Over the past few months, Sue Becker has found herself sharing more than any other episode, Sara Valentine's It's the Bread Story. Many who may feel or who have been told, that they have a gluten sensitivity or gluten allergy are surprised to find that they, too, are able to eat bread made from freshly-ground flour. Sara Valentine has struggled severely with her health since she was a very young child. Finally, at age 19, she received a few answers and remedies that helped her get through the next decade. One of these "remedies" included adopting a completely gluten-free diet. Although her symptoms diminished with this new diet, and Sara felt better, it wasn't until she was introduced to freshly-milled grain that she finally found the healing that her body was really craving. With extreme hesitancy and caution, Sara tried homemade bread made from freshly-milled grain, and to her complete surprise, she was able to digest this bread with no negative symptoms at all. But, in spite of its name, buckwheat is not related to wheat at all, nor is it even a grain. Buckwheat, however, can be used in similar ways to grains. It can be milled into flour, boiled whole and eaten, and even enjoyed raw to add a little crunch to salads or granola. Buckwheat flour is also an excellent choice for making pancakes, muffins, and crepes. Crepes made with buckwheat flour are less delicate, and this allows them to work very well when used as wraps and tortillas.
