About Dr. Ajay Joseph

Dr. Ajay Joseph is a highly skilled cardiologist who was born in the southern part of India and raised in the eastern part of India. He received his medical education in India before moving to Chicago in 2012 for further training. During his time in Chicago, Dr. Joseph completed his internal medicine residency at Cook County Hospital and his cardiology training at Rush University, where he was mentored by Dr. Kim Williams, a pioneer in plant-based preventive cardiology. In addition, Dr. Joseph completed an additional year of interventional cardiology training at UMass Baystate Medical Center in Springfield, Massachusetts.

In 2019, Dr. Joseph moved to Tulsa, where he joined Saint Francis and launched the first lifestyle medicine program for patients in Oklahoma, which is centered around a teaching kitchen. He is passionate about lifestyle medicine, preventive cardiology, health equity, and workplace wellness, and is committed to improving the health and wellbeing of his patients.

Outside of his professional life, Dr. Joseph is a dedicated family man with a wife who is also an internal medicine doctor, two children aged 9 and 7, and a lab. He is a talented musician, having been the drummer in a band during med school, and is an amateur guitarist. He is also an avid fitness enthusiast and enjoys biking and reading in his free time.

About Dr. Michelle Tollefson

Dr. Michelle Tollefson is a physician and associate professor in the Health Professions Department at the Metropolitan State University of Denver. She teaches in the Integrative Therapies program and is the current secretary of the American College of Lifestyle Medicine.

She worked as a private practice obstetrician and gynecologist, until leaving to work with Poudre Valley Health System as a medical director and director of Women’s Wellness Education. She is a certified wellness coach, guest faculty for Harvard, and author of online continuing medical education for the Harvard Institute of Lifestyle Medicine. She is passionate about women’s healthcare, lifestyle medicine, and teaching people to lead healthier and happier lives.

Dr. Tollefson is a graduate of Creighton University, where she received her Bachelor of Science and Doctor of Medicine degrees. She completed her obstetrics and gynecology residency at the University of Missouri in Kansas City and received her board certification in this medical specialty.

About Kim Campbell

Kim Campbell is the author of the “PlantPure Nation” and the “PlantPure Kitchen” cookbooks. Her newest cookbook, “PlantPure Comfort” was just released last December. She developed more than 350 delicious whole-food plant-based recipes using no processed oils. Kim is also the Director of Culinary Education and Development at PlantPure, where she works with her husband, Nelson, building an organization that promotes a whole foods plant-based diet. Nelson directed and produced the groundbreaking movie, PlantPure Nation.

She graduated from Cornell University with a BS in Human Service Studies with a  concentration in Nutrition and Child Development. Kim has been a plant-based cook for more than 25 years, cooking for her family and friends. Her love of culinary goes back to her early childhood growing up in a large traditional family. Kim is gifted at creating traditional American cuisine using 100% accessible plant-based ingredients. She builds flavors and textures that are familiar to most people, helping to make the transition to a plant-based diet easier for people. She is also the daughter-in-law of Dr. T. Colin Campbell, considered by many as the science ‘father’ of the rapidly growing plant-based nutrition movement.

About Dr. Judy Brangman

Dr. Judy Brangman, MD, DipABLM, is a board-certified Internal Medicine physician. About Adrienne Stillman Krausz
Adrienne Stillman Krausz is the co-founder of The Dry Goods Beverage Company, an online store for non-alcoholic wine, spirits, and cocktails. 

After a decade of working and writing about alcohol, a few years ago, Adrienne decided to cut out alcohol while trying to start a family. Inspired and impressed, she and her husband decided to create an online store to make it easier for drinkers to reduce their alcohol intake without compromising on quality and taste.  

Prior to starting Dry Goods, Adrienne worked in wine and spirits marketing in New York City and then Napa Valley. She is the author of two books: Spirited: Cocktails from Around the World, and Where Bartenders Drink, a guide to the world’s best-loved bars (Phaidon, 2020 and 2017). Adrienne is a graduate of Barnard College and the Culinary Institute of America’s Wine and Beverage Program and also a Certified Sommelier.
