We actually are filming a bit more for the Food Lies documentary in a few weeks at a great ranch in Oklahoma. Part 126 - Dr. Ben Bikman & Dr. Ted Naiman Discuss Competing Ideas on All Things Health (AKA Ben & Ted's Excellent Adventure)15 Jun 202101:29:03

Welcome back, friends! I'm Brian Sanders and this is the Peak Human podcast. We continue to work on the film daily and are just as desperate to finish it and get out to the world as you are. I know it's taking longer than expected, but we are making something truly special and there are a lot of factors we're dealing with. It will be worth it, trust me.

This episode today is very special and a long time in the making. I got the top 2 audience favorites on one podcast. This nutrition stuff is so complex, it's never enough to get one side of the story so I thought I could at least get 2. I try to stay out of giving my opinions in this one. Perhaps 3 would be a crowd. We talk about so many interesting topics such as the carbohydrate-insulin model of obesity, the alternatives to this. The personal fat threshold, the insulin model of disease which is separate from how one becomes overweight. Satiety and how it fits into this. The processing of foods and how it plays in. Basal insulin vs. bolus. THe satiety vs. calorie theory. 

Also the big PUFA debate - are they as bad as they're made out to be? I think they are, but these 2 don't seem to think there's anything uniquely problematic with them other than they supply empty calories and we eat way too much of them. So they do think you should cut them out. I try to not interject much. I'm not trying to insert myself too much into these discussions. I have all kinds of guests on with differing opinions to expose people to all the angles of this complex nutrition world. I think something particularly with these guys and PUFAs, especially omega 6, is that they haven't spent the time to really dig into these details enough. They have busy lives and are focused on other areas of health. Just an idea.

Really we're looking at the mystery of what goes on with food we eat and it's role in disease and/or obesity (which are independent of each other). Everyone should be interested in this to some extent. Maybe not to the level of a 90 minute podcast into some of the small details, but these are important questions that need to be answered. 

Dr. Ted Naiman is a board-certified Family Medicine physician in the department of Primary Care at a leading major medical center in Seattle. His research and medical practice are focused on the practical implementation of diet and exercise for health optimization. He has an undergraduate degree in mechanical engineering and utilizes engineering principles when dealing with complex systems such as human health and nutrition.

Dr. Ben Bikman is a researcher and professor specializing in metabolic function, insulin resistance, and the drivers of metabolic disorders. He has a PhD in bioenergetics, he did a postdoctoral fellowship with the Duke National University of Singapore in metabolic disorders, and he's currently exploring the contrasting roles of insulin and ketones as key drivers of metabolic function.

Part 125 - Stephan Van Vliet on the Cutting Edge Science Proving Meat is a Health Food09 Jun 202101:31:02

Hello everyone! Welcome back to the Peak HUman podcast, I'm Brian Sanders and I hope everyone is doing well and eating a Sapien diet and living that Sapien lifestyle. I guess I'll clarify what that is. Many people are already doing it without realizing it - I'm just trying to give it a name. It's really just what seems to be the natural human diet. It's a framework and isn't the same for everyone and changes based on many factors such as where you live to where you are in your life or health journey. It's based on whole foods, ancestral principles and food preparation techniques. It focuses on the best, most bioavailable, nutrient dense nutrition which is from animal foods. It incorporates the least toxic plant foods. It's not carnivore, keto, paleo, or Whole 30 but has elements of these. I hate to have labels but none of the other dietary labels fit what I believe is a pretty basic framework for human nutrition. The lifestyle component is big as well and includes all the natural ways humans have always stayed healhty like getting outdoors and adequate sun, sleep, a form of movement, and so on. 

This is such a cool episode because Dr. Van Vliet's research is a brilliant intersection of 2 topics that should be near and dear to the hearts of everyone listening - how animals are raised affects the nutrient profile of the meat and how this in turn affects human health. He uses cutting edge science to go beyond the 3 macros, or 13 vitamins & minerals listed on nutrition labels, to up to 70,000 secondary compounds found in food. He also is working on a much-anticipated study (maybe only to me and those listening) which is randomized controlled and looks at red meat in the context of a healthy diet! How cool is that! This is what we've all wanted for so long. Compare eating red meat in the context of a whole foods diet compared to eating it with a bunch of processed foods that would be thought of as a Standard American Diet.

Get ready to meet your new best friend in the nutrition research field. I'm so glad Dr. Van Vliet is doing this research and that he spent a solid 90 minutes with me exploring much of it. Get ready for a good one!

Dr. Stephan van Vliet is a human nutrition scientist at the Duke School of Medicine. Dr. van Vliet earned his PhD in Kinesiology and Community Health as an ESPEN Fellow from the University of Illinois at Urbana-Champaign and received post-doctoral training at the Center for Human Nutrition in the Washington University in St Louis School of Medicine. Dr. van Vliet also holds a Masters in Nutrition Science.

Part 124 - Brad Marshall on Why We Store Fat & What To Do About It03 Jun 202101:40:59

Today I had the pleasure of speaking with Brad Marshall who's a great guy who raises low PUFA hogs and has a lot to say about PUFAs vs. saturated fat. Brad adds to the great lineup of guests talking about the dangers of these unstable polyunsaturated fatty acids. He'll get deep into the science on why they are bad for humans and why they are what's to blame for many (or most!) health problems and chronic disease. You won't want to miss this one!

Brad's work is based on his understanding of molecular biology, his love of food history and cooking and his experience in agriculture. To that end he has a genetics degree from Cornell University and a Culinary Certificate from The French Culinary Institute. After college he did cancer research at Memorial Sloan-Kettering and did bioinformatics for The Berkeley Drosophila Genome Project before leaving professional science. For the previous 15 years he has raised rotationally grazed hogs and run a retail butcher shop and USDA inspected meat processing plant.

Brad has written extensively about meat processing and meat science including Disastrous Trends In American Bacon. He is also a student of culinary history and historical diets.

He goes deep down a rabbit hole in the middle of the episode on the electron transport chain and goes into some pretty esoteric stuff. I hope we don't lose anyone for these 12-14 minutes. Some people may really appreciate learning how the body produces energy down to this level, but if that's not you, then feel free to skip ahead. Part 123 - Keith Littlewood on Fixing Thyroid Problems, Raising Your Body Temperature, Having a Higher Metabolism, Putting back on Weight, and Sleeping Better26 May 202101:28:26

Hello everyone! I'm Brian Sanders and welcome back to the Peak Human podcast. Don't forget to start back at episode 1. This is that kind of podcast. But onto my guest today. This may be a hard one for some people to handle who are triggered easily by differing opinions. I talk with Keith today about adding carbs back into your diet. Many people have found so much success removing them from their diet, this may sound counterintuitive. However, some people may be having problems after going too low carb for too long. If you're not one of these people, then feel free to skip this episode. But if you have cold hands or feet, low body temperature (which I had and didn't really know), wake up in the night, are a female who has lost their period, don't sleep well, or have some other problems, you may have low thyroid problems. One way people have cleared up some of these issues is eating more whole food carbs, honey, fruit, sweet potatoes, etc. 

He is in a different dietary camp that does agree that PUFAs and seed oils are the enemy, saturated fat is fine, and eating nose to tail including things like liver and oysters is great. BUt they also believe carbs are good for the thyroid and do question fasting and extended keto diets. 

Really don't want to be dogmatic about diets so I wanted to have Keith on to talk about this strategy. I've seen it work for some people in the carnivore world that went a bit overboard, for example. I have been raising my body temperature and presumably my thyroid function by eating more carbs at night after my brief, intense workout.

Here we are at the end of the 4 part Africa series with my amazing friend Mary Ruddick. If you haven't listened to the previous 3, I'd suggest going back and starting at the beginning. I'd really recommend doing this for this entire podcast series. It's designed as an educational journey through the complex, conflicting world that is nutrition, health, food, the environment, and more.

This episode covers the rest of our journey including the Datoga tribe, the Chagga on the slopes of Mt. Kilimanjaro, and the transition of all the native living populations into the villages and then into the city. It's a very clear decline in health as they do so. Part 119 - The Batwa (Pygmies) of Uganda - What We Learned From Our Time with Them (w/ Mary Ruddick, CNC)24 Mar 202100:58:29

Hello my friends, it's time for another episode with the wonderful Mary Ruddick on our journey through Africa. This episode we make it over to Uganda and travel 10 hours to the Bwindi impenetrable forest to visit the Batwa tribe, better known as the Pygmies. This group used to live in the forest and hunt & trap animals and eat all natural foods until 1991 when they were forced off their land by the government. They now have to rely on corn and beans and other crops and are losing their health and their culture. The group we stayed with are mixing in with the other people in the village and are definitely losing their heritage.

It was great to visit them while that's still possible. I don't know how many more years they'll be around. You'll definitely want to listen to this one and hear about the 120 year old great, great, great, grandmother dancing and stomping around with her (youngest) 91 year old daughter. We also got to trek in the forest and hang out with the few remaining mountain gorillas which was another once in a lifetime experience. At the end we talk about how the modern foods and oils are coming into the cities in Uganda and it's causing some big problems that are going to be devastating if it continues.

Mary and I mention our new organization to help groups like the Pygmy, Maasai, and Chagga that we visited get back to their ancestral diets. It's called Cows4Kids and we do exactly that! What I'm most excited about is seeing the difference between the groups we support and neighboring villages who only have the corn flour, oil, and sugar, for example. This is all the Maasai school we visited had for their meals all day. If the community (and the world) see the differences in the health of the kids that get something as simple as milk in their porridge each day compared to those who didn't, maybe people will wake up, change their thinking, and stop dropping off sacks of grains for aid and get some cows instead!

Hello friends, we're back for another African adventure.

We got to spend time with 2 different Hadza  groups which was very key in understanding more about their health and habits. Seeing 8 tribes or communities in total across Tanzania and Uganda was also paramount to our observations. Getting as many data points as we could really helped give us a well-rounded look at these cultures. Even this was just scratching the surface, however. We just got this one window into their lives and it would be ideal to come back at different times of the year and see even more groups.

I don't want to spoil any of the stories, but I'll say we had some epic adventures going on long hunts with them and eating very nose to tail.

I had Tucker on years ago for episode 20 and he laid out the entire case against seed oils which was very compelling. Dr. Cate has been on twice already (more recently) and is a wealth of knowledge on many, many things, especially the dangers of seed oils and reinforcing the Sapien diet concepts.

We cover how people get fat & sick all the way down to the mitochondrial level. We discuss the different players in this process including seed oils (or more specifically excess amounts of omega-6), refined grains, and sugar.

Kyle was on a mission to find "the perfect diet." He was raw vegan and moved to raw meat and organs. He thinks a big problem is the high PUFAs in our diet and unnatural iron from fortified grains. He also has some ideas for people who have been on very low carb or carnivore diets and have problems like being cold, waking up in the night, women losing their period, or thyroid problems. Welcome back everyone! I'm Brian Sanders and this is Peak Human - the podcast where you start back at episode 1!

I met Ben at our Toronto MeatUp in 2019 and really like him - maybe it's because he eats pretty similar to how I do - 2 Sapien meals per day of mostly animal foods and low anti-nutrient plant foods on the side. Seriously though he's really great and has an awesome mindset on pretty much everything. Goes way beyond building muscle - which is important for absolutely everyone listening. It's not about being a bodybuilder and we don't talk much about that - it's about effectively doing some kind of workout to carry some lean muscle mass which everyone needs and will benefit them as they age. 

His info is legit - I already have been getting a better workout since we recorded this episode last week. I took some of his advice and went slower, stayed under control and focused on the muscles I was trying to work and was sore the next for the first time. Gyms are still closed in LA so all I have is my living room yet I was still able to train my muscles hard in my little 15 min routine I do.

We actually talk way more about the mental side to diet, health, and living a meaningful life. This really was a great episode that touched on so many important topics that haven't been explored with previous guests.

Dr. Michael Crawford is a professor and researcher at the Imperial College of London. He is part of the Faculty of Medicine, Department of Metabolism, Digestion, and Reproduction. He is the Director of the Institute of Brain Chemistry and Human Nutrition, Founder Trustee of The Mother and Child Foundation and The Little Foundation. His research focuses on (i) the biological reason why docosahexaenoic acid (DHA) has been so unique in neural signaling for the past 500-600 million years of evolution (ii) application of the knowledge to prevent and treat neurodevelopmental disorder.

Hello beautiful people, welcome back. This episode is a special one and I won't do a whole intro. I'll just let you know there's 3 different interviews starting with one of the original grass fed, grass finished ranchers in America who I partnered with to do Nose to Tail. He called in on the phone and the sound quality wasn't great, but his story and information are spot-on. Really great stuff from a 76 year old rancher who really knows health and is living proof of what happens when you eat meat in a healthy way.

He's really into the Omega 6 to Omega 3 ratio and keeping the ratio near 1 to 1 like we would have ancestrally. He's been onto this about 20 years before anyone else. This is really awesome stuff. 

The next interview starts 19 minutes in and is with my South African business partner Gary I make the Nose to Tail biltong with. This is the traditionally made South African beef product that is kind of like jerky but a lot better. It is air-dried for 7 days instead of dehydrated at high heat in a matter of hours like jerky. We also don't use any sugar or other preservatives or curing agents. We use all the good fat instead of trimming it off like other people do. We're developing a dried sausage version with liver and heart. It will be the first of its kind in the world!

The final interview 39 minutes in is with Tommy who makes the regeneratively grown beef tallow body care products. He makes them all by hand and uses nothing but a few natural ingredients. Part 96 - Dr. Paul Saladino on PUFAs, Insulin Resistance, Visceral Fat, and Longevity12 Aug 202001:25:20

Hey hey everybody, hope you're ready for another information dense episode. We have Dr. Paul Saladino back on to dive deep on how insulin resistance develops. This is a perfect follow up to Dr. Ben Bikman on the last episode explaining to us how insulin resistance and other problems with insulin are the root cause to almost all chronic disease. It's also a great follow up to the many guests who have been talking about the dangers of industrial seed oils, euphemistically known as vegetable oils, and high levels of polyunsaturated fatty acids also known as PUFAs in our diet.

I was thinking about this after we finished recording and thought I could have made a few more points and perhaps made this analogy. Maybe the disease process is like a hammer and a nail. You need both to create something. Either on their own might not be enough. Refined sugars and refined grains would be the hammer and the high PUFAs are the nail. Either one doesn't cause insulin resistance on its own. There's examples of populations eating high carb but not getting insulin resistance (although most of this is whole food carbs). But these people aren't getting a ton of seed oils (possibly zero) in their diet. And there also are examples of people potentially consuming a high amount of PUFAs (like one of the Blue Zones here in the Los Angeles area, Loma Linda) where they avoid a lot of animal products and presumably use vegetable oils as the guidelines dictate.

These people have many other great lifestyle factors and remain thin over their life and they tend to have a disproportionate amount of centenarians. They do all the healthy behaviors to remain thin like avoiding sugars, processed foods, alcohol, and staying active. So basically these people never overstuff their fat cells and start the process of insulin resistance that maybe the high PUFAs would have then been there to cause the real damage. If you have all the other bases covered maybe you can get away with more PUFAs in your diet. There's some epidemiology that suggests this as well.

I'm not saying this is ideal at all, and likely it's best to reduce seed oils as much as possible. I also am just theororizing here. It's interesting to think about the many factors that play into this complex process nobody has definitively solved because there always seems to be some counter-evidence to every theory and I want to take it all into consideration and not just blame things on a single villain.

About this episode today. Ben Bikman has a Ph.D in Bioenergetics and a Masters in Exercise Physiology. He is currently an Associate Professor of Physiology and Developmental Biology at BYU. His lab research (Laboratory of Obesity and Metabolism) focuses on what molecular mechanisms mediate and cause metabolic disorders such as obesity, type 2 diabetes, and dementia. He is especially well versed in how insulin and ketones work as key drivers of metabolic function. He regularly publishes his research in peer-review journals and presents at international science meetings. 

His new book is called Why We Get Sick and I'd recommend it to everyone. It gets at the root of almost all modern chronic disease - insulin resistance and hyperinsulinemia. We talk today about this at great length.

He can speak on so many other things as well, which he did in the my first episode with him Peak Human #57. I highly recommend people going back and starting with that one, it's one of the most popular episodes of all time. Hello my friends, we're back at it with another super interesting episode. I'm Brian Sanders and I'm creating the much anticipated Food Lies film. Today I'm talking to Rob Tuncks who's an Australian farmer and former telecommunication company owner. He sold his business, retired at 30, and now produces grass fed lamb as well as other plant and animal food products. He has very insightful experiences with food systems and the morals we have placed upon them because he has experience growing both plant and animal foods he is acutely aware of the vast amount of deaths required to grow the staple crops so much of the world relies on. He also studies food systems on a world scale to investigate the enormous caloric need to feed 7.7 billion people and how we can accomplish that.

We've been talking for many months about some of these issues and I think there's so many challenging and important questions that need to be answered here. Some of his views are a bit hard to swallow. Some are necessary to acknowledge and address. Some make our broken food system make much more sense. He also could very well be wrong about some of these things. I think there's some great solutions using holistic farming methods using plants and animals together. Humans are pretty intelligent and adaptable when we have to be.
