Come, Holy Spirit, Divine Creator, true source of light and fountain of wisdom! Pour forth your brilliance upon my dense intellect, dissipate the darkness which covers me, that of sin and of ignorance. Grant me a penetrating mind to understand, a retentive memory, method and ease in learning, the lucidity to comprehend, and abundant grace in expressing myself. Guide the beginning of my work, direct its progress, and bring it to successful completion. This I ask through Jesus Christ, true God and true man, living and reigning with You and the Father, forever and ever. Amen.

RECIPES FROM RITA: SHEET PAN CHICKEN SHAWARMA

The recipe divides in half easily. If you don’t have smoked paprika, go with regular.

Ingredients

Meat:

2 pounds boneless, skinless chicken thighs

Marinade:

3 tablespoons lemon juice
2 generous tablespoons minced garlic – 6 nice size cloves
1-1/2 teaspoons ground cumin
1-3/4 teaspoons smoked paprika – I used bittersweet
1 teaspoon turmeric
3 teaspoons salt
1 generous teaspoon black pepper
1/2 teaspoon dried oregano
1/4 cup olive oil

Instructions

Cut thighs into about 1/2” strips. Put in bowl.
Whisk together marinade ingredients and pour over chicken. Mix to coat evenly.
Cover and marinate in refrigerator at least 1 hour or up to a day.
Preheat oven to 425.
Spray a baking sheet and put the chicken on in a single layer.
Bake 20-25 minutes until cooked through.
Serve warm with favorite sides.

White sauce ingredients:

1/2 cup real mayonnaise
1/2 cup sour cream
2 tablespoons clear vinegar
1 tablespoon lemon juice
Sugar to taste – I used a couple teaspoons

Instructions:

Whisk everything together.

Pope St. Gregory the Great’s Acclaim To The Suffering Christ

O Lord, You received affronts
without number from Your blasphemers,
yet each day You free captive souls
from the grip of the ancient enemy.

You did not avert Your face
from the spittle of perfidy,
yet You wash souls in saving waters.

You accepted Your scourging without murmur,
yet through your meditation
You deliver us from endless chastisements.

You endured ill-treatment of all kinds,
yet You want to give us a share
in the choirs of angels in glory everlasting.

You did not refuse to be crowned with thorns,
yet You save us from the wounds of sin.

In your thirst You accepted the bitterness of gall,
yet You prepare Yourself to fill us with eternal delights.

RECIPES FROM RITA: WEEKNIGHT STOVETOP MAC & CHEESE

Best to grate a block of cheese since it will melt better than pre-shredded. But if shredded is all you have, go ahead and use it

Ingredients

8 ounces macaroni or other short pasta
3 tablespoons butter
3 tablespoons flour
2 cups milk – I used whole milk
1-1/2 to 2 cups sharp cheddar cheese, shredded
2 tablespoons Parmesan cheese
1-2 teaspoons Dijon mustard
1-2 teaspoons Worcestershire sauce
Salt and pepper, to taste

Instructions

Cook pasta. Drain well and return to pan.
While the pasta cooks, melt butter in a medium saucepan over medium heat and whisk in flour until no lumps remain.

Slowly add milk, whisking constantly, until completely incorporated and smooth.
Lower heat and simmer for 5 minutes, stirring frequently until sauce has thickened slightly.

Remove from the heat and stir in cheddar, Parmesan, mustard and Worcestershire until cheese is melted and sauce is creamy.

Pour sauce over drained pasta and mix well. Season with salt and pepper and serve immediately.
