Today on our episode #404 of All in the Industry, Shari Bayer's guest is Kristian Baumann, Korean-born Chef and Owner of Koan, a 2-Michelin star restaurant in Copenhagen, Denmark, where he grew up and has cemented his reputation as a key figure in New Nordic cuisine. Kristian is also the Chef and Owner of JUJU, a modern Korean eatery; and was previously the Chef and Co-owner of Restaurant 108 and The Corner, and worked with Chef Rene Redzepi at Noma, as well as at Relae and Manfred’s -- all in Copenhagen.

Shari sat down with Kristian at Koan in Spring 2024, following her second outstanding solo dinner at his restaurant, to talk about his career leading up to opening Koan. They also discuss his special collab with Chef and Owner Jeremy Chan at Ikoyi in London, which Shari was also able to attend. Both Kristian and Jeremy are contributors to Shari's Chefwise book (Phaidon, 2023).

Today on our episode #410 of All in the Industry, Shari Bayer's guests are Rick Smilow, Chairman & CEO of the Institute of Culinary Education (ICE), and Lachlan Sands, President of the Institute of Culinary Education’s LA Campus. ICE, which the school is often referred to for short, is one of the nation’s most prestigious culinary schools, currently headquartered in NYC and with a second location in Los Angeles. This year, in 2025, ICE is celebrating a big milestone – its 50th anniversary. Rick's tenure began in 1995, when he acquired the predecessor school, Peter Kump’s New York Cooking School, which was founded in 1975 by Peter Kump, who was also the founder of the James Beard Foundation. Rick has been the CEO of ICE for 30 years. Lachlan, who has been at the helm of the LA campus since it opened in 2018, is the principal administrator responsible for the success of the school.  Prior to working for ICE, Lachlan held positions as President, Director of Education, and Executive Chef. "On the Road" at MENA's 50 Best Restaurants 2025, Abu Dhabi, UAE26 Mar 202501:05:59

Today on our episode #409 of All in the Industry, Shari Bayer has a special “On the Road” show from MENA’s 50 Best Restaurants 2025, which took place in Abu Dhabi, UAE on January 28th, 2025. This was the fourth edition of the Middle East & North Africa's 50 Best Restaurants awards, sponsored by S. Pellegrino & Acqua Panna, and hosted in partnership with the Department of Culture and Tourism - Abu Dhabi (DCT).  

Launched in 2022, MENA's 50 Best Restaurants is a celebration of the best places to eat across 19 countries in the Middle East & North Africa region. Restaurants from across 11 cities were announced as the 50 best places to eat in the region at the event held at Erth Abu Dhabi, culminating with the region’s #1 restaurant, Orfali Bros Bistro, for the 3rd consecutive year.

Shari visited shortly after its opening on her travels, and sat down with Bo for this conversation on a return trip to Copenhagen in Spring 2024.  Bo is not only a celebrated chef and owner, but author and TV personality, and a trailblazer of the Nordic culinary movement. He describes himself as a curious human being, who first made his name at Restaurant Paustian, where he earned a Michelin star, before setting up Geist in 2011 (Shari's solo dining experience on episode #161 from November 2017).  Working mostly with Nordic produce, Bo’s dishes are personal reflections of him as a chef, his background and his travels. Bo was also a guest on our show in April 2018, episode #174, which was recorded in person in Brooklyn while he was visiting NYC.
