Mycoprotein: A Sustainable Future Food07 Sep 202101:00:55

A lot is to blame for the climate crisis, one of the most dire being our excessive meat consumption. A possible solution? Fungi. 

For animal agriculture to keep up with the demand, we are compensating for safety, animal welfare, and sustainable practices that are emitting methane and nitrous oxide into the atmosphere. Even deforestation is an impact of global demand for meat and other animal products.

Thankfully with education and/or commercialization of new fungi and plant based products, we have a real shot at satiating the population’s “meattooth”. Mushrooms are already a trusty meat alternative, and now with biotechnology we can partner with fungi in innovative ways. We are joined by Paul Shapiro, the CEO of The Better Meat Co., where his team is partnering with a neurospora species to quickly ferment a mycoprotein they call Rhiza, which contains more protein than eggs, more iron beef, more fiber than oatmeal, and even contains b12.

Spalted Wood17 Aug 202100:24:58

Spalted wood is beautiful. It’s a form of rotting, and it’s caused by fungi. Spalting comes in many forms: patterns, colors, textures. Until this century, the biology of spalting wasn’t well understood, and even less so any methods to produce it in a laboratory setting. We are once again joined by Javier Ribera, a wood materials scientist and mycologist from EMPA to discuss new research on spalted wood. The team at EMPA has built off of existing literature on the biology of spalting which has allowed them to artificially produce spalted wood, potentially opening a market for designer wood rot.

Ergot: Psychedelic Fungal Pathogens31 May 202100:30:32

Ergot describes a group of fungi with powerful alkaloids. So powerful, that they have impact in history, medicine, and possibly religion. It's famous for the morbid poisoning in humans, for catalyzing the synthesis of LSD,  and its potential role in ancient ceremony. Today we are honored to speak with Dr. Daniel Panaccione, who is one of few ergot alkaloid specialists. Having studied their biosynthesis and genetics, he is a true expert on their chemical matters.

Dr. Panaccione is a professor of plant and soil sciences at West Virginia University where he works on genetic manipulation and chemical analyses to understand underlying genes of ergot alkaloids and reconstruct its pathways.

This duality is the foundation for Sophia’s work: celebrating the beauty and art in cooking while creating resources to advance food justice and build more sustainable, equitable systems. 

As a young chef, Sophia stood apart; she felt like nobody looked or spoke like she did, but with social media she built a community where she could share her recipes, her convictions, and her honest take on wellness. Her powerful storytelling has helped those around her understand that there isn’t “one way” to approach wellness. Sophia’s community leans on her for actionable advice and encouragement in an effort to live a more balanced and healthy life. In addition to sharing her recipes, she leads transformative workshops, classes, and retreats that offer a safe, open forum for storytelling, community, food, and healing. 

It is with this foundation that Sophia is producing and hosting a new show on VICE called “Counter Space.” Launching November 26, 2020, “Counter Space” combines her expertise in the kitchen with her work in food activism and education. The underlying theme in every episode is resilience, adaptability, and awareness, and “Counter Space” informs consumers about the food, habits, politics, and food systems that affect us all. 

Beyond her public platforms, Sophia dedicates much of her time to supporting and empowering young people with similar circumstances through her involvement with two philanthropic organizations: Women’s Prison Association and Edible Schoolyard NYC

Sophia resides in Brooklyn, NY and spends most of her free time writing and filming. She is currently penning her first book, which is slated to launch at the end of 2021.

Famous for her beloved books and elegant illustration, notably Petter Rabbit, this 19th century artist was also a mycologist. Beatrix Potter's contributions to mycology were significant, having observed and documented phenomena that previously speculated or unknown. Despite the misogyny that kept her work from scientific recognition, Potter persevered in her research. Today’s show is a spotlight on Potter’s mycophilia. We are joined by Dale DeBakcsy who is a knowledgeable writer for Women You Should Know, with comprehensive knowledge on Potter’s life and love for fungi.

Dale DeBakcsy is the writer and artist of the Women In Science and Cartoon History of Humanism columns, and has, since 2007, co-written the webcomic Frederick the Great: A Most Lamentable Comedy with Geoffrey Schaeffer. He is also a regular contributor to The Freethinker, Philosophy Now, Free Inquiry, and Skeptical Inquirer. He studied intellectual history at Stanford and UC Berkeley before becoming a teacher of mathematics and drawer of historical frippery.

The Humongous Fungus - Dr. Myron Smith23 Feb 202101:06:28

The biggest organism on Earth, by area, is a fungus. Specifically, it's Armillaria solidipes, aka the Honey Fungus. It’s edible, glows in the dark, is UV resistant, and is technically parasitic. Thriving in the Blue Mountains of Oregon, this tremendous individual covers approximately 3.7 sq miles, and could be over 8,000 years old. In today’s episode, we speak with an expert on this fungal genus to help us understand how this individual could be so successful. Prepare for some extraordinary biological factoids and possibly, to have a new favorite mushroom.

Dr. Myron Smith is a professor of biology at Carleton University in Ottawa, Canada. Dr. Smith obtained a Bachelor’s degree, specializing in botany, followed by a masters and Ph.D in genetics within the Biotechnology Program at the University of Toronto. His research encompasses genetics, molecular biology, microbiology and general biology. This research spans questions of basic biological interest and has biotechnology applications in diverse areas that include health, agrifood, environment, and biofuels.

Marine Fungi - Cassie Ettinger, PhD11 Feb 202101:14:40

Marine fungi exist. And we know almost nothing about them. These elusive water dwelling fungi offer valuable insight to evolution, phylogenetics, ecological health, drug discovery, remediation and more. We welcome one of the few researchers who are surveying these fungi to share her findings and usher other researchers into the mysterious, essential world of marine fungi. We discuss the nascency of the field, how research is currently being conducted, ideas for how to proceed, and why looking to the ocean for new fungal species is a worthy endeavor.

Cassie Ettinger is a postdoctoral scholar in the Department of Microbiology & Plant Pathology at the UC Riverside advised by Dr. Jason Stajich. She received a Ph.D. in Integrative Genetics and Genomics at UC Davis studying the seagrass microbiome and seagrass mycobiome. Cassie received her B. A. in Molecular and Cell Biology with a Genetics, Genomics and Development emphasis from UC Berkeley in the spring of 2013. While at UC Berkeley she participated in research in Dr. Ellen Simms’ lab on multiple projects involving rhizobia-legume symbiosis. Cassie’s current research interests include plant-microbe interactions, the co-evolution of microbes and their hosts, and marine fungi.

We begin by discussing canine heath as whole, where Dr. Mayfield lays a groundwork for the do's and don'ts for good health in dogs. Dr. Patti Mayfield DVM, HABC, CVCH*
Dr. Mayfield is an experienced small-animal veterinarian who graduated from Oregon State University in 2000 with a Bachelor’s degree in Agricultural Sciences (crop and soil sciences), and in 2005 with a Doctorate in Veterinary Medicine. She completed a rotating internship in 2006 and spent the next 15 years cultivating a career in emergency medicine and critical care. 

In the last 3 years, Dr. Mayfield has expanded her skill set by obtaining a human animal bond certification (HABC), and will complete her certificate of Chinese veterinary herbalist (CVCH) in the spring of 2021. Additionally, Dr. Mayfield has completed the Sonographic Diagnostic Efficiency Protocol (SDEP). As the owner of Smiling Dog Veterinary Services, she offers integrative medicine, mobile veterinary diagnostic ultrasound, and hospice and palliative care for her patients. 

Dr. Mayfield is passionate about animal welfare and promoting the human-animal bond. She is the Medical Director of Companion Animal Medical Project (CAMP), a nonprofit organization providing veterinary wellness services to the pets of people experiencing homelessness in her hometown of Bend, Oregon. Additionally, Dr. Mayfield has traveled to under-served areas to provide veterinary care; most recently to Malawi, Africa, where she organized a self-supported canine rabies clinic to help address the major public health issue of endemic rabies within the canine population.

Dr. Mayfield served on the Oregon Veterinary Medical Examining Board from 2013 until 2017. She is the Chair of the Advocacy Committee of the Veterinary Cannabis Society, is an active member of the American Veterinary Medical Association, the Oregon Veterinary Medical Association, the North American Veterinary Community, the Canadian Association of Veterinary Cannabinoid Medicine, the International Association of Animal Hospice and Palliative Care, and the Society of Cannabis Clinicians. 

In her spare time, she enjoys flying her paraglider with her partner Tim, and seeks adventure in the backcountry snowboarding or mountain biking. 

Her fuzzy companions include “Pilot”, an adventurous husky mix, a darling muppet-like dog called Wheels, and her marvelous feline, Floof.

Alissa Allen is the founder of Mycopigments. She grew up in the Pacific Northwest and has been exploring the world of fungi since she was a child. Alissa joined the ranks of amateur mycology in 1999 through the guidance of the Puget Sound Mycological Society. From there she became a mushroom identifier and was introduced to mushroom dyeing. She volunteered for five years studying fungal diversity and fruiting cycles at Shadow Lake Bog in Kent, WA and served as a field assistant for four years working on the production of Mushrooms of the Redwood Coast, a field guide. 

She has been teaching about mushroom dyeing, identification, and ethical harvesting practices full time since 2012. She created and curates two vibrant discussion groups, Mushroom and Lichen Dyers United and the Mushroom Dyers Trading Post. These groups have grown into a vibrant community of over 10,000 members.

Saving the Bees with Fungi - Jennifer Han & Nick Naeger16 Dec 202001:35:17

Today we are joined by two of the leading pioneers in apiary (beekeeping) sciences and how fungi are being applied to help fight off pests and support the immune systems of the vital honeybee. Fungi have shown up time and time again as a promising companion to improve our relationship with the planet as consumers, and today's topic is a heavy reckoning with honeybee colony collapse. We first discuss how we rely on honeybees for the incredible contribution they make to wildlife biodiversity and modern agriculture.  Jennifer and Nick then get into the weeds of the many hardships that these bee colonies are facing and the detrimental impacts that are already happening. Inspired by Paul Stamet's observation of bees foraging on the mushrooms bed at Fungi Perfecti, Jennifer and Nick's lab have worked on a number of mushroom extracts for honeybee longevity. Additionally, they have pioneered some the important work of combating varroa mites with a well known soil dwelling fungus and mycopesticide — metarhizium anisopliae.

  • As mentioned, me and my research team, we've done several experiments in hypergravity (10 and 15G). This was done through a project entitled "HyperSpacEx – Medical and Biotechnological potential of Fungi in Hypergravity for Space Exploration", where we had access to a large diameter centrifuge (LCD) to simulate the selected hypergravity values. This LDC is available at the facilities of the European Space Research and Technology Center (ESTEC), Noordwijk, the Netherlands, which we accessed through the HyperGES programme (https://www.unoosa.org/oosa/en/ourwork/access2space4all/HyperGES/HyperGES_Index.html). HyperGES is a cooperation programme between the United Nations Office for Outer Space Affairs (UNOOSA) and the European Space Agency (ESA), developed under the Access to Space for All Initiative. 
  • Hydrothermal vents were discovered a few decades ago and are a relatively recent discovery in the field of oceanography. Initially, these extreme environments were thought to be sterile and devoid of life. However, subsequent research revealed a high diversity of microbial life thriving there. These microorganisms are highly adapted the harsh conditions. This discovery was highly significant for astrobiology and expanded our understanding of life’s potential habitats. Furthermore, hydrothermal vents are considered terrestrial analogues for Mars. This is due to the detection of ancient hydrothermal vents on Mars, which suggests that similar conditions might have once supported life on the Red Planet.
  • Panspermia is the theory or hypothesis that defends that life exists throughout the Universe and can be carried out into different locations, like our own planet, through space dust, meteorites, asteroids, comets, and planetoids. This is one of the theories that attempts to explain the origin of life on Earth.
