We all should have a butchering and processing plan before we go out on our hunt and not trying to create a half ass plan on the fly. This is especially important if you are traveling / flying for your hunt and need to transport hundred of pounds of meat and possibly a cape or antlers.

Ep 121: Butchering Game Meat with Jason "The Butcher" Nauert10 Aug 202301:19:45

Though he was born in Illinois Jason has called Colorado his home for 42 years. He grew up in the small town of Woodland Park in the foothills just west of Colorado Springs. Growing up in the foothills Jason had the mountains at his back door which meant he learned everything you could imagine about the outdoors including hunting. Jason has hunted wild game animals for most of his life and with hunting came butchering. Jason has been butchering animals for over 40 years. With construction, law enforcement, landscaping, and in a few kitchens as a teenager being the work he did growing up his butchering had come full circle in 2012. Jason attended the butcher course offered by the Rocky Mountain Institute of Meat and never looked back. By the fall of 2013, he left his full-time job and pursued his dream of becoming a butcher. Having aligned himself with the ACF and his career taking off a year later in 2014 he was sought out by the Army with an interest in developing a field butchering program for healthier eating while deployed and career advancement back home. Years later Jason still trains the Army Special Forces and looks to expand into other branches of the military in 2018. Besides his work with the military Jason has had the pleasure of working with Celebrity Chef’s like Graham Elliot, Sophina Uong, Rick Tramonto, Hosea Rosenberg, and  Fernando Ruiz just to name a few, Jason has been showcased at food & wine events across the country showing off his butchery and cooking skills.

Ep 120:Training for Elevation with Joel Raether - H3 Outdoors03 Aug 202301:05:30

Joel Raether is the co-founder of Hunt Hike Harvest Outdoors. Raether is a life-long outdoorsman and archery enthusiast. His passion for the outdoors stems from hunting and fishing all types of small and big game animals as well as open water and ice fishing in western Nebraska. In the early 2000’s he moved to Colorado where his love for bugling bulls in September coupled with his background in strength and conditioning fueled the fire for the creation of Hunt Hike Harvest Outdoors (H3O).

Raether has a bachelors and masters degree in exercise science and his career spans over two decades training athletes of all ages including collegiate, professional and Olympic athletes. He is a Managing Partner at FAST Performance in Denver Colorado, the head of performance for the Colorado Mammoth Lacrosse Club and has the National Strength and Conditioning Association’s 2020 Professional Strength Coach of the Year. He has authored numerous books, presented and consulted across the globe on training and helped individuals and teams achieve more than 10 national championships, Olympic Medals, All Pro’s, League MVP’s and World Championships. He has also trained and consulted with all branches of the military, special operations and first responders throughout the United States.

It is this union of the outdoors and his profession that drives the vision for H3O to become a beacon within the outdoor industry to be the first (and only) evidence based company to merge physical preparation for high attitude big game hunts with specialized and specific training to assist hunters in maximizing their ability to achieve and yield successful hunts and fill more tags.

EP 118: Mark D'Ambrosio - Recon Marine & Cast Member of Alone Season 720 Jul 202301:26:35

Mark grew up in Orange Park, Florida, where he spent his free time in the outdoors hunting and fishing. At 22, he joined the Marine Corps in pursuit of a new career. Mark spent close to 10 years conducting Special Operations for the reconnaissance and scout sniper communities, where he pushed himself mentally and physically the entire time to make sure he was proficient at his job. During this time, he spent four years in Southeast Asia and another four in Bridgeport, California, where he instructed mountain cold-weather operations and survival for snipers and other military members around the world. After getting out of the Marine Corps in 2017, Mark started International Mountain Survival. His business concentrates on sniper, survival, tracking and rappel courses. He instructs snipers around the world from both military and law-enforcement backgrounds. Mark is also the lead shooting/outdoor instructor for Branded Rock Canyon, a world-class hunting and shooting facility located near Grand Junction, Colorado.

This week is a special episode as Perry and David Stark sit down with HLE Team Member Jack Rassmussen to dive into his lottery winning elk hunt in Virginia this past season. Jack literally won the lottery as one of 6 successful individuals among tens of thousands who applied to hunt in the inaugural Virginia Elk hunt- the first in over 150 years.

From a historical position of extirpation, this inaugural hunt is an incredible win for conservation. From the DWR, RMEF, and local landowners- this was a huge cooperative effort and a massive win for elk as a whole.
