Louisiana is known as a “Sportsman‘s Paradise”, but due to its location, it has also seen more than its share of natural disasters from hurricanes. Join us at the table, to hear about a grassroots effort for sportsman and sports women to join forces in an effort to help their neighbors when disaster strikes.

After Hurricane Katrina in 2005 Todd Terrell, Founded the United Cajun Navy. Katrina brought about not just a need for supplies, but also a need for BOATS.

The United Cajun Navy is a 501(c)3 registered nonprofit organization out of Baton Rouge, LA focused on helping make the world around us a better place. Primarily, they organize search and rescue teams during natural disasters. It’s a simple but necessary effort: People using their own boats and trained to help out in desperate times.

Last year, the city of Birmingham, Alabama celebrated its 150th anniversary. 150 years ago, iron ore, coal and limestone defined Birmingham. Today, however, it may be more synonymous with the civil rights movement. Dr. Martin Luther King Jr. said of Birmingham, “I like to believe that the negative extremes of Birmingham's past will resolve into the positive and utopian extreme of her future, that the sins of a dark yesterday will be redeemed in the achievements of a bright tomorrow.” We had a chance to visit the Magic City, and we're here to tell you all about it.

Negro Spirituals feat. Fisk Jubilee Singers02 Nov 202100:27:38
Negro Spirituals consist of a set of songs that were created by slaves during their time of slavery and were sung from spirit to Spirit. They carry messages from God to us, and today we can still build inspiration from these songs.    The Fisk Jubilee Singers are an American a cappella ensemble that performs Negro spirituals originally sung by slaves prior to the Civil War. The first group of Singers arranged the music and took it on the road beginning in 1871 introducing the public to a new genre that remains a vibrant musical tradition today.   We had the chance to speak with Dr. Paul T. Kwami, Musical Director of the Fisk Jubilee Singers.   Kwami was born in Ghana, West Africa, one of seven children. His father, a musician, taught him piano, violin, theory, and conducting. He studied music at Ghana’s National Academy of Music and taught there until immigrating to the US in 1983 as a student at Fisk University. He promptly joined the Fisk Jubilee Singers.After graduating Fisk in 1985 he continued to study music at Western Michigan University and graduated in 1987 with the Master of Music degree. In the spring of 1994 he was solicited to serve as part-time director of the Fisk Jubilee Singers. In the fall of the same year, he was promoted to full time faculty member in the music department and became the Musical Director of the ensemble. He is the first African to direct the Fisk Jubilee Singers, and the first to hold the Curb-Beaman Chair position. He is currently the Mike Curb Jubilee Singers Endowed Chair. Kwami received the Doctor of Musical Arts degree in conducting from the American Conservatory of Music.   Kwami, a composer and arranger, feels a deep connection between Negro spirituals and the music of his Motherland. “The music we sing today helps to bridge the gap between Africans and African-Americans,” he says. “I am reminded of my life in Ghana whenever I hear the Fisk Jubilee Singers sing the Negro spirituals.”   As the Fisk Jubilee Singers are celebrating 150 years this year, we thought this was the perfect time to cover this topic.  Check out the Grammy-award winning album here: https://amzn.to/3w3Vh4X   __

Deep in the hills of Tennessee, midway between Nashville and Knoxville lies a little community called Muddy Pond. During September and October, you can smell the aroma of freshly made sorghum syrup being made by this family-run farm. We had the opportunity to visit last weekend and are excited to share all about our adventures!       The sorghum plant, which is a grass, arrived with the African slave trade and spread throughout the American south due to its resilience against hot temperatures and dry conditions. Located on the sea islands of South Carolina and Georgia are communities of people who are descendants of enslaved Africans. They have a unique culture that is directly linked to West Africa. In South Carolina, this group of African-Americans and the language they speak are referred to as Gullah, and in Georgia they are called Geechee. Many historians believe the word Gullah comes from Angola a West African country from which many of the slaves came. Another idea is that Gullah is from the Gola, a tribe from the border of Liberia and Sierra Leone West Africa, although the exact origin of the word is not known most historians agree that the Gulla people and their language have African roots us at the table as we discussed this piece of southern culture

  Maggie Kane is the Founder and Executive Director of A Place at the Table. She graduated from North Carolina State University in 2013 and began working for a nonprofit with people experiencing homelessness. By befriending many people living on the margins, she knew something needed to be done. February 2015, A Place at the Table was birthed and Maggie never looked back, opening in January of 2018 serving thousands of people in Raleigh with a dignified and an affordable meal. In this episode we are talking about a dessert that you might see at a community gathering, especially in the mountains of Appalachia. It’s pretty tall, not too sweet and as the story goes even a community effort. The Apple Stack Cake is a labor of love. It looks more like big thick pancakes with filling in between each layer. 

This cake screams fall - the filling is dried apple slices, brown sugar, ground ginger, ground cinnamon, ground allspice and ground nutmeg.   In the South, this time of year you are very likely to see or hear about other stack cakes as well. Judy Blume once said "Librarians save lives: by handing the right book, at the right time, to a kid in need."    Librarians play an important role in the lives of those who love to read. But what if you had no access to a library nor books? Today we are discussing some heroic librarians that filled a gap in a time of great need in the South.    Under President Roosevlet, The Pack Horse Library initiative provided women jobs as  librarians sent deep into Appalachia on horseback to deliver books. The project was implemented by the Works Progress Administration (WPA), and today we are honoring these steel magnolias that saved lives in Kentucky through books.  Additional resources mentioned:

If walls could talk, the Steel Magnolia Bed & Breakfast in Natchitoches would have hundreds of stories to tell. The home is located in Natchitoches, Louisiana where the writer of the play, Robert Darling, originally grew up. The 1989 film was shot here in this very small town and today the central home to this story is run as a bed & breakfast.

Today, Natchitoches has a population less than 20,000. 

Named after a Native American tribe, Natchitoches (pronounced Nack-a-tish ) is the oldest permanent settlement in the Louisiana Purchase Territory. Since 1927, they have been home to one of the oldest community-based holiday celebrations in the country, and today their annual Christmas festival lasts 6 weeks! He is an outstanding cook and remained way too humble on the episode about his skills in the kitchen. A not-so-sexy subject, yet one that we thought these critters deserve as they are definitely a part of life in the south! Opossums or “white beast” are actually a help to gardeners because they eat pests like beetles and slugs, and also help control tick populations.     The armadillo, pronounced ‘arm-a-dill-ah’ has also migrated this way and you’ll see them mostly as roadkill in the south. The armadillo is a common member of the wildlife that occupies our community and they are protected by an armor shell that appears leathery.

How delta tamales got here is still a mystery. Some say migrant cotton harvesters from Mexico introduced the Mississippi Delta region to them in the early 1900’s, which made African-American residents start making them too! They are a notable cuisine in the South and today we are diving into these delicious wrapped foods!

Keep at it y’all!    Field peas, crowder peas, cream peas (along with blackeye peas) are all part of a larger species of beans commonly called “cowpeas” or “Southern peas.” Despite their names, none of these varieties are actually a pea! WHAT?!? Let’s discuss..
