BAO BUNS
Ingredients
All-purpose flour
Instant yeast
Baking Powder
White sugar
Milk
Oil
1. Combine flour, instant yeast, baking powder, and sugar in a bowl
2. Add milk, then knead by hand until a rough dough is formed
3. Let rest for 10 min. Knead again until smooth
4. Roll dough into a rope shape, then divide into equal pieces
5. Flatten into an oval shape with a rolling pin
6. Brush a thin layer of oil on top and fold in half
7. Place bao buns into steamer and let proof for 30-60 min
8. Boil a pot of water, then place steamer on top and turn to medium-low and steam for 10 min
SESAME CHICKEN
Ingredients
Vegetable oil
Eggs – lightly beaten
Cornstarch
All-purpose flour
Salt and Pepper
Garlic Salt
Paprika
Chicken breasts – cut into bite-sized pieces
Sesame oil
Garlic cloves
Chinese rice vinegar
Honey
Sweet Chili Sauce
Ketchup
Brown Sugar
Soy Sauce
1. Put beaten eggs in one bowl and cornstarch in another.
2. Mix flour, salt, pepper, garlic salt, and paprika together in third bowl
3. Dredge chicken in cornstarch, then dip in eggs and dredge in seasoned flour.
4. Heat vegetable oil in wok and cook chicken for 6-7 min.
5. Remove chicken and drain on paper towels
6. Add sesame oil, minced garlic cloves, Chinese rice vinegar, honey, sweet chili sauce, ketchup, brown sugar, and soy sauce into the wok.
7. Cook until sauce reduces by 1/3, then add chicken back in and toss with the sauce.
8. Pull bao buns out of steamer, open, and add chicken

Tomato Bruschetta and Gochujang Carbonara
Ingredients for Bruschetta:
-3 Cups Cherry tomatoes
-1/2 ounce fresh basil
-Kosher salt and black pepper-1 loaf baguette or French loaf
-Extra virgin olive oil
-2-3 garlic cloves
-Balsamic glaze
Steps:
1. Cook tomatoes in oil for 2-3 minutes, then add garlic, salt and pepper
2. Slice bread into ½ inch pieces and brush one side with oliva oil
3. Cook oiled side of bread in cast-iron pan
4. Brush top of bread with olive oil, flip, and cook other side
5. Spoon cooked tomatoes onto each slice of bread and top with balsamic and basil
Ingredients for Gochujang Carbonara:
-3 ounces parmesan cheese
-2 tbs gochujang
-1 tbs rice vinegar
-1 tsp honey
-3 garlic cloves
-2 medium scallions
-8 ounces pancetta
-1 tbs canola oil
-1 LBS dry spaghetti
-4 large egg yolks
-Kosher salt
-2 tsp ground pepper
Steps:
1. Combine gochujang, rice vinegar, honey into small bowl
2. Dice the pancetta and cook in oil in a skillet. Then remove all but ¼ of the remaining fat from pan
3. Add garlic and scallions to the skillet, cook until golden brown, then add gochujang mixture
4. Cook spaghetti. While spaghetti is cooking, whisk together egg yolks, then add parmesan, kosher salt, and black pepper
5. Transfer spaghetti to skillet with ¼ cup pasta water and toss until coasted in sauce. Slowly pour egg into spaghetti while tossing.
6. Turn heat to lowest setting and return pancetta to the skillet.

CHEESESTEAK 3 WAYS
- Onions
- Mushrooms
- Peppers
- Jalapenos
- Pepperoncini
- Ribeye
- Hoagie buns
- Provolone cheese
- Cheese-Whiz™
- Eggs
1. Chop vegetables
2. Heat oil and put veggies on flat-top
3. Pile onion, mushrooms, bell peppers for traditional cheesesteak
4. Pile onions, jalapeno, pepperoncini for spicy cheesesteak
5. Cut slightly-frozen ribeye into razor thin slices
6. Lay steak on top of both piles of veggies
7. Place ribeye directly on flattop for breakfast cheesesteak
8. Cook eggs
9. Place provolone cheese on both traditional and spicy cheesesteak piles
10. Spread cheese-whiz on buns for spicy and breakfast
cheesesteaks
11. Spread horseradish/garlic aioli on buns for traditional
cheesesteak
12. Load up filling into buns

Spicy Onion Rings
Large Sweet Onions, peeled and sliced into thick rings
Egg
Flour
Bread Crumbs
Salt and Pepper
Cayenne Pepper
Dried Oregano
Dried Basil
Red Pepper Flakes
Canola Oil
1. Soak onion rings in an ice bath until ready to bread
2. Combine dry ingredients in one bowl
3. Combine wet ingredients in a separate bowl
4. Drop onion rings into egg wash
5. Place in flour mixture: press to coat
6. Shake off excess; drop in hot oil
7. Fry for about 30 seconds on each side
8. Place on paper towel to drain
Honky Sauce
Roasted Garlic
Mayo
Worcestershire Sauce
Lemon Juice
Mustard
Salt and Pepper
Old-School Burger
80/20 ground beef
Mushrooms
Breadcrumbs
Salt and Pepper
Garlic Powder
Brioche Bun
Tomato
1. Cook mushrooms
2. Season beef; combine with breadcrumbs
3. Form burger patties
4. Place on grill / flat top
5. Flip when ready
6. Butter bun and place on grill / flat top
7. Spread honkey sauce on top of bun
8. Build burger: burger, mushrooms, tomato, top bun

Petits Filets w/ Tomato Confit, Potato Latkes and Chimichurri Sauce
Tomato Confit
- Grape or Cherry Tomatoes
- Garlic Cloves
- Olive Oil
- Salt and Pepper
- Balsamic Vinegar
1. Split tomatoes in half
2. Crush garlic cloves
3. Wrap tomatoes and garlic in aluminum foil; roast at 350° for 30 min
4. Remove, season with salt and pepper, toss with balsamic
Chimichurri Sauce
- Stemmed / Chopped Parsley
- Olive Oil
- Red Wine Vinegar
- Dry oregano
- Cumin
- Sea Salt
- Minced garlic
1. Place all ingredients in food processor and pulse until smooth
2. Transfer to bowl; add more olive oil to get desired consistency
Latkes
- Russet potatoes; peeled and shredded
- Minced onions
- Lemon juice
- Eggs, beaten
- Flour
- Chives
- Salt, Pepper, Garlic Powder
1. Combine shredded potatoes, minced onions, and lemon juice; allow to
sit for 20 min.
2. Wring excess liquid from mixture
3. Add beaten eggs, flour, salt, pepper, garlic powder, and chives
4. Heat frying oil in skillet
5. Ladle scoops of potato mixture into hot oil and allow to fry for a few
mins, until crispy on edges
6. Flip and fry other side until golden brown
7. Remove and drain on paper towel; hold
Filets
- Petit filet
- Salt and pepper
1. Sprinkle filets with salt and pepper
2. Place filets on griddle and sear to desired temp (med rare)

VEGAN MEATLOAF
Onion
Carrots
Celery
Garlic
Chickpeas
Breadcrumbs
Flaxseed
Nutritional yeast
Soy sauce
Ketchup
1. Add the chickpeas to a bowl and mash
2. Sauté the onions, carrots, celery, and garlic in olive oil
3. Add the sautéed vegetables and remaining ingredients. Stir to combine
4. Press the loaf mixture down into the pan. Cover with foil and bake for 30 min
5. In a small bowl, mix ketchup and soy sauce for the topping
6. After 30 minutes, remove foil and cover loaf with topping. Bake for 15 more min
SESAME KALE
Chopped kale
Toasted sesame oil
Garlic powder
Salt
Red pepper flakes
Sesame seeds
1. Heat the sesame oil in a large pan, then toss in the kale
2. Add the salt, garlic, and red pepper flakes and cook for 5-7 min

FRIED PLANTAINS
- Ripe plantains
- Vegetable oil
- Salt
1. Slice plantains at an angle into 1/2 inch pieces
2. Sprinkle plantains with salt
3. Heat vegetable oil on medium low; cook plantains for 7 minutes each side
4. Drain plantains on a paper towel before serving
AVOCADO SAUCE
- Avocado
- Sour cream
- Garlic
- Lime juice

1. Dice Avocados; place all ingredients in food processor and process on high until smooth
GARLIC AIOLI
- Mayonnaise
- Minced garlic

- Mayonnaise
- Hot sauce
- Minced garlic
- Lime juice
- Cajun seasoning
CUBAN SANDWICH
- Bread
- Mustard
- Mayo
- Swiss cheese
- Dill pickles

1. Spread mustard and mayo on both sides of bread. Add cheese to both sides
2. Add ham, pork, salami, and pickles to one side, then close sandwich
3. Heat skillet and season with butter
4. Toast sandwich on both sides, pressing down with another pan

EASY SHEPARDS PIE
Ingredients:
Peeled / quartered potatoes
Butter
Salt
Onion
Garlic
Frozen mixed veggies (peas and carrots)
Ground beef
Beef broth
Worcestershire sauce
Seasonings to taste
Place potatoes in at least 1" of water in a pot on the stove. Bring to a boil, reduce to simmer, and cook until tender
Chop onion
Melt butter in sauté pan, add onions and garlic; cook until translucent
Add frozen veggies and cook until tender
Add ground beef until no longer pink; drain excess fat
Add beef broth, Worcestershire sauce, and other seasonings to taste
Cook uncovered for around 10 min, adding broth to keep from drying out
Drain potatoes; add butter and mash
Add seasonings to taste
Spread cooked meat / veggie filling on the bottom of a casserole dish
Spread mashed potatoes over the top
Bake at 400° for 30-45 min, until browned and bubbling

- Grated parmesan cheese
1. In a Dutch oven, melt butter.
2. Add onion, salt, pepper and cayenne (optional).
3. Add spinach in handfuls; cook until wilted
4. Add garlic
5. Add cream cheese and continue cooking until melted.
6. Add parmesan cheese; stir to combine
7. Remove from heat; season with salt and pepper to taste
Creamy Au Gratin Potatoes
- Russet potatoes; thinly sliced
- Butter
- Medium onion
- Salt and Black pepper
- All-purpose flour
- Milk
- Shredded cheddar cheese
1. Butter a casserole dish
2. Layer ½ of the potatoes in the pan; season with salt and pepper
3. In a medium saucepan, melt butter
4. Gradually whisk in flour and salt to make a roux
5. Slowly add milk, whisking well as you pour to avoid lumps
6. Continue cooking until mixture is thickened
7. Add cheddar cheese and stir until melted.
8. Pour cheese sauce over potatoes and cover with foil
9. Bake at 400° until potatoes are tender and sauce is bubbly (1-1 ½ hrs)

- Steak (filets)

1. Flash sear on stove on one side for 2-3 min
2. Flip steak and immediately put into oven at 300°
3. Cook until desired temp (9-11 min for medium rare)

CHICKEN SHAWARMA
INGREDIENTS
Lemons, juiced
Olive oil
Smashed / minced garlic
Kosher salt
Black pepper
Ground cumin
Paprika
Turmeric
Ground cinnamon
Red pepper flakes
Boneless, skinless chicken (thighs recommended)
Chopped parsley
1. Combine lemon juice, olive oil, garlic, salt, pepper, cumin, paprika,
turmeric, cinnamon, red pepper flakes; whisk to create the marinade
2. Add chicken, toss well to coat. Cover and store for at least one hour.
3. Preheat oven to 425°
4. Grease sheet pan with olive oil
5. Place chicken on greased pan
6. Roast until browned and crisp (30-40 min).
7. Remove from oven and let rest
8. Drizzle with Tzatziki and parsley; serve with rice and pita

Brown sugar
1. Wrap wheel of brie in tin foil and place on grill for 5-10 min.
2. Slice fresh peaches
3. Toss with vinegar, mustard and brown sugar
