We're excited to announce that Episode 61 of All Things Whiskey Podcast is live now!

On this episode Hosts Mike Outcalt and Devin Mitchell welcome Dr. Tom Collins - Jackson Family Wines Endowed Professor of Viticulture and Enology at Washington State University to talk about his research; the impact barrels have on wines and spirits, and how certain levels of dilution in spirits can make them smell and taste the same.  Dr. Collins is an expert in distillation practices which he has been studying in his chemistry lab since 2015 to determine how the char and toast levels inside barrels filter harsher components of whiskey and other spirits while aiming to understand the chemistry behind this process.  More recently Dr. Collins has studied a close link between the aroma and taste of whiskies to determine how a certain level of dilution can make whiskies smell the same and further dilution can make whiskies taste the same.  Additionally we discuss the demand for new barrels, used barrels, barrel alternatives, and sustainability initiatives around barrels in the spirits industry.  We then open up the conversation to talk about Dr. Collins' favorite whiskies, brands, spirits, and discuss the future of his research.

The team reviews an Espresso Martini made with Bourbon, The Manhattan, and an Old Fashioned.  

Wanna make one of these cocktails (I'm sure you do because they're awesome), well here's the recipes:

Bourbon Espresso Martini:

  • 2oz Bourbon (your choice!)
  • 1oz Kahlua
  • 1oz Espresso
  • 1/2oz Simple Syrup

Mike's Manhattan:

  • 2oz Wild Turkey 101 Rye
  • 1oz Cocchi Vermouth
  • 1 dash orange bitters
  • 1 dash Aztec chocolate bitters
  • Peninsula cherry

The Classic Old Fashioned:

  • 2oz Wild Turkey 101 Rye
  • 2 dash Angostura bitters
  • 1 tablespoon of simple syrup (1/2 oz)
  • 1 Peninsula cherry
  • spritz with a lemon rind

The Connoisseur Old Fashioned:

  • 3oz Wild Turkey 101 Rye
  • 2 dash Angostura bitters
  • 1 teaspoon of simple syrup (0.16 oz)
  • 1 Peninsula cherry
  • spritz with a lemon rind

Welcome back to All Things Whiskey Podcast!  On this special episode host Mike Outcalt interviews Josh Robinson the Co-Owner and Liquor Buyer at Argonaut Wine & Liquor in Denver Colorado and Casey Adler the Owner of the StockRoom Speakeasy in Arvada Colorado to have a candid conversation around upcoming Colorado Propositions 124, 125, and 126.  Before jumping into politics, all three enjoy a pour of Old Forester 117 Series: Whiskey Row Fire.  For the main course of the episode Mike, Josh, and Casey talk about the following:

  • Colorado Proposition 124:  Retail Liquor Store Licenses Initiative (2022).  Increases the number of liquor licenses an individual may own to 8 by the end of 2026, 13 by the end of 2031, 20 by the end of 2036, and unlimited licenses by the end of 2037.
  • Colorado Proposition 125: Wine Sales in Grocery and Convenience Stores Initiative (2022).  Creates a new fermented malt beverage and wine retailer license to allow grocery stores, convenience stores, and other businesses that are licensed to sell beer to also sell wine for off-site consumption.
  • Colorado Proposition 125: Alcohol Delivery Service Initiative (2022).  Would allow alcohol retailers and liquor-licensed businesses, such as grocery stores, convenience stores, liquor stores, bars, and restaurants, to offer third-party delivery services for alcohol deliveries.

All three propositions are marketed to help small businesses, but we uncover that they would do the exact opposite by allowing for hyper scaling corporate expansion and while taking away market share from small businesses that have built the Colorado beer, wine, and spirits industry. 

We implore you to register to vote, educate yourselves on the issues and support small businesses by voting NO on 124, 125, and 126.

Welcome back to All Things Whiskey Podcast!  Did you ever wonder why it took us so long to record an Elijah Craig Barrel Proof episode?  We did too - so we fixed that!  Mike rounded up his stash of 18 Elijah Craig bottles and selected 3 recent single barrel barrel proof expressions to put to the test.  After a bit of discussion about the brand and life in general, Producer Rose Haag organized a blind tasting with the following whiskies:

  • 8 year Elijah Craig Single Barrel Barrel Proof from Philnor Liquors - 132.4 proof 
  • 10 year Elijah Craig Single Barrel Barrel Proof from Argonaut Liquors - 127.6 proof
