Dr Steve James became internationally known during the COVID pandemic for his advocacy of personal choice regarding vaccination. His unwillingness to compromise with mandates meant that he was at the forefront of legal challenges to the government and seen as a key figure in protecting the jobs of tens of thousands of NHS staff who were going to be fired. He also saw that nearly all the patients in intensive care with COVID had poor metabolic health, and like those that used to be on his operating table in cardiac theatres, could have avoided admission. As an NHS Consultant with 25 years of experience he has specialised in a range of areas including critical care, high-risk and cardiac anaesthesia, exercise testing, fatigue and breathlessness. He has additional training in psychotherapy, exercise physiology, nutrition, breathwork, meditation and sleep medicine, which give him a unique mix of skills with which to deliver care. Dr James now runs programs for people who want to improve their health using a 360 degree and proactive approach to health. Dr Jen Unwin Dr Jen Unwin is a chartered clinical and health psychologist. She worked for over 30 years in the NHS and now spends her time researching, campaigning and writing about sugar addiction. She is a founding member of the Public Health Collaboration, a UK charity campaigning for better public health advice. Her and her husband Dr David Unwin, a GP have been helping the patients in his practice adopt low carb diets to reverse their diabetes. This work has resulted in several published papers and numerous conference and media appearances. Heidi Giaever Heidi comes from Norway and spent part of my childhood in East Africa. With her original degree (Salford University, UK) in Chemical Engineering she spent most of her career in international business development. She retrained in Nutrition and Lifestyle Medicine following a personal health scare in her early 40s. She underwent extensive tests for early onset dementia, following a prolonged period of increasing memory and concentration problems with a direct impact on her work capacity and performance resulting in plummeting self-confidence. Years later, she met Dr Jen Unwin and Food Addiction Specialist Bitten Jonsson. She and Jen trained with Bitten. She then understood that her problem was food addiction. It wasn’t from poor nutrition as a child, but from an unchecked desire and exposure to sugar. She learnt to bake as a child, learnt to love the whipped sugar and butter bases for cakes and biscuits. This exposed her brain and body to ever increasing amounts of sugar without visible effects on her weight. Now she is a food addict in remission, focusing on “Life With and Beyond the Food”. She and her husband moved to the UK almost 9 years ago and she started voluntary work in the most deprived areas of Crawley, West Sussex. She worked with nutrition in community centres and preschools focusing on building awareness of the dangers of hidden sugars and the value of feeding children real foods. Since then, most of her work has been with mature adults, running diabetes reversal programmes for GP surgeries in Sussex and with private clients wanting help with weight, metabolic challenges and Food Addiction. Heidi now works closely with Jen on initiatives to bring formal recognition of this disorder and to contribute to the lack of clinical evidence of recovery and support programmes that can help sufferers. One such initiative is their Food Addiction Recovery Clinical Study, FARCS, where, together with Dr Jen Unwin and other colleagues in Sweden and North America, they offer group-consultation based programmes and they hope to achieve statistical significance so that that they can contribute valuable data to the current lack of clinical evidence in this field. Another main focus for her nutrition and lifestyle work has resulted in the Collaboration for Kids (CFK) project, which she leads under the umbrella of the Public Health Collaboration. Dr Aseem Malhotra is an NHS trained Consultant Cardiologist, Fellow of the Royal College of Physicians, and President of The Public Health Collaboration. He is a world renowned expert in the prevention, diagnosis and management of heart disease. He is honorary council member to the Metabolic Psychiatry Clinic at Stanford University school of medicine California. He is a founding member of Action on Sugar and was the lead campaigner highlighting the harm caused by excess sugar consumption in the United Kingdom, particularly its role in type 2 diabetes and obesity. In 2015 he helped coordinate the Choosing Wisely campaign by the Academy of Medical Royal Colleges as lead author in a BMJ paper to highlight the risks of overuse of medical treatments. Dr Jim Waller is a semi retired colorectal surgeon living and practising in Evansville, Indiana. He obtained his BS degree in Biology from the University of Southern Indiana in 1977. He then attended Indiana University School of Medicine, graduating in 1980. After a five year general surgery residency at Michigan State University, Dr. Waller did a one year colorectal surgery residency at Ferguson Clinic/Hospital, also located in Michigan. He is board certified in both general and colorectal surgery and also a fellow of the American College of Surgeons and a fellow of the American College of Colon and Rectal Surgeons. He entered practice in 1986 and since 2019 has served as a consultant with his colorectal group. Dr. Waller has served as a clinical instructor at MSU School of Medicine and continues to teach classes at IU School of Medicine. He is married to Betsy high school classmate, both are low carb, high fat keto advocates. I am a 64 year old man from Bushey in Hertfordshire. I have been married to my best friend Melanie for 38 years. We have two sons Philip & Oliver and an amazing daughter in law called Kirsty, who is the mother of our beautiful granddaughter Chloe. I grew up in a typical North West London Jewish household where food was often used as a bargaining chip. Generally eat up and you’ll get a treat (when a young child) and then told to eat up as there are starving children who will be very happy to eat anything. At 9 it was discovered I was overweight and was sent to the dietician at The Royal Free who put me on a 1,600 calorie a day diet and so started my YoYo life as a dieter. Until I was in my mid 40’s I would gain and then lose weight trying all types of diets including Slim Fast & Herbal Life, all worked well but the moment I stopped any weight I lost went back on, mind you, it didn’t help that I enjoyed cake and chocolates. I did enjoy playing badminton and cycling. Around this time I was diagnosed with an underactive thyroid, caused in part by the Slimfast/Herbal Life diets. Eventually I knew things had to change as I was “eating” the so called healthy diet of 5 a day plus all the “required” wheat and rice etc. I was fortunate to be introduced to Professor Brostoff, a leading immunologist who recommended I stop following the recognised “healthy” diet as it wasn’t healthy for me and introduced me to the Dukan diet, which was a revelation. I found by becoming gluten free and on a relatively low carb diet my weight improved as did my blood sugars and cholesterol. However, as with all lifestyle changes after a while I started to introduce other “Gluten Free” foods which meant my weight went up as I had no idea of the hidden carbs. Life continued until one magical day I was introduced to a keto lifestyle and it was like a light bulb went off in my head. These days I am able to keep up an intense level of exercise including running 10k’s, 10 milers, half marathons and in October a full marathon. I find that by following a keto lifestyle I never feel hungry and the selection of foods available is now first class. Michelle Hurn RD LD, Ultra Runner, Author of The Dietitian’s Dilemma Michelle Hurn is a registered and licensed dietitian with eleven years of experience as a clinical, acute care dietitian, lead dietitian in psychiatric care, and outpatient dietitian. While practising inpatient and outpatient care in the hospital setting, Michelle discovered a disheartening connection between the high carbohydrate, low fat, “sugar in moderation,” nutrition guidelines she was required to teach, and the rapidly declining health of her patients. Michelle is an endurance athlete, and she has competed in 12 marathons. In 2019, Michelle decided to follow a LCHF, high animal protein diet to see if it would alleviate severe muscle pain she was experiencing. Not only was her muscle pain gone in a matter of weeks, her decades of anxiety began to fade. Maia Sutherland says: I am a life-long vegetarian turned carnivore. Now with far too much actual fuel going to my brain, I have become utterly obsessed with the topic and writing a book hoping to inspire people to spend parts of their life in ketosis and reduce their disharmonies. The intention of the book is that anyone from any country, religion, education and budget, can benefit from applying what is laid out inside it. Other than that, I am also studying with Dr Nasha Winters, mostly for my own understanding rather than as a potential job. I also make a superb line of unique jewellery often combining precious stones with 2000 year old beads and some gold! Since carnivore for the first time in my life I can sleep through the night, and do maths and I marvel at how it buffers mental states such as depression and anxiety. Perhaps because I have more mental energy to think, I am more angry, or perhaps that is the peri-menopause which is a whole other conversation. Dr. Ian Lake is a GP in Gloucestershire. He has had a long term interest in preventive medicine. Having Type 1 Diabetes himself, he eventually discovered and was strongly influenced by the book ‘Richard Bernstein’s Diabetes Solution’. He went on a very low carb diet five years ago which he feels has positively transformed his daily diabetes control to near non diabetes levels. He is planning to launch a website to provide information and education about keto diets in type 1 diabetes. He is also a founder member of the Public Health Collaboration, which is a charity dedicated to promoting a real food lifestyle. Dr Ian explains how Type 1 Diabetes is managed in the UK and how he thinks that there should be alternative options. He recognises that keto doesn’t suit everyone but feels it should be an option for everyone. We find out how he discovered keto and his long journey to start. Lisa is a 52 year old who hails originally from Bournemouth, in the south of England. She is a qualified Personal Trainer, with special certifications in Kettlebell training, HIIT training and Cardio Kickboxing, plus she is also a qualified Naturopathic Nutritionist and Primal Health Coach. Years of various illnesses relating to gut health led Lisa to investigate her dietary patterns and, after qualifying as a nutritionist, more research took her on a journey from vegetarian to carnivore with the result of alleviation of all her symptoms. After suffering an injury to her back many years ago, she turned to strength training to heal her own body, and believes that exercise is an important part of the overall lifestyle and achieving optimal health. Lisa got into low carb/keto for health reasons. She had been a vegetarian for 27 years, fortunately she ate eggs. She thought she was doing it for health reasons and environmental reasons. Lisa suffered with IBS symptoms. After training as a personal trainer and nutritionist, she read a lot, which led her to paleo, thinking she had an issue with gluten. She ate paleo as a vegetarian and was constantly tired. With more research she felt she had to add some meat and fish back into her diet. This wasn’t an easy decision having been a vegetarian for 27 years. Within 3 weeks her smell and taste came back. Lisa eats nose to tail and her health has never been better. My Name is Mark Felstead, 59 Years Old and until 3 years ago I was a very fit triathlete, often taking part in competitions and thinking I was doing everything right for my body and my health. For most of my adult life I have exercised and trained regularly, I ate what I thought was a healthy diet, I watched my weight, and I did not smoke… Things were all to change very suddenly on a Wednesday Evening in August 2018… I left my home with my racing bike to compete in a local duathlon. I kissed my wife and my daughter goodbye, not knowing it was very nearly the last time I would see them… 2hrs later, as I was nearing the finish line, I collapsed…. After growing up in New York, Dr. Philip Ovadia graduated from the accelerated Pre-Med/Med program at the Pennsylvania State University and Jefferson Medical College (now Sidney Kimmel School of Medicine at Thomas Jefferson University). He then went on to complete a Residency in General Surgery at the University of Medicine and Dentistry in New Jersey – Robert Wood Johnson Medical School and a Fellowship in Cardiothoracic Surgery at Tufts- New England Medical School. Dr. Ovadia has practised Cardiothoracic Surgery in Beaver, PA and Clearwater, Florida. In 2020 he established Ovadia Cardiothoracic Surgery and now works as an independent contractor Cardiothoracic Surgeon in various locations throughout the United States. In an effort to overcome his lifelong struggle with obesity, Dr. Ovadia adopted a low- carbohydrate focused way of eating in 2015. He has maintained a weight loss of approximately 100 pounds and since March, 2019 has adopted a carnivorous way of eating. He has extensively researched the health benefits of low-carb with a focus on heart health through many hours of reading the medical literature, books and listening to podcasts, as well as personal discussions with many of the physician leaders and citizen scientists involved in the low-carb movement. In his recent book, Stay Off My Operating Table, Dr. Ovadia discusses the principles of optimising metabolic health to prevent heart disease and other chronic diseases. Dr. Ovadia has also established Ovadia Heart Health a Telehealth practice that focuses on the prevention and treatment of metabolic and heart disease utilising lifestyle and dietary modification. Kev Mason, or KetoKev as he has become more known as, is a Ketogenic Health and Fitness Coach. After serving 13 years in the British Army and reaching a massive 131kg, he realised after leaving that something needed to be done. He discovered the Paleo Diet and from then he dropped 10kg without effort or going to the gym. Once he started losing the weight he decided to look further into health and fitness, and discovered the ketogenic diet. At first he was slightly apprehensive about high amounts of fat but decided to go for it. Nothing happened apart from gaining weight. Confused about this newfound “wonder diet” he looked deeper and deeper into how to optimize keto for the best result. Trying and failing a few times he finally nailed the right path of a higher protein and med to high fat ratio then things started to happen but Kev still had a skeleton in his closet. He still consumed alcohol and in March 2019 after being threatened with divorce he sunk to the lowest point of his life, he took charge of his life, quit drinking and applied all the knowledge he had into building a Keto group to help himself and others. He gained qualifications and diplomas in The Ketogenic Diet & Diabetes recognition and treatment, began courses in Red Light Therapy, Cold exposure, personal training and the gut brain connection. He began coaching clients and started turning lives around including his own. With a facebook group of over 15,000 people and private coaching groups he now creates content and information to help as many people as he can. Nicola Lock was a medical secretary in the NHS for 15 years and then set up as a freelance/self employed medical transcriptionist which she has been doing for the last 17 years, mainly in the private sector. Her interest in low carb began about 6 years ago after discovering Michael Mosley’s 8 week blood sugar diet. Over the years she has made several attempts at losing weight which either failed or if she succeeded initially she then put the weight back and was back to square one. In the New Year of 2019 she threw herself into low carb in an attempt to lose weight and six months later had lost 23lbs, which she has kept off (give or take a few pounds). Although she had no initial health issues after being low carb she has noticed improvement in her skin as well as improved energy and wellbeing. Nicola has been a member of the Nutrition Network since July 2020 and has completed several of their courses including Nutrition Network Advisor, Obesity: Risks & Reversal, Ethics and Neurology.
