I’m again speaking with Ellen Bayens of theceliacscene.com to go over some of the articles she has brought to our attention over the past month and allow me to give my opinions and insight.

Sometimes we come across a company that is doing their best to meet our gluten free needs, but may not have the foundational knowledge of the gluten free diet to do so. This was the case with a storefront that sold ice cream and offered their on-site made gluten free cones. Ellen was able to speak with the owner regarding the questionable safety of the cones and now the company is better informed and able to let their celiac customers know they cannot guarantee the cones to be gluten free. Their understanding and current transparency is a plus for us.

Ellen also made us aware of a manufacturing change at Prana Foods to no longer offer gluten free oats in their products. There is somewhat of a disconnect between producers and consumers in getting this important information out there.

After taking some time off to recuperate from knee surgery, I’m back speaking with Ellen Bayens of theceliacscene.com for the beginning of May to review some of the articles she brought to our attention over the past month.

Ellen and I spoke about an article written by a reporter in upstate New York regarding his experience eating gluten free in local restaurants. I found he was able to thread together a story that many of us can relate to – but he was able to articulate it so much better than I can.

Ellen shared with us the story of a home-based bakery on Vancouver Island with a difference. She also shares some great photos of his creations. Staying on the food theme, Ellen has provided us a link to a free recipe booklet from Corn Thins – I didn’t realize they were so versatile!

Ellen Bayens of theceliacscene.com has given us some great articles to look at this month.  Somehow, she found an article written on the issues of cross contamination in restaurants in Malta.  It’s amazing to see that celiacs in another part of the world with a very diverse cuisine from ours have the same issues ordering food in restaurants.  As well there is an interesting study that was done recently looking at the blood tests done with children and how indicative they are of a final diagnosis of celiac disease.  The aim of this study is to identify a benchmark level for blood tests that would indicate a biopsy for a child is not necessary. 

We discuss the curious issue of Novak Djokovic, the international tennis star who has publicly said that he is on a gluten free diet for his health.  There is more behind this story, and much of it will leave you with more questions than answers.

Are you familiar with the FODMAP diet?  Ellen explains the premise of the diet and how it is being used by some celiacs who are struggling to gain remission from their symptoms.  In Episode 93 of this podcast, I interviewed Steven J. Singer, who runs Fody Foods, helping those who are using the diet as a tool towards better health.

Ellen gives us more information on how you can post questions on Instagram for Selena DeVries @celiac_dietitian.  As well Selena offers a focused Facebook group for those with persistent symptoms, along with courses and assistance on her website www.healthbean.ca.

The topic of food bullying is a broad one and means different things to different people.  To help me tackle with subject, I invited Nicole Byrom, Registered Dietitian with the Canadian Celiac Association to discuss food bullying in the context of the gluten free diet.  The act of making someone feel bad for the food they are eating often comes from a place of ignorance about celiac disease and non-celiac gluten sensitivity.  Education can be a key factor in your response to a food bully, but issues get more complicated depending on who is the being bullied and who the bully is.  Children often face negative comments on their food when away from home and adults often have negative interactions with family members, or they are seen as being needy and high maintenance.  Nicole is able to put food bullying in perspective with tips and strategies to empower you or your chid.  Nicole gave us her email, Nicole.Byrom@celiac.ca, if you have any suggestions for issues you are facing that the CCA may be able to help with.

Cinde and I talk about some of the options available to you if you want to make a gluten free pizza at home.  There are premade pizza crusts, pizza dough and dough mixes.  Although each of these options may be gluten free, the best gluten free pizza crust will likely come after experimenting with different yeast-based crust recipes.  Techniques are very different from wheat pizzas and can often be best learned from a baking class.  Whether you’re baking your pizza in a very hot oven, on a pizza stone or steel, or on an outdoor barbeque, Cinde gives us lots of tips to make your best gluten free pizza.  You may want to join one of Cinde’s baking classes to gain some confidence and set you up for success with gluten free pizza.

It’s the beginning of February, so that may mean Groundhog Day to some, but to me it means a lively conversation with Ellen Bayens of www.theceliacscene.com.

On this episode I speak with Kendra, the human who trained Suki to be a Gluten Detection Dog.  Kendra speaks about how Suki was trained to alert her if any food, drink or medication contains gluten.  Kendra trained Suki during Covid, and although Suki is ready to accompany Kendra into restaurants, stores and on public transportation, the training is ongoing.  Kendra takes us through some of the interesting instances when Suki was able to detect very small amounts of gluten, which Kendra would not have been able to detect from ingredient lists.  I preface and follow up my conversation with Kendra with some general information on working dogs, that you, like me, may not have been aware of.  I’m looking forward to a follow-up conversation with Kendra, so if you have any questions for her, please email me at acdnceliacpodcast@gmail.com

Ep 203 Catch Up with the CCA15 Dec 202100:39:15

On this episode I speak with Melissa Secord, Executive Director of the Canadian Celiac Association to bring us up to date on recent relevant news items.  We look more into how the CCA worked with the Ontario government to inform the Ministry of Health about the advantages of covering the cost of the celiac blood panel for the purpose of diagnosis, and the pilot program that has come from those efforts.  Recently, a story about a celiac woman held in travel quarantine made the national news as she was denied a gluten free meal for 40 hours.  The CCA got involved to help the woman and bring more awareness of this unacceptable situation.  Melissa and I also talked about the labelling of “natural” products, including supplements, and natural treatments.  Until now, these products did not require labelling that would identify sources of gluten and recently, the CCA has been working with Health Canada to change the regulations.  You can find out more at www.celiac.ca/news-events/news/.

Ellen and I both had copies of the recent booklet produced by Celiac Canada with the preliminary results from their recent survey. There is so much information in these numbers and the analysts have only scratched the surface. You can read these initial results or download the booklet at celiac.ca.

Both Ellen and I felt my recent conversation with Linda Sills regarding retirement and long-term care for her celiac mother was concerning and something we should all be concerned about for our families and ourselves. Ellen told us about a new online mentoring program for kids and teens that is being started – you can find out more here - Introducing Celiac Chat - An Online Mentorship Program for Kid & Teens  and hopefully I will speak with Avery for a podcast in the near future.

Villous atrophy is a term that many of us know from our diagnosis, but Ellen was able to show me an article that listed other conditions that may cause villous atrophy – and here I was thinking it was unique to Celiac Disease. Other Conditions that May Cause Villous Atrophy 

On a social media note Ellen told us of a situation at a local restaurant in Victoria that recently decided to remove a popular gluten free item from their menu. This was of course unfortunate, but the negative comments on social media that ensued were somewhat over-the-top. Ellen and I comment on the issues.

I mention that I recently attended a virtual class from Cinde, the everydayglutenfreegourmet.ca. I highly recommend these classes as we can all learn to make more gluten free options.

On this episode I have the pleasure of speaking with Taleen Benson blogger and cookbook author.  Taleen started her blog after her husband was diagnosed with a condition that required a gluten free, egg free diet.  Taleen has a loyal following for her blog called “Just As Tasty”, and she was encouraged to write a cookbook of gluten free, egg free recipes.  The book, called “Just as Tasty, Gluten-free and Eggless Baking Through the Seasons” is available for purchase on Amazon.  Taleen explained the process of writing her own cookbook as well as having it available with Amazon print on demand.  She was kind enough to send along her recipe for Molasses Cookies

Makes about 18 cookies

1 ¾ cups (259g) gluten-free flour blend

1 teaspoon baking soda

1 teaspoon cinnamon

½ teaspoon ginger

½ teaspoon fine sea salt

½ cup (113g) unsalted butter, room temperature

⅔ cup (133g) light brown sugar, packed

⅓ cup (113g) unsulphured molasses

1 tablespoon Bob’s Red Mill Egg Replacer, mixed with 2 tbsp water

½ teaspoon vanilla extract

¼ cup (50g) granulated sugar, for rolling

 

  1. Preheat the oven to 350℉. Line baking sheets with parchment paper and set aside.
  2. In a small bowl, whisk the flour, baking soda, cinnamon, ginger, and salt together. Set aside. 
  3. Using a hand mixer or a stand mixer fitted with the paddle attachment, cream the butter with the brown sugar until smooth. Add the molasses, prepared egg replacer, and vanilla extract and beat to incorporate. Add the dry ingredients and mix on low speed until combined. 
  4. Roll balls of cookie dough, measuring about 1 tablespoon per cookie, then roll in the granulated sugar. Arrange on the prepared baking sheets, about 2 inches apart. Use your hand to press down on each one to flatten slightly. Bake for 10-12 minutes. Allow the cookies to cool on the baking sheets for at least 10 minutes before removing. 

 

Notes: 

  • Once mixed with water, the egg replacer must sit for 1 minute to thicken. If you are not looking to replace eggs, you should be able to use 1 egg instead of the egg replacer.

Ep 198 Flax and the Gluten Free Diet with Valley Flax Flour10 Nov 202100:46:41

On this episode I chat with Howard Selig who is not only a Registered Dietitian, but a trained chef.  After recognizing the nutritional benefits of adding flax in the preparation of some foods for residents of a care home, Howard branched out filling the needs of other care homes by grinding flax seeds for them.  Providing flax in different forms to others soon became a business.  Howard explains the many nutritional advantages of flax and how it can be a benefit to the gluten free diet.  With his baking skills, Howard decided to formulate a flour mix, gluten free of course, along with baking mixes (the one for bread just needs you to add water!).  Salene Pyke works with Howard and she explained what products they sell and how to get free shipping.  You can find out more on their website at www.flaxflour.com .

Ep 195 Catching Up with Nicole Byrom RD20 Oct 202100:40:17

It’s great for me to have returning guests on the podcast.  Nicole Byrom RD, works with the Canadian Celiac Association as the Health Promotions Manager.  When I contacted her about coming back on the podcast, she had a list of things she wanted to inform listeners about.  The topic of arsenic in our food comes up often.  Nicole tells us why this is important to the celiac population and some ways to reduce arsenic exposure.  Nicole is involved in an upcoming webinar about Type I Diabetes and its relation to celiac disease.  There is a link below for more information on the webinar.

 

Since this is October, the topic of Halloween candy came up.  We both discussed how our celiac daughters were able to make the best of what could be a difficult situation.  Below is a link to the list of safe Halloween candy from the CCA.  Nicole filled us in on the growing practice of setting out “teal pumpkins” to signify that the house has non-food or allergen friendly treats to give away.

Ep 194 Finding a Restaurant Solution After a Long Diagnosis Journey13 Oct 202100:44:28

Everyone has a diagnosis story, and I enjoy listening to and sharing many or them.  This episode of the podcast is a conversation with Beau Bristow of Nashville TN.  Beau was diagnosed as an adult and had a long list of symptoms, which to him were unrelated.  Of particular note,

 was the brain fog, which by reason of the name, you don’t realize at the time, and only once the fog has lifted do you understand what you were missing.  Finding suitable restaurants is a pain point for most of us, but in Beau’s case, he was determined to help solve this problem, not only for those of us on a gluten free diet, but for people suffering from other allergies.  The approach of the website https://picknic.app/ is to help someone requiring a special diet to find a restaurant that understands and follows suitable procedures for you to eat safely.  You can signup on the website to receive new information.  The website will soon be an app, to be downloaded, but at the moment it is focusing mostly in the Nashville area to get it right – how to onboard restaurants and the rate them as a “pick” for your special diet or not.  Beau has also asked for feedback from those on a gluten free diet and you can reach him at info@picknic.app.  You can also find Picknic on Facebook and Instagram @gopicknic.

Ep 193 What's All the Fuss About Pumpkin Spice with Cinde Little06 Oct 202100:42:21

For many people September and October are not as much about Autumn as they are about pumpkin spice everything.  Being a baker, this has always interested me, but I have to say, except for pumpkin pie, I had pretty much stayed away.  Cinde Little, of the Everyday Gluten Free Gourmet was the best person to get me up to speed on pumpkin spice – is it gluten free? what do we have to look out for? where should we expect to find it? and can we use it at home in baking or drinks?

Cinde sent along a photo of her favourite Pumpkin Date Cake, which looks very yummy and you can find the recipe on her blog.  As well, she had a work in progress for a pumpkin spice syrup to use at home.  I’ve played with what she had, and have given a recipe below, so you can make your own special café drinks at home.  After recording with Cinde, I did go out and buy a couple of pie pumpkins.  You can see photos and read what I did with them on Episode #193 of my blog www.acanadianceliacblog.com.  You can find Cinde at www.everydayglutenfreegourmet.ca.

 

Homemade Pumpkin Spice Syrup for Café Drinks

1 ½ cups water

1 ½ cups sugar

Spices – 1 ½ tsp ground cinnamon, 1 tsp ground cloves, 1 tsp ground ginger, 2 tsp ground nutmeg

1/3 – ½ cup pumpkin puree

½ tsp vanilla extract (optional)

Place water and sugar in a saucepan on medium heat.  As the mixture heats, add the spices and stir well.  Add pumpkin puree depending on your preference – the 1/3 cup will be a mild flavour and the ½ cup will be more pronounced.  Heat liquid to simmering.  Continue simmer for 5-10 minutes, watching it doesn’t boil over.  Remove from heat.  Add vanilla extract (optional), which will give a somewhat richer taste.  Let mixture cool for 5 minutes.  If your pumpkin puree is still a bit lumpy you can use an immersion blender to smooth out the liquid.  Pour syrup through a sieve to remove any larger bits of the spice blend or pumpkin.  Store in a squirt container or bottle in refrigerator.

This episode is a follow up to Episode 298 when I attended an event called The State of Celiac Disease in Canada during the last week of February. Celiac Canada held the event to present the preliminary results of the recent national survey.

During the event, Melissa Secord the Executive Director of Celiac Canada spoke. I had more questions for Melissa, so I invited her on to this episode of the Podcast. Now that the preliminary results of the survey were being evaluated, I wanted to know more about what the results meant to Celiac Canada, and how they were going to use what they were learning to advance their efforts on our behalf.

Also, at the event in February, a woman by the name of Linda Sills took to the podium to tell her family’s story of dealing with care homes for her elderly mother. Linda gave an emotional talk, and again, there was more I wanted to know. The prospect of choosing a long-term care home for a loved one or yourself, is daunting, but unfortunately, for many of us, it’s a fact of life. I was grateful that Linda trusted me with her moving story and allowed me to dig a bit deeper into how and why. This was a powerful conversation, and one you may want to refer for others to listen to. Thanks Linda, for sharing in such a personal way.

It’s the beginning of the month again, so I get the pleasure of speaking to Ellen Bayens of theceliacscene.com about some of the topics of interest that have come up during the past month.  We discuss the diagnosis story of the family of a Neonatologist in the US who sought out the team at the Celiac Disease Program at Boston Children’s Hospital for help.  Ellen and I discuss how comprehensive the whole family approach to treating and further diagnosing family members is.  See the link below to the article about this family’s journey.  Ellen and I go on to look at some of the feedback we’ve had about the stickers and wristbands from www.celiackidstuff.com and how families can use these tools to help their kids eat safely.  The silicone wristbands for kids which say – I’m a Celiac Kid     I Can’t Eat Gluten – are now being made available for gluten free bakeries to sell directly.  If you know of a bakery that might be interested in offering the wristbands, please let me know and I can reach out to them.

In the previous episode of the podcast, I recorded a discussion with my adult daughter Deanna, about our differing attitudes towards celiac disease and the gluten free diet.  I am grateful for the opportunity to have these discussions as I suspect that much the same dynamic is going on in other families with multi-generational celiac disease.  Also, at the end of that podcast, Episode 191, I included a short “blooper reel” which Ellen refers to and gives a classic insight into mother/daughter interactions.

Sue’s Doughnut Holes

1 ½ cups gluten free flour blend (I use ½ cup of each white rice flour, potato starch & corn starch)

1/3 cup white sugar

1/3 cup skim milk powder

1 tsp guar or xanthan gum (omit if your flour blend includes gum)

1 tsp salt

1 tbsp baking powder

1 tsp vanilla extract

2 tbsp oil

2 eggs

2 tbsp water

Blend together all the dry ingredients.  Add vanilla, oil, eggs and water.  Add more water 1 tbsp at a time if batter is too thick.  Blend by hand, or with a mixer.  Batter should be thicker than pancake batter but not as thick as cookie dough.

In a saucepan heat oil to 375° (only fill saucepan less than half full with oil, leaving enough room for the bubbling expansion of the batter).  Drop spoonfuls of the batter into the hot oil, cooking only 3 or 4 at a time.  Turn to cook evenly till dark golden.  Remove onto absorbent paper towel.  While still warm, place in a bag with sugar and cinnamon to coat.  Can be kept in sealed container 3-4 days.  If you want to eat the doughnuts right away, you can drizzle them in icing or chocolate sauce, but just know they will not keep well if they get soggy (so eat them up!)

On this episode I speak with my daughter Deanna.  She has been a guest on the podcast in the past, and I take this opportunity to ask her about some of her attitudes and coping skills dealing with celiac disease and how those compare to my approaches.  I was a Mom of two beautiful girls when I was diagnosed, with Deanna’s diagnosis coming five months later, just in time for her fifth birthday.  Having suffered from an unknown cause for some very diverse symptoms for many years, my diagnosis became one of questioning every food, not only for me, but for my daughter.  In contrast, Deanna doesn’t remember her symptoms prior to diagnosis and has been raised to understand the diet completely and take it in stride.  Hopefully, you will find some aspects of each of our perspectives in your approach to the diet and how it affects your life.  I couldn’t resist the urge to include some of the bloopers from our conversation in a mix up at the end of the podcast.  It was a joy to have such a heart-to-heart with my all-grown-up daughter.

On this episode I speak with Carmen from the Ottawa Chapter of the Canadian Celiac Association who came up with the idea of organizing a sleep away camp for kids with celiac disease.  The camp was to have occurred last year, but as we all know, the pandemic changed that.  The camp did go ahead this past August and I’m thrilled to be able to talk to Carmen about both organizing the camp as well as being on site to ensure the food was prepared and served strictly gluten free.  Carmen has two daughters and they both attended camp, along with some of their friends.  Carmen’s daughter, Rosie,  has celiac disease, and I was thrilled to be able to ask her what she enjoyed about camp, both the activities and the meals.  You can find more information at campceliac.ca

It’s the beginning of September, so it’s my opportunity to speak with Ellen Bayens of The Celiac Scene about the studies and articles she has found over the past month to present to us.  We talk about a study looking at the gut microbiome of infants, in an effort to identify differences over time in the gut microbiome that later develops into celiac disease.  As well, we look at an article from Beyond Celiac that examines some of the perceived difficulties of the gluten free diet and how they might be a hinderance to adherence.  Ellen tells us of an adventure vacation that was very celiac safe.

Ellen has compiled a list of 10 products that might be helpful when the time comes to sending kids back to school with lunches.  Apart from the food, we also chat about the importance of kids being able to advocate for themselves and their diet, which brings up a short discussion about the stickers and wristbands available from Celiac Kid Stuff.

As the pandemic has progressed, organizations have become more creative in adapting their annual events to still continue, but in a different format.  That is certainly the case with the Scotiabank Run being held in Toronto.  The CCA is heading up Team Celiac and inviting anyone across the country to Step Up for Team Celiac and participate in whatever way they can – choose a suitable distance, walk and run, challenge yourself with more than one distance, or run during the in-person event in Toronto.  Other cities host Scotiabank Runs and some of our celiac groups are very involved in the events in their own locations, but if you can’t participate locally, or the Toronto run is your local run, head to the CCA website to sign up to Step Up for Team Celiac.  Julie and I also discussed the upcoming virtual CCA conference, which has a different format this year.  The first day is for the yet to be, or recently, diagnosed with the second day being for the those of us who have been diagnosed more than a couple of years.  The CCA is also asking for our help in formulating their proposal for labelling of some foods, including supplements that do not currently fall under the labelling regulations for food.  More information on these initiatives can be found on the CCA website – www.celiac.ca

I look forward to chatting with Ellen Bayens of www.theceliacscene.com at the beginning of every month to get caught up on celiac and gluten free news that has come to light over the past few weeks.  On this episode, Ellen and I speak about a press release from the UK regarding the price increase of rice flour and how it might affect gluten free food producers.  Ellen also tells us a diagnosis story from a family with a young daughter which highlights many of the frustrations felt by families with a sick child.  Both Ellen and I are excited to talk about a new venture we’ve started to support celiac kids and their families.  Our website www.celiackidstuff.com has begun selling stickers and wristbands that let kids tell everyone around them that they are special, they are celiac, and they need to eat a gluten free diet.  The stickers and wristbands are aimed at kids from ages 4-12, as well as special stickers for caregivers to use when sending food to school or get togethers.  On a similar, but different note, Ellen and I speak about restaurants in her area.  There seems to be abundance of places to get gluten free fish and chips, or maybe I noticed this because its such a treat for me, and hopefully, other celiacs as well.  Ellen mentions a very clean brand of jerky that is well labelled gluten free and free from other additives.  Also, if you are in the Victoria area, we identify a discount you can get, just for mentioning www.theceliacscene.com.

I recently realized that although many of the people I speak with have been involved in the celiac and gluten free community for many years, I wasn’t well acquainted with the families of the newly diagnosed. When I operated my bakery, I was often the first celiac that people met after their diagnosis – it appears doctors were sending them my way. Since closing the bakery, I’ve built on my knowledge, but I must admit, I need a new perspective on what it’s like to raise a celiac child today.

Ellen Bayens (theceliacscene.com) was kind enough to introduce me to Kelsea. She is a mom of a busy 10-year-old boy and can clearly remember what life was like before, during and after the diagnosis. Our conversation centres around the diagnosis and how the entire family was affected. I hope to have Kelsea on again to explore more aspects of being a parent to a celiac child.  Hopefully, I’ll speak with her son at some point as well.

It’s always special when I have a returning guest to the podcast.  I last spoke in person to Jerry Bigam during the “State of Celiac Symposium” organized by the Canadian Celiac Association in Toronto more than two years ago.  So much has happened since.  I was curious as to how our trusted gluten free businesses faired during the complete upheaval of the past 18 months.  Turns out Kinnikinnick was well positioned and took swift action to both maintain their direct to consumer base, and take advantage of the many changes that were taking place in our lives, including staying at home, having kids out of school and our reluctance to venture out for shopping.  Jerry has led Kinnikinnick through the past 18 months with a strong vision for the future, and for a commitment to celiac consumers.

On this episode I speak with Lisa Rigney of the Edmonton Chapter of the Canadian Celiac Association about her family’s experience of having a child diagnosed with celiac disease.  Lisa takes us through what happened, and more importantly, how the family coped.  We all understand a serious diagnosis is overwhelming, but I think by sharing our experiences, it lets us all realize that we can only do our best in trying times.  Lisa explains some of the situations she wasn’t prepared for, as well as the discussions she had with other family members, friends and the school.  At the end of our conversation, we agreed to meet up again soon to talk about the support systems available to families of the newly diagnosed, and expectations as the child gets older.

There are many things that those of us on a gluten free diet must learn quickly once we receive our diagnosis.  For many of us the most challenging is how to prepare and safely eat a gluten free diet, while living in a household that eats gluten.  Carla and I discuss this common situation.  We offer different suggestions for day-to-day coping and highlight the idea that every family situation is different.  What might work for you and your family may not be workable for another.  The strictness of the diet is something we all have in common, as well as the frustration of educating our family members.  Both Carla and I agree that over time, as a family you will settle into routines that are work-able for your situation – family members begin to understand and accept, children get older and have a greater understanding, and the celiac family member gets better, which makes it all worthwhile.  Carla is a co-host on my other podcast “Gluten Free Weigh In” and she finds following an intermittent fasting lifestyle works for weight loss and makes her gluten free diet easier to cope with.  You can find Carla on Instagram @celiac_and_the_suburbs

On this episode I speak with Jon Murthy, Head of Global Marketing for BRCGS.  This is the organization that certifies foods for the CCA gluten free logo, as part of their many certification programs.  Originally, this operation was performed by a relatively small, but knowledgeable group in Canada, but moving this important function to a multi-national, multi-discipline certification body, brings an entirely new perspective to gluten free food safety.  Jon discusses the process a company must go through to achieve certification, as well as the complexities of companies producing and exporting ingredients and prepared foods to maintain their certification status.  This global perspective is a complicated concept, but BRCGS certainly seems up to the international challenge.

It’s the beginning of June and that means another informative conversation with Ellen Bayens of theceliacscene.com.  This past month Ellen has brought us a great deal of information. We start out with a couple of studies, the first into attitudes among celiacs towards dating.  There is much hesitation, social anxiety and a tendency towards risky behaviour (gluten-wise).  Although Ellen and I are not in the target age group for this study, we can relate to many of the hesitancies from our own lives that are amplified in the dating scene.  The second study is an eye-opening look at the awareness of celiac disease in the dental profession.  Dr. Melissa Ing, whom I have interviewed for this podcast, surveyed a group of dental professionals before a celiac information session and then again after.  She was able to teach them a great deal in a short time regarding questions to be asked when certain symptoms are identified. 

Ellen has once again brought us new resources, we didn’t even know we needed.  Sick Kids Hospital in Toronto has come out with new teaching modules about celiac disease and the gluten free diet.  These modules are interactive and suitable for young children to do with parents, or for older kids to do on their own.  The information is set out in an easy to use format that would be useful to educate other family members and friends.  Ellen shows us a novel way to use the restaurant translation cards from celiactravel.com.  On a different level Honeycomb.ai brings us an artificial intelligence solution to finding just the right meal at just the right restaurant to meet your specialty diet needs.  Ellen introduces us to Desiree Neilsen RD, who has started a new podcast called The Allsorts Podcast, in which she gets down to earth with practical diet knowledge that will help us all make better food choices.  She is a proponent of a plant based diet, and that suits Ellen just fine.

Two related topics are discussed – the 10 biggest challenges faced by the gluten free community, and how to order a gluten free meal at a restaurant.  There’s lots of overlap here.  Finally Ellen tells us about a study that is being done for US patients on atopic dermatitis, and you can get paid to participate.  So much news, I think this is my longest interview episode yet.  Thanks Ellen.

During the last week of February, Celiac Canada held an event called The State of Celiac Disease in Canada, during which the preliminary results of the recent national survey were presented. I was invited to bring my podcast equipment to the event and record conversations with some of those involved. This episode was recorded at the event, so you will notice some distortion and background noise in the audio – there was lots going on.

I had the pleasure of speaking with James King. James has been a guest on the podcast previously, but this conversation was all about survey results. James is an analyst who is able to make sense of the numbers. He shares some of his insights into survey results with us. I also spoke to Registered Dietician Caleigh McAulay from Celiac Canada about her role in the formulation of the survey and how the results might help her help us.

Ep 172 Celiac Awareness Month with Melissa Secord12 May 202100:33:13

Happy Celiac Awareness Month!  This is the first episode of the month and that means I get to discuss a variety of different topics about celiac disease and the gluten free diet with Ellen Bayens of theceliacscene.com.  Ellen and I chat about a Canadian study on the expense and social challenges of the gluten free diet.  The study looks at the myth of the diet for weight loss as well as some positive trends with those of us eating gluten free.  Ellen introduces me to Gnu Sante, a company making “lunchbox friendly” smoothies for kids that are gluten free and actually good for them.  Ellen and I talk very briefly about the suitability of a plant-based diet for those of us eating gluten free.  I acknowledged that this is a big subject, and deserves its own podcast episode – something Ellen and I will arrange in the near future.  Two very resourceful ladies came into focus on this episode – Selena Devries RD and Cinde Little.  Both have large followings on social media – Selena for her professional help with the gluten free diet and Cinde for her new “Healthy Me” course as well as her recipes and videos.  Since May is Celiac Awareness Month, I tease Ellen with some of the activities I’m involved with, including recipe videos and a curbside gluten free food drive.

A Conversation with Lukas Hahn

This episode started from a discussion with Ellen Bayens of theceliacscene.com for the April roundup episode 166 when she told me the story of a student from abroad, studying in Victoria in a homestay program, who was having difficulty as she required a gluten free diet.  Ellen assisted in solving the problem, but it brought so many other questions to my mind about homestay and a special diet.  On this episode I speak with Lukas Hahn, Manager – Homestay Program, Greater Victoria School District, who helps organize both the students coming to study in Victoria, as well as the families they will stay with.  Lukas gives us a great perspective on the opportunities hosting a student gives a family and large community.  We discuss what a host family is required to do, some of the responsibilities and some of the perks.  We talk about the practical experiences of a foreign student on a gluten free diet, as well as how families who are already gluten free can be invaluable to the program.
