Sue Becker reintroduces a little seed that we will want to include in our whole grains and whole foods menu - Buckwheat. 

Buckwheat can be used in similar ways to grains. It can be milled into flour, boiled whole, and even enjoyed raw to add a little crunch to salads or granola.

In addition, Buckwheat flour is also an excellent choice for making pancakes, muffins, and crepes. Crepes made with buckwheat flour are less delicate, and this allows them to work very well when used as wraps and tortillas.

Sue Becker shares some interesting facts about the Hunza people group. Located at the northern tip of Pakistan, the longevity of the Hunza people has spanned to 120 years. This is at least 30 years longer than most Americans. Studies show that this lifespan remained strong until modern food and conveniences were finally introduced in 1983. This introduction immediately lead to the Hunza's first cancer diagnosis in 1986 - a mere 3 years later.

From a very young age, Marsha Lay suffered with severe stomach pain that would leave her tired and unmotivated to participate in daily activities. At a later time, Marsha ended up having 26" of her colon removed; however, this left her living with other pain associated with the surgery. It was after these events that Marsha learned about the nutritional benefits of milling grain. Her story also includes a weird phenomenon that could only be explained from detoxing with real-bread.

Last week, Sue Becker shared that Extra Virgin Olive Oil is her oil of choice for most of her bread baking, such as yeast bread and most quick breads. Today, she shares her favorite solid fats that she uses in baking pastries, that includes cakes, cookies, brownies, biscuits, and pie dough.

In most bread baking, fats provide tenderness, moisture, and color, as well as, flavor to breads. The type of fat used in a recipe, along with the method for incorporating it into the other ingredients, will influence both the texture and flavor of the finished product.
