Dirty Linen goes behind the scenes in restaurants, cafes and bars, covering issues the hospitality industry finds hard to share in public - it's all up for grabs and everything is on the table. Your host is food journalist Dani Valent. For 20 years, Dani has been writing about restaurants and the people who give them life. But she's an outsider, a critic, a tourist, a fan. Despite hearing the stories and writing the tales, she's never really understood what happens behind the scenes. Now it's time to get stuck in, with compassion, humour and fearlessness. Dirty Linen goes deep, both in conversations with individuals and in pressing topics. We ask the hard questions and discuss the big issues, bringing a unique perspective to a world that we all intersect with but often don’t understand. Dirty Linen is a Deep in the Weeds Production.

Virginia Trioli (Writer and Broadcaster) - what makes life delicious

dimanche 29 septembre 2024Duration 35:45

I first remember listening to Virginia Trioli on ABC Radio Melbourne when it was still called 774 and she was doing afternoons. It’s one of the earliest times I remember really listening to radio that wasn’t a football broadcast, engaging with that idea of live storytelling, carrying a city through its celebrations and its sadnesses, and asking questions that were sometimes cosy and sometimes very pointed of the guests.  Virginia Trioli is a two-time Walkley-winning journalist. She is the host of ABC TV’s Creative Types and a former host on News Breakfast. We find her today in a different mode: her memoir A Bit on the Side is a lovely pink hardcover book, a series of reflections on what makes life delicious. https://www.instagram.com/latrioli/?hl=en SUBSCRIBE TO OUR NEWSLETTER FOR EXCLUSIVE ARTICLES, NEWS, GIVEAWAYS AND BEHIND THE SCENES https://deepintheweeds.us6.list-manage.com/subscribe?u=d33e307cf7100cf947e2e6973&id=d17d8213f5 Follow Dirty Linen on Instagram https://www.instagram.com/dirtylinenpodcast Follow Dani Valent https://www.instagram.com/danivalent Follow Rob Locke (Executive Producer) https://www.instagram.com/foodwinedine/ Follow Huck (Executive Producer) https://www.instagram.com/huckstergram/ LISTEN TO OUR OTHER FOOD PODCASTS https://linktr.ee/DeepintheWeedsNetwork Dirty Linen is a food podcast hosted by Australian journalist Dani Valent. Annie Smithers (Du Fermier, Babbington Park) - Why can Annie water cows but not carrots?

mardi 24 septembre 2024Duration 45:47

Over a cup of tea, with an audience of elderly dogs, we sit down at chef and author Annie Smithers’ kitchen table for a chat. We talk about her raw, tender, loving new book Kitchen Sentimental. Annie’s memoir is a journey to self-discovery, one recipe at a time. We touch on restaurant culture, the reasons she continues to cook, and life at her rural property of Babbington Park, a place that feeds curiosity, brings joy and also bumps up against frustrating and archaic regulations. dimanche 3 décembre 2023Duration 34:37

Evette Quoibia (La Gout Afrique) - a milk bar with West African food?

mercredi 29 novembre 2023Duration 23:09

What do you get from a milk bar? Cheezels, ice cream, emergency Tim Tams...What about jollof rice, fried plantain and fufu? That's what's on offer at La Gout Afrique, a classic Aussie corner store that’s also a surprising West African restaurant. We talk to owner Evette Quoibia, who is showcasing food from Liberia, Cote D'Ivoire and Ghana in the Melbourne suburb of Reservoir. Evette imagined Australia as a paradise before she arrived as a 15-year-old refugee. The Producers: Katrina Myers (Barham Avocados) - for the love of the avo

lundi 27 novembre 2023Duration 23:18

Katrina Myers and her husband Tim own Barham Avocados, on the Murray River in New South Wales. It’s Katrina’s family farm but she wasn’t always sure she’d return to it. As it turns out, she loves the beautiful green haven they’ve created in a mostly arid area, and she’s also a huge fan of the avocados they grow for themselves and lucky consumers. https://www.barhamavocados.com.au/ Follow The Producers on Instagram https://www.instagram.com/producerspodcast/ Host Dani Valent  https://www.instagram.com/danivalent Host Anthony Huckstep https://www.instagram.com/huckstergram/ Executive Producer Rob Locke https://www.instagram.com/foodwinedine/ LISTEN TO OUR OTHER FOOD PODCASTS https://linktr.ee/DeepintheWeedsNetwork The Producers is a food podcast telling the stories of producers, farmers, growers and makers.. Shaun Quade (The Lawns of the Lobby, Canberra) - returning home

dimanche 26 novembre 2023Duration 39:29

Shaun Quade ditched fine dining to manufacture vegan cheese in the US. It was...challenging. He's back in Australia after four years in Silicon Valley with a renewed appetite for restaurants and will soon launch Ballyhoo at The Lawns of the Lobby in Canberra. We talk about Lume - was it a vanity project? where is the interection of art and food? - and the dangers of burn out. Shaun has also learnt much about factory food: we talk about missteps in feeding the planet. https://www.instagram.com/shaun_quade/?hl=en Follow Dirty Linen on Instagram https://www.instagram.com/dirtylinenpodcast Follow Dani Valent https://www.instagram.com/danivalent Follow Rob Locke (Executive Producer) https://www.instagram.com/foodwinedine/ Follow Huck (Executive Producer) https://www.instagram.com/huckstergram/ LISTEN TO OUR OTHER FOOD PODCASTS https://linktr.ee/DeepintheWeedsNetwork Dirty Linen is a food podcast hosted by Australian journalist Dani Valent. Jay Clough (Bureau of Eating and Drinking) - the joys and traumas of a life in food

mardi 21 novembre 2023Duration 28:07

We hate thinking about the pandemic but it seems a lot of Covid-induced impacts are only now coming to the surface: the emotional fallout and economic crunches are very real. Today's guest is Jay Clough, a hospo veteran who recently closed a cafe and foodstore in inner Melbourne. The demise of his dream business hit super hard but Jay has regrouped with Bureau of Eating and Drinking, an industry newsletter that shares the joys and traumas of a life in food. https://substack.com/@bureaumelbourne Subscribe here to our Deep in the Weeds Food Podcast Network Newsletter Follow Dirty Linen on Instagram https://www.instagram.com/dirtylinenpodcast Follow Dani Valent https://www.instagram.com/danivalent Follow Rob Locke (Executive Producer) https://www.instagram.com/foodwinedine/ Follow Huck (Executive Producer) https://www.instagram.com/huckstergram/ LISTEN TO OUR OTHER FOOD PODCASTS https://linktr.ee/DeepintheWeedsNetwork Dirty Linen is a food podcast hosted by Australian journalist Dani Valent. Danielle Alvarez (Author and Chef) - the differences between home and restaurant cooking

dimanche 19 novembre 2023Duration 31:24

It’s been a couple of years since we caught up with Sydney chef and author Danielle Alvarez. A lot has happened. She experienced burnout, left her job at Fred’s and regrouped with a lot of home cooking. She now has a role as Culinary Director at the Sydney Opera House. Her new book, Recipes for a Lifetime of Beautiful Cooking, is a great companion for the home kitchen. In it, Danielle ponders the differences between home and restaurant cooking: are there things that home cooks do better than chefs? https://www.instagram.com/daniellemariealvarez/ Follow Dirty Linen on Instagram https://www.instagram.com/dirtylinenpodcast Follow Dani Valent https://www.instagram.com/danivalent Follow Rob Locke (Executive Producer) https://www.instagram.com/foodwinedine/ Follow Huck (Executive Producer) https://www.instagram.com/huckstergram/ LISTEN TO OUR OTHER FOOD PODCASTS https://linktr.ee/DeepintheWeedsNetwork Dirty Linen is a food podcast hosted by Australian journalist Dani Valent.
