Not the cliched mantra of sex, drugs, and rock and roll but in the ways that commercial advertising fabricates a youth-oriented cultural reality by hawking pimple cream, deodorant, food, musical equipment, etc., and linking it with rock and roll. In this sense Sell Out is a reflective work, one that struggles with rock and roll as a cultural expression that aspires to aesthetic permanence while marketed as ephemera. From this conflict emerges a pop art masterpiece.

LE SAUMON
1. Le saumon mariné
Préparation :
Pour réaliser un saumon mariné, prenez deux filets de saumon denviron 1,5kg. Préparez votre marinade avec :
Lastuce de Bruno Doucet est dajouter des zestes de citron vert et de citron jaune au sel et au sucre.
Mélangez le tout.
Déposez une partie du mélange au fond dune plaque et déposez par-dessus les filets de saumon.
Recouvrez ensuite avec le reste du mélange.
Laissez le tout reposer pendant 24h.
Une fois mariné, lavez les filets sous leau, frottez-les légèrement avec le dos dun couteau pour enlever lexcédent de sucre et de sel resté collé sur le saumon puis essuyez-les.
Vous pouvez les garder au moins 2-3 semaines si vous les conservez avec un peu dhuile et daneth.
Présentation :
Servez-les en fines tranches avec des blinis et des œufs de saumon.
Vous pouvez également les couper en petite darnes et les servir façon gravlax.
Pour cela, prenez une moutarde Savora, ajoutez-y de laneth hachée, un peu déchalote, de lœuf dur haché (le jaune et de blanc) et du vinaigre de Xéres.
Servez le saumon avec la sauce et des toast de pain de mie.
2. La recette de Charles Barrier racontée par Bruno Doucet : Le saumon à loseille à la façon de Pierre Troisgros
Préparation :
Prenez une escalope de saumon et faites-la cuire à lunilatéral dans une poêle. Le saumon doit être encore très rosé. Réservez-le.
Versez ensuite du fumé de poisson dans la poêle et faites-le réduire.
Ajoutez du velouté de poisson et faites légèrement réduire le tout.
Pour finir, ajoutez de la crème fraîche, la sauce doit être un peu liée mais pas trop épaisse. Ajoutez ensuite de loseille fraîche dans la sauce.
Présentation :
Servez le saumon avec la sauce dessus et quelques pommes de terre vapeur.
