| The Wine Conversation – Making White Burgundy with Jasper Morris MW & Sarah Kemp | 30 Sep 2025 | 00:12:19 | |
From The Wine Conversation with Sarah Kemp (wine-conversation.com): In our latest 10-Minute Masterclass (actually 12 minutes this month, as there was just too much great information to leave out), Jasper Morris MW, author of “Inside Burgundy,” looks at Making White Burgundy. There are conferences about Pinot Noir, he notes, but White Burgundy isn’t talked about enough. Jasper begins by looking at the main grapes, Chardonnay and Aligoté, and relates how Aligoté used to struggle to ripen, but not any more, as he moves on to the ways producers are modifying viticulture to respond to climate change. Picking dates are really vital, he explains: “You can test your grapes one day and discover they are 11.5% alc and say that will be alright for a week, but you come back five days later and they’ve shot up to 14% alc already – so you’ve really got to pay a lot of attention.” Most people press whole bunches, but Jasper favours the method where the grapes are crushed before they press them: “The advantage of that is that you get the juice mixing in with the skin more than if you don’t crush them,” he says. “I’m convinced that Chardonay is not the ballerina grape that Pinot Noir is. I think it is out there on the rugby field getting deep down and dirty, and you ought to make the wine in that way”. Jasper then examines the role of fermentation vessels, and reveals that many producers are now tending to use larger barrels so there is less wood effect. Producers used not to worry too much about the time and temperature of the fermentation, but today many are looking for shorter fermentations, as long fermentations were thought to be one of the reasons there was premature oxidation in the wines. When to bottle and which closure to use? Classic White Burgundy needs longer in barrel, Jasper states, and discusses the advantages and disadvantages of different closures. He concludes by lamenting that wines are now made to be drunk younger, and advises, “If you have a chance, do drink a 25-35-year-old, even a 50-year-old White Burgundy. Properly stored, it’s so magical.” You can also find Jasper's guest appearances on other Podcast/Video channels we work closely with:

| The Wine Conversation - The Mâconnais with Jasper Morris MW & Sarah Kemp | 28 Jun 2024 | 00:10:52 | |
From The Wine Conversation (wine-conversation.com) Jasper Morris explores the Mâconnais in our latest 10-Minute Masterclass. It is situated 50 miles to the south of Beaune and 50 miles north of Lyon. There are a thousand producers growing grapes, but a lot of their grapes go to the Cave Cooperatives. The soil is a clay-limestone mix, as is true for the Côte d’Or. Jasper explains that if it is called Mâcon it is almost certain to be chardonnay, and it certainly is if it is called Vire-Clessé or Pouilly-Fuissé. There is a little Pinot Noir in the region, which would be bottled as Bourgogne Rouge, and if Gamay is planted it will be called Mâcon with the village name attached. Regarding the taste of Mâcon, Jasper explains that there are three styles. Mâcon bought from a supermarket is bottled in considerable volumes, usually fermented in stainless steel, and is fresh, cheerful, mineral-driven, gulping wine, which can be very satisfying. The artisanal producers tend to age in barrel and the wines show a little more substance, and clearly have a more southern feel than the wines of the Côte Chalonnaise. “Pouilly-Fuissé, you can get up to 14 percent alcohol without it feeling too heavy, as they all have a thread of acidity underneath,” he notes. And then, Viré-Clessé can be more full-bodied, everything there is on a mini-plateau with several streams. You can also have a little residual sugar, a more late-harvest style that’s unique in Burgundy. The big negociants have their own holdings or good relationships with the growers. In Pouilly-Fuissé, Jasper recommends looking out for Domaine Ferret, owned by the House of Jadot but independently run, Domaine Barraud, Château de Beauregard, Domaine Jacques Saumaize, Domaine Saumaize-Michelin, and Olivier Merlin, whilst over In Pouilly-Vinzelles, it’s the Bret Brothers. In Viré-Clessé, Domaine Thevenet, Domaine André Bonhomme and Domaine Jean-Marie Chaland. For Mâcon and Mâcon-Villages, the co-operatives and small growers, as well as the interlopers from the north who wish to make chardonnay at more affordable prices, such as Domaine Leflaive and Domaine Lafon. Jasper’s insider tip is to look for the premier crus in Pouilly-Fuissé which are already established, and the about-to-be-established premier crus in Pouilly-Vinzelles and Pouilly-Loché. “Amazing for the appellation,” Jasper notes. His obscure fact? The village in the Mâconnais called Chardonnay is not named after the grape. It was recorded in the 17th century, when the grapes grown there were red." | The Wine Conversation – Beaune with Jasper Morris MW & Sarah Kemp | 01 Jun 2025 | 00:10:04
Over at "The Wine Conversation", Sarah Kemp welcomes Jasper Morris MW, author of “Inside Burgundy” and the website www.insideburgundy.com, who takes a deep dive into Beaune, “the centre of the universe for wine lovers.” That small town is situated south of Dijon and has 20,000 inhabitants. The main grapes are Pinot Noir and Chardonnay. This is where you find the merchant houses, the best-known being, Bouchard Père et Fils, Louis Jadot, Louis Latour and Chanson Père et Fils. There are a few domaines, and Jasper cites Domaine de Croix as one to know. There are several Premier Crus, but no Grand Crus. The Premier Crus Jasper advises looking out for are Beaune Les Grèves, which he describes as a number-one classic. Also of note are Beaune Clos des Mouches, which produces both red and white, with the white being outstanding. Beaune Vignes Franches, Clos des Fèvres and Clos des Avaux also are recommended. There are not too many up-and-coming producers, but a name to watch is Baptiste Guyot. Beaune provides attractive value, with Premier Crus often selling at the same price as village Pommards. The red wines tend to be lighter-bodied than other appellations, beautifully perfumed and accessible. The whites from the hillsides are chiselled, whereas the wines from lower down, like Clos des Mouches, can be surprisingly rich. Jasper recommends the following vintages for drinking now: 2017 both red and white, 2020 for whites and 2019 for reds. Beaune is a great place to visit and the Cité du Vin on the outskirts of Beaune is highly recommended. For restaurants, Jasper is a fan of Maison du Colombier which has a good wine list, Ma Cusine and Caves Madeline. One place not to be missed is the Hospices de Beaune or Hôtel-Dieu, which was built in 1443 and is full of history. Every November the Hospices de Beaune auction takes place, with wine lovers being able to bid on barrels (288 bottles), with all proceeds going to charity. Jasper’s obscure fact is that if you go down to Drouhin’s cellars, you can see the remains of a Roman wall. | JMIB Live: The 2020 Vision | 17 Jan 2022 | 00:59:31
In December I completed my marathon tastings of the 2020 vintage in the Côte d’Or. Since then, with brief breaks on 25th December and 1st January, I have been compiling all my tasting notes which are available to subscribers here. At last I have resurfaced – just putting the finishing touches to Chablis 2020 – before starting the next round of tastings and it is time for a webinar to discuss the 2020 vintage and what’s happening on the ground here in Burgundy. 2020 is a really exciting vintage, almost uniformly successful in white, but with a much wider range of results in red: there are some future legends in the making, but elsewhere the fruit sometimes got scorched or the producer picked too late for optimum pinot results. Read those notes and check out where the finest wines are! On Monday 17th January at 6.00pm UK, Jasper will be online to discuss the vintage in more detail – what worked and what didn’t, what to look out for and what pitfalls to avoid. Included in the discussion will be Jasper’s view on all that is topical in Burgundy

| The Wine Conversation – Côte Chalonnaise with Jasper Morris MW & Sarah Kemp | 02 Apr 2025 | 00:12:44 | |
Bringing Burgundy closer to you with every episode!
Jasper Morris MW, author of “Inside Burgundy” and the brilliant website www.insideburgundy.com, explores the Côte Chalonnaise. The vineyards start where the Côte d’Or ends, with the valley of the River Dheune, just south of Santenay. Its terroir is clay and limestone, but the landscape feels different, as there is no one escarpment, and the land is more wooded, creating a more varied terrain. The main grapes are Pinot Noir, Chardonnay and Aligoté, but there is also a small amount of Gamay and Pinot Blanc. There are five villages, Bouzeron, Rully, Mercurey, Givry, Montagny and two sub-classes of Bourgone: Bourgogne-Côte Chalonnaise and Bourgogne-Côte de Couchois. Bouzeron has plenty of Pinot Noir and Chardonnay on its east-facing slope, but on its west-facing slope you find Aligoté – as Jasper explains, “Aligoté has been Bouzeron’s calling card,” and in 1998 they decided to create an appellation just for Bourzeron and Aligoté. It most renowned producers are Domaine A&P de Villaine, Maison Chanzy and Domaine Champs de Themis. Rully makes sparkling wine and some good Aligoté, but is mainly known for its Chardonnay. Jasper explains, “The wines are not particularly long-lasting but they don’t need to be, because they are so lovely.” The producers to look out for are P&M Jacqueson, Domaine de la Folie, while Jasper picks out Vincent Dureuil-Janthial as the biggest star. Domaine Faiveley put Mercurey on the map, and Mercurey remains the most famous of the villages. This is red-wine territory, with the wines being more structured and more tannic, though as Jasper notes, this is changing a little with new Pinot Noir plant material. Château de Chamiray is a major player in the area and a name to look for is Domaine Bruno Lorenzon. Givry is similar to Mercurey, in that it is red-wine country, with only 15% whites produced. Producers to seek out include Domaine du Cellier aux Moines, which Jasper highly recommends, and Domaine Joblot, Domaine Thénard, François Lupp and his cousins, Domaine Ragot and Domaine Laurent Mouton. Montagny is a white-wine-only appellation. Jasper describes its taste as different from other Burgundian whites, more like “crushed oyster shells like Chablis, though not so iodine.” His names to look out for include Cave de Buxy, the largest producer in the Côte Chalonnaise, and the negociant Louis Latour has considerable holdings, the star producer is Domaine Stéphane Aladame, but there is a raft of new producers including Domaine Laurent Cognard, Domaine Feuillat-Juillot, Domaine Berthenet. | Burgundy with Jasper Morris MW - The Wine Conversation | 16 Nov 2021 | 00:38:48
Episode Summary:- Jasper Morris MW, one of the world’s leading experts on Burgundy, talks to Sarah Kemp about the region and the new edition of his award-winning book, Inside Burgundy, which has just been published. The first edition was published over ten years ago and Jasper discusses the updated book and the aspects of Burgundy which have been affected by climate change. In the new edition, he has gone into more detail on lesser-known areas, such as Monthélie, Fixin, and the Maconnais, and tells Sarah he regrets not being able to cover Beaujolais, but, he notes, “after 800 pages, a book has to be bound by hand.” The new edition is 150 pages longer than the first, and describes more than 1,200 vineyards and 300 wine villages, as well as appraising 700 domaines. He discusses how climate change has affected the vintages and discloses how the producers have responded to new conditions. Jasper explains how the changing patterns of airflow and wind has meant that the polar air currents are much weaker and are sliding down, and how there are now fewer southwestern winds, but more north and south, which are both dry. “People have to manage extreme weather events, plus a generally hot and dryer climate,” he says. Jasper also talks about the different measures the producers are taking to deal with the new climate conditions, including electric cables (which are already used in Chablis, but need large water supplies), mobile wind turbines and smudge pots, though, he adds, some producers are reluctant to use them, as they are petro-chemical based. The rise of Aligoté is something that Jasper tells Sarah he is in favour of, as it is properly Burgundian, and takes longer to ripen, which brings freshness and acidity. He believes that canopy management is crucial, and rootstock needs looking at, as some rootstock is failing. He reports that the picking window has changed and producers need to be ready to go earlier than before. “People are going to have to be a lot more intelligent about their picking dates,” he states. The use of whole bunch and partial bunch fermentation is also discussed. “2014 and 2017 had wider windows for picking because the sugars weren’t galloping, and that’s why those two are amongst my favourite two white Burgundy vintages,” Jasper reveals. He explains he likes early-ripening sites less than before and has found that Pommard “is hitting a wonderful streak of exciting wines.” Sarah asks him what had surprised him most when writing the second edition. “Aligoté has leapt forward,” he replies. They discuss premature oxidation and Sarah asks if it has gone away. “No, but it nearly has,” he replies. Jasper then talks about how the different vintages are developing for both reds and whites, which vintages to keep and which to drink, plus his favourites. Finally, the question of value is raised by Sarah and Jasper advises to look at some of the best producers in lesser communes. He also suggests there is true value to be found in Monthélie, Saint-Romain, the Hautes Côtes and the Maconnais. | JMIB Live: Frost Damage 2021 | 07 May 2021 | 01:00:16
6 May 2021: The news has been full of the killer frost of 2021 in Burgundy – and indeed the rest of France, and further afield. Having lived through 2016 when the frost induced “disaster” message went out so effectively that it compromised from the start any verdict on the vintage and indeed the prices at the 2016 Hospices de Beaune auction, my first vintage as consultant, I want to delve deeper into all the parameters this time round. We need to understand, if we can, just what is going on. In this Frost 2021 zoom I will ask and attempt to answer the following questions:
There is a huge amount to cover under these few headings: so come to the zoom, armed with a glass or bottle – perhaps of a 2016 Burgundy to renew acquaintance with the last majorly frost affected vintage, to see how the wine is progressing. | The Genius of Domaine d’Eugénie | 21 Mar 2021 | 01:02:21
18 Mar 2021: Now is the time to discover just how good are the wines made by the team which took over the Domaine Engel vineyards in 2006. Jasper Morris MW will be at Domaine d’Eugénie with the director of Artemis Domaines, Frédéric Engerer, and the winemaker on the ground in Vosne-Romanée, Michel Mallard. The domaine is small but perfectly formed with half their 4.5 hectares in grand cru vineyards, most notably Clos Vougeot and Grands Echezeaux. Domaine d'Eugenie Wine Samples: Watch the replay here. | The Charm of Burgundy | 19 Mar 2021 | 00:58:55
15 Mar 2021: One of the wonderful features of burgundy is the multiplicity of place names, many of which feature in several different appellations. Theoretically there is a reason behind each name. With this tasting we take a look at the magical name of Charmes which can be found at village, premier cru and grand cru level. Is there a thread which links the Charmes vineyards in different villages? Join in to find out where the name came from and how they all link up. Wine samples:

| Tour de Beaune | 08 Mar 2021 | 00:59:57 | |
3 Mar 2021: Beaune may be the headquarters of the Burgundy wine trade but we often overlook the appellation when making our choices. There are so many great wines to choose from with variations in style depending on location as well as producer style. Join me for a sweep through this under-appreciated appellation and see just how good the best of the premiers crus can be. Wine Samples:

| Domaine Ponsot – Vertical Tasting | 28 Feb 2021 | 01:05:48 | |
23 Feb 2021: There is history of innovation here with it being one of the first Domaines to practice estate bottling in the 1930s, and perhaps more significantly the Ponsots were among the first growers to understand the importance of clones and clonal selection – many of the most important Pinot Noir clones originate from their vineyards. The first Ponsot on the scene was William, originally from St Romain but on returning from the Franco-Prussian war he settled in Morey St Denis in 1872 and bought vineyard land including the Clos des Monts Luisants. He was succeeded in 1920 by his cousin and godson, Hippolyte Ponsot, who was joined by his son Jean-Marie in 1942. Jean-Marie, long-time mayor of Morey, ran the business from 1958 until the early 1980s when his son Laurent, took over. In 2017 Laurent Ponsot stepped down from the estate to concentrate on personal ventures. Rose-Marie Ponsot became the sole Director of the company, seconded by Alexandre Abel. Join this webinar as Alexandre Abel and I guide us through the history and evolution of Domaine Ponsot, as we enjoy these specially chosen wines. | The Wine Conversation – Morey-St-Denis with Jasper Morris MW & Sarah Kemp | 31 Jan 2025 | 00:11:14
From The Wine Conversation with Sarah Kemp (wine-conversation.com) Episode Summary: Jasper Morris MW, author of “Inside Burgundy” and www.insideburgundy.com, takes a deep dive into the appellation of Morey-St-Denis, which is situated in the Côte de Nuits between the villages of Chambolle-Musigny in the south and Gevrey-Chambertin to the north. He explains how its terroir is similar to Gevrey-Chambertin, with its underlay of limestone which stretches through to Chambolle-Musigny. The main grape is Pinot Noir, but there is a little white wine produced, Chardonnay and Aligoté. Morey-St-Denis is the only village in the Côte d’Or where Aligoté is permitted. Jasper reveals the role that Domaine Ponsot had in allowing the grape to be included in the appellation rules. What does it taste like? “I like to think of it as a slightly more savoury, slightly more wilder type of wine….if Morey wasn’t quite so small, I think it would be more famous.” Jasper discusses the famous grands crus; Clos des Lambrays, Clos de la Roche, Clos St Denis and Clos de Tart. The Morey premiers crus span the commune on the lower slopes behind the grands crus, but another small band lies just above the grands crus. The village wines are on the lower slopes, where there is more clay. Producers Jasper recommends looking out for include Clos des Lambrays, Clos de Tart, Domaine Arlaud, Domaine Castagnier, Domaine Dujac, Domaine Robert Groffier, Domaine Hubert Liginier, Virgile-Lignier-Michelot, Domaine Perrot-Minot, Domaine Taupenot-Merme, Cecile Tremblay and Domaine Ponsot. His tip for one to watch is Domaine Stéphane Magnien. Jasper’s obscure fact – the vignerons of Morey-St-Denis are known as the loups de Morey (the wolves of Morey). | Gevrey-Chambertin Cazetiers | 25 Feb 2021 | 01:03:28
18 Feb 2021: Roll over Clos St-Jacques? Not necessarily, but in terms of value for money, Les Cazetiers is a strong contender for providing exceptional quality at a more-or-less fair price. The next door vineyard has a multitude of different plots, with a variety of different soil types – yet somehow the mineral class of Cazetiers shows through, whatever the style. I will take us through what lies under the soil, what is happening above it, and what is in your glasses. Wine Samples:

| Chassagne-Montrachet under the Microscope | 23 Feb 2021 | 01:05:49 | |
11 Feb 2021: Are you a Puligny person or a Meursault fan? Hang on, what about Chassagne? The appellation is sometimes criticised because there is too much red wine territory which has been set to producing chardonnay, but the best parts of the village can make magical wines. I have chosen six of the finest producers of the village covering terroirs that compete with the best. Will vineyard or vigneron win out? Wine Samples:

| Rugiens Rex? King of Pommard | 23 Feb 2021 | 01:02:21 | |
4 Feb 2021: The leading candidate for promotion to grand cru in Pommard is Les Rugiens, the deepest and richest wine that Pommard can offer. The whole appellation is on an upswing, benefitting from global warming and the arrival of fresh blood in the village. Does the vineyard merit promotion? We can decide after tasting these six wines from some of the best known protagonists. Wine Samples:
