Chef Caryn Dugan is the founder of the Center for Plant-Based Living, the nation’s first plant-based culinary education center. After facing personal health challenges, she turned to a whole food, plant-based diet and never looked back. Caryn is a certified instructor with the Physicians Committee for Responsible Medicine (PCRM) and has trained under leading experts in plant-based nutrition.

Dr. Jim Loomis is an internal medicine physician, lifestyle medicine expert, and Medical Director at PCRM. He has served as the team doctor for the St. Louis Rams and Cardinals, as well as the tour physician for the St. Louis Symphony Orchestra. Dr. Loomis is a strong advocate for food as medicine and has been featured in the documentary The Game Changers. Together, Caryn and Dr. Loomis co-host The Doc and Chef, a YouTube series where science meets cooking. Each episode breaks down a health topic—Dr. Loomis explains the research, and Caryn brings it to life with a practical, delicious recipe.

In this episode, I sit down with Olympic silver medalist cyclist 🚴‍♀️ and Executive Director and Founder of  @Switch4Good , Dotsie Bausch, to uncover how she defied the odds by embracing a plant-based diet.

Dotsie Bausch lives by the Switch4Good motto—Live better. Do more. Dairy-free—and is on a mission to educate and empower others to do the same. She speaks passionately around the world to spread her message about the positive impacts a plant-based lifestyle has on animals, humans, and the environment.

Her popular TEDx Talk, “Olympic Level Compassion,” has garnered over 175,000 views, serving as a catalyst for change for thousands of people. Dotsie shares her journey from her first steps into cycling to achieving world-class success, all while ditching dairy and going fully plant-powered.

Despite being told it would hold her back, she transformed her body, gained strength, and pushed her limits to reach the podium at the 2012 London Olympic Games. She also opens up about the physical changes she experienced, her decision to focus on dairy-free living, and what advice she'd give to up-and-coming athletes.

Plant-Based TeleHealth co-founders, Anthony Masiello, Laurie Marbas, MD, Christina Miller, MD, and Michael Klaper, MD, have launched a national telemedicine service focused on the prevention and reversal of chronic disease utilizing lifestyle medicine. This new service provides access to plant-based lifestyle medicine across the United States; using secure video conferencing and patient portal technologies, a doctor in one location delivers “in-person” care to a patient at a distant site.

Plant-Based TeleHealth (PBTH) provides medical care for patients who have a chronic disease and other medical conditions, including, but not limited to, diabetes, high blood pressure, high cholesterol, heart disease, obesity, autoimmune diseases, inflammation, and digestive issues. These conditions are addressed through lifestyle medicine—the powerful, evidence-based practice of promoting healthy behaviors and lifestyle modification, including a whole-food, plant-based diet.

Doctors are now available to see patients in all 50 states across the US, and internationally for lifestyle medicine consultations.

Plant-Based TeleHealth is making plant-based lifestyle medicine available nationwide, using telemedicine to remove many of the barriers that prevent people from accessing this type of care.

As a Chef, I manned the helm of many 4-5 diamond restaurants, wineries, cafes, and hotels, but still was not satiated and craved more from life. 

I went back to school and studied plant-based nutrition as well as enrolled in a Vegan High end cooking program to reteach myself how to cook without dairy, refined sugars, and gluten. 

During this time I steepled in the culture of regenerative farming, food is medicine philosophy, and started to understand the ways of ancient principles of food. 

Essentially I started to cook and eat with the intention to prevent disease. 

In 2020 I became Chef Collin the Culinary Coach and have now dedicated my life to learning and teaching others to cook healthy, by changing their Food Relationship through my D2R Method.

Dr. Andrea Matsumura was born in San Antonio Texas And attended the University of Texas Health Science Center in San Antonio for medical school. She had a desire to explore and thought she was an east coaster for sure. Little did she know when she did an externship as a fourth-year medical student in Oregon that she would fall in love with the West Coast and all things involving the outdoors. She quickly switched gears and ended up finishing her internal medicine residency in Portland Oregon.

She worked as a hospitalist for a few years and moved into the outpatient care setting as a primary care physician. It was there that her spark for the love of sleep medicine started. Smokey Tofu Mayo Dressing Recipe

Makes about 4 cups

Ingredients:

1 block 14 oz extra firm tofu

1 garlic clove

5 stalks green onion, roots trimmed

4 medjool dates, pitted

Juice and zest of 1 lemon

1 tablespoon Dijon mustard

1 tablespoon vinegar

2 tablespoons nutritional yeast

2 teaspoons smoked paprika

1 1⁄2 teaspoon salt (optional)

3⁄4 cup ice water

Additional herb options: dill, basil, cilantro, parsley, tarragon

Instructions:

1. Blend all the ingredients together until smooth. If still grainy, add a little more water.

2. Chill before using.

Broccoli Salad Ingredients:

2 heads broccoli

2 medium sweet potatoes

1 red onion

2 medium carrots

1 medium apple

1 cup cooked farro

Smokey tofu “mayo” dressing (see above)

Instructions: 1. Cut broccoli florets into bite-sized pieces. *

2. Dice onion, carrots, and apple into 1⁄4” pieces.

3. Dice sweet potatoes into 1/2-inch pieces. Boil until fork tender, drain well, and roast to get some color in a 425 F oven (15-20 minutes).

4. Toast 1⁄2 cup of farro in a dry pan until fragrant. Add 1 1⁄2 cups of water and bring to a boil. Cover and simmer for 30 minutes, fluff with a fork, and then cover for another 5-10 minutes.

5. Toss all the ingredients in the creamy dressing and chill before serving.

*If you prefer your broccoli not as raw tasting, blanch for 1 minute in hot water then shock in ice. Trim off the more fibrous outer portion of the stem and make sure to chop up and include this portion in your salad. Note: preparing this a day ahead optimizes the nutrient punch of many of these ingredients. The sweet potatoes and farro will develop more resistant starch content and the broccoli will contain more of the amazing health-promoting compound, sulforaphane.

"I was born and raised in Houston, TX, and graduated from the University of St. Thomas in 2002 with a BA in Biology and a minor in Music. I earned my MD at the McGovern Medical School (UT Houston) and matched into anesthesiology residency at UTMB in Galveston. After graduating from residency, I moved to San Antonio, TX where I completed my fellowship in interventional pain management at UTHSC-San Antonio. I moved back to Houston in 2012 and began practicing pain management in the Greater Houston area.

​After practicing pain management for several years, I noticed that my patients were still suffering, and I knew that there must be a way to help my patients lead to higher-quality lives. I consider myself an avid yogi since 2012 and had the opportunity to complete my 200-hour yoga teacher certification in 2014 and restorative yoga certification in 2015. After doing some searching, I stumbled upon integrative medicine and found a way to meld the two worlds of yoga and medicine together. I completed the integrative medicine fellowship with the University of Arizona Center for Integrative Medicine (founded by Dr. Andrew Weil) in the fall of 2018. I am currently in the process of completing a health coaching program through the National Society of Health Coaches.

​I am a part of Texas Orthopedic and Sports Medicine with 2 locations in North Houston - Tomball and The Woodlands, where I offer my patients a variety of modalities to manage their pain."

She is an active member of the Clinical Practice Committee for the Emergency Medicine Physician Group, PC. She serves as a Peer Coach providing feedback on communication techniques for Emergency providers and facilitates talks with healthcare providers about burnout, wellness, and work-life balance/integration. Most recently, Dr. Gregory has had the honor of being a contributing author of the books, The Chronicles of Women in White Coats and Thinking About Quitting Medicine Volume 2.

Outside of medicine, her passion to pursue wellness and work-life balance led to the establishment of the virtual greatness and wellness coaching company Fervently Fit with Charmaine, LLC. Wellness, fitness coaching, and holistic nutritional supplementation serve as an extension of clinical service by focusing on preventative methods for health and wellness maintenance. She is also a trained Physician Coach, helping colleagues find meaning and direction when most needed.

In addition, she is certified to teach live group fitness classes in an MMA (Mixed Martial Arts) and offers group fitness instruction to colleagues at national meetings.

On this season-ending episode of Thrive Bites, I sit down with Margaux Alvarez about her personal journey before being a Crossfit Athlete and Competitor and a winemaker. Let's get behind the scenes of her slogan, "Work Hard, Wine Down."

With seven CrossFit Games appearances already under her belt as an individual competitor, Margaux Alvarez shifted her focus to the Team Competition in 2019, joining Invictus X and qualifying via the Granite Games. At 34, she has become one of the true ambassadors of the sport and a source of inspiration to countless athletes, both through her own performances and her passionate efforts as a coach, affiliate owner, and mentor.

Margaux spent much of her childhood in Montana, where she gained her love for almost any kind of athletic endeavor—from swimming and volleyball to ballet, horseback riding, and Taekwondo. She was turned on to CrossFit while working as a trainer in the Bay Area in 2011 and took to it immediately. Since then, Alvarez spent years on the CFHQ Seminar Staff, and in 2018, made headlines by winning the CrossFit South Regional at age 33. From her current home base in Las Vegas, she’s also found a successful second career as a winemaker.
