Episode 455Taking you back to 10/7/2015 - Being featured this week is…then…first time guest and pitmaster of Loot N Booty competition team, Sterling Smith. In this interview, we got to talking about his ALMOST win at the 2015 American Royal. We also got a peek into how he got into competition BBQ in the first place.I don’t know if I would say that Sterling is “under-rated” as a competition cook…but he flies a bit on the radar as it relates to teams that are really good, have won a lot and are also in the business in the of BBQ…he sells rubs and sauces, does cooking classes and is hired in to stores to do classes as well…and someone that I have actually met in person a number of years ago. Good guy…GREAT cook…and continues to do it to this day…What up SMITTY!!?? Hope you are well!!**Don’t forget to rate and review the show on your podcast app.**Want to hear more from this episode? Episode 454Taking you back to October 2, 2013 - Being featured this week is the first ever…additional day…of the show…when that was a thing. You have come to know the show as a Tuesday night staple…yes…but 13 years ago, I also toiled with adding an additional day to the show week…and this was the first run at that…Jon did not know the answer to this…and I do not know the answer to this…I have no idea how many of these Wednesday shows I actually did…but this was the first!I tinkered on and off with the show format for the first 8-10yrs of its life…it was originally a podcast back in 2006…then it went to a live one hour show in 2008…at some point we added the “After Dark” segment…which was basically trying to see if a second hour might be feasible…and ultimately it was…then we extended to a full 2nd hour…and this is where the format pretty much stayed for the duration…with an attempt at an additional day…and, in hindsight, the once per week…2hr show is the best version of this thing. But I have never been afraid to try things out and see what works and what doesn’t…I will continue to do that as we grow into the 21st year of the show this coming February**Don’t forget to rate and review the show on your podcast app.**Want to hear more from this episode? Episode 453Taking you back to April 19, 2016 - Being featured this week is BBQCS GHOF’er…owner of Owl’s Nest BBQ Supply and the regionally…if not nationally recognized and historic…Steve Ray’s Midnite Oil service station…Steve Ray.Of all of Steve’s appearances, I would say that…even 10+ years later…this particular segment still brings a tremendous amount of value to anyone who owns any kind of trailer. The topic of this particular segment was competition trailers…because at the time…there were a lot of pitmasters posting about how they were breaking down on the side of the road…and all of them had pictures of their trailer axles in various states of dis-repair…and I thought, man, this would be a timely and educational segment…and again, this would certainly pertain to anyone who has any trailer…also helps you understand what kind of maintenance schedule you should be following so you aren’t broken down on the side of the road like the rest of those chumps!!Steve and I say…YOU’RE WELCOME…in advance!**Don’t forget to rate and review the show on your podcast app.**Want to hear more from this episode? Episode 451Taking you back to 8/28/2018 - This week featuring what was the year anniversary of the EC …that consisted of Doug, Jon, Steve and David Huff. You might recall that the initial EC’s consisted of those same guys but also a few more folks…Patrick Paquette (Basic Patrick) and DJ Howie D from DTS…or…Down To Smoke BBQ Team. A few things I knew right off the bat…the EC segment was a great idea even with a few too many people. Also, I knew if we could get a (4) person line-up that knew what I was looking to do with this hour…it would be great…10 years later…running this segment…I was right! BTW…the origin story of the EC segment was something called “Around the pit”...I think…Jon will know for sure…In any event…get ready for a great Best Moments show this coming Friday…By the way…we know what happened to Steve Ray not being an EC anymore…but you might ask what happened to David Huff…well…let’s just use these words…”Police Vice Squad”, "Prostitution Ring”...draw your own conclusions from there…**Don’t forget to rate and review the show on your podcast app.**Want to hear more from this episode? Episode 450Taking you back to 9/5/2017 - This week, I’m featuring a person who many feel is the GOAT of competition BBQ...and NO...it's NOT Darren Warth. Travis Clark of Clark Crew BBQ joined me back in September of 2017 and we talked about that year's American Royal BBQ contest. He was top 40 on the Open side but, the day before, he won the Invitational side. At that point in time, it was Travis's biggest and most important win to date (according to him).If you aren't familiar with Travis, this is a great introduction to one of the best who has even done it.**Don’t forget to rate and review the show on your podcast app.**Want to hear more from this episode? Episode 449Taking you back to 5/21/2019 - This week, I’m featuring a guest who holds a special place in my heart—so much so that I’ve nominated her for the BBQCS Great Hall of Fame (GHOF) for several years running, and I’ll be doing so again for the Class of 2026. Her name is Sara Lewis, and she shares a direct connection to our original Tennessee Embedded Correspondent, Steve Ray.Her name might not ring a bell, as her only appearance on the show was over seven years ago. However, there is a specific reason she deserves to be in the GHOF. At the time of our interview, she was working for Stanley—the company behind the viral mugs that have taken over the world in the last five years. We discussed her professional journey, how she landed at Stanley, and the products themselves. She was an incredibly engaging guest with great energy. Here is the "nugget" that makes her stand out: Unbeknownst to me, the evening we recorded the interview was her very last day at Stanley. She was already out the door and moving on to a new role. Think about that—if you had just finished your last day at a company, would you keep your commitment to sit down and do an interview about them? Most people wouldn't. This proves two things: first, Sara was raised right and honors her commitments to the very end; and second, it speaks to her high level of professionalism. On that merit alone, she deserves the GHOF nod far more than some folks I could mention (looking at you, Adam Perry Lang).Listen closely to that detail during the show this Friday. And yes—please note that the audio quality is from a different era of the show and is not up to our current standards. Please, no emails about the sound—I know!**Don’t forget to rate and review the show on your podcast app.**Want to hear more from this episode? Maybe that’s something that happens in 2027.*Don’t forget to RATE AND REVIEW THE SHOW ON YOU PODCAST APP*Want to hear more from this episode...Click the link below to hear the full show:Original Air Date: 8/18/2015Original Full Show Link: https://podcast.show/bbqcentral/bbqcentral-12/ | |||

Episode 444Taking you back to 1/14/2020 - A 4th week in a row of our pal Doug requesting shows…and I believe the last one of this month long request streak…in this segment, Meathead returns and we have quite an in-depth discussion…dare I say…back and forth…on reverse sear and sous vide cooking. Specifically, we talk about sous vide water temps as it relates to safety (not finish internal temps). He also talked about smoke and fire as it relates to cocktails…basically, taking cocktail favorites and adding either fire to fruit…or the “smoke gun” smoke…By the way…THIS is the segment that birthed the “Pineapple is the best thing off the grill” take from Meathead…which…then…also birthed the 2nd ever animation of a segment on this show done by a young animator…Damian Rodriguez, who I have fallen out of contact with at this point…shame on me.So be ready to hear how this all came together organically back in early 2020.Ready to make a “BEST OF” show all your own?? Before his CEO position, Rod did the competition circuit and all the way back in 2009, he was on the KCBS BOD where he served as treasurer. In this segment, we talked about why he decided to run for the board…and ultimately…why he chose to resign his position back in the early summer of 2009. I was talking to someone the other day about the history of the show…and as Jon Solberg has said many times…The BBQ Central Show is actually a real-time account of what has been happening, changing and evolving in the BBQ and grilling industry. If you wanted to get a snap shot of the industry over the past 2 decades…you really just need to go back and listen to the shows to see what was popular and important at any particular time between the years 2006 up until 2026. Episode 438 Taking you back to 11/22/2016 - I mentioned it a few weeks back…and because he is the best EVP of any podcast every…Jon Solberg went right to work to locate and produce the show that features not only the BEST story ever heard on this show…in my opinion…it is the singular BEST STORY ever TOLD on this show…the ENTIRE history of this show…to me…to many…to the dedicated fans who have been here and heard it all…we all agree that this segment, featuring Chad Ward…of a then “Whiskey Bent BBQ”...is the best story heard and told on this show…I even go so far as to add this qualifier…”And It’s NOT EVEN CLOSE”. If I only got one story out of the entirety of this podcast…THIS is the one that every other segment is compared to. Not even the segment where Michael “Medium Rare” O’Donnell asked me…live on this show…and I quote…”Have you ever fucked an Elephant??” Not even that, comes close to the Chad Ward “Bear Trapper” story that you are set to hear this coming Friday morning! I welcome your feedback…and remember, this segment was the genesis for the very first “animated segment” on the show…which I will go ahead a replay next week…but be sure to listen to the Best Moments Show this coming Friday…and tell me if I am wrong! Ready to make a “BEST OF” show all your own?? Email Jon Solberg and let him know what you would like to hear on a future episode! As always, thank you for listening! *Don’t forget to RATE AND REVIEW THE SHOW ON YOU PODCAST APP* Want to hear more from this episode???
