This week we tried some of the excellent Wait and Hope from Nara Brewing, and the delicious Hop and Escape from West Coast Brewing. Both are breweries with a strong visual language, so we also talked a bit about our own experience of trying to establish our identity in the Japanese craft beer world. Then Matthew went on a bit of a weird rant about commodity fetishism.

This week we tried some of the excellent White Gradation from Y-Market in Nagoya. An extremely drinkable and well-balanced Hefeweizen. What's the correct way to pronounce Hefeweizen? We don't know. We do know though that both Daniel and Matthew have grown to love wheat beers, so we discuss what makes them, how they taste, and some of the history and practicality behind brewing with wheat. We also introduce a new character to the Sakamichi Cinematic Universe.
We were also trying out a new microphone this week and Matthew may have screwed some of the settings up, which is why Daniel sounds so much quieter than him. Sources confirm that this absolutely was not a deliberate choice.

In this very special episode we tried some of our own Anniversary IPA, and looked back on our first year in business. We opened the taproom on the 16th of March 2020 and have faced plenty of "learning and growing experiences" since then. The Anniversary IPA was brewed together with our friends at Beer Brain - many thanks to them. We also talked a little about our experience at the Tokyo Picnic event last year, which we highly recommend if it goes ahead again in 2021.

This week we drank some of the excellent Strata Drift from our friends at NomCraft Brewing in Wakayama. This double dry hopped IPA took its inspiration from the Strata Hops grown in brewmaster Ben's home state of Oregon. We also briefly mentioned the fabulously hoppy Chief Peak, from Topa Topa in California, the inspiration for which came from their local landscape.
Following that we talked about the recipe development process, where inspiration comes from and how that inspiration is turned into sweet, delicious beer. Finally, does mars bar beer exist? Could mars bar beer exist? Should mars bar beer exist?

This time we drank 年またぎセッション (Toshi Matagi Session) from Repubrew in Numazu. This West Coast Session IPA is super light and drinkable, and has a very interesting hop bill that includes several different varieties of cryo hops. We also discussed some of the different ways that hops can be processed for use in the brewery, who has to clean up the mess, and whether cryo hops can bestow super powers.
Apologies for some of the background noise on this one. We record in our taproom and for some reason the traffic outside was heavier than usual today. How many ambulances can you spot?
