RECIPES FROM RITA: CAPRESE PICKLES

These tiny tomato pickles couldn’t be easier to make. Just pack a jar with fresh baby cherry tomatoes, pour over a quick pickling brine, and let the fridge do the rest. Afer 24 hours, you’ll have crisp, tangy bites perfect for sandwiches, salads, charcuterie boards, or anything else you like.

Ingredients
3 cups baby cherry or grape tomatoes
2 cloves garlic, halved
1/4 teaspoon peppercorns
2 sprigs fresh basil
3/4 cup water
3/4 cup white wine vinegar
1 1/2 teaspoons kosher salt
A little sugar – start with 1 teaspoon or honey and go up to 2-1/2 teaspoons
1/8 teaspoon crushed red pepper

Instructions
Add tomatoes, garlic, peppercorns, and basil to 1-quart-size glass jar fitted with a lid.
Combine water, vinegar, salt, sugar, and crushed red pepper in a small saucepan, and place over high heat. Cook, stirring o!en, until salt and sugar have fully dissolved. Remove from heat just before the mixture comes to a simmer.
Pour hot brine over tomatoes and seal jar. Allow jar to cool to room temperature, then place in the refrigerator until completely chilled, at least 8 hours. Best served after 24 hours and up to 2 weeks.

RECIPES FROM RITA: LETTUCE-FREE SUMMER BIBLE SALAD

Ingredients:

Dressing:
1/4 cup olive oil
3 tablespoons lemon juice
1 nice clove garlic, minced
Salt and pepper to taste – we go a bit heavy on the pepper

Salad:
2 cups cherry tomatoes, halved
1 English Cucumber, halved and sliced – we used 2 pickling cucumbers from our garden
15 oz chickpeas, or garbanzo beans, drained, rinsed
1/2 medium red onion, thinly sliced
1 nice avocado, diced
Cilantro, chopped to taste
4-6 oz feta cheese, diced

Instructions:
Whisk dressing ingredients together.
Mix salad ingredients together.
Pour dressing over salad and very gently mix.

RECIPES FROM RITA: ANY FRUIT COBBLER

Double ingredients for a 9×13 pan.

Ingredients:

6 tablespoons butter, melted
3/4 cup all purpose flour
3/4 cup or so sugar plus a bit extra for sprinkling on top
Dash salt
1 teaspoon baking powder
3/4 cup or so milk (enough to make a smoother batter)
1 teaspoon vanilla
3 cups fresh fruit – your choice

Instructions:

Preheat oven to 350 and place rack on top (this helps brown the top)
Pour melted butter in 8×8 pan or 2 quart casserole.
Whisk together flour, sugar, salt.
Pour in milk and vanilla and whisk to a smooth batter.
Pour batter over butter. Don’t stir.
Add fruit, then sprinkle with extra sugar.
Bake until top is golden and cobbler bubbles, about 40 to 50 minutes or so. As cobbler bakes, fruit falls to the bottom and batter rises to the top, making a cobbler crust.

St. Thomas More Prayer

Give me Your grace, good Lord, to set the world at nought, to set my mind fast upon You. And not to hang upon the blast of men’s mouths.

To be content to be solitary. Not to long for worldly company, little and little utterly to cast off the world, and rid my mind of all the business thereof. 

Gladly to be thinking of God, piteously to call for His help, to lean unto the comfort of God, busily to labor to love Him.

To have continually in mind the passion that Christ suffered for me; for His benefits incessantly to give Him thanks.

To think my most enemies my best friends, for the brethren of Joseph could never have done him so much good with their love and favor as they did him with their malice and hatred.

RECIPES FROM RITA: EASY REFRIGERATOR DILL PICKLES

For pickles, choose cucumbers with thinner skins, crisper flesh and smaller seed cavities. I would stay away from the big straight 8 type slicing cucumbers. They contain a lot of water and seeds, and may go soft in the brine.

Ingredients:
2 quart jars
1-1/4 cups distilled white vinegar (5% acidity)
3 tablespoons kosher salt
1- 2 tablespoons sugar or substitute – I used 2 teaspoons sugar
2 cups cold water
2 pounds or so unpeeled pickling, Persian, English or your favorite smallish cucumbers, cut into halves or spears or thick slices – enough to fill 2 quart jars
2 tablespoons coriander seeds
6 large garlic cloves, peeled and halved
1 teaspoon mustard seeds
¼ teaspoon red pepper flakes – optional
16 dill sprigs dill or 2 teaspoons dried dill weed (not seed) per jar
Optional: a few slices colored bell pepper

Instructions:
Over low heat, combine vinegar, salt and sugar in saucepan. Whisk until salt and sugar are dissolved. Don’t let it boil, just warm enough to dissolve the salt and sugar.
Whisk in cold water. Let cool to room temperature or refrigerate brine until ready to use.
Put cucumbers and peppers, if using, into 2 quart jars.
Dividing evenly, add coriander, garlic, mustard, red pepper flakes, dill, and brine into jars. If necessary, add a bit of cold water to the jars until brine covers cucumbers.
Cover and refrigerate about 24 hours, then serve. The pickles will keep in the refrigerator for up to one month.

RECIPES FROM RITA: FALL-OFF-THE-BONE OVEN BAKED RIBS FOR DAD

Recipe doubles or triples easily.

Ingredients
Ribs
About 2-1/2 pounds baby back pork ribs or your favorite ribs
Salt and pepper or your favorite BBQ rub

BBQ sauce
1 tablespoon olive oil
1/4 cup finely diced onion
1/2 teaspoon ground cumin
1/2 cup ketchup
1 tablespoon hot chili sauce like Sriracha
2 tablespoons light brown sugar or to taste
1 tablespoon apple cider vinegar
Salt and ground pepper, to taste

Instructions
Preheat your oven to 275.

Season ribs: If your ribs still have a thin membrane on the back, remove it. Generously season both sides of the ribs with salt and pepper. If using a spice rub, apply it evenly.
Wrap very tightly with foil: Important so ribs don’t dry out during cooking.

Place the ribs, meatiest-side down, in roasting pan. Cover tightly with aluminum foil. The ribs must be well-sealed to prevent drying out.

If you’re doubling the recipe and don’t have a large enough pan, wrap the racks of ribs individually in tight foil packets and place them on the baking sheet.

Bake: Bake for 2 ½ to 3 ½ hours or until meat easily falls from bones. Check after 2 hours. Ribs are ready when the meat is cooked through and very tender. It will not have gotten brown, so don’t worry. Mine took close to 3 hours.
BBQ Sauce:
Heat olive oil in pan over medium heat, then add onions and cook until soft. Don’t let them brown.
Stir in cumin, ketchup, chili sauce, sugar and vinegar. Cook for a couple of minutes, season with salt and more of any one ingredient that you think it needs.

Brush sauce onto ribs after baking: Generously brush both sides with barbecue sauce.
Broil ribs: Broil on high ribs until sauce begins to caramelize, about 3 to 4 minutes. Keep a close eye on them during this step to ensure the sauce doesn’t burn.

RECIPES FROM RITA: PESTO PORK TENDERLOIN

Ingredients
1-2 cloves garlic, minced
2 tablespoons pine nuts or walnuts
2 tablespoons softened butter
2 cups basil leaves, packed
Palmful fresh parsley (optional)
1/2 cup Parmesan cheese
1/4 cup Romano cheese (or use all Parmesan)
Olive oil
Salt and pepper

Instructions
Just process everything but oil and seasonings until smooth. Add oil to your liking, starting with 1 tablespoon, then add salt and pepper.
Thicker is better for the tenderloins. You can always add more oil later for regular pesto.

Pesto stuffed pork tenderloin two ways
My friend, Mary Lee Olinger, an Anderson Township reader, shared the first recipe a while back. It has a delicious culinary history, starting with Mary Lee’s friend, Mary Ann Myers.

Ingredients for each recipe
1 pork tenderloin, about 2 pounds, trimmed
Pesto

Garnish for each recipe
Romano & or Parmesan cheese – grated
Pine nuts (optional)

Instructions
Preheat oven to 350 for both methods.

Method #1: filling the tenderloin
Lay tenderloin on cutting board. Starting from the top, cut meat vertically not quite all the way through. What you want is a nice “trough” to fill.
Spread tenderloin open a bit, then spoon pesto until it fills (and overflows a bit) cavity.
Place, cut side up, in sprayed baking pan.
Tie roast in three places to keep it together. Sprinkle cheese and nuts over roast.

Method #2: filling the tenderloin
Lay tenderloin on cutting board. Starting on thinner end, take a sharp knife and slice horizontally almost all the way through. It will open up like a book. Pound out evenly.
Spread pesto to within an inch of edges. Fold over the 2 short edges a little bit. This helps seal the roulade. Roll up, starting at long end. Place, seam side down, on sprayed baking pan. Smear some pesto on top.

Roasting for both
Bake until done (145 degrees) – in my oven it took 20-30 minutes. Don’t over cook this lean cut of meat, or it will be dry.
Rest about 10 minutes, tented. Temperature will rise several degrees.
Slice thickly, then sprinkle with cheese and nuts if you like.
