Episode 2.4 - Live - Ratatouille with Pork Chops and Fennel03 Feb 202300:42:30

Ratatouille with Pork Chops and Fennel

  • 5 Tablespoons EVOO (Extra Virgin Olive Oil)
  • 4-5 bone-in pork chops
  • 1 large onion
  • 6-8 Large Cloves of Garlic
  • 1 Tablespoon dried oregano
  • 1 Tablespoon dried Italian Seasoning
  • 1 large fresh fennel bulb
  • 2 Eggplant
  • 2 medium Zucchini
  • 2 cans crushed San Marzano tomatoes (no added sugar)
  • 2-3 pints of fresh grape/cherry tomatoes
  • 1/2 cup dry red wine
  • 2 Tablespoons tomato paste (no added sugar)
  • 1 teaspoon Salt and pepper

In an extra large saucepan, warm the EVOO on medium heat.  After a couple minutes, sear the pork chops for about 3 minutes each side, just to seal the outside.  Remove from the pan and set aside.

Chop the onions and garlic.  Add to the extra large saucepan, as well as the oregano, and sauté for 5-7 minutes on medium, gently scraping the bottom of the pan from the pork chops.  

Dice the fennel, including the white and green parts (about 1/2 way down the stalk), and add to the onion mixture.  Sauté for another 5-7 minutes.  

Dice the zucchini and eggplant into bite-sized pieces.  Add to the saucepan, toss and sauté for about 5 minutes.  

Add the crushed tomatoes and tomato paste, mix thoroughly.  Add the red wine and continue to simmer on medium heat for about 10 minutes.  Roughly dice the fresh tomatoes and add to the mix, as well as salt and pepper.

Nest the pork chops back into the mixture.  Reduce the heat to low, covered, and simmer on low for at least 20 minutes, turning the pork chops after 10 minutes.

This is great to eat as a main dish or serve over polenta or pasta!  Mangia!

Episode 2.1 - Recipe - Italian Sausage & Green Apple Stuffing Bites03 Jan 202300:03:38

The Italian Sausage & Green Apple Stuffing Bites will make a delicious appetizer or weeknight dinner!  Makes approximately 12 little bites. 

  • 1 loaf Italian bread 
  • Extra-virgin olive oil (EVOO) 
  • Garlic powder 
  • Kosher salt & freshly ground pepper 
  • 3 tablespoons salted butter 
  • 1/2 small yellow onion 
  • 1 stalks celery 
  • 1/2 pound ground Italian sausage 
  • 3 cloves garlic 
  • 1/2 teaspoon dried sage 
  • 1/2 small bunch fresh parsley 
  • 1/2 Granny Smith apple 
  • 2 eggs 
  • 1/3 cup chicken broth 

Preheat the oven to 350°. 

Cut the bread into bite-sized cubes. On a baking sheet, toss the bread with 3 tablespoons of EVOO, and sprinkle with the garlic powder, salt and pepper. Bake for about 10 minutes, until toasted. Set aside. 

In a large saucepan, on medium heat, sauté the Italian sausage until browned, but not fully cooked, about 10 minutes. Transfer to a bowl and set aside. In the same saucepan, add 2 tablespoons of butter and turn heat back to medium. Dice the onion and celery, and cook, stirring occasionally, until translucent, about 5-7 minutes. Mince the garlic, sage and parsley and add to the pan, cook for 2-3 more minutes. Add the sausage back in, stirring and breaking up the meat, about 5 minutes. 

In a small bowl, combine the eggs and chicken broth. Dice the apple into small pieces. In a very large bowl, transfer the croutons. Add everything else into the bowl with the croutons, season with salt and pepper, and gently toss. 

Grease one 12-cup muffin pan with butter. Pack the stuffing into the muffin cups and bake for about 15 minutes, until golden brown. Take out of the oven and let stand for 5 minutes. Loosen the muffins with a thin silicon spatula or small knife and get them out. Serve warm. Mangia!

Full Recipe:

  • 1/4 cup Extra Virgin Olive Oil (EVOO)
  • 1 onion
  • 2 red or orange bell peppers
  • 2 potatoes
  • 8 eggs
  • 8 oz. cubed pancetta (optional)

Preheat the oven to 375 F.

Dice the potatoes into bite sized pieces.  Soak the potatoes in water for about 15 minutes to pull out some of the starch, to make them less sticky.  Drain and pat them dry.  Spread out on a cookie sheet with one Tablespoon of EVOO or a piece of parchment paper.  Bake for 20 minutes.

In a medium saucepan, sauté the pancetta over medium heat until slightly crispy, about 10-12 minutes.  Drain and set aside.

In a large ovenproof pan, heat the EVOO over low-medium heat.  Dice the onion and peppers.  Add to the pan and sauté for about 10 minutes.  Add the potatoes, pancetta, salt, and pepper to the pan.  Continue to sauté for a few more minutes.

Preheat the oven to Broil.

In a separate bowl, whisk the eggs and season with salt & pepper.  

Add to the large ovenproof pan.  Cook on the stove for about 10 minutes on medium heat, gently lifting the edges to allow the uncooked egg to flow underneath.  

Broil for just one minute to slightly brown the top.

Cut into wedges like a pizza.  Served hot or at room temperature.

This was beautiful and delicious! 
Orange Salad with Pickled Red Onions that Tim Hankewich at Orchestra Iowa made with me!
All you need are 5 oranges, 1 red onion, and some fresh basil.
Slice the red onions super thin. In a bowl, toss with a few shakes of Rice wine vinegar and a little salt and white pepper (not black pepper). White pepper is more subtle. Mix occasionally.
Peel the oranges and slice in thin rounds. Arrange on a platter.
After a while, sprinkle just a little sea salt on the oranges.
Mix the onions again to extract the sharpness and water from the onion. Needs to pickle and soften the onions for at least 30 minutes. When the onions are ready, sprinkle over the oranges, omitting the liquid. Top with a generous handful of thinly sliced basil leaves. Enjoy!

Episode 37 - How about some hot corn chowder?

Grocery list:

  • 6 cups chicken broth
  • 1 tablespoon fresh thyme
  • 6 ears corn
  • 5 slices bacon or pancetta
  • 1 large onion
  • 1 large carrot
  • 3 stalks celery
  • 1 lb. red potatoes, 6 medium-sized
  • 3 tsp sea salt
  • 1/4 tsp black pepper
  • 1/4 tsp cayenne pepper
  • 1/4 teaspoon red pepper flakes
  • 1 cup milk

In a medium stockpot, add 6 cups chicken or vegetable broth and bring to a simmer on high heat.  Cut the kernels from the cobs and add to the stockpot.  Reduce to medium heat and simmer for 30 minutes, uncovered.  Set aside the corn kernels.  Compost/discard the cobs.

Chop the bacon or pancetta and add to a large stockpot, 5 quarts.  Cook on medium heat, stirring occasionally until browned, about 10-15 minutes.  Leave the liquid in the pot and remove bacon bits.  Set aside. 

Chop the onion, celery and carrots and add to the bacon fat.  Cook for about 10 minutes on medium heat, stirring occasionally.  Add the corn broth to the pot and bring to a boil.  Chop the fresh thyme and add to the broth.

Dice the potatoes.  Add the potatoes, corn kernels, salt, black pepper, red pepper, and cayenne pepper.   Reduce heat to low and simmer uncovered for another 20 minutes or until potatoes are tender.   

Transfer about 1/3 of the vegetables (try not to get a lot of broth) to the Cuisinart and pulse a few times.  Add back to the soup.  This will make a creamier and thicker soup.  Add the bacon bits and milk, simmer on low for 10 more minutes.  Enjoy!

Episode 34 - Time to Make the Pesto!

Time to make the PESTO!  Harvest your basil NOW if you haven’t already.

Check out a bright new twist on your pesto recipe!

Fall Pesto with Maple and Walnuts

ð       1 cup walnut pieces or halves

ð       1/3 cup pure maple syrup or agave

ð       4 whole peeled garlic cloves

ð       1/3 – 1/2 cup extra-virgin olive oil

ð       1/2 - 1 teaspoon kosher salt 

ð       1 teaspoon fresh grated lemon zest (optional)

ð       3-4 heaping handfuls of fresh cut basil leaves, washed and dried thoroughly

In a food processor, combine all ingredients, except the basil and half of the EVOO, pulse a few times.  Add basil leaves to almost fill the food processor.  Drizzle in the oil, continue to pulse until just becoming thick and creamy.  Add more basil leaves and pulse.  Taste, and season with salt and/or pepper if needed.

This is wonderful atop butternut squash or to roast with a salmon steak!

I am so honored and blessed to collaborate with the American Cancer Society in Iowa City, IA.  The Hope Lodge invited me to provide cooking classes and nutritional information to the patients and their families, in their beautiful dining and kitchen space.  I started with some protein packed boneless, skinless chicken breasts and made 3 dinners for them.  Check out the flyer handout and my full class packet on my website, link below.


The American Cancer Society Hope Lodge program provides a free home away from home for cancer patients and their caregivers. More than just a roof over their heads, it’s a nurturing community that helps patients access the care they need. Each Hope Lodge community offers a supportive, homelike environment where guests can share a meal, join in the evening’s activities, or unwind in their own private room. Patients staying at a Hope Lodge must be in active cancer treatment.

We made two different types of pesto...Classic Basil with Lemon....and a surprising Maple Walnut Pesto!   
We then made an appetizer for each.  Baked goat cheese and phyllo cups with the classic pesto and butternut squash with the maple walnut pesto....YUM!
