| Virginia Trioli (Writer and Broadcaster) - what makes life delicious | 29 Sep 2024 | 00:35:45 | |
I first remember listening to Virginia Trioli on ABC Radio Melbourne when it was still called 774 and she was doing afternoons. It’s one of the earliest times I remember really listening to radio that wasn’t a football broadcast, engaging with that idea of live storytelling, carrying a city through its celebrations and its sadnesses, and asking questions that were sometimes cosy and sometimes very pointed of the guests.
Virginia Trioli is a two-time Walkley-winning journalist. She is the host of ABC TV’s Creative Types and a former host on News Breakfast. We find her today in a different mode: her memoir A Bit on the Side is a lovely pink hardcover book, a series of reflections on what makes life delicious.

| Annie Smithers (Du Fermier, Babbington Park) - Why can Annie water cows but not carrots? | 24 Sep 2024 | 00:45:47 | |
Over a cup of tea, with an audience of elderly dogs, we sit down at chef and author Annie Smithers’ kitchen table for a chat. We talk about her raw, tender, loving new book Kitchen Sentimental. Annie’s memoir is a journey to self-discovery, one recipe at a time. We touch on restaurant culture, the reasons she continues to cook, and life at her rural property of Babbington Park, a place that feeds curiosity, brings joy and also bumps up against frustrating and archaic regulations. Why can Annie water cows but not carrots?

| Francesco 'Ciccio' Crifo (Roccella, Melbourne) - is it ever OK to put pineapple on pizza? | 03 Dec 2023 | 00:34:37 | |
Francesco 'Ciccio' Crifo was more or less born under a pizza bench and has spent his whole life in kitchens. We talk to the Roccella chef about tradition and rule-bending, the difference between artisan pizza and pizza as fast food, and the endless joys of working with different flours. | Evette Quoibia (La Gout Afrique) - a milk bar with West African food? | 29 Nov 2023 | 00:23:09 | |
What do you get from a milk bar? Cheezels, ice cream, emergency Tim Tams...What about jollof rice, fried plantain and fufu? That's what's on offer at La Gout Afrique, a classic Aussie corner store that’s also a surprising West African restaurant. We talk to owner Evette Quoibia, who is showcasing food from Liberia, Cote D'Ivoire and Ghana in the Melbourne suburb of Reservoir. Evette imagined Australia as a paradise before she arrived as a 15-year-old refugee. Has the reality lived up to the fantasy?

| The Producers: Katrina Myers (Barham Avocados) - for the love of the avo | 27 Nov 2023 | 00:23:18 | |
Katrina Myers and her husband Tim own Barham Avocados, on the Murray River in New South Wales. It’s Katrina’s family farm but she wasn’t always sure she’d return to it. As it turns out, she loves the beautiful green haven they’ve created in a mostly arid area, and she’s also a huge fan of the avocados they grow for themselves and lucky consumers.

| Shaun Quade (The Lawns of the Lobby, Canberra) - returning home | 26 Nov 2023 | 00:39:29 | |
Shaun Quade ditched fine dining to manufacture vegan cheese in the US. It was...challenging. He's back in Australia after four years in Silicon Valley with a renewed appetite for restaurants and will soon launch Ballyhoo at The Lawns of the Lobby in Canberra. We talk about Lume - was it a vanity project? where is the interection of art and food? - and the dangers of burn out. Shaun has also learnt much about factory food: we talk about missteps in feeding the planet.

| Danielle Alvarez (Author and Chef) - the differences between home and restaurant cooking | 19 Nov 2023 | 00:31:24 | |
It’s been a couple of years since we caught up with Sydney chef and author Danielle Alvarez. A lot has happened. She experienced burnout, left her job at Fred’s and regrouped with a lot of home cooking. She now has a role as Culinary Director at the Sydney Opera House. Her new book, Recipes for a Lifetime of Beautiful Cooking, is a great companion for the home kitchen. In it, Danielle ponders the differences between home and restaurant cooking: are there things that home cooks do better than chefs?

| The Producers: Maurie Cafra (Cafresco Organics) - remarkably consistent | 23 Oct 2023 | 00:19:32 | |
Maurie Cafra owns Cafresco Organics in Koo Wee Rup in Victoria, a South Gippsland region remarkable for its black soil and suitability for growing food. Maurie grew up on the farm and still lives here so in some ways, things have stayed remarkably consistent. In other ways, a lot has changed. Maurie went against the grain and transitioned to organic farming, becoming certified in 1997. As he tells us, he didn’t get pats on the back from his neighbours, but the proof is in his viable business and the increasing biodiversity on his farm.

| Katie Shortland (RaRa Ramen, Sydney) - #notonmyroster | 25 Aug 2024 | 00:37:57 | |
We’ve always talked about toxic work culture on Dirty Linen but unfortunately it’s a topic that doesn’t get old. Over the past week, the Sydney Morning Herald and Good Food have published a series of investigative articles about Swillhouse group, and I wrote an ancillary story about the endemic nature of sexual harassment in hospitality. We talk it all over with Katie Shortland, co-owner of RaRa Ramen in Sydney and a media lawyer in film & TV. Personal accountability is part of the change and that’s why Katie has started the #notonmyroster hashtag.
https://www.rararamen.com.au/
We mentioned the positive duty that people have to proactively prevent sexual and gender-based harassment at work.

| Helen Searle (Arup Melbourne) - how to hear yourself think in a restaurant | 22 Oct 2023 | 00:28:38 | |
Anyone who’s been to Reine, the new Melbourne restaurant from the NOMAD group, has a lot to say about it. They usually start with the incredible space - the restaurant is in a cathedral-like old stock exchange building that dates to the 1890s. They talk about the cocktails, the seafood, the steak - and I’m still thinking about the cheese offering! But they often also talk about the acoustics. How is it possible in this soaring stone chamber that you can hear yourself think, let alone have conversations? We talk to the woman who can answer that question. Helen Searle is an acoustic, audio-visual and theatre consultant within the Arup Melbourne team.

| Jacob Birch (Yaamarra & Yarral) - native grasses healing country and community. | 18 Oct 2023 | 00:50:36 | |
It's a demoralising and exhausting time for a lot of First Nations people. Some leaders and thinkers - like Gamilaraay man Jacob Birch - have been advocating for self-determination and nation-building for a long time, having been burnt by enmeshment with colonial institutions. Jacob is one of the first recipients of the John Reid Fellowship which funds meaningful projects in the world of grain. We talk to him about native grasses and the opportunities they present for healing country and community.

| Rosemary and John Portelli (Enoteca Sileno) - vibrant and dynamic after 70 years.(Part 2) | 10 Oct 2023 | 00:27:27 | |
On the occasion of Enoteca Sileno’s 70th birthday, we spend a special double episode at the Melbourne institution in an old pub in Carlton North. We talk with Rosemary and John Portelli, the custodians of an import, wholesale and retail business founded by Rosemary’s father Gino Di Santo in 1953.
This is episode 2. From the beginning - whether it’s pasta or extra virgin olive oil, balsamic vinegar or jarred artichokes, gorgeous risotto rice or a beautiful Valpolicello wine - Enoteca Sileno has honoured the farmers who grow and the artisans who make by carefully selecting, transporting and sharing tales of each product with their Australian customers. In the first episode, we heard from Rosemary about the origins of Enoteca Sileno, and from John about joining the business. In this episode we consider the importance of such institutions and why the business is still so vibrant and dynamic after 70 years.

| The Producers: Peter Salleras (Fruit Forest Farm) - farmer, trailblazer and durian lover | 09 Oct 2023 | 00:26:25 | |
Peter and Alison Salleras both grew up on north Queensland cane farms but they took a different path for their own careers - a somewhat radical path, according to many of their contemporaries. Fruit Forest Farm grows dozens of types of tropical fruit - it’s not only the product range that’s different though, it’s also the unique trellised style of caring for trees which is more resistant to cyclone damage. We check in with Peter Salleras, farmer, trailblazer and durian lover.

| Rosemary and John Portelli (Enoteca Sileno) - celebrating 70 years Part 1 | 08 Oct 2023 | 00:36:33 | |
Why would someone travel for a day to buy Parmigiano Reggiano from Enoteca Sileno? It’s about the cheese, definitely, but it’s ultimately about trust.
On the occasion of the Melbourne institution’s 70th birthday, we spend a special double episode with Rosemary and John Portelli, the custodians of an import, wholesale and retail business founded by Rosemary’s father Gino Di Santo in 1953.
In this first episode, we hear from Rosemary about the origins of Enoteca Sileno, which started as an importer and wholesaler, moved to its first shop in Amess Street, Carlton North in 1982, and shifted to its current old pub emporium nearby in 2004.
The soul of Enoteca Sileno has always been to celebrate artisan food and drink, a tender and enthusiastic honouring of the farmers and makers, and a belief in legacy and family. Everything is here for a reason, and everything has a story.

| Matthew Evans (Fat Pig Farm) - an articulate advocate | 13 Sep 2023 | 00:41:31 | |
Jo Barrett takes over Dirty Linen!
This week, we're handing over the podcast to chef and sustainability problem-solver Jo Barrett. Her book Sustain: Groundbreaking Recipes and Skills That Could Save The Planet has just been published: it's as inspiring as its author. Jo leads three conversations about wild game, waste and the wonders of soil with industry-leading changemakers.
We wrap up the week with Jo's final guest Matthew Evans. An author, farmer and ex-restaurant critic, Matthew is an articulate advocate for change - especially around the way we think about soil - but he's also realistic about the pathway to better food systems. What's bubble tea got to do with anything? Let's find out...

| The Producers: Nathan Creary (Killer Condiments) - We produce flavour | 11 Sep 2023 | 00:25:26 | |
“We produce flavour.” That’s a very nice mission statement from Killer Condiments’ Nathan Creary, a southern Sydney shopfitter turned farmer turned butcher turned condiment king. We dig in with Nathan and learn the story of the homestyle chimichurri that customers loved so much that he turned it into a jarred product, first as a side hustle and now as a growing business.
