They are thrilled to welcome Jesse McDonald and Cole Forrest of New Wing Order Food Truck who serve award-winning wings and Southern grub. New Wing Order is a hot wing focused food truck hitting the streets of Memphis! In addition to award-winning wings, they offer delicious dishes like Buffalo Chicken Tacos and BBQ Nachos. It started as a group of friends who loved hot wings – fried, grilled, smoked – you name it, they ate it. They would count down the days to the Southern Hotwing Festival. The event is like no other, featuring more than 70 competition cooking teams making the best wings in the South. They’d go each year, partake of amazing wings, and watch as a new team was crowned Grand Champion. After years of developing their own recipes, they decided to throw their hat in the ring and began competing. They made finals their inaugural year competing in the Southern Hot Wing Festival. After a couple more years of creating and perfecting new flavors, they took home the Grand Championship in 2015, Third Place in 2016, the Grand Championship in 2017, and Second Place in 2018! One of the team members, Jesse McDonald, had been working in the culinary industry for years and looked at the success at the festival, the biggest one of its kind in the South, as a sign these wings should be available to Memphians year round.
Then in studio is Madura Sotolongo, the Founder of The Chai Bar. She came to the U.S. as a graduate student of Financial Engineering at Temple University in the Summer of 2014 after completing her undergrad in Math and master’s in International Business in India. She ended up getting an 8 am desk job at Comcast as a Data Analyst right after her graduation. While at work she got Chai tea cravings and would often go to coffee shops in search of a good cup. She soon realized that if she wanted a real cup of Chai she would have to brew her own. This led Madura to brew for her friends as well and she really enjoyed sharing Chai and culture with an expanding group of friends and Chai lovers. She left Comcast in the spring of 2017 to start working on The Chai Bar and was up and running in farmers markets that fall. Her love for all things Chai and disappointment at the lack of availability of good Chai at coffee shops drove her to quit her job and purse this dream of introducing a real cup of Chai in American lifestyle. Chai is a most loved and served Indian drink and Madura says, it takes practice and patience to brew this surprisingly simple drink to make. A fresh and delicious cup of Chai is a work of alchemy. The Chai Bar in Philadelphia welcomes you to experience this wonderful experience called Chai in its most authentic form made from freshly ground spices with love and recipes that’s been handed down generations over centuries. So, don’t forget when you sip a cup of Chai it’s not just a blend of spices and tea with milk, it’s the amalgamation of popular culture, tradition, diversity, history and stories in one cup!

LIVE this Sunday, August 12th at 635pm Small Bites with Glenn Gross and Derek Timm of Bluejeanfood.com on Wildfire Radio, sitting in with Glenn as special Co-host this week is John Cohl the Editor in Chief for Mobile Food News, Philly Mobile Food Association Ambassador that Rob Mitchell is President of, and John is partner with Corner Pub Kitchen's Ron Sullivan. They’re going to have a smoking good time welcoming on the show Tuffy Stone to talk about his new cookbook Cool Smoke: The Art of Great Barbecue from St. Martin's Press. For backyard barbecuers who are interested in taking on the competition circuit, Cool Smoke offers tips and tricks from one of the best in the business. Stone’s competition secrets―gleaned from more than a decade of success on the circuit―have never before been shared beyond the walls of his cook school in Richmond, Virginia. Cool Smoke gives an insider’s look behind the scenes and offers advice on creating perfect competition turn-ins that have made Tuffy Stone a World Champion five times over. With mouthwatering recipes, over 200 hundred color photos, essential guides to cookers and equipment, and expert advice, Tuffy Stone’s Cool Smoke is the definitive guide to all things barbecue. Why is this book so great? Because Tuffy Stone is a World Record-breaking champion pitmaster, a former Marine, a classically-trained chef, an acclaimed caterer, and an occasional reality television star. Dubbed “The Professor,” Tuffy’s legendary precision and obsession with the science of smoke make him one of the most influential people in barbecue. In the 13 years since he founded Cool Smoke Barbecue, the team has won hundreds of trophies including more than 40 Grand Championships and five World Grand Championships. Cool Smoke is the only team in history to have won the prestigious Jack Daniel's World Championship Barbecue Invitational back to back and the only team to have won it three times, doing so in 2013, 2015, and 2016. As a result of his success on the competition circuit and his extensive knowledge of all things barbecue, he was selected to join Destination America’s show BBQ Pitmasters, in 2012. Tuffy’s life is barbecue has taken him all over the world including cooking for the troops in Kuwait, and heading to Meatstock in Australia to teach his famous Cool Smoke Barbecue Class. Most recently he cooked for sold out crowds at the James Beard Foundation House, a rarity for a barbecue pitmaster.
Then joining them will be Adam Fleischman the author of Flavor Bombs: The Umami Ingredients That Make Taste Explode from Rux Martin Houghton Mifflin Harcourt. ADAM FLEISCHMAN is the creative force behind Umami Burger and 800degreesme Neopolitan Pizza, restaurants with more than 40 locations in California, Chicago, Las Vegas, Dubai, and Japan. He has been profiled in The New Yorker, the New York Times, Wired, and the The Wall Street Journal. The founder of the national empires Umami Burger and 800 Degrees Pizza shows how to detonate flavor in beloved dishes using ordinary ingredients high in umami. Why does everyone love burgers and pizza? When Adam Fleischman investigated, he discovered what they—and many other ultra-flavorful dishes—have in common: umami. A renegade self-taught cook, Fleischman deployed this savory “fifth dimension of taste” to ratchet up flavor using ingredients naturally rich in umami, such as Parmesan, tomatoes, caramelized onions, and anchovy paste. In so doing, he created ultimate versions of icons, including Umami Burger with Port and Stilton, Sweet and Savory Brisket, and Parmesan Fondue. All the recipes are made from the same “umami pantry” ably explicated in the front of the book. This sounds delicious.
Talking more about flavors in studio will be Micheal Van Houten the owner of Bottled Thyme. The artisanal craft of sauce making can be dated as far back as the beginnings of the Roman empire. Many historians believe that sauces were originally meant to cover up the debatable freshness and quality of the food being served. The good news for us is we live in a time where sauces are a delicate accompaniment, meant to enhance the entire meal. Bottled Thyme is built on the philosophy that the family unit is one of the most important parts of life, and helps bring balance to an otherwise hectic schedule. One of the most influential times of the day for families is the tradition of sitting around the table, enjoying a nice meal while sharing stories of what the day was like for everyone. What once required an afternoon of preparing and cooking is no longer necessary. Bottled Thyme aims to provide you with the same flavorful and delicious meal, all while not having to sacrifice your time. Their culinarians hand craft each sauce with the same love and devotion as they would if they were cooking for their own families. The passion, mixed with the highest quality of ingredients conveyed into each sauce leaves our customers excited for more after each bite.

Small Bites – Episode 89
Episode 25
lundi 30 juillet 2018 • Duration 01:04:01
LIVE this Sunday, July 29th at 635pm Small Bites with Glenn Gross and Derek Timm of Bluejeanfood.com on Wildfire Radio, joining us in studio will be one of our favorite guests Vernon Rochester. Vernon is the owner of Rochester's Barbecue & Grill in Borough of Lawnside, New Jersey. They are doing a relaunch of their menu that we can’t wait to see and try what’s new. They are a BYOB with Wednesday Nights – All You Can Eat BBQ, and also locals love their Friday and Saturday Night Jazz sessions from 5:00 pm – 10:00 pm featuring Michael J Corman, an amazing Keyboardist/Vocalist. They focus on soul food, barbecue, and southern cooking, but with locally sourced products as much as possible with a focus on dietary diversity. They do traditionally prepared items on the menu such as their amazing Ollie’s Triple beans, made with ground beef, sausage and bacon and simmered with “secret spices” all the way to a variety of vegetarian and vegan dishes to choose from. You heard right, they also focus on vegetarian and vegan dishes.
Since Rochester’s is a BYOB, we thought we better to join us in studio and talk about what you can bring there to drink than Tom Hendricks the NJ Brand Manager for River Horse Brewing Co.. River Horse brewing was started in 1996 by three brothers who really enjoyed homebrewing. Their original location was in Lambertville, New Jersey right across the bridge from New Hope PA. People often still associate them with that location because many people would walk around New Hope, or bike/run the river trail, and then swing by afterword for a beer. Then in 2007 the brothers were looking to sell the business and it was perfect timing for Chris Walsh and Glenn Bernabeo to take over. Chris and Glen were working in finance, but wanted to get out of the corporate world and start with a new opportunity. They jumped at the chance to own the brewery and took it over in 2007. One of the first things they did was hiring their head brewer, Chris Rakow, to handle making the beer and come up with new recipes. The first original recipe that Rakow made for the company was Hipp-O-Lantern Imperial Pumpkin Ale, which is still one of their most popular seasonal beers. By 2013 they had out grown the brewery in Lambertville and needed to move so they could expand brewing. Their Lambertville brewery was only 10,000 sq feet and two stories, which is not very conducive for brewing beer. In Ewing, New Jersey they found a single level, 25,000 sq ft space that used the same water table as their Lambertville brewery, which is a very important factor in keeping the beer consistent. They are now able to distribute their beers through all of New Jersey, eastern Pennsylvania, Eastern New York and all of Connecticut.
Then we are thrilled to welcome Becky Selengut the author of two recent books, “How to Taste: The Curious Cook's Handbook to Seasoning and Balance, from Umami to Acid and Beyond--with Recipes” and “Good Fish: 100 Sustainable Seafood Recipes from the Pacific Coast” both published by Sasquatch Books. When she's not squid jigging, fishing, or cavorting through the woods picking wild things for her next meal, Becky Selengut is a private chef, author, humorist, and cooking teacher. A regular instructor for PCC Community Markets and The Pantry, Selengut is also a private chef and author of two other books How to Taste and Shroom: Mind-Bendingly Good Recipes for Cultivated and Wild Mushrooms, and co-author of Not One Shrine: Two Food Writers Devour Tokyo. In her spare time she co-hosts a comedy podcast called Look Inside This Book Club where she reviews only the free Look Inside samples of outrageous romance novels. Selengut lives Seattle - Capitol Hill with her wife and their two dogs.
Talking about cookbooks and podcasts our next guest is an expert on both subjects. When New Yorker Suzy Chase Osborne a former radio personality and cookbook publicist isn’t shooting Instagram stories of her beloved West Village neighborhood, sipping wine at a cozy New York, New York wine bar with her husband, whipping up after-school brownies for her 11-year-old son, shopping at a local grocery for dinner ingredients, assembling her latest Spotify Kitchen Mixtape or DJ’ing in Brooklyn, New York she’s behind the microphone chatting with chefs and cookbook authors. Many believed the internet would spell the end of the cookbook. But true foodies at heart always knew that nothing could break that special bond between tried and true recipe manuals and their love of the kitchen. Hence, the podcast is bringing to life what was once on a page of a cookbook like Suzy Chase’s Cookery by the Book. The 3rd season started in June. Suzy has merged the tried and true love of cooking with a modern flair to help the cookbook transcend new generations, and it’s working. Chase’s Cookery by the Book, now in its third season with more than 90 episodes, is the only cookbook podcast that has featured iconic names like Jacques Pépin, Dorie Greenspan, Pati Jinich, Pierre Thiam and Julia Turshen. It also marks Chase’s second venture into podcasting. A female podcasting pioneer, Chase introduced in 2003 TheGrooveRadio.com, the internet’s longest-running soul music show. She had a monthly residency at Trophy Bar in South Williamsburg, Brooklyn for six years, currently gigs around the city, and podcasts from her West Village apartment where she lives with her husband and pre-teen son.
