Crème Fraîche: A Culinary Tale of Culture and Cream

Few ingredients embody French culinary charm quite like crème fraîche. Rich, tangy, and endlessly versatile, this cultured cream has long been a quiet hero in French kitchens — spooned over tarts, whisked into sauces, or served alongside the ripest summer fruit. But where did this luxurious cream come from, and what makes it so uniquely French?

In this episode of Fabulously Delicious, we delve into the origins of crème fraîche, from its humble beginnings on rustic dairy farms in Normandy and Brittany to its celebrated status in today’s culinary world. We’ll explore the science behind its smooth texture and subtle tang, uncovering how live cultures, fermentation, and fat content all play a role in creating this iconic ingredient. Plus, we discuss the key differences between raw and pasteurised varieties, and the importance of terroir in French dairy traditions.

We’ll also take a closer look at Isigny’s prestigious AOC crème fraîche, the only French cream to hold this protected designation. Discover what makes it so special — from the lush pastures of the Bessin and Cotentin regions to the slow, artisanal maturing process that gives it its rich ivory hue and delicate flavour. And we’ll journey beyond France to see how crème fraîche compares with sour cream and similar cultured creams around the world.

Whether you’re a seasoned chef or a curious foodie, this episode will inspire you to see crème fraîche in a new light — not just as a dairy product, but as a symbol of French culinary heritage. So grab a spoon, and join us as we celebrate one of France’s most fabulously delicious creations.

The Story of Marie Antoine Caréme02 May 202500:29:29

Send us a text

Marie-Antoine Carême wasn’t just any chef—he was the chef des rois et le roi des chefs (the chef of kings and the king of chefs). In this episode of Fabulously Delicious: The French Food Podcast, we delve into the life of this trailblazing culinary artist who revolutionised French cuisine during a time of great upheaval, from the French Revolution to the fall of Napoleon. Known for his towering pièces montées and meticulous codification of French sauces, Carême helped lay the foundations for haute cuisine as we know it.

But Carême's talents weren’t confined to the kitchen. He cooked for the likes of Napoleon, the future George IV of England, and Russian Tsar Alexander I, and spent significant time in the service of the famously strategic Talleyrand. Could it be that Carême’s placement in such elite circles had more to do with politics than pastry? A new Apple TV series hints at a fascinating subplot: was Carême a spy?

In this episode, we unpack the facts and the fictions. Was Carême truly passing secrets along diplomatic corridors under the guise of preparing extravagant banquets? Or is this just a delicious layer of historical speculation? While the evidence is far from definitive, the possibility adds an irresistible flavour to the story of a man who cooked for the most powerful men in Europe.

Join us as we explore Carême’s early life as an abandoned child in Paris, his rise through the culinary world, his groundbreaking contributions to French gastronomy, and the tantalising rumours that swirl around his legacy. Whether he was simply a chef or something far more mysterious, one thing is certain: Carême changed the way the world eats—and maybe, just maybe, the way it thinks.

Onion Johnny the famed French Onion farmers.21 Jul 202300:14:23

Send us a text

Onion Johnnies are onion farmers from the Breton region of France. Traditionally they were farmers who traveled on bikes selling their onions door to door in the UK, especially in Wales. In many places in the UK, the onion Johnny was the only contact an English person would have with a French person.

The Roscoff Onion is a culinary treasure hailing from the coastal town of Roscoff in Brittany, France. Renowned for its subtle sweetness and distinct pink hue, this onion variety has graced the tables of gourmands and chefs alike for centuries.

We can't overlook the indispensable role onions play in French cooking, especially in the iconic Soup L’Onion, a beloved classic that epitomizes the heartwarming essence of French comfort cuisine.

But what about the indispensable role they’ve played in French culture? Well, the onion Johnnie is a great example of how important the simple, eye tearing, vegetable the onion is. It might be a staple in many recipes and cuisines around the world but to French culture it’s iconic.

My life is all about cooking, eating and living life the best way I can. I love meeting wonderful food producers, chefs, home cooks, drinking amazing wines, eating some of the over 1500 French cheeses and sharing these fabulous experiences with you. I hope your enjoying them.

Today I’m having a chat with a wonderful and fabulous of course French chef based in Sydney Australia, Sebastien Lutaud. Originally from Lyon he moved to Australia at a young age with his family who had patisseries in Australia. Then he moved back to France to start his chef career and then back to Aus where he has a family and runs successful French restaurants.
