Beer Travelers: Brussels with Eoghan Walsh (Ep. 3)25 Oct 202201:08:37

Brussels is widely acknowledged as one of the world’s greatest beer cities. But according to today’s guest, author, podcaster, and beer writer Eoghan Walsh, it’s a curious distinction for a town that until recently only had a single brewery. On this third episode of the Beer Travelers podcast, we dive deep into the history and current state of beer and brewing in Brussels, Belgium. Eoghan has a point. Beer lovers, especially those here in the US, tend to canonize Belgium and Brussels. We speak adoringly of its cafe culture, the care with which each beer is served. Much of that stems from the unique place that a brewery such as Cantillon holds in the hearts of all beer fans. But in reality, the history of beer in Brussels has been up and down for the better part of a century. Even in more recent decades, the city’s beer and brewing scenes have been in great peril. Assisted in part by that adoration of beer geeks from around the globe, and of course their tourist dollars, Brussels is making a comeback. And today Eoghan Walsh walks us through the city’s vibrant and curious brewing history and updates on the status of things today and what is to come in its future. Eoghan runs Brussels Beer City, a great website you should visit, and he’s the author of a book of the same name as well as the more recently published A History of Brussels Beer in 50 Objects. For more on those endeavors, I recommend listening to the podcast that Eoghan and I recorded together back in January on Beer Edge. But today, we’re talking about Brussels and its beer scene and culture. It’s an incredibly informative conversation and it left me excited to return to Brussels and visit some of the spots Eoghan talks about.


We discuss Cantillon, Brasserie De La Senne, Le Source Brewing, and Mort Subite as well as many others during this podcast. Right now around the world, the hops industry is in two modes: In the Northern Hemisphere, the hop farmers are prepping the poles for twine, making sure the bines that start to grow are the perfect plant to make the arduous climb up, and are preparing the farm for the busy season ahead.

While in the Southern Hemisphere, harvest has been over for weeks, so the hop farmers are composting, cleaning the kilns, and are taking a well deserved break. On this episode we talk to two hop farmers, Eric Desmarais of CLS Farms in Yakima, Washington and Andrew Sutherland, hop farmer at Oast House Farms in Upper Moutere, New Zealand about what they are currently doing around their farms and the differences seasonality makes.

In recent years, you may have noticed a different type of tap in breweries and taprooms.  They have a side pull and they can be used to control the amount of foam in a beer.  Maybe you’ve even enjoyed a “milko” pour, a beer, usually a Czech-style lager, poured such that it is almost entirely foam.  These pours come from the Czech Republic’s long beer history and are finally being appreciated outside their borders.  Making good beer doesn’t end when the beer is packaged.  Czech beer culture knows that the dispense of the beer enhances the beer, too.

Once a darling of the craft beer scene, Black IPAs or Cascadian dark ales, can be difficult to find today. 

History shows that Greg Noonan brewed Blackwatch IPA at the Vermont Pub and Brewery in Burlington, VT in the 1990’s and the style would become part of the “IPAs of many colors movement” in the early 2010s. That time also saw interest in making and consuming white IPA and red IPAs. The success of Black IPA was short-lived and it fell to relative obscurity in the 2020’s. While most breweries now are brewing hazy or west coast IPAs, some are giving the black IPA a chance. On this episode, we talk to two breweries still brewing this style and their reasons why, as well as brewing approach, history, and thoughts about this almost forgotten style.

Biotransformation are flavor- and aroma-releasing reactions during brewery fermentation.  Lately, there has been much discussion of biotransformation in hoppy beers like IPAs where bound thiols are released when yeast interacts with them.  So hops provide not only bittering acids and flavorful oils, and yeast provides not only alcohol and esters, but the combination of yeast interacting with hop chemicals (and sometimes malt chemicals) produces new flavors.  New research into biotransformation is causing brewers to reexamine how they use hops, how they choose malts and how they ferment.

Kernza is a new grain that has been bred with regenerative agricultural practices in mind. The Ukrainian Golden ale is a newish beer style from the Donetsk region of Ukraine, a region you have heard about in the news. Its creator, Dmytro Nekrasov, fled his home to the capital of Kyiv and started brewing the golden ale there where it has become a popular addition to craft brewing. But what is the golden ale and what makes it special to Ukraine? How is beer tied to the location of where it is brewed? 

We talk to Ukrainian beer sommelier Lana Svitankova about her mission to spread the style throughout the world and with Cameron Compton, who owns Chicago based Midwest Coast Brewing and who brews Ukrainian Golden ale at his brewery, which raises money for the war effort.

Writing about beer is her way of sharing love and knowledge about the drink in her homeland, and letting the world discover the young Ukrainian beer scene. Cameron Compton is the founder, owner, and Head Brewer at Midwest Coast Brewing Company. Founded in 2019 in Chicago, Midwest Coast strives to create a great place for people to gather over classic beer styles. Cameron and his wife Suzie, who was born in Ukraine, were introduced to the Ukrainian Golden Ale project through Lana shortly *before* the war started in February 2022. Midwest Coast continues to brew its Ukrainian Golden Ale, Peremoha (meaning "victory"), to help raise money for the Ukrainian war relief effort. To date, the brewery has raised over $13,000 for a variety of organizations aimed at improving the lives of Ukrainians impacted by the war.

Pasteurization is a method of stabilizing beer through heat.  Although some people think pasteurization can negatively affect the flavor of beer, when used properly, pasteurization stabilizes and preserves flavors and gives brewers flexibility in the brewing process. And with the rise in popularity of non-alcoholic beer, which has less inherent preservative qualities, pasteurization not only keeps flavors stable, but is necessary to keep those beers free from pathogens.

Keith Villa, Ph.D., is a trailblazer in the beer and cannabis industries; and brewmaster and co-founder of Colorado-based CERIA Brewing Company, dedicated to brewing only alcohol-free beers. After earning his PhD in brewing from the University of Brussels in Belgium in the early 1990’s, an honor only a handful of brewers have achieved, Keith returned to the states with the idea of crafting beers inspired by Belgian styles, but with a twist.  He then began his 32-year career as founder and head brewmaster at Blue Moon Brewing Company, an operating unit of MillerCoors.
