Nestled in the picturesque hills of the Yarra Valley, Hermetica Distillery unveils a gin that embodies the rich spirit of the region. COCKTAIL EVERGREEN SOUR

INGREDIENTS

• 35ml Hermetica Gin
• 20ml fresh lemon juice 20ml fresh lime juice
• 35ml pine syrup*
• 1 egg white
• GARNISH Pine needles

METHOD

Put all ingredients into a cocktail shaker, without ice. Dry shake, then add a good handful of ice and shake again to emulsify. Double strain into a rocks glass filled with more ice or a chilled coupe glass, and garnish with the pine needles. Cheers!!

2023 has been quite the year. We’ve seen the start and finish of many projects, collaborated with some amazing suppliers, contractors, and builders. Met some lovely clients and worked alongside some of the best in the business at the Sydney and Melbourne Home Shows, plus our in-person Masterclasses.

As the year draws to a close, it’s usually a time of reflection, relaxation and reset for many. And whilst we will be doing a lot of this over the festive period we are also planning, creating and getting ready to jump into 2024. In this weeks guest expert interview Helen and I had the pleasure of sitting down with Mark Monk. 

Mark is the Managing Director of HELM.  

HELM are a multi award winning Developer and Builder, who specialise in the development and construction of high-end medium density apartments. 

Mark has over 37 years experience in all aspects of property development and construction, where he has been responsible for many notable high end apartment developments, master planned estates and commercial developments. 

In 2022, Mark was elected as a Director/ Councillor of the Urban Development Institute of Australia (NSW).  

For the past 3 years Mark has represented the UDIA as a panel member on one of the Building Commissioners Pillar Working Groups.  

Mark and HELM’s team have worked closely with the Building Commissioners Office, providing assistance in the implementation of the DB&P Act (THE DESIGN & BUILDING PRACTICIONERS ACT) and the RAB Act (THIS IS THE RESIDENTIAL APARTMENT BUILDING ACT). In addition, HELM was the first company in Australia to agree to be iCIRT rated, as part of Equifax’s Pilot Program. Mark worked with Equifax, OBC and UDIA NSW to refine the rating system.  

I’ve know Mark for quite sometime, in fact we went to primary School and High school together… in this episode Mark shared his insights on the Design and Building Practitioners Act, which will bring about positive change to the construction industry going forward here in Australia.  

We delved into what the new legislation means for homeowners and builders alike, and what key changes consumers need to be aware of. 

Mark's wealth of knowledge and experience in the construction industry also allowed us to discuss valuable tools and tips for consumers who may be considering buying a new property off the plan.  

As we learned more about Helm Properties, Mark shared how his company differentiates itself from others in the industry, with a focus on customer service, quality, and innovation.

I sat down with Aaron Tass, the owner and director of Tass Constructions, to discuss the essential elements of any new home build or renovation project.

Aaron holds a Bachelor of Engineering degree with Honours, a Masters in Engineering Management, a Certificate IV in Building & Construction and is also currently the President of the Cronulla-Sutherland Division of the Master Builders Association.

Aaron has had experience in both the public and private sectors with a background in civil & structural engineering, on site project engineering, surveying and project management in developments ranging from residential dwellings to multi-storey mixed use builds and large industrial subdivisions.

He has also spent time within Local Council development division and possesses an in depth understanding of the residential planning system.

Aaron is a great communicator and is in tune with each individual clients specific needs, expectations and concerns.

And Helen and I can attest to that as we have collaborated with Tass over the past few years on many of their builds.

What does Aaron do within his own company …Aaron is responsible for the pre-construction phase of the projects which includes initial discussions and meetings with prospective clients, estimating, preparation of proposals, working closely with clients to develop a tailored scope of works, compliance and looking after all project related insurances and contracts.

His responsibility extends to overseeing the Tass Construction Group design arm deliverables and also handles the financial and general management of the business.
