Beer culture is nearly as diverse and as rich as our human culture throughout the world. But, while it pains me to say this out loud, there really is more to life than just beer. When we look at all of fermentation, we can see how interconnected, yet diverse the world truly is. As we have learned from previous episodes, the craft beer movement is not alone in our pursuit of better and more interesting flavors. In the past few decades, we have also seen a renaissance in other fermented products including bread, cheese, chocolate, wine, spirits, and saké. Saké is often referred to as rice wine, but the brewing process more closely resembles beer than wine. If we consider flavor as a tool to create great experiences, then it really doesn’t matter where the flavor comes from. The Beer Judge Certification Program, or BJCP, works to categorize the world’s beer styles so that homebrewers can submit their brews for feedback on how well they hit the targets. These same beer style guidelines have become widely accepted as the go-to style authority because they are specific and also give us a way to communicate about beer. However, defining these styles is quite a challenge due to natural variation within a style. Even more, some styles pose another challenge because they are really similar and are differentiated only by geography, culture, or slight nuance. Defining farmhouse beers is a bit like trying to explain jazz or comfort food to someone who’s never experienced them. It usually requires a conversation because there is no single, simple definition we can all agree on. We tend to look to Belgium or France to bail us out of this pickle since Lambics, Saisons and Biers de Garde are the best known examples. In reality, farmhouse beers tend to be drinkable, complex, traditional and innovative, all at the same time. Historically, they’re humble beers brewed for laborers with the ingredients endemic to the region, but with a complexity of flavor befitting the finest restaurants. Just a short drive outside of Austin, you can bathe in the warm Texas sun on a farm that grows world-class farmhouse beers. Through conservation, sustainability, and stewardship of the land, Jester King is one of the few places that blend the old world with the new. Beers like this require a mindset that puts ingredients first with a focus on the land and process. While winemakers often say it takes a lot of beer to make wine, in the case of my next guest, I’d say it takes a lot of wine to make beer like Mad Fritz. While the world demands hazies, IPAs, lagers, and even trendier beverages, there is a lesser-known trend of better beer made in collaboration with the farmers who provide better ingredients. Decades ago, when craft beer was the wild west of flavor and ingredients were hard to come by, assuming someone knew what to do with them, studying the quality of beer was unheard of. Sure, the big breweries probably had food scientists in their employ, but I’ll bet you a beer that was to ensure consistency for the sake of revenue. The small brewer’s who tinkered in their garages with salvaged dairy equipment back then couldn’t afford labs and likely relied on tasting alone to evaluate new beer. This school of hard knocks approach helped later generations brew smarter and to finally learn what beer could taste like. Every brewery, no matter how small, needs a sensory program so that bar patrons won’t become the QA team by default. Thanks to Draughtlab, the education and tools are far more accessible to small breweries and aficionados than they have ever been. Our next guest is a sensory scientist who spent nearly a decade at New Belgium Brewing. The pilgrims on the Mayflower may have been the first Americans to create beer policy when the beer supplies, which was their only source of hydration, ran low and forced them to land short of warmer lattitudes. During the US Civil War, immigrant and first-generation American brewers demonstrated their patriotism by forming one of the first trade organizations, the US Brewer’s Association. Since then, beer policy has influenced American culture from World Wars, prohibition, a three tier system, legalization of homebrewing, trade tariffs and more. In the mid 80s, the US Brewer’s Assocation evolved into the Beer Institute and has been advocating for sound policy for the three hundred billion dollar industry ever since.
Love it or hate it, policy and politics affects our daily lives in very complicated, even subtle ways.
