He received his medical education in India before moving to Chicago in 2012 for further training. During his time in Chicago, Dr. Joseph completed his internal medicine residency at Cook County Hospital and his cardiology training at Rush University, where he was mentored by Dr. Kim Williams, a pioneer in plant-based preventive cardiology. In addition, Dr. Joseph completed an additional year of interventional cardiology training at UMass Baystate Medical Center in Springfield, Massachusetts. In 2019, Dr. Joseph moved to Tulsa, where he joined Saint Francis and launched the first lifestyle medicine program for patients in Oklahoma, which is centered around a teaching kitchen. He is passionate about lifestyle medicine, preventive cardiology, health equity, and workplace wellness, and is committed to improving the health and wellbeing of his patients. Outside of his professional life, Dr. Joseph is a dedicated family man with a wife who is also an internal medicine doctor, two children aged 9 and 7, and a lab. She developed more than 350 delicious whole-food plant-based recipes using no processed oils. Kim is also the Director of Culinary Education and Development at PlantPure, where she works with her husband, Nelson, building an organization that promotes a whole foods plant-based diet. Nelson directed and produced the groundbreaking movie, PlantPure Nation. She graduated from Cornell University with a BS in Human Service Studies with a concentration in Nutrition and Child Development. Kim has been a plant-based cook for more than 25 years, cooking for her family and friends. Her love of culinary goes back to her early childhood growing up in a large traditional family. Kim is gifted at creating traditional American cuisine using 100% accessible plant-based ingredients. She builds flavors and textures that are familiar to most people, helping to make the transition to a plant-based diet easier for people. She is also the daughter-in-law of Dr. T. Colin Campbell, considered by many as the science ‘father’ of the rapidly growing plant-based nutrition movement.
