The Wine Conversation - Gevrey-Chambertin with Jasper Morris MW & Sarah Kemp
Jasper Morris MW, author of “Inside Burgundy” and the award-winning website www.insideburgundy.com, takes a deep dive into Gevrey-Chambertin in our latest episode of 10-Minute Masterclass. Gevrey-Chambertin is at the northern end of the Côte de Nuits, on the edge of the city of Dijon. Jasper notes that there are 20 well-known producers, but he estimates there are 50 overall. The appellation covers 400 hectares, or 1,000 acres of vineyards, and consists of nine grands crus. In the past, Gevrey-Chambertin was known for its deeply coloured, powerful and structured red wines, but today the flavours are much more nuanced.
The appellation is affected by the alluvial soil deposits left along an ancient river course, and it is the only village which has a sizeable number of vineyards east of the main road, as the alluvial soil is found there. Jasper explains that those who are at the southern end of the village and the eastern bit before the road tend to make wines which are red-fruited, with fresh strawberry aromatics that become quite savoury, but at the northern end the wines are slightly more concentrated, slightly deeper in colour. Of the nine grands crus, which are found on the upper and middle slopes, Chambertin is the most famous and has an amazing ageing ability.
His personal favourites include Latricières-Chambertin at the southern end, and at the northern end Ruchottes-Chambertin, which he finds is the lightest most delicate and elegant, and its neighbour Mazis-Chambertin, which is noted for its structure. The most famous of the premier cru vineyards is Clos St-Jacques, which goes for the same price as the grands crus. Jasper recommends Les Cazetiers, which has a fresh mineral feel to it, and at the southern end, Aux Combottes, which is surrounded by grands crus. The grape is solely Pinot Noir and the most famous name in the appellation is Domaine Armand Rousseau, which has the biggest holdings. Other names to look out for include two branches of the Trapet family, Domaine Trapet and Domaine Rossignol-Trapet, both biodynamic, Domaine Duroché, Domaine Fourrier, Domaine Bruno Clair, Domaine Drouhin-Laroze, Domaine Sylvie-Esmonin, Domaine Henri Magnien, and Domaine Henri Rebourseau, which has received an investment from Martin Bouygues of Château Montrose.
Jasper’s obscure fact is that Gevrey-Chambertin was the first village to hyphenate its best vineyard when in 1847 it changed its name from Gevrey-en-Montagne to Gevrey-Chambertin, which was its most famous vineyard."

The Wine Conversation - The Mâconnais with Jasper Morris MW & Sarah Kemp
Jasper Morris explores the Mâconnais in our latest 10-Minute Masterclass. It is situated 50 miles to the south of Beaune and 50 miles north of Lyon. There are a thousand producers growing grapes, but a lot of their grapes go to the Cave Cooperatives. The soil is a clay-limestone mix, as is true for the Côte d’Or. Jasper explains that if it is called Mâcon it is almost certain to be chardonnay, and it certainly is if it is called Vire-Clessé or Pouilly-Fuissé. There is a little Pinot Noir in the region, which would be bottled as Bourgogne Rouge, and if Gamay is planted it will be called Mâcon with the village name attached.
Regarding the taste of Mâcon, Jasper explains that there are three styles. Mâcon bought from a supermarket is bottled in considerable volumes, usually fermented in stainless steel, and is fresh, cheerful, mineral-driven, gulping wine, which can be very satisfying. The artisanal producers tend to age in barrel and the wines show a little more substance, and clearly have a more southern feel than the wines of the Côte Chalonnaise. “Pouilly-Fuissé, you can get up to 14 percent alcohol without it feeling too heavy, as they all have a thread of acidity underneath,” he notes. And then, Viré-Clessé can be more full-bodied, everything there is on a mini-plateau with several streams. You can also have a little residual sugar, a more late-harvest style that’s unique in Burgundy.
The big negociants have their own holdings or good relationships with the growers. In Pouilly-Fuissé, Jasper recommends looking out for Domaine Ferret, owned by the House of Jadot but independently run, Domaine Barraud, Château de Beauregard, Domaine Jacques Saumaize, Domaine Saumaize-Michelin, and Olivier Merlin, whilst over In Pouilly-Vinzelles, it’s the Bret Brothers. In Viré-Clessé, Domaine Thevenet, Domaine André Bonhomme and Domaine Jean-Marie Chaland. For Mâcon and Mâcon-Villages, the co-operatives and small growers, as well as the interlopers from the north who wish to make chardonnay at more affordable prices, such as Domaine Leflaive and Domaine Lafon.
Jasper’s insider tip is to look for the premier crus in Pouilly-Fuissé which are already established, and the about-to-be-established premier crus in Pouilly-Vinzelles and Pouilly-Loché. “Amazing for the appellation,” Jasper notes. His obscure fact? The village in the Mâconnais called Chardonnay is not named after the grape. It was recorded in the 17th century, when the grapes grown there were red."

I have finally finished all my tastings of the 2021 vintage and am completing writing up all the notes. Despite the short harvest, I shall be bringing you just about as many notes as last year, to help you make your choices as merchants start to offer the 2021 vintage for sale.

In December I completed my marathon tastings of the 2020 vintage in the Côte d’Or. Since then, with brief breaks on 25th December and 1st January, I have been compiling all my tasting notes which are available to subscribers here. At last I have resurfaced – just putting the finishing touches to Chablis 2020 – before starting the next round of tastings and it is time for a webinar to discuss the 2020 vintage and what’s happening on the ground here in Burgundy.
2020 is a really exciting vintage, almost uniformly successful in white, but with a much wider range of results in red: there are some future legends in the making, but elsewhere the fruit sometimes got scorched or the producer picked too late for optimum pinot results. Read those notes and check out where the finest wines are!

Burgundy with Jasper Morris MW - The Wine Conversation

Episode Summary:-
Jasper Morris MW, one of the world’s leading experts on Burgundy, talks to Sarah Kemp about the region and the new edition of his award-winning book, Inside Burgundy, which has just been published. The first edition was published over ten years ago and Jasper discusses the updated book and the aspects of Burgundy which have been affected by climate change.
In the new edition, he has gone into more detail on lesser-known areas, such as Monthélie, Fixin, and the Maconnais, and tells Sarah he regrets not being able to cover Beaujolais, but, he notes, “after 800 pages, a book has to be bound by hand.” The new edition is 150 pages longer than the first, and describes more than 1,200 vineyards and 300 wine villages, as well as appraising 700 domaines. He discusses how climate change has affected the vintages and discloses how the producers have responded to new conditions. Jasper explains how the changing patterns of airflow and wind has meant that the polar air currents are much weaker and are sliding down, and how there are now fewer southwestern winds, but more north and south, which are both dry. “People have to manage extreme weather events, plus a generally hot and dryer climate,” he says.
Jasper also talks about the different measures the producers are taking to deal with the new climate conditions, including electric cables (which are already used in Chablis, but need large water supplies), mobile wind turbines and smudge pots, though, he adds, some producers are reluctant to use them, as they are petro-chemical based.
The rise of Aligoté is something that Jasper tells Sarah he is in favour of, as it is properly Burgundian, and takes longer to ripen, which brings freshness and acidity. He believes that canopy management is crucial, and rootstock needs looking at, as some rootstock is failing. He reports that the picking window has changed and producers need to be ready to go earlier than before. “People are going to have to be a lot more intelligent about their picking dates,” he states. The use of whole bunch and partial bunch fermentation is also discussed.
“2014 and 2017 had wider windows for picking because the sugars weren’t galloping, and that’s why those two are amongst my favourite two white Burgundy vintages,” Jasper reveals. He explains he likes early-ripening sites less than before and has found that Pommard “is hitting a wonderful streak of exciting wines.”
Sarah asks him what had surprised him most when writing the second edition. “Aligoté has leapt forward,” he replies. They discuss premature oxidation and Sarah asks if it has gone away. “No, but it nearly has,” he replies.
Jasper then talks about how the different vintages are developing for both reds and whites, which vintages to keep and which to drink, plus his favourites. Finally, the question of value is raised by Sarah and Jasper advises to look at some of the best producers in lesser communes. He also suggests there is true value to be found in Monthélie, Saint-Romain, the Hautes Côtes and the Maconnais.

6 May 2021: The news has been full of the killer frost of 2021 in Burgundy – and indeed the rest of France, and further afield. Having lived through 2016 when the frost induced “disaster” message went out so effectively that it compromised from the start any verdict on the vintage and indeed the prices at the 2016 Hospices de Beaune auction, my first vintage as consultant, I want to delve deeper into all the parameters this time round. We need to understand, if we can, just what is going on.
In this Frost 2021 zoom I will ask and attempt to answer the following questions:
How to define the different types of extreme cold damage?
Why so many recent episodes: what has changed?
What can the vignerons do about it: techniques before, during and after?
What does this mean for the future ?
There is a huge amount to cover under these few headings: so come to the zoom, armed with a glass or bottle – perhaps of a 2016 Burgundy to renew acquaintance with the last majorly frost affected vintage, to see how the wine is progressing.

Jasper Morris MW will be at Domaine d’Eugénie with the director of Artemis Domaines, Frédéric Engerer, and the winemaker on the ground in Vosne-Romanée, Michel Mallard. The domaine is small but perfectly formed with half their 4.5 hectares in grand cru vineyards, most notably Clos Vougeot and Grands Echezeaux.

Domaine Ponsot – Vertical Tasting

23 Feb 2021: There is history of innovation here with it being one of the first Domaines to practice estate bottling in the 1930s, and perhaps more significantly the Ponsots were among the first growers to understand the importance of clones and clonal selection – many of the most important Pinot Noir clones originate from their vineyards.
The first Ponsot on the scene was William, originally from St Romain but on returning from the Franco-Prussian war he settled in Morey St Denis in 1872 and bought vineyard land including the Clos des Monts Luisants. He was succeeded in 1920 by his cousin and godson, Hippolyte Ponsot, who was joined by his son Jean-Marie in 1942. Jean-Marie, long-time mayor of Morey, ran the business from 1958 until the early 1980s when his son Laurent, took over.
In 2017 Laurent Ponsot stepped down from the estate to concentrate on personal ventures. Rose-Marie Ponsot became the sole Director of the company, seconded by Alexandre Abel.

Olivier Merlin and the New Generation

19 Jan 2021: Olivier wanted to feature the 2018 vintage including his new parcels in Clos de France, Côte Rôtie and En Crêches to introduce these wines and this was also the year that his two sons joined him at the Estate and interesting to now bring in the next generation. With the 2020 harvest behind him, Olivier is keen to talk of the challenges to come: “The virus has changed many things – the distribution of wine is just one problem,” he says. “But the real challenge is not that – we will continue to drink wine – the real challenge comes from global warming and the changes we make to slow its impact.”
He talks of rootstock changes, growing systems, canopy management, evolving wood strategies. There is – clearly – much to do. Will he retire soon? He laughs. “Does a musician stop playing music? I plan to continue as long as I can; making wine is not my job,” he says. “It is my passion.”
Three decades into his career, winemaker Olivier Merlin continues to be a leading light in the Mâconnais.
Winemaker Olivier Merlin has 35 vintages under his belt. He’s far from a “new” winemaker; in fact, he’s the most established producer in the Mâconnais, Burgundy’s most southerly terroir. And, while for some producers longevity could translate to complacency, nothing could be further from the truth for Olivier. He is the region’s most dynamic winemaker, and his dazzling cuvées continue to challenge conventional views about the Mâconnais’ reputation for humble wines. “Unlike my colleagues in the Mâconnais, we do everything by hand,” Olivier explains. “We might apply modern technology, but we make our wines in the same way as they were made 200 years ago.” He makes it sound simple, but at the heart of this approach is a commitment to meticulous winemaking – stripping everything back until what is left is the terroir. And, in Burgundy, terroir is everything.

Carel Voorhuis of Camille Giroud - Interviewed by Jasper

14 Jan 2021: Camille Giroud has tiny vineyard holdings in Beaune; otherwise relying on contracts from as far afield as Marsannay and Maranges, with particular strengths in Corton and the Gevrey Chambertin vineyards.
The quality of winemaking is consistent and very much in the modern, quality-oriented genre, although the practice of very gentle oak treatment and little racking continues, so that each cuvée shows a very individual character.
Camille-Giroud had a long history as a négociant that released powerful, very long-lived wines. In 2000, it was sold to a group of American investors, and David Croix installed as director, who, to put it simply, is a genius, and made a raft of great wines until his departure in 2016. His successor is Carel Voorhuis, who is crafting similarly pure, seductive and terroir-driven wines. The course charted for the Maison from its origin remains unchanged, whilst pursuing new projects implemented since 2002.
There are two parts to the Camille Giroud story. With the first begining in 1865 when the enterprising young Camille Giroud founded the small négociant firm which carries his name. He married late, as did his son, so by the end of the 20th century the company was still being run by the founder’s daughter-in-law and her two sons. The company’s motto in the later days was to make wine in as old-fashioned a way as possible: heavy extraction and very long barrel ageing. Part of the crop might be sold early on but most was kept back until it was ready to drink, which might be 30 or 40 years later. There were plenty of misses but also some extraordinarily fine wines. Almost all production was and still is red. Stocks of these old style wines still exist, with various 1976s still to be offered for sale.
In January 2002 the company was bought by an American consortium led by banker Joe Wender and winery owner Ann Colgin, and a new chapter began. The business is managed by winemaker/technical director David Croix (of the eponymous Domaine des Croix) with a major revamping of the winemaking facilities and especially replacement and renewal of the old barrels to make wines in a much purer, more modern style. The company also owns 1.20 hectares of vineyards, consisting of Hautes-Côtes de Beaune, Beaune premier cru Cras and Beaune premier cru Avaux.

1855 Revisited: Tete de Cuvée Vineyards

17 Nov 2020: Dr Lavalle, author of a celebrated book about the Côte d’Or published in 1855, classified certain vineyards as Tete de Cuvée. Some of these were then and remain now very famous (Chambertin, Musigny, Romanée-Conti) but others have slipped somewhat out of the limelight. This tasting unites six vineyards up and down the Côte which Dr Lavalle rated as tete de Cuvée. Should we take them more seriously now?

12 Nov 2020: Just how important is vine age in Burgundy? Producers like to wax lyrical about their Vieilles Vignes and the received wisdom is that old vines make for more concentrated wines. We will test thus out with 6 beautiful Burgundies all made from vines planted before the Second World War, so at least 89 years old.

Heading to the Back Country of the Côte de Beaune

27 Oct 2020: Why should we let the Montrachets, Meursault, Volnay and Pommard get all the glory? There are three delightful villages set in the valleys behind the main Côte which are delivering steadily more exciting wines as these cooler, formerly sometimes marginal, locations have been warming up. These days there is more flesh on the bones of the whites and reds of St-Romain and Auxey-Duresses, while the reds of Monthélie are also excellent value propositions, by Burgundy standards.

Grand Cru Burgundy: Chambertin Clos de Bèze

13 Oct 2020: The second in our grand cru series features Chambertin Clos-de-Bèze, sibling or perhaps consort of Chambertin itself. This wine was so brilliantly described by Evelyn Waugh (Brideshead Revisited), as serene and triumphant! The line-up covers six of the seven most significant owners of Clos-de-Bèze from the promising 2012 vintage.

Beaujolais: Moulin-à-Vent

8 Oct 2020: The most powerful of the Beaujolais crus and the most age-worthy is surely Moulin-à-Vent, a wine which can seem positively Burgundian as it ages. It has also caught the eye of various Côte d’Or producers in recent times, with many choosing to bottle different vineyards within the cru. This tasting will display the authority of top class single vineyard Moulin-à-Vent through the eyes and wines of both local and Burgundian producers.
