Making Gluten Free Bread for the Holidays07 Nov 202300:27:02

Travel Gluten Free Podcast

Season 09 Episode 24

Making Gluten Free Bread for the Holidays

The holiday season is upon us, and it’s that time of the year we will be doing lots of cooking for our family and friends, so we need to be extra careful to ensure our food is gluten-free. Join us in today’s Travel Gluten-free Podcast as we talk about what is in gluten-free bread as we also look in depth at gluten-free grains and non-grain gluten-free flour.

Gluten-free Versus Certified Gluten-free

In America, it takes up to six months to pull a product that doesn’t have the correct label off the shelf, so you want to be keen on any product labeled as gluten-free because it might have been processed in a facility that handles wheat. Find out why as a Celiac, you should always go for certified gluten-free products. I will also share the certifications that come with certified gluten-free foods.

Gluten-free Bread Ingredients

Listen in as I share the different non-grain gluten-free flour, usually made from root vegetables or nuts. Gluten-free grain flours are okay for Celiacs so long as they are produced in a facility that doesn’t handle gluten. Find out some amazing grain-based gluten-free flour to bake your bread.

Additional Ingredients for your Gluten-free Bread

Gluten-free bread tends to be a little drier because they lack gluten. I share the trick I use to make my gluten-free bread moist, plus other ingredients that will make your bread tastier and fluffier whether you are vegan or not. Also, find out why I picked  Simple Mills as one of my brand partners as I take you through some of my favorite ingredients from Simple Mills.

Do you struggle with food allergies and often wonder how to navigate your way through a cruise ship dietary minefield? Prepare to embark on a journey that will equip you with the skills to deal with such situations. You see, I recently sailed through the Mediterranean on a Celebrity cruise line. The cruise was a mixed bag of experiences - from kayaking in the sea caves of Corfu, Greece, discovering a dedicated gluten-free gelato shop in Rome, to exploring the history-steeped ruins of Olympia. But it wasn't all smooth sailing.

Getting Food Poisoning, Food Mislabeling, and getting Cross-Contamination on Celebrity Cruise Line

Along with the highs, there were some serious lows. As a person with food allergies, the lack of transparency and limited options onboard the Celebrity cruise line lead to some challenging times. But don't worry, I didn't let these difficulties dampen my spirit. Instead, they fueled my resolve to help others navigate through similar situations.

Tips and Advice When Traveling with Food Allergies on a Cruise

To conclude this episode, I will share some valuable tips and tricks that can be lifesavers when you travel with food allergies. You'd be surprised to know the potential of powdered chicken broth and electrolyte drink mix! Also, never underestimate the power of carrying a list of your food allergies in several languages. I look forward to sharing my positive experiences too - the ship's beautiful decorations, top-notch shows, and a sandwich that I can only describe as a gluten-free revelation. Traveling Gluten Free in Our National Parks

Here’s the 411 on National Parks, activities to do, when to go and how to navigate the park you choose to visit. I'll also take you on a brief tour of the National Park Service website and tell you about the National Park Foundation, why you want to purchase a National Park Pass, why you want to bring gluten free food inside the parks, and how to reserve a camping spot!

National Park Activities

So, what can you do in a national park? What do you want to do? Find out about local geologic features? How about the history of how our country's government formed? Or maybe you want to learn about the ecosystem of the Everglades? Sound overwhelming? Why not start at the National Park website where you can search by activity, find out about ranger-guided hikes, tours, and presentations and also see if the park you are visiting has the Junior Ranger Program for kids.

When you visit the National Park website, you can:

  • Search for National Parks by state

  • see what parks, monument and national lands are in the state

  • find out what activities each individual park has to offer

  • Purchase a National Park annual pass (highly recommended!)

Eating Gluten Free in National Parks

Unfortunately, this has proven almost hopeless as the parks only provide mostly fast food. Every once in a while, you can find an upscale lodge with a dining room that can accommodate Celiac disease, but overall, plan on bringing your own food with you to be safe.

Eating Gluten Free in Downtown Disney and Disney Springs

Disney Springs is a dining, shopping, and entertainment complex located at the Walt Disney World Resort in Lake Buena Vista, Florida, near Orlando. Disney Springs is open to the public and does not require admission. It offers a vibrant and lively atmosphere, making it a popular destination for visitors looking for entertainment, dining, and shopping experiences.

Disney Springs offers a wide array of experiences for visitors of all ages, featuring four distinct neighborhoods: The Landing, Marketplace, West Side, and Town Center. Each area has its own theme and atmosphere, offering a diverse range of dining options, retail stores, and entertainment venues.

Visitors can explore an assortment of shops, including Disney-themed stores, upscale boutiques, and specialty shops. Disney Springs offers entertainment options such as live music, performances, and shows. Eating Gluten Free in Disney Springs

If you’re gluten-free or you have food allergies, Disney is well-known for serving up safe food! Disney Springs takes food allergies and dietary restrictions seriously and makes efforts to accommodate guests with special dietary needs, providing options for various food allergies, intolerances, and dietary restrictions.

Many restaurants at Disney Springs offer allergy-friendly menus or have options clearly marked for common allergens such as gluten, dairy, nuts, and other allergens. When dining at Disney Springs, remember to communicate your food allergies or dietary restrictions to your server or a Cast Member. They are trained to assist you and can provide guidance on suitable menu items or may be able to modify dishes to accommodate your needs. The staff members, including chefs and food preparation teams, receive training on allergen awareness and handling to minimize the risk of cross-contact.

Make sure to have dining reservations in advance and mention your food allergies or dietary restrictions during the booking process. This allows the restaurant to be better prepared for your arrival and ensures that they can provide appropriate options or make necessary arrangements.

Gluten Free Indian Cuisine17 Aug 202300:14:19

Travel Gluten Free Podcast

Season 09 Episode 15

Gluten Free Indian Cuisine

Indian food is one of my favorite ethnic dishes, so I’m so glad that East Indian cuisine is mostly naturally gluten free! Besides naan bread, and some samosas - which are the East Indian version of a burrito - most other dishes do not have gluten. Today, I’ll give you information on popular Indian dishes that typically do not contain gluten that I’ve eaten in the past. As always, check with the chef or cook at the restaurant you’re eating at to make sure your food is safe!

Be Aware of Gluten in Lentils

Because the FDA allows up to 10% of another grain in lentils, I try to avoid lentils as much as possible. However, there are several dishes, including the crisp wafer Papadam, that are made from lentils. The one time I was sick from Indian food was cross-contamination of the lentils in the dish.

Four Types of Indian Cuisine based on Region

North Indian cuisine is known for its robust flavors and extensive use of dairy products, such as ghee (clarified butter), yogurt, and paneer (cottage cheese). Popular dishes include biryani, butter chicken, tandoori chicken, naan bread, and various lentil-based dishes like dal makhani.

South Indian cuisine is primarily vegetarian and is characterized by its generous use of rice, lentils, coconut, and spices like mustard seeds, curry leaves, and red chilies. Popular dishes include dosa (fermented rice and lentil crepes), idli (steamed rice and lentil cakes), sambhar (spicy lentil soup), and rasam (tangy soup).

East Indian cuisine is known for its seafood, sweets, and subtle flavors. Rice and fish are staple ingredients in this cuisine. Popular dishes include macher jhol (fish curry), sandesh (a sweet made from cottage cheese and sugar), and rasgulla (a syrupy dessert made from cheese curds).

West Indian cuisine is known for its spicy and vibrant flavors. It heavily relies on ingredients like garlic, ginger, and chilies. Popular dishes include pav bhaji (a spicy mashed vegetable curry served with bread), vada pav (a spicy potato fritter sandwich), dhokla (steamed fermented chickpea flour snack), and various Gujarati thalis (platters) featuring a wide variety of vegetarian dishes.

Travel Gluten Free Podcast

Season 09 Episode 14

Traveling Gluten Free in Puerto Rico

I recently took a vacation in Humacao, Puerto Rico after visiting this beautiful US territory for the first time last year. I stayed at Las Palmas Resort and I enjoyed my stay so much, I’ve already booked another week there for next year! I can’t wait to go back. Listen in to today’s gluten free travel episode where I talk about my experience in Puerto Rico, fun things to do while you’re there, and, of course, amazing gluten free restaurants to eat at when you’re in Puerto Rico.

Traveling to Puerto Rico

You can easily get a plane ticket in and out of the main airport in San Juan. And because Puerto Rico is a US territory, you don’t need a passport, but you will need a Real ID. Also, you don’t need to exchange currency as Puerto Rico is a territory and uses US dollars. It’s an easy trip to get to a tropical island that you don't need a passport to travel to if you’re a US resident!

Beaches in Puerto Rico

One of the best geologic features and most relaxing activity is to visit a local beach. Luquillo Beach is beautiful and there are restaurants and facilities (including showers) nearby. You can rent a beach chair for $25 for the day, and buy a coconut water or coco loco to sit and relax on the beach, read a book, swim, snorkel or people watch.

Where to Stay in Puerto Rico

I stayed at Park Royal Homestead, and I really enjoyed my stay at their resort! I had a two bedroom condo, with a full kitchen, right next to the pool. The resort offers free shuttles anywhere in the resort, including all restaurants and their own private beach

Make sure that you’re following the 3-1-1 TSA rule for liquids if you’re packing liquids in your carry-on. I recently got stuck throwing out shampoo and conditioner because I had too many liquids with my medicine. Now, however, I carry a medical bag so my medicine that’s considered a liquid doesn’t count towards my 3-1-1 (see medical bag link below) .

Can You Take Gluten Free Food Outside of the Country?20 Jul 202300:12:40

Travel Gluten Free Podcast

Season 09 Episode 13

Can You Take Gluten Free Food Outside of the Country?

Ready to travel overseas? Is this your first overseas trip having Celiac disease or as a gluten free traveler? No worries! You can safely navigate food overseas when you know what to do, including using the European Codex, my gluten free traveler. Find out how to pack your bags, get through TSA with food, product ingredients overseas, and how to use Equal Eats cards when traveling.

Eating Out Safely with Equal Eats Cards

With his mission to empower people living with dietary restrictions to enjoy food everywhere by providing an accurate, accessible, and seamless technology solution to help communicate their dietary restrictions effectively, accurately, and conveniently - wherever their life takes them with Equal Eats Cards. Kyle takes great effort to give each individual a customizable option for their card. For example, you can add Celiac, vegan, vegetarian, food allergies, and food intolerances so your wait staff knows all the foods you can’t eat. There are dozens of food allergy and intolerance options and dietary choices you can order on Equal Eats. This comes in very handy when you’re ordering food when you’re in a country in which you don’t understand the language.

Food Shopping Overseas

Even when you ask all the right questions, you can still end up getting food you can’t eat. Make sure to take Equal Eats cards with you to the supermarket and ask the store clerk if you can eat the food that is packaged.

Packing Your Food in Your Checked or Carry-On Bag

Find out how to pack your food, and make sure you weigh your checked bag to make sure it’s within the weight limit of the airline you are traveling to your destination. Typically, the weight limit for checked bags is 60 pounds and I’ve never come close to that weight on a checked bag, even after adding food.

How to Eat Gluten Free at Your Vacation Rental13 Jul 202300:18:05

Travel Gluten Free Podcast

Season 09 Episode 12

How to Eat Gluten Free at Your Vacation Rental

Are you scared to eat out at restaurants? If you’re new to having Celiac disease, this is a real fear! You don’t want to be anxious on vacation, so what do you do? My friend, you can find an Air b’n’b or VRBO at the location you’re taking your vacation and make your own food. Always call ahead and speak to restaurant managers directly at hotels, don’t rely on the front desk staff to ask if the food is safe at the hotel restaurant. You’ll also want to call ahead and find out what appliances and the size of the fridge and microwave so you understand what you have to cook with when you’re on vacation. Make sure to follow these tips when you’re eating out or making your own food when traveling gluten free.

Find Out About the Kitchen

Since there are no standards for what appliances come in a mini-kitchen, studio, or full kitchen apartment or vacation rental, you’ll want to call ahead and find out what appliances are available to use. Which appliances are safe? You may not want to use the blender, and other appliances which food can get easily cross-contaminated such as the toaster.

Make sure to clean your utensils well, use toaster sleeves, and wash any plates you may need during your stay. Look for crumbs in the cabinets and avoid using anything that has come in contact with leftover food. You can easily purchase paper plates to use while you are on vacation to give yourself an extra level of protection and create a less stressed travel vacation.

These Food Rules for Gluten Free also Apply to Food Allergies

Whether you have food allergies or you’re gluten free for health reasons, you can apply these practices to keep your food safe! Never assume that any product doesn’t have gluten or a food allergen unless you have thoroughly read the label. This can be time consuming, but it’s the only way to ensure that the food you are eating is safe. Gluten can hide in many different places including: scrambled eggs at restaurants, tea, salad dressing and sauces, sausages and other meats, as well as alcohol.

If you can’t find a local place to buy safe food, you can always order food from Amazon and have it shipped to your vacation rental! Please be safe and read all ingredients and ask the right questions when you’re traveling gluten free or with food allergies!

Gluten Free Food Tours with Katrina McGhee29 Jun 202300:34:55

Travel Gluten Free Podcast

Season 09 Episode 11

Gluten Free Food Tours with Katrina McGhee

Finding Gluten Free Friendly Food Tours While Traveling

Are you scared to take a gluten free food tour? Even with my experience, I avoid food tours because I don’t trust that someone else will ask the right questions for me. Today, I chat with Katrina McGhee, who is gluten intolerant - not Celiac - about how she approaches and asks about food tours. Caution: If you’re Celiac you will want to use your own judgment with food tour safety. Look for a food tour with dedicated gluten free restaurants or a completely gluten free food tour.

Questions to Ask Food Tour Operators

If you find a food tour, look to see if they mention food allergies or accommodating food allergies. If they don’t, you can reach out to the tour operator and ask them directly the following questions:

  • Have you had someone with a food allergy on your tour?

  • What gluten free offerings do these places have?

  • Are all these locations familiar with gluten allergies?

  • What is the protocol at these places?

  • Do you offer exclusive gluten free food tours?

Be Cautious When Booking a Food Tour

Even when you ask all the right questions, you can still end up getting food you can’t eat. Although my guest did a variety of food tours, I personally wouldn’t book a food tour. Why? Because they are too risky to chance getting sick because I have to depend on the knowledge and experience of someone else to vet food establishments and I’m not personally willing to take that risk.

Katrina is gluten intolerant, not Celiac, and if you're intolerant you have more food options. You don’t have to worry about cross contamination and you don’t get as sick. My advice is if you’re intolerant, you could safely eat on a food tour. If you’re Celiac, I wouldn’t book a food tour unless it was a tour in Italy or another gluten-free friendly place, and the tour locations were exclusively gluten free. For me, it would be too stressful and not fun if I had to watch everyone else enjoying their food after I paid for a food tour ticket on my vacation.

How to Travel with Disabilities featuring Jen Hardy22 Jun 202300:29:49

Travel Gluten Free Podcast

Season 09 Episode 10

How to Travel with Disabilities featuring Jen Hardy

What does it mean to travel with disabilities? What is a disability and what do you need to know if you’re traveling with disabilities? My friend and fellow female podcaster Jen Hardy from the Fabulous Over Fifty podcast (formerly the Hardy Moms Podcast) also has multiple disabilities, including an auto-immune disease which leaves her without energy and the ability to walk or stand on her own. Traveling with a walker, Jen is here to give us tips on how to travel when you have to carry medical devices as a result of your disability. She also tells her story with her experience on United Airlines and how they left her in the terminal, alone, after forgetting to order her a wheelchair and not assisting her off the airplane with a walking aide.

What Does it Mean to Travel with a Disability?

A disability is when a person has a physical or mental impairment that substantially limits one or more major life activities, a person who has a history or record of such an impairment, or a person who is perceived by others as having such an impairment. These include auto-immune disease, cancer, anxiety, PTSD, depression, and other impairments. It's very common that if you have one disability, you have another. For me, I have 10 disabilities - some of them physical, some mental such as my PTSD I have from being raised in an abusive household. Although you can’t see most disabilities in physical form, they are there. When others can’t see our disabilities, it makes it hard for them to understand how we have to adjust in our daily life and especially when we travel.

Always Take Your Medication on the Plane with You

Depending on your disability, you may have to use a walker, diabetic medication, cane, brace or support, and most likely you are traveling with medication. Always, always, always take your medication with you on the plane. Take a medical bag because this can be your extra third bag that is excluded from your two you can take on the plane because of medical reasons. While you don’t have to have a doctor’s letter or note, I would highly recommend geting a medical bag for your medications.

When flying gluten-free, you want to know about this not-well-known piece of information. If you have a disability, and any auto-immune disease is considered a disability, you have the right to carry one extra bag for medical supplies. In addition to the two bags you can carry on, you get one extra. Here’s the link to the TSA article, which explains in detail what you can bring and what they allow on the airplane when you travel with a medical bag.

Don’t have a medical bag? Get the PracMedic Travel Medicine Bag. I just picked one up from Amazon, and I’m very excited to travel with this handy medical bag. I’ve been able to stuff lots of supplements and all my prescriptions, along with my spray hand sanitizer, into this convenient bag that has a shoulder strap for easy carrying through the airport.

And if you need a clear, quart-sized travel case for your toiletries because the TSA agent took yours the last time you went through security (like the rude agent who I encountered at the St. Louis airport), then grab this amazing deal from CBGE! Three TSA-approved quart-sized toiletry bags for men or women for under $11.

What Does it Mean to Be Gluten Free?15 Jun 202300:39:29

Travel Gluten Free Podcast

Season 09 Episode 09

What Does it Mean to Be Gluten Free?

What does it mean to eat gluten-free? Find out when my friend Marvin from the Live Healthy Podcast interviews me on his show! On this episode of Travel Gluten-free Podcast, you’ll find out about me, how I came up with my name Elikqitie, along with questions and answers which my friend Marvin asked me about how to be gluten free.

What Does it Mean to Be Gluten Free?

Being gluten free means that you aren’t eating any foods that contain gluten. So what’s gluten? Gluten is the protein found in several grains including wheat, barley, triticale, and other grains. When you don’t eat gluten, you are eliminating any grain that contains gluten along with any processed foods that contain gluten including those with ingredients such as: modified food starch, hydrolyzed protein, and natural flavors or spices as these ingredients all have the possibility to contain gluten.

Eating Gluten Free as a Preference

If you’ve eaten out or you’ve talked to anyone breathing on the face of our planet, you know that some people eat gluten-free to try it out or as a preference. While that is fine, there is a significant distinction between eating gluten free as a preference and avoiding gluten because of medical reasons such as Celiac disease or a food allergy.

Adjusting to Gluten Free Eating and the Gluten Free Lifestyle

While some people find out about Celiac disease as a child and grow up eating gluten free, I didn't find out until the age of 42. Being of French and Italian descent, I believed that my gastronomic enjoyment was over because I didn’t think I would ever be able to eat bread or pasta again. However, there are some amazing food brands out there and I can enjoy almost any food that I want in its gluten-free form. Learning how to make food again was challenging, but the real challenge was knowing how to eat when I’m not in the city that I live - the big challenge is learning how to travel gluten free!

Best Places to Travel When You’re Gluten Free

Marvin turns the table on me when he asks me the best places to eat for gluten free travelers, where I’m going on my next trip, and what I miss the most. (Note: since we recorded this show I have gotten my fix of buttery croissants and I would love to go back to the European bakery and get more!).

Top Tips When Traveling with Celiac Disease08 Jun 202300:21:05

Travel Gluten Free Podcast

Season 09 Episode 08

Top Tips for Traveling Gluten Free

What do you need to know when you’re a gluten free traveler? While there are many details you need to plan for your trip, here are a few new ones that I haven’t talked about on previous episodes of the Travel Gluten-free Podcast. Today, I’ll give you great gluten free travel advice to travel safely, no matter where your gluten free adventure ends up taking you in the world!

Traveling with Your Medicine Bag

When flying gluten-free, you want to know about this not-well-known piece of information. If you have a disability, and any auto-immune disease is considered a disability, you have the right to carry one extra bag for medical supplies. In addition to the two bags you can carry on, you get one extra. Here’s the link to the TSA article, which explains in detail what you can bring and what they allow on the airplane when you travel with a medical bag.

Three TSA-approved quart-sized toiletry bags for men or women for under $11.

Call to Verify Your Fridge, Microwave, and Freezer at Your Hotel or Air

Never assume that your hotel room is going to come standard with a microwave, fridge, and freezer! I’ve been to hotels that were very nice and had none of these accommodations. Always call ahead - ideally before you book your stay - to find out if they have these much-needed vacation items or if they can provide them to you upon your arrival.

Cover Your Cooking Surfaces

Don’t believe it when you hear that gluten can cook off of surfaces! This is simply not true. You need to assume that all surfaces have gluten on them, because, well, that’s the world we live in! To protect yourself, you’ll want to purchase reusable toaster sleeves to protect your food. Looking to protect your food from someone else’s gluten laden stuff? Grab these compostable sandwich bags that are reusable and biodegradable.

What to Pack and How to Pack Your Gluten Free Travel Luggage01 Jun 202300:24:35

Travel Gluten Free Podcast

Season 09 Episode 07

What to Pack and How to Pack When Traveling Gluten Free

Do you know what to pack when you’re flying gluten free traveler? Do you know how to pack your travel items for your next gluten free vacation? If not, then listen in to today’s Travel Gluten-free Podcast, where I give you the how-to, 411 on the what, where, and how to pack when you’re flying gluten free.

The Magic of Your Medicine Bag

When flying gluten-free, you want to know about this not-well-known piece of information. If you have a disability, and any auto-immune disease is considered a disability, you have the right to carry one extra bag for medical supplies. In addition to the two bags you can carry on, you get one extra. Here’s the link to the TSA article, which explains in detail what you can bring and what they allow on the airplane when you travel with a medical bag.

Three TSA-approved quart-sized toiletry bags for men or women for under $11.

Types of Snacks to Carry with You on Your Airplane Trip

I never considered this until two years ago, but I now carry a non-peanut, nut-free snack with me on the airplane. Why? Because every once in a while, there’s someone with a severe nut allergy, and they won’t serve nut snacks. In addition, you can’t eat anything with nuts. Since many gluten-free items I eat contain almond flour or nuts, I always bring a second nut-free snack when I fly.

Water Bottles and Protein Drink Shakers

I’m a big proponent of carrying your own water and shaker bottles when flying, especially if you’re traveling on a red-eye flight. Bring a metal water bottle from Swell (that’s also insulated to keep your water cool) and a shaker bottle with a metal shaker ball as they are more durable and they contain less plastic (I’m doing my best to reduce my plastic use!) Check out the Blender Bottle store on Amazon - they even have bottles in your favorite movie themes, such as Star Wars and Harry Potter!

Traveling and Eating Gluten Free with Kyle from Equal Eats Cards25 May 202300:42:49

Travel Gluten Free Podcast

Season 09 Episode 06

Traveling and Eating Gluten Free with Kyle from Equal Eats Cards

In today’s  Travel Gluten-free Podcast, we are joined by Kyle Dine, the founder, and creator of Equal Eats Cards. Kyle has created one of the most important tools for the gluten free traveler or anyone with food allergies who eat out, especially when you’re traveling to another country.

Growing Up with Multiple Food Allergies

Kyle grew up with multiple food allergies since he was a baby. His allergies include peanuts, tree nuts, eggs, and shellfish. In addition, his wife has Celiac disease, so their kitchen is color coded, and they each have their own appliances to prepare food at home.

Creating Equal Eats Cards

Seeing a need for a professionally translated allergen card that would be taken seriously by wait for staff and others in the food industry, Kyle went on to survey over 2000 people with food allergies along with 60 professionals in the healthcare industry to find out what they were looking for when it came to an allergy translation card. He repeatedly found that the card needed to be plastic, have allergen information, and need to list what to avoid and what precautions to take when making food for those of us with dietary restrictions.

Equal Eats Cards Options

With his mission to empower people living with dietary restrictions to enjoy food everywhere by providing an accurate, accessible, and seamless technology solution to help communicate their dietary restrictions effectively, accurately, and conveniently - wherever their life takes them.

Happy Celiac Disease Awareness Month! What You Didn't Know About The History of Celiac Disease08 May 202300:21:13

Travel Gluten Free Podcast

Season 09 Episode 04

Celiac Disease Awareness Month

May is Celiac disease awareness month, a special time to create public awareness about the disease, which can have devastating effects if not diagnosed early and managed since it has no known cure. Join us for today’s  Travel Gluten-free Podcast to learn about the history of Celiac disease and the importance of educating the public and restaurant staff about Celiac disease. Thank you to Beyond Celiac for their fantastic Celiac history timeline.

History of Celiac Disease

Celiac disease has been in the human gene pool for a long time. The earliest archeological finding that shows evidence of Celiac disease dates back to the first century. For example, the archeological dig in Corsa, Italy, in 2008 revealed a first-century woman whose skeleton had the Celiac gene. One notable public figure whose records show had Celiac disease was Blaise Pascal in the 1600s. Other mentions of Celiac disease in the past were by physicians Matthew Baillie and Samuel Ghee in the 1800s.

Celiac Disease Support Groups

In 2003, the first organization for Celiac was founded, and it was initially named The National Organization for Celiac Awareness, later renamed Beyond Celiac. The organization was formed to drive the diagnosis of Celiac disease and enable access to gluten-free food. Beyond Celiac also pivots for research for a cure since it was established that a gluten-free diet is insufficient for many patients.

Many other organizations have since been formed in different parts of the World to support Celiac research and treatments, such as; The National Celiac Association, Celiac Disease Foundation, Gluten Intolerance Group, National Institute of Diabetes and Digestive and Kidney Diseases in the United States. There are also two other resources outside the United States: the Canadian Celiac Association and the Australian Celiac Organization.

First on our list of the best Gluten-free desserts is Gluten-free Lemon Bars. Lemon bars are a favorite for many people during the summer and are simple to make. Are you a white chocolate chip fan? If you answer yes, you will love our next gluten-free dessert, blondies. Gluten-free blondies are made using white chocolate.

Apple pies make a fantastic dessert, especially during the summer and for barbeques. We recommend using Wholly Gluten-free pie shells because they are free of other allergens besides gluten. If you can't find Wholly Gluten Free Pie Shells, grab a box of King Arthur gluten free pie crust mix.

Gluten-free soft pretzels, especially the ones from Moms Place Gluten Free, are great for snacking. Gluten-free pretzels are either made from corn starch or grain-free, so you can pick according to your preference. Gluten-free graham crackers are another great dessert despite their taking much time to prepare. Another dessert that uses marshmallows is rice crispy treats. Note that some rice cereal brands, besides Malt O'Meal, contain malt.

Banana bread is another delicious gluten-free dessert. Pick ripe bananas to make your bread sweeter and more moist. The best flour to use is cassava flour. Cheesecakes are easy to make, and you could also buy ready-made ones, such as the Gem City cheesecake, and add it to your gluten-free graham cracker shells.

My favorite gluten-free pasta is Banza, and it's made of chickpeas, which has a great texture and is less foamy when cooking because it's high in protein. I also love Capello's gluten-free pasta made from almond flour.

Travel Gluten Free on International Flights13 Apr 202300:23:52

Travel Gluten Free Podcast

Season 09 Episode 01

Travel Gluten Free on International Flights

We kick off Season 09 of the Travel Gluten-free Podcast with an informational episode giving the gluten free traveler advice on how to navigate international air travel. While domestic air travel can be challenging, adding more hours and a foreign language or two gives us more hurdles to overcome when we are on our vacation. However, we can still navigate the international travel scene without getting sick when you know what to do and how to prepare for travel to Europe, Asia, Africa, Iceland, or South America.

Finding Gluten Free Eats at Airports

While some airports, such as Atlanta International have food guides to show you which restaurants could possibly accommodate a gluten-free eater, they may not be safe for someone who is Celiac because preparation of the food is essential for safe eating! However, you can use the Find Me Gluten Free app - even inside airports - to find safe food to eat. If you’re flying through Portland (PDX) you can definitely eat at the Burgerville restaurant, just make sure to tell them to tag your order with a gluten allergy.

Using Equal Eats Cards at International Airports

I absolutely love Equal Eats cards! They not only tell wait staff and chefs what you can and can’t eat in the foreign language of your choice, they also inform food preparation people about how your food needs to be handled. In addition, they are well-vetted and can be customized for food allergies, and sensitivities in addition to the details of Celiac disease, bringing an extra level of safety to traveling gluten free.

Gluten Free European Bakeries with Matt from Gluten Free Street Gang29 Dec 202200:39:10

Travel Gluten-Free Podcast

Season 08 Episode 28

Gluten Free European Bakeries with Matt from Gluten Free Street Gang

Join us in today’s Travel Gluten-free Podcast as Matt from the Gluten Free Street Gang and I chat about the favorite bakeries he’s visited throughout Europe! We talk about where you can find the best gluten free croissants, gluten free cake, and gluten free pastries around the world.

The Popularity of Gluten Free Bakeries

There are many gluten-free bakeries in European countries that offer a variety of gluten-free baked goods such as bread, pastries, and desserts. Some of these bakeries may be dedicated exclusively to gluten-free products, while others may offer both gluten-free and gluten-containing options.

It is worth noting that the availability and popularity of gluten-free products has increased significantly in recent years, so it is likely that there are many options for those following a gluten-free diet in these countries.

About Matt Bzedl

Matt grew up outside the US with expat parents and travel has been a constant of his life since he was a toddler. Matt has been on a gluten free diet since December 2013 and has IBS. While gluten isn’t the only culprit, gluten is his worst offender.  He started my meme account after getting an idea for a meme about Starbucks discontinuing their gluten free breakfast sandwich.

Matt has run the largest gluten free meme account on Instagram for a little over two years and is proud to both be a leader in our community as well as building connections with people from all over the world who find my his relatable.

The name of his account comes from a soccer team he was on when living in the US. Matt had a wild assortment of injuries and with the constant jokes about being in his mid-20s going on 80, the name "Retirement Home Street Gang" was born. The name Gluten Free Street Gang came about as an extension of that name.

He’s been to 27 countries (and lived in four countries if you count study abroad). His best travel story is when he was working in Belgium and took a sleeper train with some friends and woke up in a different country than his intended travel destination. Matt hopes to keep travel as a central content theme for his upcoming work.

What is in Gluten-free Bread?02 Dec 202200:27:02

Travel Gluten-Free Podcast

Season 08 Episode 27

What is in Gluten-free Bread?

What to Carry in Your Gluten Free Carry On Bag30 Sep 202200:20:46

Travel Gluten-Free Podcast

Season 08 Episode 22

What to Carry in Your Gluten Free Carry On Bag

Join me in today's Travel Gluten-free Podcast as we talk about what to carry in your gluten-free carry-on bag during your travels such as food, medicine, and other great gluten-free travel tips!

Gluten-free Medicine

Some medications have gluten, and it's not indicated on the package. Besides, you may not find all the medications you need at the airport, so pack your gluten-free medication when traveling. I talk about why medicine is essential in your gluten-free carry-on bag. Also, I give you tips on how to package your medicine using zip lock bags and vitamin bags. I also touch on the need to take advantage of your special privilege under the American disability act, which allows Celiacs to carry an extra bag that contains medical supplies.

Single Serving Gluten Free Snacks

The post-Covid era has brought some uncertainty to the supply chain, and airlines keep changing the snacks they offer. It is, therefore, vital not to rely upon airlines to provide you with gluten-free snacks. I share with you why gluten-free single-serving snacks are a great option to carry with you, especially if you are traveling with kids.

Extra Tips When Packing Your Gluten Free Carry on Bags

Shaker metal bottles are better mixers; however, they may make unnecessary noise while carrying them around. I recommend some tips on how to pack your shaker bottles to minimize the noise and how to pack and use single-serve protein drinks with your shaker bottle.

Supplements are essential in your carry-on bag because of the risk of cross-contamination while traveling. We all need different supplements, and you should consult your doctor to determine which ones are good for you. Discover why I always pack ginger, charcoal, probiotics, and enzymes as part of my supplements when traveling. Finally, what is personal flatware? Listen in to discover why I include personal flatware in my gluten-free carry-on bag for my travels.

Travel Gluten-Free Podcast

Season 08 Episode 21

The Ten Places Gluten Hides

Upon learning that she had Celiac disease, Miri Pizan  was dismayed to discover how little the general public knew about food allergies and set about educating everyone on how to accommodate those with medical food restrictions, to build stronger community bonds. In today’s Travel Gluten-free Podcast, Miri Pizann from the Safely Sated Gluten Free Consulting, joins us as we talk about the ten places gluten hides.

Miri’s Gluten-free Journey

Acid reflux issues and some discomforts here and there was Miri's starting point in discovering she was gluten intolerant. Miri shares with us the challenges she faced while figuring out what was safe to eat after being diagnosed with Celiac and how she came to learn of so many alternative foods that are gluten-free and tasty. In her journey, Gluten-free cookbooks were a major resource that Miri relied on to identify recipes. Listen in as Miri shares with us some of her favorite gluten-free cookbooks.

The Founding of Safely Sated Gluten-free Consulting

Receiving a vote of confidence that she could educate others on the gluten-free lifestyle, from a member of her women’s group, set Miri on the path of starting Safely Sated Gluten-free Consulting. Miri talks about how her experience and knowledge of a Gluten-free lifestyle were fundamental in running Safely Sated Gluten-free Consulting.

What Should Be Your  First Step After a Diagnosis with Celiac

How do you have fun and enjoy good things while living a Gluten-free life? This is a fundamental question many Celiacs have to answer for themselves. Miri suggests starting with easy wins by beginning with easy recipes and using readily available ingredients. Listen in as Miri shares some great foods to try out and what to avoid as you adjust to living a gluten-free life.

The Places That Gluten Hides

Miri recommends finding hidden gluten as another important step to take as a newly diagnosed Celiac. Soy sauce, Licorice, some mixed spices, toothpaste, pet food, and cosmetics are among products we use frequently that have hidden gluten. Miri takes us through a comprehensive list of items that contain gluten and should be avoided. Besides what to avoid, Miri also highlights some great alternatives to ensure you pick products that are safe for Celiacs.

Extra Benefits of Eating Gluten-free

Maintaining a healthy weight, being more open to trying out new recipes that are more nutritious, and having an enhanced taste bud are a few of the additional benefits of living Gluten-free. We discuss some of the benefits we have enjoyed as a result of adopting the Gluten-free lifestyle.

What’s For Gluten Free Breakfast?21 Jul 202200:27:26

Travel Gluten-Free Podcast

Season 08 Episode 14

What’s For Gluten Free Breakfast?

Most people assume that breakfast meals like bacon and sausages are gluten-free because they are made of meat protein. However, you'd be surprised where you would find gluten lurking in your breakfast! In addition, you'd also be surprised about the many gluten free breakfast options that are available to you! In today's Travel Gluten-free Podcast, I will take you through some fantastic ideas for your gluten-free breakfast and what foods to avoid if you're Celiac or gluten intolerant.

Foods to Avoid for your Gluten-free Breakfast

Breakfast cereals are an everyday staple in the American diet. But be forewarned: there is no lack of gluten in cereals! Many people believe that rice cereals are safe because they are rice-based. However, in my experience, I've found that many rice cereals have gluten!

Malt sweetener or malt flavoring, a common sweetener for rice cereals, is made from barley, which has gluten. I share why you should be careful when consuming breakfast cereals with rice and, ultimately, why you should avoid any foods containing malt or maltodextrin. I cover reasons to look out for maltodextrin in breakfast meats and other breakfast foods and how to label read to ensure your breakfast sausages and bacon are gluten-free.

I also discuss why you should be careful with oats as a Celiac and share some gluten-free oat brands. With oats, you want to ensure that they are purity protocol or certified gluten-free because of the cross-contamination during processing. In addition, you can be sensitive to oat protein. Listen in to learn more details about why oats may affect you if you have Celiac disease.

Food Ideas for your Next Gluten-free Breakfast

Keto cereals are a good choice for a gluten-free breakfast, especially for those on the keto diet or if you're looking to cut out or reduce the amount of sugar in your diet. Discover some fantastic gluten-free keto cereal brands, what to look out for in keto products and why all keto products are not gluten-free.

Find out why certified gluten-free granola is a great option to include in your breakfast and where to find them. Gluten-free bagels and bread are an excellent addition to your breakfast; I share with you some great bagel and bread brands on the market. Since dairy can be hard on your body if you are a Celiac, I'll share why you can find a great alternative to dairy in plant-based protein drinks. In addition, I share some out-of-the-box ideas for your gluten-free breakfast, such as smoked salmon and the healthy fats you can add to your gluten-free breakfast.

Travel Gluten-Free Podcast

Season 08 Episode 12

Cooking Gluten Free Jewish Foods with Matt Weinstein

Finding healthy and delicious alternative gluten free recipes is always a challenge for many of us who have Celiac disease. In today’s Travel Gluten-free Podcast, I’m excited to host Matt Weinstein from the Glass of Weinstein. Matt is a dedicated gluten-free cook and content creator. Listen in as we talk about his Jewish heritage, how he started cooking gluten-free Jewish foods, and his process for recipe development.

Discovering Celiac Disease

Matt talks about how he discovered he had Celiac in 2014. He found out after experiencing symptoms he thought were caused by other factors. We recorded this episode in May, which is Celiac awareness month. Matt emphasizes the need to have more enlightenment to the public on the effects of Celiac since most people haven’t grasped the seriousness of the disease.

The Glass of Weinstein Gluten Free Jewish Recipes is Born

Matt credits his mum for arousing his curiosity and love for food through her love for cooking which came out even more during the big Jewish dinner like Yom Kippur.

The Glass of Weinstein was born during the pandemic. With theaters closed and Matt in the theater business, Matt didn’t have much to do. So he turned to his love for cooking for inspiration and eventually discovered that remaking his traditional Jewish foods into a gluten-free recipe was a great way to share delicious traditional Jewish foods while transforming them into amazing gluten-free recipes.

How Matt Created his Gluten Free Recipes

Gluten-free food has a reputation for being subpar. Matt gets his motivation to make his recipes by turning around this stereotype of gluten-free food. Matt has a true passion for delicious gluten-free food, constantly testing out recipes to create delicious gluten-free meals! Listen in as Matt shares some of his favorite recipes at Glass of Weinstein. Being a lover of fine wine, Matt also talks about types of wine and cider and how he incorporates them into his recipes.

We also discuss some of the mineral and nutrient combinations that work well together and which ones are antagonistic.
