different Public Television stations nationally. Soon after completing the film, Michael met Cam Weiner at a screening of his film. Cam related to Michael’s story, as his own health issues and subsequent diagnosis with celiac disease forced him to pause his budding film career. The two forged a secure connection and a shared mission of raising awareness.
Together, they launched a weekly podcast in January of 2016 to discuss and highlight issues and topics relevant to the celiac and gluten-free community. There are over 225 episodes to date, covering a myriad of fascinating topics and special guests.

Travel Gluten Free Podcast Bonus Episode Podcasters for Justice We All Deserve Equal Rights In light of the civil unrest that has been happening for over half a century, I wanted to support my friends who are podcasters of color. My best friend is black, I have many black friends in the podcasting community. Although I’ve treated all human beings fairly and with respect, I don’t feel that I can speak on behalf of people that have been persecuted and had their rights infringed upon because of the color of their skin. As an anthropology student, I learned that race was created as a hierarchical structure to keep white men in control. Similarly, white men developed a list of what “women cannot do” to prevent females from becoming equals in the eyes of men. Women of color, in particular, I feel have had multiple challenges not because of who they are or what they do but because of the genetic factor of skin color. I’ve always believed this to be an injustice. I enjoy spending time with people of all races and skin colors as I see all people on this Earth as human beings. Treating people with respect is not a privilege; it is a right, and the people of this Earth should act according to this universal law of decency. To do otherwise is to bring down yourself and humanity along with it. I stayed at Las Palmas Resort and I enjoyed my stay so much, I’ve already booked another week there for next year! I can’t wait to go back. Traveling to Puerto Rico You can easily get a plane ticket in and out of the main airport in San Juan. And because Puerto Rico is a US territory, you don’t need a passport, but you will need a Real ID. Also, you don’t need to exchange currency as Puerto Rico is a territory and uses US dollars. It’s an easy trip to get to a tropical island that you don't need a passport to travel to if you’re a US resident! Beaches in Puerto Rico One of the best geologic features and most relaxing activity is to visit a local beach. For ten years, Sue baked her way to local fame, opening a gluten-free bakery in her town. Sue counts more than 20 years since both she and her daughter have been diagnosed with celiac disease. During that time, she has operated a gluten-free bakery, runs a celiac kids camp, and is currently producing and hosting a gluten-free baking show on cable TV in Ontario.
Sue is a celiac who owned and operated a gluten-free bakery for more than 10 years. After closing the bakery, she started working in an office, which she didn’t find very rewarding. She wanted to utilize much of the knowledge gained while baking and approached her local cable channel about producing a gluten-free baking show. The show ran locally and within Ontario for two seasons.
Sue soon found she enjoyed the media and left her office job to return to school to study different forms of modern media. She examined what I really enjoyed in both courses and realized that I was passionate about doing interviews. Her vast knowledge of celiac disease and the gluten-free diet was a perfect fit as she had great relationships within the celiac community, which she utilized for my content.

How Makeena Started
Karen’s dad was a science professor at the University of Illinois. Through her dad, she learned science, mathematics, social studies, and English on a device that was a touchscreen back in the ’60s and ’70s.
After she married, she and her husband went to a small natural foods and products store in Urbana, Illinois, called Strawberry Fields. “ Their team was helpful and would always point you in the right direction.” Moving to Boulder in 1993, Karen and her husband shopped at Alfalfa’s and Wild Oats. These were much bigger stores compared to their old hometown store, Strawberry Fields. That was the “aha” moment where she realized she should build touchscreen kiosk systems that allow the consumer to navigate the retail environment.
Karen tells the story of how her journey culminated in blazing the path of the Makeena app. “I felt like I had all these different roads, and they all led to Makeena. It was an intersection of what I should be doing. I am really passionate about the idea that if we could make better-for-you products more affordable and accessible for everyone anywhere they need to shop, then we’re going to have a cleaner planet and a healthier population. This is the bigger vision that I have as the founder. That’s what keeps me going because it is tough to be a founder.”
How Karen Decided on a Name for Makeena
“Keena” means ‘happiness’ in Swahili, ‘‘abundance’ in Hawaiin and ‘machine’ in Arabic. The name was also available as a website and was available for national trademark. She likes that her platform gives brands a “stamp of approval for curation.” Because Makeena stands for ‘happiness’, she wants to make sure that both the shopper and the brand are happy. Karen also wants to make the world “a cleaner place” and that there is abundance for everybody - for consumers and brands. Technology comes in on the app side of her business, making this information available through her app on the world wide web.

Karen is passionate about being an entrepreneur and making the world a better place. She firmly believes that building a technology company in the natural products space will encourage people to shop healthier because Makeena will make it easy for them to make smarter choices. Karen became an entrepreneur in the early 1990s when she moved to Boulder, Colorado, and built and operated two interactive touchscreen kiosk companies, one for the real estate industry and one for the natural products industry.

Utah is known for its outdoor fun and adventure; however, you need to be safe in the sun. Did you know that Utah is #1 for skin cancer in the United States? Since we are at high elevation, our sun is much stronger than other places at lower elevations, so you can burn easier. Additionally, some people think they can't get a sunburn in the winter when it's cold; however, that is entirely false. You can actually burn easier in the winter because not only are you getting sun from the sky, you are also getting reflected sunlight bouncing off of the snow.
I love camping. I love the outdoors, sleeping outside, sleeping in my hammock, having a campfire every night, not caring about smelling like campfire smoke or makeup. The beautiful trails I hike and the out-of-the-way places I find when I'm taking that road trip to my next camping spot. There are so many things to love!
Few activities are a must when camping. One, especially in Utah or climates that are dry and at high elevation, is taking care of your skin. The largest organ in your body can quickly become dehydrated, burned, and bitten during outdoor adventures unless you take proper precautions with your skincare.
Chemical Free Hydration for Your Skin
Keeping skin hydrated means drinking lots of water. The higher elevation, the less oxygen and the more water you need to drink, however, if you're drinking lots of water, you want to also take an electrolyte supplement or salt supplement, so you don't unbalance the electrical connections in your body! Remember, if you're out in the heat, drinking more water doesn't cool your body temperature, you must pour water on you, bath in cool water, get into a climate-controlled environment or wrap a wet towel on your head or your hotspots on your body to cool yourself down.

Ready To Eat Camping Meals Are Quick and Easy
If you love camping, but you don't want to spend the time prepping, making and cleaning up dinner, there's an easy alternative - get pre-made camping food. With ready to eat meals, you can create breakfast, lunch or dinner in a snap by just adding hot water to a resealable pouch and waiting for the food to cook for the specified time on the package. They are easy, lightweight, and take up minimal room for food. If you're a backcountry backpacker, ready to eat meals are an essential part of your daily macros.
Although easy to prep, make, and clean-up the downside to ready to eat meals is that they are loaded with salt. If you're out in the summer sweating and don't have issues related to eating salts such as water retention or high blood pressure, then you are safe! If you do have medical problems associated with consuming high amounts of salt, I would suggest not using ready to eat meals with their high sodium content.
Watch Out for Gluten in Your Camping Food
Additionally, you have to be very careful to choose gluten-free meals. Never trust the label on the package - especially in the US. Andrea Tucker from Gluten Free News podcast has reported on foods whose label says gluten-free, but the ingredients contain gluten.
Make sure the camping food you choose doesn't have MSG monosodium glutamate or modified food starch that isn't explicitly labeled corn or potato. These have gotten me in trouble on more than one occasion. Also, look out for the words "natural spices" as this ingredient may also translate into gluten. Besides, you want to look for labeling that reads "made in a factory that contains" if you are celiac or have a food allergy.
I like to go to my local camping and outdoor stores to see the packaging, read the ingredients, and purchase the camping food. Once I've found food I like, I then buy it online. I would definitely avoid buying these foods online from Amazon as they have issues with knock-offs, and that could completely ruin your vacation! When purchasing online, buy from a reputable outfitter such as REI, or the official company website of the meals you are buying. Making sure that your meals are safe is critical to your vacation experience!

Storing Food for COVID Camping
Ice
Use dry ice! There are several reasons not to use regular ice in your cooler.
Be careful not to touch dry ice with your hands as you can get a burn. Handle with paper or a towel! Although a bit more expensive, dry ice is worth the extra cost because of the benefits listed above.
Coolers
Best cooler: Yeti coolers, they are pretty pricey, starting at $79.99 for a lunchbox, however; they are the best option when you are not going to be near any dry ice for days. The description from their website reads, "Extreme insulation power and durability are bare minimum requirements for every cooler we make — and we never stop there. Our hard coolers don't flinch in the face of snowstorms, the beating sun, or even bears, and our soft coolers are leakproof, waterproof, and quick to carry. As for our foldable lunch bag, that's only for those of you who enjoy ice-cold drinks and a fresh meal on your lunch menu."
Storing Food in Your Car
When I go on a road trip, I get shallow plastic boxes. Why shallow? I can more easily organize my food and see my food because it's one layer deep and not several layers. If you get containers with a sunken top, you can easily tape a paper label to the bin so you can see what is in that container. Put canned, aluminum packaged, nut butter, snacks, and other sealed items in these bins.
Make sure to not leave open food in containers or your cooler, especially if you are in bear country. They can peel down a locked door car window to get to your food. Definitely NEVER store or bring any food, toiletries (because they smell like food to a bear), or any food wrappers into your tent. This will attract bears at night, and they don't like that you are preventing them from getting to their food.
Gluten-Free Snacks for Hiking
If you are going hiking and need hiking snacks, the most efficient way to pack these is to buy single servings and put one type of snack in each Ziploc bag - this is one of the expenses I will incur because Ziploc is sturdier than other brands of plastic storage bags.
For example, if you have 14 different types of squeezable fruits, put all the squeezable fruits in one Ziploc bag. This way, when you are packing snacks for a hike, you can easily find what you want, and choose a flavor. Getting into the great outdoors, away from others while camping is the perfect combination of social distancing and having an excellent outdoor adventure all in the same experience.
Erika’s Introduction to Food
Being raised in San Francisco, Erika has been in the middle of the foodie scene from the very beginning. Her mother was a foodie and took her to restaurants, cooking classes, and the hole-in-the-wall places, exposing her to a broad array of different types of ethnic cuisines and better ingredients. “My friends would tease me as they wanted to come to my house because I had the best food.”
The first food item she learned to make before she was gluten-free is garlic bread that she admits is a very “San Francisco food.”
Erika is an admitted cravings person when she wants something, she wants it a lot! As a teenager, she wanted eggs benedict when she came home, so that was the first food she learned how to make.
“Ever since the gold rush, San Francisco has been in the middle of the food scene. They all missed the food at home. Many people didn’t make it rich from gold, but many made their riches from restaurants serving that food from home.” She enjoys being a resident of the area as a rich restaurant heritage from the old west days. Erika also loves the food scene in San Francisco because the chefs are so passionate about the culinary scene.
Her Start in Travel Writing
Her first gig was writing about San Francisco restaurants for Time Magazine in New York. She then “fell into” writing for the Frommer’s Guide to San Francisco, then California, for over a decade. “Having a local write your guide is important.” After Frommer’s, she sidetracked with a friend writing in themed entertainment in LA. She worked on a Star Trek project with him producing this project. Additionally, Erika started knocking on magazines in the Los Angeles area and found work there. She then continued writing about food back in San Francisco, writing for several national magazines. “I think my passion for all of those things came together and afforded me a lot of exceptional opportunities that I was fortunate to have.”
Finding a Niche for Her Gluten Free Magazine
Being a food critic and an eater, not a snacker, and being blessed with a good metabolism. In the year 2000, everything changed for her. Being in her early 30’s, with a stressful job, Erika realized her body was changing. She went from eating what she wanted to eat to gain 15 pounds, couldn’t fit into her clothes, and her skin and nails were in poor condition. With an elimination diet, she realized her sensitivity to gluten. While working in the food industry as a food critic, she heard much criticism about gluten-free food tasting terrible.
“I think I have this culmination of a desire to share with people what I knew to be true, which is, it’s very easy to eat fantastically well and enjoy everything that you want gluten-free if you know the right recipes and the right products.”

Utah Hiking Trails to Beat COVID-19 Boredom
While working at an insurance agency, Alicia from Girl On a Hike started looking for information on hiking trails in Utah. An avid hiker, her friends, would ask her about the hikes she went on when we're good times to go, and which trails she liked the best. A friend suggested she start a blog on hiking trails in Utah. After looking around the internet for hiking trail information, Alicia couldn't find the detailed information she was looking for: what to expect on the trail, step by step information with pictures, and which trails were dog friendly. She wanted to make her blog stand out from other blogs, apps, and information on Utah trails, "I wanted to put stuff in there that nobody else had," so she started her own blog Girl On a Hike.
Building Her Blog Girl On a Hike
Knowing nothing about coding and web design, a friend directed her toward Blogger. Alicia wasn't sure if she wanted to stick with her blog, "I liked to write, but I've never written trail guides. I didn't know if this was for me if this was worth the time and money I had to put into this." She started on this platform, but ultimately her need for her own site sparked an interest to change her career to coding and web design.
Choosing a Trail for Her Blog
Alicia takes notes in her notes section, and her "to-do hiking list gets longer every year." She has many trails she would like to hike, but can't get to all of them by December. "Even though I feel like I've explored a lot of Utah, I feel there are so many trails I haven't explored."
Basing Her Vacation Around Hiking
"I travel to explore and find new areas," she says of her vacation plans. She isn't the stay by the pool and sips a drink kind of gal. Alicia plans her entire trip around backpacking and hiking trails. She also takes her dog Charlie, who recently turned eight, along with her on all her hikes and adventures.

Lemongrass Spa - My Favorite Skincare Line
Today I'd like to share with you my favorite skincare line - Lemongrass Spa. I interviewed Karen Smith, a skin consultant for the line on episode 55, I’d highly recommend you listen to that episode if you haven’t yet.
I met Karen at the Nourished Festival in Denver last year and tried Healing Elements at her suggestions. She said this was the best cosmetic lotion for dry skin. I have really dry skin and have yet to find a skin cream that keeps me moisturized for 24 hours. To my surprise, Healing Elements did the trick! Naltrexone’s Effect on Auto-Immune Disease and Inflammation
Naltrexone is a drug that blocks the opioid effects of drugs. The opioid effect is also known as pain relief. Naltrexone, given in doses of 50mg or 100mg, blocks opioid drugs, aka narcotic drugs, from attaching to our nervous system receptors. However, researchers have found that given in small doses, Naltrexone has huge benefits for those suffering from an auto-immune disease, specific types of cancer and IBS, among others.
How does Naltrexone Work?
Naltrexone will bind to the receptors in your body which creates inflammation. Chronic disease leads to a chronic inflammation cycle. Naltrexone binds to your opioid receptors, not allowing your body to inflame and break the inflammation cycle.
My Experience with Naltrexone
I’ve been living in pain daily, with few exceptions for the past two years. While seeing Amie and Rory at Peak Medical for weight loss and hormone balance, I relayed to Amie that my pain level had been rising the past few months and I wasn’t able to get my pain under control. She had recently been to a medical conference and heard a speaker talk about Naltrexone for symptoms of auto-immune disease and asked if I’d like to try out Naltrexone. I said yes!
Within two days of starting 1.5 mg of Naltrexone per day, almost all of my body, muscle, and joint pain were completely gone, along with my overall body stiffness. I felt that I’d been given a new body! Not only was my pain gone, but I was also able to work out better and feel better post-workout as a result of being in less pain! This drug is amazing! A friend of mine who had similar symptoms took Naltrexone and had similar results.
Starting off at 1.5mg, the Naltrexone dose is elevated over time until correct dosing is found. I’m currently at 3mg per day and started taking Naltrexone about six months ago. I love the way I feel and although I do get flare-ups, I can manage them much better.

COVID Travel Options
If you are at high risk because of age or immunocompromised health, staying at home is your best bet. Always seek and take the advice of your medical practitioner when your health and safety are involved.
Are you having a bad case of cabin fever and are not in a high-risk category? You’re in luck as there are a few travel activities you can still participate in when you are healthy and not in the high-risk group.
Take a Day Trip to a National Forest or National Parks
The National Forests and National Parks are now free to go and roam! Many places inside the park are closed, however, you can still hike and enjoy the outdoors in the national forests and parks. Take a day trip to a National Park or National Forest, enjoy the outdoors, bring a picnic and spend time with your family outside. Plan your trip ahead of time to a National Park by downloading a park PDF map by looking up a National Park on the National Park website here.

Did You Know There are Four Types of Gluten-Related Disorders?
Susan and I chat about the four types of gluten-related disorders: celiac disease, non-celiac gluten sensitivity, wheat sensitivity, and wheat allergy. These four conditions affect about ten percent of the population, however; over half of those individuals do not realize they have this health issue because their symptoms range from gastrointestinal distress to joint pain. Individuals aren’t making the connection between diet and their body reacting negatively to wheat or gluten.
Gluten Sensitivity and Wheat Allergy
When her sister was diagnosed with nonceliac gluten-sensitivity, Susan realized how hard the gluten-free lifestyle was to adjust to from a regular diet. As a child, Susan was allergic to wheat but grew out of the allergy as a teen. When she had a health crisis eight years ago, she was tested and realized she became wheat sensitive. She was inspired to write her book Solving the Gluten Puzzle: Discover if You are Gluten Sensitive and How to Embrace the Gluten-Free Lifestyle? to help others discover if gluten might be an issue and how to transition to a gluten-free diet.
Solving the Gluten Puzzle helps readers put together your health care puzzle as there is no specific test to diagnose non-celiac gluten sensitivity nor irritable bowel syndrome (IBS). Therefore, the lack of testing creates extreme difficultly to attaining a proper diagnosis. Celiac disease has increased by 400 percent in the past fifty years; scientists believe there must be external factors causing the rise in this disease.
Non-Classic Celiac Disease
Celiac disease is an autoimmune disorder whereby the body attacks its own gastrointestinal system when a person ingests gluten. However, with non-classic celiac disease, an individual may not even suffer from typical GI symptoms and not be aware they have celiac disease. Anyone can develop celiac disease at any age with any combination of over 200 celiac disease symptoms. To obtain a proper diagnosis the person must be eating gluten when being tested.
