130: Why Plant-Based Foods Should Be the Foundation of Health: Insights from Kate Galli
Épisode 130
mardi 22 octobre 2024 • Durée 41:02
The evidence supporting the power of plant-based diets to prevent and reverse chronic diseases like heart disease and type 2 diabetes continues to grow. On a recent episode of the Plant-Based Eating for Health podcast, host Kathleen Gage interviewed personal trainer and health coach Kate Galli, who shared her insights into how lifestyle changes, particularly a whole food, plant-based diet, can dramatically improve health outcomes.
The Gap in Nutrition Education for Health Care Professionals
Despite the significant role nutrition plays in managing and preventing chronic conditions, many health care professionals receive little to no formal training in this area. Both Galli and Gage touched on the concerning fact that doctors, nurses, and other health professionals are often left to seek nutrition information on their own, despite the overwhelming evidence that lifestyle choices can make a huge difference in health.
Galli noted that this trend is not just a problem in the United States but is also prevalent in Australia. She expressed her belief that more time should be allocated to teaching health care professionals about the impact of nutrition on chronic diseases. "If lifestyle factors can be 80 to 90% of what prevents and cures our biggest killers, then nutrition should be a priority in medical education," Galli emphasized.
Working with Families and Raising Vegan Children
Galli discussed the challenges families face when raising vegan children in a world where animal-based foods are often the norm. While she has worked primarily with adult clients, Galli shared her concern over the false narratives often given to children regarding where their food comes from.
She emphasized the importance of being truthful with children and supporting their natural compassion. For families considering raising vegan children, Galli recommends connecting with professionals who have successfully done so, as they can offer both guidance and credibility.
Onboarding New Clients: The Importance of Values and Goals
As a seasoned personal trainer, Galli detailed her approach to onboarding new clients, whether they are transitioning to plant-based eating or seeking to improve their overall health. During the initial consultation, Galli prioritizes understanding the client’s core values and emotional motivations behind their health goals.
"Knowing the 'why' is essential," Galli explained. This not only helps clients stay focused but also allows her to support them more effectively when they face challenges or experience a dip in motivation. Galli has found that clients who start with strong emotional connections to their goals are more likely to succeed in the long term.

Épisode 119
jeudi 27 avril 2023 • Durée 53:10
In this episode of the Plant-Based Eating for Health podcast, I have the distinct pleasure of talking with Jason Demchok, a chef and lifestyle medicine enthusiast who shares his personal journey towards a whole food plant-based diet.
Jason shared how meeting with Dr. Lou, an MD with expertise in environmental toxins and hormones, changed his life by recommending a plant-based diet. This conversation highlights the power of lifestyle medicine and the importance of making conscious food choices for our health.
In particular, the episode focuses on the benefits of fermenting vegetables for improved gut health and overall well-being.
Fermentation is an age-old process that has been used for over 8,000 years to preserve vegetables by selectively breeding probiotics that protect food from bad bacteria. Jason explains that fermenting creates a whole ecosystem of bacteria inside the food, which can lead to improved gut health, digestion, and nutrient absorption.
Fermenting is also an easy and fun process to learn, and Jason encourages listeners to try fermenting at home. He even offers a free lesson to anyone who contacts him after listening to the podcast.
Jason and I discuss the harmful effects of consuming animal products and processed foods, and the importance of incorporating a variety of colorful vegetables in one's diet.
We touch on the addictive nature of cheese, the harm caused by dairy farming, and the role of food manufacturers in creating products that are designed to be addictive. The conversation emphasizes the importance of the microbiome and how plant-based diets can heal the gut.
To start a basic plant-based diet, Jason recommends beginning with greens, organic beans, apples, and cucumbers. He also recommends using whole food dressings such as tahini and balsamic vinegar.
If you're interested in trying your hand at fermenting vegetables, Jason recommends using mason jars with fermentation tops, which are available on Amazon. He emphasizes the importance of cleanliness when fermenting and recommends using organic vegetables for the best results.
This episode of the Plant-Based Eating for Health podcast highlights the power of fermenting vegetables for improved gut health and overall well-being. By adopting a whole food plant-based diet and incorporating fermented vegetables into your meals, you can take control of your health and enjoy the benefits of a healthier gut. So why not give it a try?
