The author of the Farm Animal Welfare Substack, he has made recent appearances on the TED main stage and the Dwarkesh Podcast. He previously worked at Bain & Company and Humane World for Animals, and is a graduate of Harvard University and Yale Law School.

Jeff Sebo is Associate Professor of Environmental Studies, Affiliated Professor of Bioethics, Medical Ethics, Philosophy, and Law, Director of the Center for Environmental and Animal Protection, Director of the Center for Mind, Ethics, and Policy, and Co-Director of the Wild Animal Welfare Program at New York University. His research focuses on animal minds, ethics, and policy; AI minds, ethics, and policy; and global health and climate ethics and policy. He is the author of The Moral Circle and Saving Animals, Saving Ourselves and co-author of Chimpanzee Rights and Food, Animals, and the Environment. He is also an advisory board member at the Jeremy Coller Centre for Animal Sentience, an advisory board member at the Insect Welfare Research Society, an advisor at Eleos AI, and a senior affiliate at the Institute for Law & AI. In 2024 Vox included him on its Future Perfect 50 list of "thinkers, innovators, and changemakers who are working to make the future a better place."

For the last 3.5 years, she has served as the CEO of Modern agriculture foundation, a non-profit fostering innovation in alternative proteins. With expertise in finance and banking, she sits on several boards and lectures on food tech and sustainability. Levana holds a Master's in Law and Bachelor's degrees in Business Administration and Economics, Political Science, and Sociology. Kim is a 500-hour certified yoga instructor with a passion for teaching. Her yoga journey began as a student seeking an alternative way of improving her mental health. The practice became her lifelong medicine. The discovery of the awareness of breath linked with the movement of the body was a truly transformative experience. Lemon-Hint Hamantaschen yield: 17 cookies
Ingredients: 1 1/2 cups GF oat flour 1 cup almond flour 1 tsp baking powder 1/4 cup olive oil 1/4 cup pure maple syrup Zest of 1 lemon 1 tablespoon lemon juice
Filling: Strawberry jam
Directions:
Heat oven to 350 F. To a mixing bowl add the dry Ingredients and mix. Next, add the wet ingredients to the dry ingredients and mix. Place the dough in a plastic wrap in the fridge for overnight or for at least 8 hours, to set. Take a parchment paper and lay on your working surface. Place the dough on top and cover with another piece of parchment paper, same size as the one underneath. (It should be approximately the size of your baking sheet) Take a rolling pin and roll the dough to about 1/5 of an inch. Take a round cookie cutter and cut circles. Take a spoonful of the filling and put it in the center of each circle. Then pinch together one side, and then fold in the other 2 corners to create a triangle. You can close it on top all the way, or you can leave it open at the top- it is up to you. Bake for about 10-15 minutes until golden brown in the edges. Let the cookies cool down completely, then serve.
Chocolate Orange:
Ingredients yield: 13-16 cookies
1 1/2 cups gf oat flour 1 cup almond flour 1 tsp baking powder 1 tsp cacao powder 1/4 cup olive oil 1/4 cup pure maple syrup Zest of 1 orange 2 tablespoons orange juice 1 tsp tahini
Filling: 1/2 cup chocolate chips 1 tablespoon coconut oil 1 tablespoon pure maple syrup zest of 1 orange
Directions for the filling: Add all the ingredients to a glass bowl and microwave for about 30 seconds until it is melted, mix.

Beejhy Barhany is an entrepreneur, and activist, who was born in Ethiopia, raised in Israel, and currently resides in New York. At a very young age she emigrated to Israel. She acclimated to Israeli life, living in a kibbutz and joining the army. Soon after she traveled across South America for a year, and again emigrated, this time to the US. She is the founder of B.I.N.A. Cultural Foundation non-profit dedicated to celebrating and advocating for Ethiopian Jews in North America. Today, she is the chef and owner of an eclectic Ethiopian restaurant, Tsion Café, that incorporates cuisine from the many places that have been influential on her journeys. Currently She's working on a cookbook.

Join us today as Emma interviews Dr. Heather Shenkman MD, FACC! Dr. Heather is a board-certified interventional cardiologist in practice in Tarzana, California. She graduated from Albany Medical College in 1999 at the age of 23 through a six-year combined BS and MD program. She completed a residency in internal medicine at Henry Ford Hospital in Detroit, and then cardiology fellowships at both the University of Rochester and Tufts University in Boston.
She is the author of "The Vegan Heart Doctor's Guide to Reversing Heart Disease, Losing Weight, and Reclaiming Your Life". While Dr. Shenkman is skilled at performing invasive procedures to open blocked arteries of the heart, she is a strong advocate for a healthy lifestyle, including plant-based eating and regular exercise. She is also an avid athlete, having completed two Ironman triathlons and over 100 endurance events including triathlons, century cycling events, swim meets, and marathons. She is the mother of 4 year-old Ava.
