Green chile is a staple of Colorado cuisine – both the pepper itself and the spicy, soupy stew used to smother everything from burritos and french fries to eggs and hamburgers. For decades, Denverites have been flocking to The Original Chubby’s Burger Drive In for their version of the versatile dish, and there is perhaps no version as hotly contested as Chubby’s. Our resident green chile correspondent (and current candidate for House District 5) Justine Sandoval sits down with host Bree Davies to regale her with the tale of how Chubby’s came to be and the Cordova family’s dramatic and spicy rise to the top.
We pulled some background information for this show from Adam Cayton-Holland’s 2007 Westword piece, “Smothered: The Saga of the Chubby's Empire,” (which includes a conversation with the late, great Stella Cordova herself!)

The poll shows support for a proposal soon to go before City Council – “Unlocking Housing Choices,” which aims to address this “missing middle” housing issue through zoning reform. SWEEP’s Smart Growth Senior Program Manager Max Nardo joins host Bree Davies to look at the poll results and discuss the density debate to come.

What will Denver do when it runs out of space for trash? Madison, WI, has a plan, and it’s one that other cities could follow. What could’ve just been another county landfill, slated to open in 2027, will instead be a “sustainability campus”, where local businesses will unite to more intentionally sort incoming waste, increase recycling intake, and generally aim to slow the flow of trash. And Dane County has historically handled waste disposal in a savvy way, making big bucks off of trash collection that they then use to fund future projects like this forthcoming campus.
