Prayer to St. Joseph the Worker

Joseph, by the work of your hands and the sweat of your brow, you supported Jesus and Mary, and had the Son of God as your fellow worker.

Teach me to work as you did, with patience and perseverance, for God and for those whom God has given me to support. Teach me to see in my fellow workers the Christ who desires to be in them, that I may always be charitable and forbearing towards all.

Grant me to look upon work with the eyes of faith, so that I shall recognize in it my share in God’s own creative activity and in Christ’s work of our redemption, and so take pride in it.

When it is pleasant and productive, remind me to give thanks to God for it. And when it is burdensome, teach me to offer it to God, in reparation for my sins and the sins of the world. Amen.

RECIPES FROM RITA

Jalapeno Popper Deviled Eggs

Ingredients:

12 large hardboiled eggs peeled
½ cup mayonnaise
¼ cup cream cheese softened
2-3 Tablespoons pickled jalapenos chopped
1 Tablespoon pickled jalapeno juice
2 teaspoons dijon mustard
Up to 1 teaspoon sugar
Pepper to taste
6 slices bacon, cooked and chopped real fine
Fresh jalapenos for garnish (optional but so good)

Instructions:

Cut the eggs in half lengthwise and add the yolks to a medium-sized bowl. Mash the yolks with a fork until it forms crumbles.
Add the mayonnaise, cream cheese, pickled jalapenos, jalapeno juice, dijon mustard, sugar, and black pepper to the bowl. Stir and mash until combined and smooth.

Add the bacon and stir it in. Taste and adjust the seasoning if necessary.

Add the filling back to the egg whites, and fill them with a generous amount of the filling.

Garnish with a fresh jalapeno slice and more crispy bacon, if desired. Serve immediately or chill until serving.

Store leftovers in the fridge for up to 3 days.

Joanna Gaines’ Pimiento Cheese

This is really good, and even better with a hit of cayenne!

Ingredients:

4 cups cheddar cheese, grated
1/2 cup Velveeta – 4 oz or so
2 cups real mayonnaise
1/2 cup diced pimientos or red pepper, raw or roasted
Minced green onions to taste – I like a good half cup or so, white and green parts both
Shake of cayenne (optional but good)
Handful roasted, chopped pecans (optional)

Instructions:

In a large bowl, combine the Cheddar cheeses, Velveeta, mayonnaise, pimientos, green onion, cayenne and pecans (if using). Stir gently until well mixed. Cover and chill for 1 hour before serving.

RECIPES FROM RITA: GRAB & GO HIGH PROTEIN EGG MUFFINS

Prep time is about 5 minutes once you have everything measured out.
These are from a listener who says these make great “grab & go” breakfast muffins for the kids. (OR YOU!)
Makes about 6 egg muffins. Recipe doubles easily.
Now except for the eggs, feel free to do your own thing with add-ins. I like to add a few chopped green onions.
If you do add fresh spinach, cook it a bit, then drain to remove excess water.
If using frozen spinach, thaw and drain very well.

Ingredients
6 eggs
Salt and pepper
Crumbled cooked bacon, ham, chorizo, sausage – whatever you like — about 1/2 cup or so
Shredded cheese – a good 1/2 cup or so
Handful spinach, chopped (see note above) – optional
Parsley – optional but gives nice color

Instructions
First, spray nonstick muffin cups (yes, even nonstick cups tend to have egg stick in them after baking) or line muffin cups with paper liners and spray those, too.
Preheat oven to 375.
Whisk eggs and seasonings together.
Add meat, cheese and spinach. Whisk well.
Pour evenly into muffin cups.
Bake 15-18 minutes until eggs are set.

Note: after they cool, the egg muffins will deflate. That’s normal.
Refrigerate, covered, up to 4 days. Reheat in microwave.
Freeze and reheat in microwave.

RECIPES FROM RITA

CHUNKY GLUTEN FREE GRANOLA WITH CHOCOLATE CHIPS 

Oats are naturally gluten free but if you’re concerned, buy oats with a “gluten free” label. 

The recipe calls for coconut oil since it solidifies a bit after cooling. I used butter as a substitute. You can use regular oil, but the granola may break up a little more.

Ingredients

Granola

1 1⁄2 cups gluten-free rolled oats – I use old fashioned
1/2 cup coconut flakes, large or small, unsweetened if you have it; if not sweetened is OK

1/2 cup slivered raw almonds (or raw almonds, chopped) 

1/2 cup raw pecan halves chopped a bit
1/4 tsp salt
Coating

3 Tbsp coconut oil or butter – I used butter
1/3 cup maple syrup
1 tsp vanilla
Add while cooling

1/4 cup dried fruit – optional – I used cranberries chopped up a bit

1/4 cup chocolate chips – optional – I used mini

Instructions

Preheat oven to 325.

Stir together oats, coconut, nuts and salt.

Over low heat, whisk oil or butter and syrup until combined. Don’t let boil. Stir in vanilla.

Pour over oat mixture.

Line small baking tray (I used small sheet pan) with parchment.

Spread mixture evenly on top. Pat down with spatula.

Bake 15 minutes, then turn pan around to bake evenly. Bake another 10 minutes, just until granola is golden. Don’t overbake.

Cool a minute or two, then sprinkle fruit on top. Pat down.

Sprinkle chocolate chips on top but leave alone. They’ll melt a bit as granola cools.

Cool completely before breaking up. It stays in larger pieces if you gently lift  the granola up with your hands, then break apart. It’s still yummy if some doesn’t stick together!

Store airtight room temperature for 2 weeks or freeze for a couple of months.

GRAIN FREE GLUTEN FREE DAIRY FREE GRANOLA BARS, NO BAKE!

Daughter-in-law Jessie shared this recipe from Joyful Abode site a while back. I followed the recipe – no changes needed. Really yummy!

Ingredients

  • 2.5 cups assorted nuts and seeds
  • 1 cup dried fruit
  • 2 cups shredded coconut 
  • 1/4 cup coconut oil
  • 1/2 cup honey
  • splash of vanilla extract
  • 1/2 teaspoon salt
  • generous sprinkle of cinnamon
  • some more cinnamon

Roughly chop 1 cup of the nuts and seeds. Place in a bowl.

Use your food processor to pulse the other 1.5 cups of nuts and seeds into a finer “chop.” Add to the bowl.

Add your fruit.

Stir in the dried coconut.

In a saucepan over medium-low heat, combine oil, honey, vanilla, salt, and cinnamon. Cook until the mixture bubbles, then pour over the fruit/nut mixture.

Stir to combine completely.

Press your mixture into a parchment-lined pan of some sort. Press HARD.

Cool 2-3 hours, then remove from the pan and cut into bars. Cut straight down, don’t saw the bars. The bars cut best when completely cool.

RECIPES FROM RITA

Freezer Pesto

Go to taste. This is a nice one for the freezer. I make mine in the food processor. A blender or by hand with a mortar and pestle works, also. 

Now if you don’t want butter in your pesto, swap it out with more olive oil. 

Ingredients

1-2 cloves garlic, minced
2 tablespoons pine nuts or walnuts
2 tablespoons softened butter
2 cups basil leaves, packed
Palmful fresh parsley (optional)
1/2 cup Parmesan cheese
1/4 cup Romano cheese (or use all Parmesan)
Olive oil
Salt and pepper

Instructions

Add everything to a food processor but oil, salt, and pepper, and blend until smooth. Add oil to your liking, starting with 1 tablespoon, then add salt and pepper.

Thicker is better for the tenderloins. You can always add more oil later for regular pesto.

Pesto stuffed pork tenderloin two ways

My friend, Mary Lee Olinger, an Anderson Township reader, shared the first recipe a while back. It has a delicious culinary history, starting with Mary Lee’s friend, Mary Ann Myers. 

Ingredients for each recipe

1 pork tenderloin, about 2 pounds, trimmed

Pesto

Garnish for each recipe

Romano & or Parmesan cheese – grated 

Pine nuts (optional)

Instructions

Preheat oven to 350 for both methods.

Method #1: filling the tenderloin 

Lay tenderloin on cutting board. Starting from the top, cut meat vertically not quite all the way through. What you want is a nice “trough” to fill.

Spread tenderloin open a bit, then spoon pesto until it fills (and overflows a bit) cavity. 

Place, cut side up, in sprayed baking pan. 

Tie roast in three places to keep it together.  Sprinkle cheese and nuts over roast. 

Method #2: filling the tenderloin

Lay tenderloin on cutting board. Starting on thinner end, take a sharp knife and slice horizontally almost all the way through. It will open up like a book. Pound out evenly. 

Spread pesto to within an inch of edges. Fold over the 2 short edges a little bit. This helps seal the roulade. Roll up, starting at long end. Place, seam side down, on sprayed baking pan. Smear some pesto on top.

Roasting for both 

Bake until done (145 degrees) – in my oven it took 20-30 minutes. Don’t over cook this lean cut of meat, or it will be dry.

Rest about 10 minutes, tented. Temperature will rise several degrees.

Slice thickly, then sprinkle with cheese and nuts if you like.

RECIPES FROM RITA

HELEN SARKY’S GREEN BEAN SALAD (Loubieh)

Go to taste on this – I used about 1 pound beans
1 1/2 POUNDS FRESH OR FROZEN GREEN BEANS
1 CLOVE GARLIC
SALT TO TASTE
1/2 CUP LEMON JUICE
SMALL ONION CHOPPED
2-3 TWIGS PARSLEY CHOPPED
1/3 CUP OLIVE OIL

Snip ends of green beans if fresh in to 2″ lengths (I left mine whole but snipped the ends)
Cook in salted water until tender
Drain and cool (I left mine a bit warm)
Mash garlic and salt
Add lemon juice and all remaining ingredients and toss gently to coat.
This recipe can be served hot or cold and serves between 4-6.

St. Louis church in Owensville serves a country style dinner – fried chicken and beef briskets with all the sides. The parishioners bring desserts. I’m making key lime pie.

KEY LIME PIE

Shell:
Either purchase one (and you won’t have to prebake it) or make your own by combining 1-1/2 cups graham cracker crumbs, 4 tablespoons sugar and 6 tablespoons butter or margarine, melted. Pat into pan and bake in 350 degree oven for 6-12 minutes, depending upon how crisp you want your crust.

Filling:
4 large egg yolks, lightly beaten
12 oz sweetened condensed milk
½ cup Key lime juice
Instructions
Whisk everything together. Pour into shell and bake in 350 degree oven about 20-25 minutes, until center looks set but is still wobbly. Cool and refrigerate. Serve with whipped cream flavored with coconut if you like.

RECIPE FROM RITA: GERMAN POTATO SALAD

Cincinnati used to be called porkopolis around 1840 since it was the largest  pork processing center in the country. With its large German population, German potato salad with bacon and vinegar became popular and it’s still a beloved salad today.

Clara’s stovetop German potato salad

Clara did not use recipes so it took many tries to get this right. 

Want a sharper tasting sauce? Add more vinegar; more sugar if you like it  sweeter. 

Red or Yukon Gold are less starchy than baking potatoes so they don’t break up much. But go ahead and use whatever you have.

Ingredients

6 cups or so boiled potatoes, peeled or not, sliced 1/4” thick

1/2 pound or so thick bacon, cut into small pieces, then fried and set aside. Save drippings.

1 yellow onion diced (not sweet onion)

3 ribs celery, diced

2 tablespoons flour

2/3 cup cider vinegar or to taste

1/3 cup water or to taste

3-4 tablespoons sugar or to taste

Salt and pepper

Parsley for garnish (optional)

Instructions

While potatoes are cooking, make sauce:

Cook onion and celery in drippings until tender but not brown.

Sprinkle flour over, stir and add vinegar and water. It will look lumpy. Boil until slightly thickened, whisking as you go, then stir in sugar, salt and pepper. 

Put potatoes and bacon in bowl, pour dressing over and blend gently. 

Let sit a bit to absorb flavors and adjust seasonings.

Lord, I believe in you: increase my faith.
I trust in you: strengthen my trust.
I love you: let me love you more and more.
I am sorry for my sins: deepen my sorrow.

I worship you as my first beginning,
I long for you as my last end,

And call on you as my loving protector.

Guide me by your wisdom,

“Give us, O Lord, a steadfast heart,
which no unworthy affection may drag
downwards; give us an unconquered
heart, which no tribulation can wear
out; give us an upright heart, which
no unworthy purpose may tempt
aside. Bestow upon us also, O Lord
our God, understanding to know
you, diligence to seek you, wisdom
to find you, and a faithfulness that
may finally embrace you; through
Jesus Christ our Lord.”

RECIPES FROM RITA: Crack Cherry Tomatoes

Ingredients

About 2 pounds cherry or grape tomatoes

1/4 cup olive oil

1 heaping tablespoon or more ranch seasoning dry powder

2 cloves garlic, minced

Salt and red pepper flakes to taste

Handful chopped chives, garlic or onion 

Good handful chopped basil

Feta or goat or Parmesan cheese

Instructions

Cut tomatoes in half.

Combine oil, ranch seasoning powder, garlic, salt, and red pepper flakes. Taste for seasonings – it should taste pretty strong.
Toss tomatoes in mixture.
Spread onto large rimmed baking sheet.
Roast in 375°F oven for 20-25 minutes.

Move tomatoes to a bowl. Toss with chopped basil, crumbled feta cheese, and chives
