Welcome back to The Perfect Bite podcast, your fusion of food and entrepreneurship.  Have you ever heard of a Chicago style bagel? Well, thanks to Tilly Bagel, now you can try them, and I'm telling you, they're coming for New York's crown. From pastry chef  Hannah Tillet-Banaszak and architect  Mike Banaszak, Tilly Bagel is continuing to grow its empire, kind of like the yeast in their beautiful bagels.


Prior to starting Tilly Bagel during the pandemic, Hannah was a sous pastry chef at Top Chef Stephanie Izard’s Girl & The Goat and Duck Duck Goat, along with Michelin-starred BOKA, while Mike was an acclaimed senior project architect at Solomon Cordwell Buenz. Hannah and Mike’s perfect Chicago pairing (hello, food and architecture!) led to a story of love, business, and delicious sourdough bagels. There always is a line at their South Loop storefront, and we can guarantee the same will be the case for their Fulton Market location, opening in Spring 2025.

Farmer Lee heads up The Chef’s Garden, the Jones family-owned farm in Huron, Ohio, known for the last 40 years as the top source of the most flavorful and nutritious produce for renowned chefs around the world. Lee and his brother Bob Jr. took over the farm from dad Bob Sr., with regenerative farming practices resulting in produce with up to 300% the recommended nutrient levels by the USDA—they even have a lab onsite to test the biochemistry of the soil! Chefs from all over visit The Chef’s Garden’s Culinary Vegetable Institute to test new dishes and work with the most delicious produce you’ll be hard-pressed to find anywhere else. 


Farmer Lee has been recognized by the James Beard Foundation, written The Chef’s Garden cookbook with his team, and now stars in The Chef’s Garden show on HOME.MADE.NATION—produced by the one and only Rachael Ray! 


I had the best time speaking with Lee about the importance of taking care of our Earth, eating freshly, and how we can take care of each other and our planet for the future—as he says,  healthy soil, healthy vegetables, healthy people, healthy environment!

Chef Ed Porter is a fine-dining-trained chef who also is an accomplished hip hop artist, and now, a documentary film director with his newest film, “The Food That Fuels”. You might recognize Chef Ed from his stint on Netflix’s “Pressure Cooker” or Food Network’s “Guy’s Grocery Games”! 


A born-and-bred New Yorker, Chef Ed infuses culture and intention into everything he does. We talk about his days at the famed, Michelin-starred Aquavit, and how he found his way to something that was completely his own, coining the term “bicoastal cuisine” when he moved out to the Bay Area. From there, Chef Ed’s passion for storytelling and finding the “why” at the heart of everything grew, and his two sides—chef and creative—finally combined into the work he does today.

 Here's a not-so-secret secret for you: I have a huge sweet tooth. Anytime and place that I can find a pastry that's made with love and care and safety for my food allergies is such a huge win.


I am so lucky that when we moved to Columbus last year, I not only found a mecca of pastries, but a modern and cozy spot of community that we visit on a weekly basis: Fox in the Snow. I sat down with owner of Fox in the Snow, Lauren Culley, to chat through her journey from publishing world to pastries, meeting and falling in love with her husband during the early days of Blue Bottle (who became her co-owner!), and how they’ve built third spaces throughout Columbus that are the perfect example of great food, great people, and great vibes. Lauren and Jeff bring a strong growth and founder mentality to Fox in the Snow, and I won’t be surprised when they start expanding outside the Columbus metro area.

When I moved to Chicago post-graduation in the fall of 2013, I fell in love with what would become a Chicago institution before I ever tasted it: Honey Butter Fried Chicken. The name says everything you need! And then I finally ate it and really, really fell in love. HBFC is the perfect community spot, picnic basket filler, or eat on the couch staple. It's quality, comfort food made by equally quality folks. 


I had the best time chatting with co-owner Christine Cikowski about her journey of falling in love with nature’s flavors at a young age, meeting her co-owner Josh Kulp at Kendall College, and their flourishing businesses of serving the best seasonal, smile-inducing bites, from the now 20-year-old Sunday Dinner Club, to the fated Honey Butter Fried Chicken, and now supporting a former sous chef through TriBecca’s Sandwich Shop. We didn’t know it at the time, but this lovely and hilarious conversation was 12 years in the making.
