RECIPES FROM RITA: CAPRESE PICKLES

These tiny tomato pickles couldn’t be easier to make. Just pack a jar with fresh baby cherry tomatoes, pour over a quick pickling brine, and let the fridge do the rest. Afer 24 hours, you’ll have crisp, tangy bites perfect for sandwiches, salads, charcuterie boards, or anything else you like.

Ingredients
3 cups baby cherry or grape tomatoes
2 cloves garlic, halved
1/4 teaspoon peppercorns
2 sprigs fresh basil
3/4 cup water
3/4 cup white wine vinegar
1 1/2 teaspoons kosher salt
A little sugar – start with 1 teaspoon or honey and go up to 2-1/2 teaspoons
1/8 teaspoon crushed red pepper

Instructions
Add tomatoes, garlic, peppercorns, and basil to 1-quart-size glass jar fitted with a lid.
Combine water, vinegar, salt, sugar, and crushed red pepper in a small saucepan, and place over high heat. Cook, stirring o!en, until salt and sugar have fully dissolved. Remove from heat just before the mixture comes to a simmer.
Pour hot brine over tomatoes and seal jar. Allow jar to cool to room temperature, then place in the refrigerator until completely chilled, at least 8 hours. Best served after 24 hours and up to 2 weeks.

RECIPES FROM RITA: LETTUCE-FREE SUMMER BIBLE SALAD

Ingredients:

Dressing:
1/4 cup olive oil
3 tablespoons lemon juice
1 nice clove garlic, minced
Salt and pepper to taste – we go a bit heavy on the pepper

Salad:
2 cups cherry tomatoes, halved
1 English Cucumber, halved and sliced – we used 2 pickling cucumbers from our garden
15 oz chickpeas, or garbanzo beans, drained, rinsed
1/2 medium red onion, thinly sliced
1 nice avocado, diced
Cilantro, chopped to taste
4-6 oz feta cheese, diced

Instructions:
Whisk dressing ingredients together.
Mix salad ingredients together.
Pour dressing over salad and very gently mix.

Morning Offering of St. Therese of Lisieux

RECIPES FROM RITA: ANY FRUIT COBBLER

Double ingredients for a 9×13 pan.

Ingredients:

6 tablespoons butter, melted
3/4 cup all purpose flour
3/4 cup or so sugar plus a bit extra for sprinkling on top
Dash salt
1 teaspoon baking powder
3/4 cup or so milk (enough to make a smoother batter)
1 teaspoon vanilla
3 cups fresh fruit – your choice

Instructions:

Preheat oven to 350 and place rack on top (this helps brown the top)
Pour melted butter in 8×8 pan or 2 quart casserole.
Whisk together flour, sugar, salt.
Pour in milk and vanilla and whisk to a smooth batter.
Pour batter over butter. Don’t stir.
Add fruit, then sprinkle with extra sugar.
Bake until top is golden and cobbler bubbles, about 40 to 50 minutes or so. As cobbler bakes, fruit falls to the bottom and batter rises to the top, making a cobbler crust.

A Prayer for Priests

Gracious and loving God, we thank you for the gift of our priests.
Through them, we experience your presence in the sacraments.

Help our priests to be strong in their vocation.
Set their souls on fire with love for your people.

Grant them the wisdom, understanding, and strength they need to follow in the footsteps of Jesus.
Inspire them with the vision of your Kingdom.

Give them the words they need to spread the Gospel.

RECIPES FROM RITA: PESTO PORK TENDERLOIN

Ingredients
1-2 cloves garlic, minced
2 tablespoons pine nuts or walnuts
2 tablespoons softened butter
2 cups basil leaves, packed
Palmful fresh parsley (optional)
1/2 cup Parmesan cheese
1/4 cup Romano cheese (or use all Parmesan)
Olive oil
Salt and pepper

Instructions
Just process everything but oil and seasonings until smooth. Add oil to your liking, starting with 1 tablespoon, then add salt and pepper.
Thicker is better for the tenderloins. You can always add more oil later for regular pesto.

Pesto stuffed pork tenderloin two ways
My friend, Mary Lee Olinger, an Anderson Township reader, shared the first recipe a while back. It has a delicious culinary history, starting with Mary Lee’s friend, Mary Ann Myers.

Ingredients for each recipe
1 pork tenderloin, about 2 pounds, trimmed
Pesto

Garnish for each recipe
Romano & or Parmesan cheese – grated
Pine nuts (optional)

Instructions
Preheat oven to 350 for both methods.

Method #1: filling the tenderloin
Lay tenderloin on cutting board. Starting from the top, cut meat vertically not quite all the way through. What you want is a nice “trough” to fill.
Spread tenderloin open a bit, then spoon pesto until it fills (and overflows a bit) cavity.
Place, cut side up, in sprayed baking pan.
Tie roast in three places to keep it together. Sprinkle cheese and nuts over roast.

Method #2: filling the tenderloin
Lay tenderloin on cutting board. Starting on thinner end, take a sharp knife and slice horizontally almost all the way through. It will open up like a book. Pound out evenly.
Spread pesto to within an inch of edges. Fold over the 2 short edges a little bit. This helps seal the roulade. Roll up, starting at long end. Place, seam side down, on sprayed baking pan. Smear some pesto on top.

Roasting for both
Bake until done (145 degrees) – in my oven it took 20-30 minutes. Don’t over cook this lean cut of meat, or it will be dry.
Rest about 10 minutes, tented. Temperature will rise several degrees.
Slice thickly, then sprinkle with cheese and nuts if you like.
